Objectives: This study estimated the annual socioeconomic costs of food-borne disease in 2008 from a societal perspective and using a cost-of-illness method. Methods: Our model employed a comprehensive set of diagnostic disease codes to define food-borne diseases with using the Korea National Health Insurance (KNHI) reimbursement data. This study classified the food borne illness as three types of symptoms according to the severity of the illness: mild, moderate, severe. In addition to the traditional method of assessing the cost-of-illness, the study included measures to account for the lost quality of life. We estimated the cost of the lost quality of life using quality-adjusted life years and a visual analog scale. The direct cost included medical and medication costs, and the non-medical costs included transportation costs, caregiver's cost and administration costs. The lost productivity costs included lost workdays due to illness and lost earnings due to premature death. Results: The study found the estimated annual socioeconomic costs of food-borne disease in 2008 were 954.9 billion won (735.3 billion won-996.9 billion won). The medical cost was 73.4 -76.8% of the cost, the lost productivity cost was 22.6% and the cost of the lost quality of life was 26.0%. Conclusions: Most of the cost-of-illness studies are known to have underestimated the actual socioeconomic costs of the subjects, and these studies excluded many important social costs, such as the value of pain, suffering and functional disability. The study addressed the uncertainty related to estimating the socioeconomic costs of food-borne disease as well as the updated cost estimates. Our estimates could contribute to develop and evaluate policies for food-borne disease.
Objectives: The occurrence of norovirus food poisoning in South Korea has been reported since 2003. This study was performed to investigate the characteristics of norovirus food poisoning outbreaks in Korea from 2006 to 2015 and to analyze the relationship between these outbreaks and climate factors. Methods: Data on norovirus food poisoning outbreaks were obtained from the Korea Ministry of Food and Drug Safety. Data on climate factors were obtained from the Korea Meteorological Administration. Frequency analysis and Pearson's correlation analysis were adopted for this study. Results: During the study period, norovirus was the greatest contributing factor of food poisoning outbreaks. Approximately half of the outbreaks of norovirus food poisoning occurred in winter. Average temperature, highest and lowest temperatures, precipitation, number of days with rainfall, and humidity all had a significant negative correlation with monthly number of outbreaks of norovirus food poisoning (p<0.05). Among these, the lowest and average temperature showed higher correlation coefficients. However, the sum of the outbreaks in spring and autumn was similar to that of winter, and more than one-third occurred in group meal-service settings, including school lunches. This was strongly assumed as the use of norovirus-contaminated groundwater for preparation of meals in some settings. Conclusion: The cold and dry of the winter season in Korea may assist the transmission of norovirus. Also, the use of groundwater in group meal service is suspected of inducing a larger scale of norovirus food poisoning. Both health authorities and community-based prevention and control measures are required to respond to these complex etiological outbreaks.
The purpose of this study was to investigate effects of the developed nutrition education program focused on individual daily energy requirements and food exchange units using Food Exchange System for diabetes mellitus at a community health center. Developed the nutrition education program, four weeks' nutrition education including provided twice individual meal as diet therapy (2 hour/lesson/week, 4 week), was provided to 20 diabetic elderly (12 male, 8 female, 50-75 yrs): 1st lesson "Introduction: management of diabetes mellitus", 2nd lesson "6 Food groups and sources of 6 food groups", 3rd lesson "Individual daily energy requirements and food exchange units", and 4th lesson "Food choice for diabetes mellitus". For effects' analysis of the developed program, we assessed the changes in anthropometric characteristics; biochemical characteristics and nutrient intakes using 24 hr recall method. Effects of the developed nutrition education program were as follows: weight was significantly decreased, blood urea nitrogen (BUN) and glycosylated hemoglobin (HbA1c) were significantly decreased, and distribution of subjects in BUN and HbA1c was significantly changed. In protein : fat : carbohydrate (PFC) ratio, it was significantly changed from 15.98 : 16.30 : 66.69 to 17.51 : 18.94 : 64.10. In evaluation of nutrient intakes by Dietary Reference Intakes for Koreans (KDRI), protein, fiber, fat, vitamin E, niacin, folic acid, calcium and zinc were shown significantly positive changes in distribution of subjects according to intake level. The index of nutrition quality (INQ), nutrition adequacy ratio (NAR) and mean nutrition adequacy ratio (MAR) were significantly increased. In conclusion, the developed 4 weeks' nutrition education program focused on individual daily energy requirements and food exchange units using Food Exchange System for diabetes mellitus at community health center may improve the symptom of diabetes mellitus.
The purpose of this study was to evaluate the body composition, health status, and dietary behaviors of middle-aged women in a weight control program at a community health center. The study subjects were 66 middle-aged women who lived in Ansan city, and they participated in the program for 24 weeks. Anthropometries, blood pressure, and serum biochemical indices were measured. These measurements were taken both before and after the weight control program, and the data were analyzed using the SPSS 12.0 program. Weight, fat mass, body fat %, and the waist-hip ratio all decreased. According to the decreases in body fat %, blood pressure, serum biochemical indices and dietary behaviors were improved after the weight control program. Thus, this study demonstrated the desirable changes of a weight control program offered at a community health center, for health conditions and physical fitness.
한국형 TDS에 필요한 차별화된 포괄적인 식품목록을 도출하기 위해, 가장 최근에 실시된 2009년 TDS에서 사용된 것과 동일한 식품섭취량 자료를 사용하여 대표식품 선정기준을 확대 보완하고 그 결과를 비교하였다. 식품별 섭취량 누적비율 90%까지 확대, 섭취빈도 5% 이상으로 확대 및 추가 고려요인으로 지용성 오염물질을 위한 지방섭취량 누적비율 80%까지에 포함되는 식품을 고려하여 총 161종의 식품이 선정되었다. 도출된 대표 식품 목록은 우리 국민이 2007년에 섭취한 것으로 조사된 모든 식품군을 포함하고 있어 그 포괄성이 입증되었다. 다음 단계로, 한국인의 일상적인 식이를 대표할 수 있는 식품섭취량 자료를 확보하기 위해, 총 18,022명을 대상으로 실시된 2008년도와 2009년도 국민건강영양조사의 식품섭취량 자료를 통합하고 여기에 등장한 687종 식품을 이용하여, 상기 기술된 선정기준에 따라 165종 식품을 선정하여 기본목록을 작성하였다. 이들을 식품군별로 분류한 후 유사식품의 중복선정을 피하기 위해 매우 유사한 식품 30종에 대해 각 식품군 내에서 다소비 순위와 다빈도 순위를 비교하여 상대적으로 순위가 낮은 식품 15종을 제외시키고, 각 식품군에서 대표식품으로 선정되지 않은 식품에 대한 검토를 통해 식품 구성과 성상이 현저히 달라서 mapping이 어려운 식품 10종을 추가하여 160종이 대표식품으로 최종 선정되었다. TDS 분석대상으로 최종 선정된 160종의 식품목록은 식품섭취량의 90.93%, 에너지 섭취량의 91.36%, 지방섭취량의 89.05%를 포괄하는 것으로 나타났다. 예산과 연구기간의 제약으로 모든 식품이 분석될 수는 없으므로 분석되지 않은 식품을 가장 유사한 대표 식품의 유해물질 분석결과에 매칭하는 방법인 'best-fit' mapping 과정을 적용한다면 유해물질별 총 섭취량의 산출이 가능하게 될 것이다. 본 연구에서는 우리 국민의 식생활을 반영할 수 있는 대표성 있는 식품섭취량 자료를 확보하여 체계적인 방법으로 대표 식품을 선정하고, mapping을 통해 모든 식품을 포괄할 수 있는 방법을 제시함으로써 유해물질별 총 노출량을 평가할 수 있는 기반을 마련하였다.
Addition of probiotics to yogurt with desired health benefits is gaining increasing attention. To further understand the effect of probiotic Lactobacillus plantarum on the quality and function of fermented milk, probiotic fermented milk (PFM) made with probiotic L. plantarum K25 and yogurt starter (L. delbrueckii ssp. bulgaricus and Streptococcus thermophilus) was compared with the control fermented milk (FM) made with only the yogurt starter. The probiotic strain was shown to survive well with a viable count of 7.1 ± 0.1 log CFU/g in the PFM sample after 21 days of storage at 4℃. The strain was shown to promote formation of volatiles such as acetoin and 2,3-butanediol with milk fragrance, and it did not cause post-acidification during refrigerated storage. Metabolomics analysis by GC-MS datasets coupled with multivariate statistical analysis showed that addition of L. plantarum K25 increased formation of over 20 metabolites detected in fermented milk, among which γ-aminobutyric acid was the most prominent. Together with several other metabolites with relatively high levels in fermented milk such as glyceric acid, malic acid, succinic acid, glycine, alanine, ribose, and 1,3-dihydroxyacetone, they might play important roles in the probiotic function of L. plantarum K25. Further assay of the bioactivity of the PFM sample showed significant (p < 0.05) increase of ACE inhibitory activity from 22.3% at day 1 to 49.3% at day 21 of the refrigerated storage. Therefore, probiotic L. plantarum K25 could be explored for potential application in functional dairy products.

This study investigates the buffering effects of calcium salts in kimchi on the total acidity, microbial population, and dextransucrase activity. Calcium chloride or calcium carbonate was added to dongchimi-kimchi, a watery radish kimchi, and the effects on various biochemical attributes were analyzed. The addition of 0.1% calcium chloride produced a milder decrease in the pH after 24 days of incubation, which allowed the lactic acid bacteria to survive longer than in the control. In particular, the heterofermentative Leuconostoc genus population was 10-fold higher than that in the control. When sucrose and maltose were also added along with the calcium salts, the dextransucrase activity in the kimchi was elevated and a higher concentration of isomaltooligosaccharides was synthesized when compared with the control. Calcium chloride was determined as a better activator compound of dextransucrase than calcium carbonate, probably because of its higher solubility. Therefore, the results of this study confirm the ability of the proposed approach to modulate the kimchi fermentation process and possibly enhance the quality of kimchi based on the addition of dietary calcium salts.
Recently, functional foods and bioactive components in foods have drawn the attention and interest of food scientists, nutritionists, health professionals, and general consumers. Bioactive whey protein is a highly concentrated milk serum isolate or concentrate, which is high in protein (80~90% protein by weight), carbohydrate- and sugar-free, and nonfat or very low in fat. Bioactive whey protein enhances both healthy and deficient immune systems. In general, ultrafiltered whey protein contains various whey protein concentrate peptides, which could be used for manufacturing probiotics added to health beverages. Hence, the objective of this paper was to review the published literature on research of new functionally improved health beverages using various bioactive components extracted from milk and dairy products.
본 연구는 국내 의료기관 500명의 식품 취급자들의 식품안전에 관한 지식, 인식 및 행태 수준을 평가하고 지식, 인식, 행태와 사회인구학적 특성과의 연관성을 분석하였다. 자가보고 설문지는 식품안전에 관한 지식 15문항, 인식 15문항, 행태 20문항 등 총 50문항으로 구성되었으며 연령별, 교육수준별, 경력별에 따른 지식, 인식, 행태와 KAP과의 관련성분석은 t 또는 ANOVA test를 실시하였다. 분석 결과 식품안전에 관한 평균 지식점수는 3.25, 인식 3.65, 행태 3.36으로 나타났다. 연령그룹별 식품안전에 관한 지식, 인식, KAP score는 차이가 나타났으며, KAP과 교육수준과의 관련성은 교육수준이 증가할수록 KAP score가 증가하는 것을 확인하였다(P < 0.05). 식품위해를 최소화하기 위해서 식품 취급자에게 공중보건학적차원의 지속적인 식품안전 예방교육 및 프로그램을 제공해야 할 것으로 사료된다.
