한국신문에 게재된 식생활 전반에 관한 기사내용의 영양과학적 분석 -1960년 1월부터 1996년 6원까지- -제 1보: 식습관 및 식품소비패턴에 관한 조사연구- (The Content Analysis of Food and Nutrition Articles in the Korean Newspapers -From January 1960 to June 1996- -I. Food Habits and Food Consumption Patterns-)

  • The purpose of this study was to evaluate the important changes and the trends in Korean newspaper articles related to 1) food habits and food consumption patterns 2) nutrition, health and diseases 3) food safety and policy. The method used in this study was content analysis of the articles pressed in Donga ilbo and Choseun ilbo from January 1960 to June 1996. Among the total 1814 articles, those on nutrition, health and disease were 922 (50.8%), food safety and policy were 490 (27%) and food habits and consumption patterns were 402 (22.2%). The articles related to food habits and consumption patterns dealt with four contents, food habits reformation, changes in food consumption patterns, nutritional status and food habits. The frequencies of food habits content were highest (51.1%) and especially increased in 1980's and 1990's as the concerns on health and pursuit of convenience were increased. Most of contents related to food habits were health and longevity diet (44%) and eating out (27.5%). The percentile of food habits reformation, the changes in food consumption patterns and nutritional status were 20.1%, 18.4% and 10.0%, respectively. The contents of food habits reformation were most interested in 1960's when food shortage and poverty prevailed. Nowadays, the major subjects of food habits reformation were changed to the problem of wastage and the use of our agricultural foods. The frequencies of change in food consumption patterns were gradually increased from 1960's (7 item) to June 1996 (34 items). And the most of contents related to nutritional status were focused on suffering from food shortage especially in 1960's.

호박 및 한방생약재 추출액이 마우스 혈액성상에 미치는 영향 (The Effect of Pumpkin and Medical Herb Extract Supplement on Blood Composition of Mouse)

  • 본 연구는 한방에서 여러 가지 기능성을 주목받고 있는 호박을 주원료로 하고 8가지 한방 생약재를 부재료로 첨가해 이것이 마우스의 혈액 성상 중 적혈구수와 hemoglobin에 어떤 영향을 미치는지 알아보기 위해 진행되었다. 실험은 부재료로 첨가되는 한방생 약재 의 종류와 1회 복용량에 따라9가지 그룹으로 나누어 진행되었으며 먼저 마우스에게서 출혈을 유도한 후 호박 및 한방생 약재 추출물을 먹인 대조군과 비교해 출혈 전으로 회복되는 정도를 살펴보았다. 그 결과 적혈구의 경우9가지 실험구 모두가 대조구에 비해서 유의적으로 적혈구 수가 증가하였다 첨가된 부재료의 수를 줄인 A와 B그룹보다 8가지 한방생약재를 모두 부재료로 첨가한 C그룹에서 가장 높은 증가효과를 보여 주었다. Hemoglobin의 경우에도 9가지 실험구 모두가 대조군에 비해 유의성있는 증가효과를 보여주었다 Hemoglobin도 적혈구와 마찬가지로 A와 B그룹보다 8가지 한방생약재를 모두 첨가한 C그룹에서 회복효과가 가장 우수하였다 적혈구와 hemoglobin모두 1회 복용량보다 첨가되는 한방생약재의 종류에 따라 회복효과가 더 큰 것으로 생각된다.

호박 및 한방 생약재 추출물이 산모의 혈액성분에 미치는 영향 (The Effect of Pumpkin and Medical Herb Extract Supplement on Blood Composition of the Women delivered of a child)

  • 본 실험 은 한방에서 특히 산모의 산후 회복에 효과적 이라고 알려진 호박이 산욕기 산모의 혈액성상 회복에 어떤 영향을 주는지 알아보기 위해서 진행되었다. 호박을 주원료로 8가지 한방 생약재를 첨가하여 압출액을 만든 후분만 직후의 산모 50명 에 게 21일간 복용시키고 혈액을 채취하여 적혈구와 hemoglobin을 복용전과 비교하였으며 또 호박 및 한방 생 약재를 복용하지 않은 대조군과도 비교 하였다. 본 실험 의 결과 적혈구 수치 는 분만직후의 3.65 $\times$$10^{6}$/mm에 서 4.6$\times$$10^{6}$/mm로 증가하여 3.9$\times$$10^{6}$/mm인 대조구에 비하여 높은 증가효과를 보여주었으며 정상적인 적혈구 범 위 에 드는 결과를 보여주었다. Hemoglobin의 경우도 분만 직후 10.35 g/dL에서 복용 21일 만에 12.61 g/dL로 증가하여 대조군인 10.88 g/dL과 비교하였을 때 유의적인 증가효과를 보여주었다 Hemoglobin수치 역시 임신 초기의 평균적인 수준을 초과하였으며 정상의 범위에 속하는 수준으로 회복하는 결과였다. 이후 적혈구와 hemeglobin 뿐 아니라 좀더 자세한 혈액성상을 연구할 과제가 있으나 본 연구의 결과 호박을 주원료로 한 한방 생약재 추출액은 분만 직후 산모의 적혈구 수치 및 hemoglobin의 회복에 효과적이라고 생각된다.

두 가지 이상 기능성원료를 복합하여 함유하고 있는 건강기능식품의 안전 관리 방안 (Management Strategy For Health Functional Food Containing Several Functional Ingredients)

  • 본 연구에서는 한 가지 제품에 여러 기능성 원료를 복합하여 사용하고 있는 복합 건강기능식품의 실태를 파악 및 분석하고 이들 원료들 간의 상호작용에 관한 문헌조사를 토대로 복합건강기능식품의 관리 방안을 도출하고자 하였다. 이를 위해 식약청에 품목제조신고되어 있는 database를 분석하였다. 분석대상이 되는 제품은 총 7319개의 제품 중 "복합 건강기능식품"으로 파악된 제품의 개수는 183개 제품이었으며 이들 제품 중 기능성 원료를 2개 함유하고 있는 제품은 총 177제품, 3가지 이상의 기능성 원료를 함유하고 있는 제품은 모두 6개 제품이 있다. 183개 복합건강기능식품에 기능성 원료로 사용되고 있는 원료들을 순위별로 나열하면 가장 많이 사용되는 기능성 원료가 가르시니아캄보지아로서 41개 제품에서 기능성 원료로 사용되었으며 "옥타코사놀"과 "쏘팔메토열매추출물"이 가장 많은 빈도로 제조되고 있었다. 복합건강기능식품에 사용되고 있는 원료들의 pair를 사용하여 안전성 정보를 검색한 결과 현재 복합 사용되고 있는 건강기능식품에서의 안전성 우려사항은 아직까지 보고된 바 없는 것으로 판단된다. 하지만 복합 건강기능식품의 섭취에 대한 안전선 우려는 여전히 남아있는 상태이므로 이를관리하기 위해서는 부작용에 대한 조기 시그날을 감지하기 위한 부작용 모니터링 제도를 강화할 필요가 있을 것이다. 최근에 개정된 건강기능식품법 시행규칙의 원활한 시행을 통해 복합 건강기능식품의 안전관리를 강화할 수 있을 것으로 기대된다.

노인들의 건강식품 섭취 실태 및 정보 탐색 행동 관련 요인에 관한 연구 (Intake Patterns and Information-seeking Behaviors of the Elderly Regarding Health Foods)

  • This study examined the intake patterns and information-seeking behaviors of elderly individuals with regard to health foods, according to sociodemograhic characteristics, awareness of health, and concerns and awareness about health foods. The data were collected from 421 elderly living in Seoul, Busan, Daegue, Daejon, and Gwangju, between January 17th and February 23rd, 2006. Frequencies and chi-square tests were conducted using SPSS Windows. The results are as follows: The respondents were highly concerned about their own health as well as health foods, and individuals primarily took nutritional supplements and glucosamine containing products. In addition, they had taken various health-improving foods. Most had intentionally consumed at least one health food, in order to maintain a condition of health. According to chi-square tests, women were more likely to consume health foods than men. The most important sources of information regarding health foods were family, relatives, and friends. Some respondents answered they had difficulties in obtaining and understanding health food-related information. Many respondents desired to get health food information regarding efficacy from TV, radio, and newspapers, as well as doctors, pharmacists, and dieticians.

유해물질 관리정책의 과학화 (Scientific Management Policy for Hazardous Substances)

  • Though food safety efforts of the government has been increasing, but the health hazards resulting from food does not stop and thus increases consumers' anxiety and distrust of government. For more reliable safety management, developing analysis and intake measurement methods and strengthening regulatory control with strict criteria is necessary. In addition, as not only the known hazards by now, but also unknown but obvious hazards are simultaneously ongoing in current environments, the unified risk management and health assessment for food, health food and medicines from the media is critical. As risks and damage to health may show up after a long time after exposure, preventive measures and strategies for safety control is also needed.

Health Promoting Properties of Natural Flavor Substances

  • The study of health promoting and disease preventing compounds in food or by themselves, so called nutraceuticals or functional foods, has become a major field of research in food science. Natural flavor compounds are usually present in food, essential oils, spices, and herbs. These compounds can produce aroma, not only by themselves, but also in combination with other compounds. Today, however, greater interest is being paid to the health promoting properties of natural flavor substances rather than their flavoring properties. In fact, a number of naturally occurring flavor compounds that possess health promoting and disease preventing properties have been extensively studied and identified. The beneficial properties of natural volatile flavor compounds as well as non-volatile substances in spices and herbs discussed in this review include antioxidant, anticarcinogenic, anti-inflammatory, and immune enhancing activities.

  • Increasing Public Concern : Pesticide residue is probably one of the fastest growing problems in regard to environmental contamination. Pesticide use in agriculture in this century has produced certain benefits, including a decrease in crop waste and an increase in crop yields and food quality. However, pesticide use also creates problems of having effects on the environment and remaining in food chain. The presence of pesticide residue in food, water, and soil has aroused public concern over potential health hazards. Despite information provided by national and private level agencies suggesting that food is safe, consumer groups worldwide are demanding assurance as to the safely of agricultural products.

환경유래 식품오염물질의 우선순위 선정 기법 (Food-CRS-Korea)의 개발과 적용 (Development of Korean Food-Chemical Ranking and Scoring System (Food-CRS-Korea) and Its Application to Prioritizing Food Toxic Chemicals Associated with Environmental Pollutants)

  • The aims of this study were to develop the suitable "system software" in chemical ranking and scoring (CRS) for the food hazardous chemicals associated with environmental emission and to suggest the priority lists of food contamination by environmental-origined pollutants. Study materials were selected with reference to the priority pollutants list for environment and food management from domestic and foreign research and the number of study materials is 103 pollutants (18 heavy metals, 10 PBTs, 10 EDs, and 65 organic compounds). The Food-CRS-Korea system consisted of the environmental fate model via multimedia, transfer environment to food model, and health risk assessment by contaminated food intake. We have established that health risks of excess cancer risks, hazard quotients (HQs) by chronic toxicity and HQs by reproductive toxicity convert to score, respectively. The creditable scoring system was designed to consider uncertainty of quantitative risk assessment based on VOI (Value-Of-Information). The predictability of the Food-CRS-Korea model was evaluated by comparing the presumable values and the measured ones of the environmental media and foodstuffs. The priority lists based on emissions with background-level-correction are 15 pollutants such as arsenic, cadmium, and etc. The priority lists based on environmental monitoring date are 17 pollutants including DEHP, TCDD, and so on. Consequently, we suggested the priority lists of 13 pollutants by considering the several emission and exposure scenarios. According to the Food-CRS-Korea system, arsenics, cadmium, chromes, DEHP, leads, and nickels have high health risk rates and reliable grades.
