외식급식산업에 있어서 국(탕)이 고객 충성도에 미치는 영향 (Effect of Korean Soup(Tang) upon Customers Royalty in the Food Service Industry in Korea)

  • This study has been designed to stress the thoughts that soups should be offered taking into account customer's preference aimed at leading to eventual customer's satisfaction and the importance that Korean traditional food should take the lead in shifting dining-out industry's paradigm to customer-orientation instead of product-orientation. From August 15 through August 30, 2003, the drawn-up questionnaires were handed out to 500 numbers of adults aged over 20 living in Seoul, metropolitan city of Korea and the finally collected 361 questionnaires from them have been analysed as a subject for this study. It showed that the male respondents(44%) dined out much more frequently than the female respondents(35%) and their rate of 5,000-7,000 Won for a meal was most preferred as their average expenditure at one sitting in the restaurant. When eating Korean food at home or in a restaurant, the majority(5l,3%) of them think the soups(Tang) should be served coupled with their ordered meals. Among soups using flesh and meat as a staple material, they most preferred beef & bone soup(33.2%), followed by beep rib soup(30.4%) and beef soup with seasoned red pepper(l0.8%), and among soups using fish & shell and crustacean as a staple material, most preferred were hot fish soup(20.6%), loach soup(l5.2%) and hot crab soup(11.4%). Among soups using beans as a staple material, they most preferred soybean paste stew(33.2%), uncurdled soybean curd stew(29.4%) and Dambuk stew(l5.8%). Among soups using fowls and birds as a staple material, chicken soup with ginseng(51.9%), plain chicken soup(l8.4%) and chicken soup with red pepper sauce(l2.3%) falls on the most preferred. Among soups using vegetables and seaweeds as a staple material, most preferred are sea mustard soup(25.3%), Kimchi soup(16.8%), soybean paste soup with Chinese cabbage(13.0%) and bean sprout soup(10.1%). The soups(Tang) most preferred in the morning time are those soups whose staple materials are vegetables and seaweeds, such as sea mustard soup, bean sprout soup, Kimchi soup and soybean paste soup with Chinese cabbage while the soups most preferred for the lunch time are beef & bone soup, beep rib soup, chicken soup with ginseng and beef soup with seasoned red pepper while beef soup with seasoned red pepper, beef & bone soup, soybean curd stew and Kimchi soup are most preferred soups for the dinner time. The survey showed that 41 % of the subject preferred chicken soup with ginseng for a food considered good by themselves for their health. The male respondents preferred Bosin-tang(soup of edible-dog meat) than the female counterparts did, while the female respondents preferred chicken soup with ginseng than the male counterparts did. The survey showed that when eating korean traditional food, 70% of the subject are visiting a restaurant where soups are cooked delicious while 61% of the subject think that price does not matter if only food tastes good, which is reflecting that taste of food is a decisive factor in selecting menu rather than its price is. In conclusion, you can say that taste of soup is the most important factor creating steady customer in the restaurant, taking it into account Korean people most prefer their traditional food when dining out.

금산지역 토양별 인삼내 비호정성 원소 특성 (Incompatible Element Characteristics of Ginsengs Growing by Different Soils of the Keumsan)

  • 충남 금산군 지역에 분포하는 세 토양인 화강암, 천매암, 셰일 지역을 선정하여 토양 시료와 함께 1년, 2년, 3년생의 인삼 시료를 채취하여 비호정 원소를 분석하였다. 토양의 경우 화강암 지역이 대부분 원소에서 높았으며 원소 쌍들과의 관계에서 셰일이 가장 높은 상관관계를 보였다. 동일 토양내 인삼 연령별 비교에서 원소 대부분이 화강암 및 천매암 지역은 2년생이,셰일 지역은 3년생이 높게 나타났다. 원소쌍에서 전 지역이 정의 상관관계가 우세하였고 2년생에 비해 3년생에서 우세하였는데 이는 지역에 관계없이 인삼의 연령이 증가함에 일정량의 원소를 흡수하기 때문으로 생각된다. 동일 연생 인삼의 지역적 비교에서 화강암 지역은 2년생의 경우 Rb, Cs, Ga가 낮았고, 3년생은 대부분 원소가 낮았으며, 셰일 지역은 대부분 원소에서 높은 함량을 보였는데 이는 토양 내의 광물 특성으로 해석된다. 인삼의 부위별 비교에서 원소 대부분이 지상부가 높은 함량을 보였고 2년생에 비해 3년생이 높은 상관관계를 보였는데 이는 연령이 증가함에 따라 이들 원소들의 상부 및 뿌리 내 흡수정도가 거의 같아지기 때문이라고 생각된다. 토양과 인삼 평균치와의 비교에서 Ba, Sr 외 원소가 토양에서 높았다.

홍삼사포닌 Rg3가 함유된 샴푸의 탈모방지와 양모개선 효과 (The Efficacy of Shampoo Containing Ginseng Radix on Preventing Hair Loss and Promotion Hair Growth)

  • 최근 들어 홍삼의 발모효과가 실험적으로 입증이 되었으나 임상적인 효능에 대해서는 아직 연구가 부족한 실정이다. 본 임상시험에서는 홍삼사포닌 Rg3 0.003%가 함유된 샴푸(Somang Co., Korea)의 사용에 따른 탈모방지 및 발모 탈모 및 발모효과를 인체적용시험을 통해 확인하고자 한다. 탈모로 진단된 42명의 환자가 참여하였으며, 홍삼사포닌 Rg3 0.003%가 함유된 헤어샴푸를 사용하는 군과 홍삼사포닌 Rg3 0.003%를 제외한 헤어샴푸를 사용하는 군으로 나누어 16주간 제품 사용 후 모발의 굵기, 밀도, 성장속도를 측정하였고, 탈모 개선정도의 전문가 육안평가 및 피험자의 주관적 만족도로 평가하였다. 또한 제품사용의 피험자 주관적 기호도를 추가적으로 조사하였다. 시험 결과 시험제품 사용 후 16주에서 모발의 굵기, 모발의 밀도 및 모발 성장속도가 모두 통계적으로 유의성 있게 증가하였으며 전문가 육안평가와 피험자의 주관적 설문평가, 환자의 기호도 면에서도 시험제품이 더 우수한 결과를 보였다. 결론적으로 홍삼사포닌 Rg3가 함유된 샴푸는 피부에 자극 없이 탈모방지 및 양모개선 효과에 도움을 주는 제품으로 판단된다.

  • 폴리아세칠랜계 화합물이 함유된 인삼의 석유 에텔 추출물은 시험관내 실험에서 Sarcoma 180, Walker carcinosarcoma 256, $L_{1210}leukemic$ lympocyte의 성장을 억제한다. 우리는 석유 ether 추출물로 부터 몇가지 포리아세틸렌계 화합물을 분리하여 화학구조를 밝혔다. UV, IR $^{1}H$ NMR, $^{13}C$ NMR, EI mass, CI mas, 원소분석과 산화 또는 산촉매 가수분해와 같은 화학적인 방법으로 얻어진 자료에 근거하여 이들은 heptadeca-1,9-dien-4,6-diyn-3-ol, hepatadeca-l-en-4.6-diyn-9,10-epoxy-3-ol 및 hepatadeca-1,8-dien-4,6-diyn-3,10-diol로 밝혀 졌다.

Acute and repeated dose 26-week oral toxicity study of 20(S)-ginsenoside Rg3 in Kunming mice and Sprague-Dawley rats

  • Background: 20(S)-ginsenoside-Rg3 (C42H72O13), a natural triterpenoid saponin, is extracted from red ginseng. The increasing use of 20(S)-ginsenoside Rg3 has raised product safety concerns. Methods: In acute toxicity, 20(S)-ginsenoside Rg3 was singly and orally administrated to Kunming mice and Sprague-Dawley (SD) rats at the maximum doses of 1600 mg/kg and 800 mg/kg, respectively. In the 26-week toxicity study, we used repeated oral administration of 20(S)-ginsenoside Rg3 in SD rats over 26 weeks at doses of 0, 20, 60, or 180 mg/kg. Moreover, a 4-week recovery period was scheduled to observe the persistence, delayed occurrence, and reversibility of toxic effects. Results: The result of acute toxicity shows that oral administration of 20(S)-ginsenoside Rg3 to mice and rats did not induce mortality or toxicity up to 1600 and 800 mg/kg, respectively. During a 26-week administration period and a 4-week withdrawal period (recovery period), there were no significant differences in clinical signs, body weight, food consumption, urinalysis parameters, biochemical and hematological values, or histopathological findings. Conclusion: The mean oral lethal dose (LD50) of 20(S)-ginsenoside Rg3, in acute toxicity, is above 1600 mg/kg and 800 mg/kg in mice and rats, respectively. In a repeated-dose 26-week oral toxicity study, the no-observed-adverse-effect level for female and male SD rats was 180 mg/kg.

인삼 표면세척 시스템 개발 (Development of a Ginseng Surface Washing System)

  • 인삼을 전처리, 세척, 탈수, 건조 후 포장까지 인삼표면세척 시스템 활용을 통하여 선도유지 및 안전성이 확보된 인삼을 이용하고자 연구를 수행하였다. 본 실험에서 세척인삼 품질, 원물 품질 등을 단위 공정 별로 경도, 중량, 온도변화를 비교한 결과 일반인삼의 경우 이송 컨베어 속도는 1.0 LPM, 수압은 $35\;kg/cm^2$, 분사각도는 $40^{\circ}$, 분사높이는 5 cm, 분사노즐 왕복속도는 1 sec, 탈수풍속은 30 m/sec, 건조온도는 설정온도 $35^{\circ}C$에 내부온도 $30{\sim}33^{\circ}C$로 운영조건을 확립하였다. 그리고 황낀 인삼은 이송 컨베어 속도 0.8 LPM, 수압 $40\;kg/cm^2$, 분사각도 $40^{\circ}$, 분사높이 3 cm, 분사노즐 왕복속도 1 sec, 탈수풍속 30 m/sec, 건조온도는 설정온도 $35^{\circ}C$에 내부온도 $30{\sim}33^{\circ}C$가 가장 우수하였으며, 색도변화를 통한 분석 결과에서도 같은 조건의 설정이 우수하게 나타났다. 이상의 연구결과로 인삼 표면 처리시스템을 개발하였고 현장적용을 하기위한 수확 후 인삼을 세척 ${\to}$ 살균 ${\to}$ 탈수 ${\to}$ 건조 ${\to}$ 포장할 수 있는 기반기술을 활용한 인삼표면 세척 시스템이라고 판단된다.

  • 유지의 자동산화과정중의 ${\alpha}-$, ${\gamma}-Tocopherol$${\gamma}-tocotrienol$에 대한 주요 산화생성물로 quinone이 확인되었으며, 미량의 dimer 혹은 trimer로 추정되는 성분이 검출되었다. 생성된 quinone은 micro column을 사용하여 분취한 후 np-와 rp-HPLC로 분석하였고 MS로 동정하였다.

  • 고온성이며 호알칼리성인 Bacillus sp. TA-11이 생성하는 Invertase의 생합성 조절 기작을 규명하고자 먼저 이들의 유도와 억제에 관하여 검토하였다. Invertase는 10mM sucrose을 함유한 생합성 조절배지에서 3시간에 효율적으로 유도되었고 glucose는 sucrose에 의한 invertase 유도를 inducer exclusion 방식으로 억제시켰다. CAMP의 첨가로 glucose에 의한 catabolic repression이 다소 줄어들었다.

당뇨병 환자의 건강기능식품에 대한 이용 실태 및 주관적인 인식에 관한 조사 (A Study on Status and Subjective Recognition of Functional Foods Among Diabetic Patients)

  • In Korea, there are many kinds of functional foods to manage diabetes, however, they have not been evaluated or investigated systematically. The purpose of this study was to investigate the status of recognition and intake of functional foods among diabetic patients. The study subjects were 307 patients(male 135, female 172), who diagnosed with type 2 diabetes at Seoul National University of Bundang Hospital. Questionnaire survey was done from July to October, 2004 for the characteristics of patients and factors related to the use of functional foods. The mean age of the subjects was 64$\pm$10.2 years, and the mean duration of disease was 9.5$\pm$8.90 years. Approximately 49.8% of the subjects had experience to use functional foods at least once in past. Total number of functional foods used were 56 types. Red ginseng was used most frequently(27.9%), then followed by Silkworm powder(13.6%), Vitamin supplements(10.4%), Mulberry tree(7.1%), Cordyceps sinensis(6.8%) and Ginseng(4.2%). Functional foods were introduced by their friends.relatives(38.4%), family(29.1%), internet(13.9%), and the mass media(10.6%). Among respondents, 94.7% took functional foods with conventional diet therapies(diet, exercise and medication). The purpose of functional food use was to control blood glucose level(49.0%), to relieve fatigue and improve stamina(19.9%), to treat and prevent a disease(17.2%) and to help blood circulation(7.9%). Upon the question of further recommendation of functional foods to others, 74.8% of the subjects answered negative response. However, 12.6% of the subjects showed the further intention of using new product. Therefore, to guide the appropriate use of functional foods for diabetic patients, diabetic educator should provide the knowledge of the efficacy of functional foods and the desirable guidelines.

한의약기(韓醫藥器)문양 연구 (A Study on Patterns on Korean Medical Containers)

  • Patterns are symbolic expressions of life style or sentiment of people as a product of culture. Furthermore, it is a type of language that the shape or implication does not change much over time. Patterns shown on the Korean medical containers are related to human life and health that they are not very diverse and splendid but closed used in real life. The medical containers include the alcohol container or tea-ware in broad sense, but under this study, it would be handled only for the Korean medical containers directly used to protect human health and treatment of diseases. They would be the Medicine Mortar and Pestle that is used to grind the herbal medical ingredients, pots that hold the liquid decoction, containers to keep the medical ingredients in general conceptual use for medical purposes. The patterns inscribed are classified in animal pattern, plant pattern or alphabet pattern. Turtle, crane, ginseng, and life patterns have the contemplation to pray for long life without disease or good fortune, while plum pattern, dragon pattern and the like are used in the medical containers used mainly in royal families with the social status and dignity shown. As such, patterns have not only ornament elements but also the symbolic implication to represent long life without illness for human. It provides the basic data of medical wisdom contained in the pattern and willingness of human to protect life from illness. On the basis of such research, it would require ensuing studies to make comparison and analysis with the medical containers with the patterns in the adjacent countries in the days to come.
