This study was determined to change in chemical composition of Mume(Prunus mume Sieb. et Zucc) fruits during maturation. There were no differences in the soluble solid and moisture content among varieties, but the soluble solid slowly increased with maturing. The pH and ash content were slightly decreased with maturation. The green color of 'Nanko' fruits was maintained for 92days after full bloom at the greeness value of -3.81 Whereas, the chlorophyll content of 'Koume' fruits remarkably decreased and it was not suitable for the processing of immature green Mume fruits. The titratable acidity increased during maturation. The organic acids were mainly composed of malic acid and citric acid. The malic acid was significantly decreased during maturation, whereas citric acid increased. Major free sugars and sugar alcohols were sucrose, glucose, fructose, sorbitol and maltose. Sucrose content increased as the maturity proceeded, whereas glucose and sorbitol were decreased. The total contesnt of free amino acids decreased with maturation and the total free amino acids in the flesh of fruits were occupied by asparagine at the range of 60 to 78%.
The author examined the origins, the course and the period of introduction of 94 types of vegetables and fruits mainly used in Korea. Then, based on it, the author looks into the relationship between food culture in Korea and those in the Silk Road. Among the vegetables and fruits, 57 types are not originated from Korea 17 types of stem and leaf vegetables, 9 types of root and fruit vegetables. 7 types of fruits, 6 types of seed, 6 types of pomes, 2 types of berries and grapes, and 1 type of nut. Their origins are spread in Europe, Southwest and South Asia but interestingly, they are located near or along the Silk Road. Therefore, it can be presumed that the vegetables and fruits were introduced into Korea from its neighboring countries by way of the Silk Road even before the Three Koreas Period and they were eaten widely in the Joseon Dynasty. Thus, the Silk Road helped some of the vegetables and fruits used in Korea to be introduced into Korea and eventually, contributed to diversifying Korean food culture. The cultural exchange is not one-way but two-way communication and the cultural exchange through the Silk Road is no exception. It is certain that by way of the Silk Road, foods and recipes were introduced into Korea from other countries but at the same time, Korean foods and recipes were propagated to other countries. In the future, more researches and studies should be conducted to find out how the foods and recipes are exchanged among the countries by the way of the Silk Road.

High-quality and high-phytonutrient watermelon fruits have strong market opportunities besides their health related benefits. Hence, investigating quality and nutritional related traits of watermelon genetic resources could provide important baseline data in breeding for increased lycopene content thereby increasing the marketability of watermelon. To this end, we have examined some fruit morphological traits and lycopene content of 105 genetic resources. The morphological characters were recorded on the field and inside laboratory and lycopene was measured using spectrophotometric and HPLC methods. Watermelon fruits have shown a diverse morphological characters. Red and pink fleshed fruits dominated in the entire collections. Fruits with higher thickness of rind were found to exhibit less soluble solid content (SSC). Korean origin fruits were characterized by intermediate SSC while USA, RUS, TJK, TKM, TWN, and URY originated fruits had the highest SSC. The lycopene content varied between 41.37 and 182.82 ㎍/g, 2.81 and 163.72 ㎍/g, and 3.54 and 255.47 ㎍/g using HPLC, UV-Vis, and microplate reader instrumnets, respectively. Red- and pink-fleshed fruits had the highest levels of lycopene content compared to the yellow- and orange-fleshed. Lycopene content had a significant positive correlation with SSC, however, no correlations were detected between lycopene and other quantitative fruit morphological characters.

Reducing sugar content of persimmon fruits was increased by applying food-garbage compost Dungsi was brighter with yellow color than that of control. The Gabjubaekmok was darker than that of control with red color. It was suggested that taste of astringent was reduced because total phenol and soluble tannin contents were reduced by applying food-garbage compost. The vitamin C content of persimmon fruits during storage was higher than that of control. Stability of persimmon fruits by applying food-garbage compost and non-food garbage compost was about the same at room temperature. At low temperature, hardness of persimmon fruits was maintained for 20 days. Hardness and reducing sugar contents of persimmon fruits were increased by applying food-garbage compost. The result was shown that there was no effect on composition of persimmon fruits by applying food-garbage compost and maintaining hardness at room temperature, but at low temperature, the composition of persimmon fruits was changed.

The charantin contents of leaves, stems, female and male flowers, and fruits in bitter gourd (Momordica charantia) were analyzed at different harvest seasons to investigate the availability of potential edible parts other than fruits. The charantin contents of fruits ranged from 14.7 to $16.0mg{\cdot}g^{-1}$ dry weight (DW) and those of leaves ranged from 131.4 to $138.0mg{\cdot}g^{-1}DW$, which was eight times higher than in fruits. The charantin contents of female and male flowers and stems were also significantly higher than those of the fruits. The ratio of total charantin content was highest in leaves (48%) of DW, followed by female flowers (20-21%), male flowers (14%), stems (12-13%), and fruits (5%). The charantin contents of fruits harvested 14 days after fruit setting was higher in June to mid-July (20.2 to $23.3mg{\cdot}g^{-1}DW$) than in late July to late August (13.3 to $19.4mg{\cdot}g^{-1}DW$). The higher the fruit weight, the lower the charantin contents, which showed that a negative correlation exists between fruit weight and charantin contents in bitter gourd. These results suggest that to obtain bitter gourd fruits with high charantin contents, fruits should be harvested until mid-July when fruit growth is fast and temperature is high. In addition, leaves, stems, and female and male flowers of bitter gourd can be used as for food, which are known to reduce blood sugar level.

BACKGROUND: This study was conducted to investigate the levels of pesticide residues in fruits and to assess their risk to human health. METHODS AND RESULTS: Monitoring of 215 samples of fruits collected from local markets in incheon during 2013 was performed. 259 pesticides were analyzed by multi-residue method and Quick, Easy, Cheap, Effective, Rugged, and safe/Mass/Mass(QuEChERS/MS/MS) method using Gas Chromatography-Electron Capture Detector/Nitrogen Phosphorus Detector(GC-ECD/NPD), GC-MS, LC(Liquid Chromatography-Mass/Mass(LC-MS/MS) and High Performance Liquid Chromatography-Photodiode Array/Fluorescence Detector(HPLC-PDA/FLD). In 56.3% of the samples detected pesticide residues and were not found to exceed Maximum Residue Limits(MRL). The highest detected samples were found in citrus fruits(83.9%). Among the detected compounds, carbendazim(13.1%), imazalil (11.7%), thiabendazole(10.7%) and fludioxonil(9.8%) were frequently found in fruits. A risk assessment of pesticide residues in fruits was performed by calculating Estimated Daily Intake(EDI) and Acceptable Daily Intake(ADI). Also, we were evaluated removal efficiency of pesticide residues by washing and peeling. The removal efficiency of pesticide residues in citrus and tropical fruits by peeling processes were 91.6%. After the washing process, the removal rates were 43.1%(Cherry, Grape, Blueberry). CONCLUSION: The level of pesticide residues in fruits was within the MRL. The range of %ADI values was from 0.00011 to 0.98795%. The process of washing or peeling reduces the level of pesticide residues. The results of this research concluded that the detected pesticides are not harmful to human being.
The conditions of cold storage of Citrus unshiu Marc. var. miyagawa produced in Cheju were investigated. Compared to the citrus fruits stored at room temperature, the content of soluble solids, total sugar, vitamin C and specific gravity decreased slightly on the fruits stored at $4^{\circ}C$ and 87% relative humidity. Decay ratio and weight loss were below 10% on keeping freshness relatively till late of March during cold storage. Weight loss, decrease of firmness and soluble solids occured gradually during cold storage. Nevertheless seal-packaging with 0.02 mm LDPE film or wax-coating of citrus fruits were effective on weight loss and appearance, decay ratio increased for long-term storage. It was needed to control humidity in cold chamber for preventing from decay and weight loss. Edible part ratio was decreased gradually by respiration, and peel and tissue of fruits were softened slightly by 60 days of cold storage. Decay ratio and weight loss of full-ripened citrus fruits were little during the storage for 100 days, compared to the fruits harvested early. Appearance and taste of citrus fruits stored for 4 month were good relatively, but decay occured rapidly on seal-packaging fruits putting out of cold room for a few days. Because of the difficulty of long-term storage for early variety of Citrus unshiu, the conditions and periods of cold storage would be determined after considering the physicochemical properties of fruits.
The effects of modified atmosphere (MA) storage far fresh red pepper and red bell pepper fruits were investigated with storing in high and few density polyethylene films (HDPE, LDPE) with various NaCl contents(0 g, 15 g, 20 g, 25 g). During the storage of pepper fruits, the weight loss, color change, mold emergence, and firmness were evaluated. The weight loss of pepper fruits packaged in HDPE and LDPE without NaCl was 3∼5%, even though it was 6∼19% in pepper fruits packaged with NaCl. The lutes of mold emergence of red pepper and red bell pepper fruits were lowered to 20∼45% as stored in HDPE and LDPE with NaCl but those of fruits stored in films without NaCl were high as 55∼65%. The color and firmness of pepper fruits were not much changed in comparison with those of non-packaged fruits as stored in HDPE and LDPE with or without NaCl.
In order to clarify the removal of astringency in persimmon fruits (Diospyros koki L.) and its mechanism, a comparative histology of tannin cells in tile cultivars of astringent persimmon fruits (Sangju Dungsi. Daegu Bansi. Cheongdo Bansi) and a sweet persimmon fruit (Fuyu) was observed. Tannin cells were widespread in all fruits tissue expert for tissue of ovule before full blossom. The epidermal cells of ovary. flower and calyx consist of tannin cell. Arrangement of tannin cells has radiated type toward the upper directions in the calyx. The major part of seed coat consisted of tannin cells. The epidermal cells of persimmon fruits were consisted of small tannin cells, and the inner part of epicarp of the astringent persimmon was consisted of stone cells, but the sweet persimmon was consisted of parenchymatous cells. It was suggested that differantiation of tannin cell In persimmon fruits occured until about the middle of August. Some tannin cells of matured astringent persimmon fruits was coagulated and wall of tannin cell produced protuberance, and most of tannin cells of matured sweet persimmon fruits was coagulated or ruptured.
Skin blackening is a serious postharvest disorder occurring in 'Fuyu' persimmon fruits (Diospyros kaki, 'Fuyu'). Phenolic content, polyphenol oxidase (PPO) and peroxidase (POD) activity, and lipid saturation were investigated in skin tissue of 'Fuyu' fruits. The phenolic compounds were accumulated unevenly on fruit skin depending on sunlight exposure, i.e., the most accumulation on sunny side and the least on the opposite, shaded side. The fruits harvested from shaded branches inside the canopy showed relatively even distribution of phenolic compounds in the skin. The activity distribution of PPO and POD were also uneven but only in fruits suffering f rom skin b lackening disorder, w ith the h ighest and the lowest a ctivity of PPO and P OD, respectively, in the blackened area of the fruit. When the sunny, southern sides of fruits were marked at harvesting time and fruits were stored at low temperature, a round black spot, as a symptom of skin blackening disorder, developed during storage exactly on the marked region. In addition, the sunny side of fruit showed higher lipid saturation, thus indicating adaptation to high temperature caused by the sunlight. These results suggest that the skin blackening disorder of 'Fuyu' fruits can be considered as a kind of chilling injury symptom that develops on the high-temperature-acclimated skin tissue of sunlight-exposed fruits when they are later exposed to low temperature.
