A Study on Dietary Behaviors, and the Health of Male Adults according to Their Exercising Habits (운동 여부에 따른 성인 남자의 식습관, 식행동 및 건강관심도에 관한 연구)

  • This study is conducted to compare the problems affecting dietary habits and health status between a long-term exercise group and non-exercise group of males older than 50 years. Most subjects of the two groups consider regular exercise to be the most important factor for maintaining health, and recognize hypertension as the number one concern. The most common nutritional supplement among subjects is multiple vitamins, and sleeping time range from 6~8 hours. Breakfast fasting rate was 15.9% among non-exercise group (NEG), where overeating and eating out rates were higher among exercise group (EG) when comparing to NEG. Fasting rates of breakfast, and consumption rates of milk and dairy products, vegetables such as kimchi, and fruits and fruit juices are higher among the EG. Overeating and eating out rates are lower among NEG, whereas eating rates of proteins like meat, fish, eggs, beans, fried foods, high-fat meats carbonated drinks, ice cream, and salt intakes are higher. Rates of health, dietary habits, and nutrient intakes are higher among EG. Energy intakes among the two groups were below the standard level, Vitamin $B_2$ intake is low in EG, and folic acid and calcium intakes were higher in NEG. The exercising group care more about health, eating habits and nutrient intakes, and low smoking rates are being observed. Thus, specific dietary improvement programs for adult men, are required, and it is necessary to consider the practice of nutrition education.

Screening of Anti-stress Activities in Extracts from Korean Medicinal Herbs

  • When we carried out an anti-stress study using the extracts of A. senticosus, R. coreanus, F .japonica root, and A. fruticosa fruit grown in Korea, the results showed that blood cell counts returned to normal levels fastest with R. coreanus after stress application. The total WBC count was decreased in mice due to stress, whereas the number of lymphocytes was increased. The serum glucose level was higher in the control group compared with the comparative stress group. The weight of each organ to returning to normal level was significantly faster in those mice treated with the extracts compared with those in control groups. Especially, it even return to that of normal level with R. coreanus extract, suggesting that the administration of the plant extracts in this study would affect hormonal activities in the body to increase immune activities. F. japonica root that showed the highest anti-stress activities maybe effective for lipid and carbohydrate metabolism. These results would provide basic data to examine anti-stress effects of natural plants. Further in-depth studies could contribute in the development of functional plant materials with anti-stress activities.

Isolation of New Strain of Cordyceps militaris HB8 and Optimal Condition for Production of Adenosine and Cordycepin in Fruit Body

  • Cordyceps has been used in traditional Chinese medicine more than 2000 year ago. In this study, the new Cordyceps militaris was founded and isolated from O-dae mountain in Korea, and was identified its genetic characteristics. The newly isolation strain HB8 was most closet to Cordyceps militaris W141449 (99.82%), Cordyceps militaris JLCY-LI819 (99.82%) and Cordyceps militaris 4642 (99.81%), respectively. the genotypic result was show that train HB8 was belonging to the Cordyceps militaris genus, therefore, Cordycep militaris HB8 proposed with accession number MT835161. This study we find the optimal condition for production of cordycepin from Cordyceps militaris HB8 was 8 mg/g (200 g of pupa, 1 g of KH2PO4, 0.5 g of K2HPO4, 20 g of glucose, 1 g of MgSO4, 0.05 g of vitamin B1, and 1 mg of NAA per liter; light condition 300-700 Lux and day/night was 14 h/10 h) and the optimum condition for the production of adenosine was 2.6 mg/g (15 g of skim milk powder, 1 g of KH2PO4, 0.5 g of K2HPO4, 20 g of glucose, 1 g of MgSO4, 0.05 g of vitamin B1, and 1 mg of NAA per liter; light condition 300-700 Lux and day/night was 14 h/10 h).

Sensory Quality Characteristics of Colombia Coffee under Various Processing and Roasting Conditions of Green Beans (콜롬비아 커피 생두의 가공법과 로스팅에 따른 품질 특성)

  • The objective of this study was to investigate the sensory quality characteristics of coffee under various processing and roasting conditions of green beans. Colombia green bean samples were obtained from three processing methods: natural, pulped-natural, and washed methods. The green beans were roasted differently according to Agtron number: light (Agrton #65), medium (Agtron #55), and dark (Agtron #45). Moisture content, density, color value, pH, and total dissolved solid contents (TDS) were measured, and quantitative descriptive analysis (QDA) with 23 sensory attributes was performed for nine coffee samples. Hunter L values were significantly elevated with the degree of processing but reduced with roasting intensity. The pH values of the nine coffee samples were 5.6~6.2 and significantly increased with intensity of roasting. TDS decreased with an increase in processing and increased with roasting intensity. QDA results show that smoky aroma and nutty and chocolate flavor significantly increased while fruit and floral aroma decreased with intensity of processing. The attributes of brownness, oily surface, smoky aroma, bitter and burnt flavor, and greasy and heavy mouthfeel significantly increased while fruity and floral aroma, black tea, sour and umami flavor, pureness, and softness decreased as roasting intensity increased. Principle component analysis showed the overall significant relationships between 23 sensory attributes and nine coffee samples under different processing and roasting conditions.

Mirid Bugs (Heteroptera: Miridae) on Grapevine: Their Damages and Host Plants (포도에 발생하는 장님노린재(노린재목, 장님노린재과)의 종류, 피해 및 기주식물)

  • The mirid bug damages on grapevine were observed not only on young shoot and leaves (decoloration, deforming, and perforation) but also on fruits (black spot, corky scar, and young fruit shattering). Among 159 fields surveyed throughout the country, 113 fields (71%) were damaged, and the damages were relatively severer in the chief producing districts of grape vine, such as Gimpo, Anseong, Naju, Gimcheon, Buyeo, Daejeon, Yesan than other districts where grapevine yards were not concentrated. The severest shoot damages were observed in two grape vine yards of Naju (85%) and Gimpo (65%) in 1999. Three species of virid bugs were recognized on grape vine tree, Apoygus spinolae (Meyer-Dur), Apolygus lucorum (Meyer-Dur), and Orthotylus (Melanotrichus) flavosparsus(Sahlberg). Among them, A. spinolae was dominant species in the number of specimens collected. A. spinolae were collected on 10 host plants including Vitis vinifera L., Prunus armeniaca var. ansu Max., and prunus serrulata var. spontanea(Max.) Wils. and etc., and A. lucorum were collected on 10 species of plants, including Artemisia iwayomogi Kitamura, Artemisia princeps var. orientalis(Pampan) Hara and etc. Both A. spinolae and A. lucorum distributed widely in Korean grapevine yards.

Dietary Habits and Factors Related to Lifestyles in Constipated Female Students (여대생 변비와 관련된 식습관 및 생활습관 요인)

  • The aim of this study was to investigate the dietary habits and the factors related to lifestyles in female college students with constipation. A survey was conducted using a self-administered questionnaires. Two hundred ninety one subjects participated in this study. All respondents were divided into three groups based on their frequency of stool evacuation: 129 subjects (44.3%) comprised the normal group, 109 (37.5%) the mild constipated group and 53 (18.2%) the severely constipated group. Abdominal pain and ailment during evacuation were higher and the feeling of relief after evacuation was lower in the normal group than in the two constipated groups. The greater the symptoms of constipation, the more laxatives were taken. The prevalence of constipation was lower in students who lived at home than in those who lived in other types of residences. The more pocket money the subject had, the more complaints they had about constipation symptoms. Forty three percent of the subjects ate meals regularly. The less frequently they ate meals and the greater the rate of skipping breakfasts and dining-out, the greater were their constipation symptoms. Rice and most of the food items in the vegetable food group were consumed less frequently in the two constipated groups than in the normal group. The severely constipated group ate food items in the fat group less frequently than the normal and mildly constipated groups. The beverage intake of the normal group tended to be lower than those of the two constipated groups; the constipated groups consumed fruits and vegetable juices less frequently and coffee and tea more frequently. The severely constipated group ate the least number of food items in the vegetable & fruit and fat food groups. Therefore, dietary habits and factors related to lifestyles should be changed through nutrition education programs aimed at improving the symptoms of constipation in young women.

Investigation on the Technology Trend in Omija by the Patent Index (특허지표를 통한 오미자 기술 동향 연구)

  • The Omija (Schizandra chinensis Baillon) is a fruit native to northeast Asia that is cultivated in South Korea and China. Using 1,938 valid patents of 6 group countries, we analyzed the patent trend based on year, countries, applicants, and technology. The technologies are categorized the 10 sub-technologies such as medicine, quasi-drugs, food, feed, cosmetics, cultivation, genome, manufacture, preprocessing, and etc. The technology level and competitiveness are analyzed using patent index such as cites per patent, patent impact index, patent family size and technology strength. In Korea, patent number rapidly increasing and individual technical level is lower than other countries. However, overall technical competitiveness is estimated high due to multiple patents. We suggest that cosmetics and cultivation fields are most likely to be developed in future omiza technology development in Korea. Our study will provides to the information of technical trend to support performing of new projects for Omija plant.

RISK FACTORS FOR ORAL CANCER ; A CASE-CONTROL STUDY (구강암의 위험요인 분석을 위한 환자-대조군 연구)

  • The purpose of this study was to investigate the relationship between oral cancer and such factors as smoking and drinking pattern, oral health status, dietary intake pattern, socio-economic status. Oral cancer patients and other disease patients who visited Yonsei University Dental Hospital from May to September in 2000 were selected as the study subjects. The numbers of cases and controls were 41, 108, respectively. Two groups were matched with age and sex for case control study. Oral examination and questionnaires survey was performed by the dentist. To assess the strength of associations between oral cancer and other variables, chisquare tests were performed. The results were as follows : 1. The durations of smoking and alcohol drinking were not related significantly with oral cancer. But the doses of smoking and alcohol intake increased the risk of oral cancer significantly(OR=2.52, 4.11, p<0.05). 2. Denture wearing, the number of missing teeth and spicy and salty food, coffee, tea and fresh fruit intake frequency did not significantly increase the risk of oral cancer. But low education level, residency in rural area increased risk of oral cancer significantly(p<0.01).

Revision and Application of the Target Pattern in Food Guidance System - Administered to 2nd grade middle school students - (권장식사패턴의 수정안 고안 및 적용 - 중학교 2학년 남녀 학생의 식단계획 작성 및 평가 -)

  • Objectives: The objective of this study was to revise the target pattern in food guidance system for adolescents' balanced menu planning. Methods: The food groups in the target pattern were divided into detailed food items, and intake number were assigned to each food items based on the revised standard food composition table. The validity of revised target pattern was examined. Menu planning according to the revised target pattern was made available to 305 male and female middle school students and the nutritional assessment of the menu plan were carried out using SPSS WIN 12.0. Results: The energy contents, energy contribution ratios of carbohydrate, fat, and protein, and 4 minerals' and 6 vitamins' contents of the revised target pattern were adequate. The average energy contents of the menu planned according to revised target pattern were 400~500 kcal higher than that of the revised target pattern when the revised standard food composition was applied. The energy contribution ratios of fat were 28.9%, close to maximum of acceptable macronutrient distribution range (AMDR) (30%), and that of carbohydrate were 54.5%, lower than minimum of AMDR (55%). The nutrient adequacy ratios (NARs) of calcium and vitamin C were less than 1.0. According to index of nutritional quality (INQ) of food items, kimchi, milk dairy products, and soybean curd were energy efficient source for calcium, kimchi, fruit, vegetable and seaweed were energy efficient source for vitamin C, with INQ of food items were higher or close to 2.0. Kimchi was the best energy efficient source of calcium and vitamin C. Conclusions: Revised target pattern based on the adolescent's foods intake was not good enough for balanced menu planning by adolescents, because what they ate and what they wanted to eat were very much different. Detailed guidance for food selection is necessary in each food items.

Effects of Maleic Hydrazide on the Inhibition of Lateral Shoots Growth in Grapes (MH(Maleic hydrazide)처리가 포도 부초 생장억제 및 품질에 미치는 영향)

  • Spray of maleic hydrazide (MH) was confirmed to be highly effective on the inhibition of lateral shoot growth regardless of grape cultivars and application concentration examined in this experiment. The optimal spray times were 30 days aft er full bloom in 'Kyoho' and 35 days in 'Campbell Early'. However, the optimum season of application should be adjusted depending on the vine vigor. The apical buds of lateral shoot was significantly affected at the concentration of $3,900mg{\cdot}L^{-1}$ resulting in the death and/or abscission. Thus the optimal concentration of MH seemed to be $1,950mg{\cdot}L^{-1}$. The inhibition effect by MH application was derive d from the decrease of node number and length. No adverse effect on fruit quality was found by MH application. In contrast, there was a tendency of anthocyanin in crease in 'Campbell Early' grapes. Results indicated that MH could be an effective agent to reduce the labor charge through the inhibition of later shoot growth.
