프랜차이즈 베이커리 전문점의 브랜드 풍문이 브랜드 태도와 브랜드 충성도에 미치는 영향 (The Effect of Brand Hearsay of Franchised Bakery Stores on Brand Attitude and Brand Loyalty)

  • Purpose: Brand hearsay refers to information that can be acquired from advertisement, media publicity, and word-of-mouth prior to experiencing products or services of brands. Previous information about brands obtained through brand hearsay affects consumer behavior in choosing brands. Moreover, brand hearsay is an effective communication method in promoting brands to consumers. Thus, bakery franchises need to improve strengths and differentiate characteristics of their brand, thereby attracting more consumers. Therefore, this study investigates relationships the effect of brand hearsay on consumers' brand attitude and brand loyalty in the context of franchised bakery brands. Research design, data, and methodology: A research model was proposed to examine structural relationships between brand hearsay (advertising, publicity, word-of-mouth), brand attitude, and brand loyalty. An online survey was conducted to consumers who had an experience of visiting a franchise bakery. A total of 513 responses were used for data analysis. SPSS 22.0 was used for analyzing general demographics, and SmartPLS 4.0 was used to test validity and reliability of the proposed model. Result: Among attributes of brand hearsay, advertisement and word-of-mouth had positively significant effects on brand attitude, but no significant effect was found between publicity and attitude. Advertisement had a positively significant impact on brand loyalty, while publicity had a negative effect on brand loyalty opposite to hypothesis. Moreover, brand attitude had a statistically significant effect on brand loyalty. Conclusions: In the context of franchise bakeries, brand hearsay contents may change consumers' attitude toward brands but does not increase brand loyalty. Though media publicity does not affect consumers' attitude toward brands, it may decrease brand loyalty when consumers are too exposed to it. In addition, it is necessary to enhance brand attitude to increase brand loyalty of customers. This study provides bakery franchisors and franchisees information about which type of brand hearsay (e.g., advertisement, word-of-mouth, media, publicity) is effective in enhancing brand attitudes and loyalty of consumers. Further studies may include other variables (e.g., trust) in addition to attitude and loyalty, or compare findings based on brand characteristics (e.g., low-to-medium/high prices, store size).

  • The main goal of this study is to examine the competition intensity in the Korean bakery franchise industry and to identify the core competencies of the industry's leading company, Paris Baguette. The frameworks of PEST analysis, Cross Impact analysis, a Five Forces Model, a Value Chain, and VRIO analysis. PEST and Cross Impact analysis were employed to investigate the industry's external environment, and the results indicated that 'increased attention on corporate's Creating Shared Value (CSV) activities' is the most influential factor among others. The analysis using the Five Forces Model found industry rivalry and substitutes were the greatest threats. Finally, the results of Value Chain and VRIO analysis identified four core competencies of Paris Baguette: its CEO's craftsmanship, e-procurement system, quality of dormant dough, and hub system. Multiple managerial implications are suggested for practitioners in the marketing area, especially in the saturated market environment.

서울지역 소비자들의 세대별에 따른 베이커리 제품 구매 형태 (A Study on the Age-Specific Choice Attributes and Usage Pattern of Bakery Product Purchasers - for the focus on Seoul)

  • 이 연구의 목적은 서울 지역 소비자들의 베이커리 제품 구매자들의 구매 속성과 형태를 성별과 세대에 따라서 조사하였다. 그 결과는 다음과 같다 : 일반적 사항에서 전체 654명 중에서 남성이46.6%, 여성이 53.4%로 여성이 남성보다 좀 더 많았다. 베이커리 제품의 구매속성에서 식생활 유형은 '미각 관심형'이 35.6%로 가장 많았고, 그 다음으로 '건강 관심형'이 35.2%, '편리 관심형'이 16.8%순이었다. 베이커리 제품의 구매 기준은 맛이 79.1%로 가장 높게 나타났으며, '영양' 10.2%, '가격' 6.6%, '위생' 5.5% 순이었으며, 성별에 따라서 유의미한 차이를 나타내었다(p<0.01). 베이커리 이용 형태에서 프랜차이즈 베이커리가 71.1%, 윈도우 베이커리 13.3%, 인스토어 베이커리 8.4%순으로 이용하였으며, 성별에서 유의미하였다(p<0.001).

소득에 따른 베이커리 제품 구매 속성과 형태 (A Study on the Income Choice Attributes and Usage Pattern of Bakery Product Purchasers)

  • 이 연구의 목적은 소득에 따른 베이커리 제품 구매 속성과 형태에 대해서 조사하였으며, 일반적인 사항에서 전체 1,235명 중에서 여성이 59.6%, 남성이 40.4%로 여성이 남성보다 다소 많았다. 베이커리 제품 구매 속성에서 '건강관심형'이 40.0%로 가장 많았고, 거주지에서는 대도시 거주자가 '맛 관심형'이 35.8%인 반면에 중소도시 거주자는 '건강 관심형'(p<0.001)의 45.4%로(p<0.001), 소득이 높을수록 건강에 대한 관심이 높았다(p<0.001). 베이커리 제품을 구매하는 소비자들은 '맛' 67.1%, '영양' 13.7%, '가격' 7.8% 순으로 거주지에 따라 유의한 차이를 나타내었다(p<0.01). 베이커리 이용형태에서는 프랜차이즈 베이커리가 71.1%, 윈도우 베이커리 14.6%, 인스토어 베이커리 8.4%였다.

군 급식에서의 제과제빵 메뉴의 추가 도입에 관한 연구 (A Study on Addition of Bakery Menu in Military Foodservice)

  • This study was carried out to investigate the preference and awareness of bakery menu addition in military foodservice. The results were as follow: 35.2% of the respondents replied that they ate baking menu 4 times a week before the Army enterence. Bakery consmued most frequently were franchise bakery and following by in-store bakery. Instead of the Army's square meal, bakery menu was supplied 2 times a week. 91% of respondent answered 'Like' for baking product. 94% of respondents prefered the square meal to the square meal plus bakery menu. Above respondents would like to have bakery menu 4 times a week, for having a breakfast, between meals or late-night meals. The favorite bakery menu was cakes in the military foodservice. As a result of awareness about bakery menu, Bageteu's awareness was the highest. Finally, this study showed that addition of bakery menu in military foodservice as well as other foodservice were needed.

경북지역 베이커리 제품 구매자의 세대별 선택속성 (A Study on the Age-Specific Choice Attributes of Bakery Product Purchasers on Gyeongbuk)

  • 이 연구의 목적은 경북지역에 거주하는 성별, 세대별 베이커리 제품 구매 선택 속성을 조사하였다. 그 결과는 다음과 같다 : 일반적 사항에서 남자 33.4%, 여자 66.6%로 남자보다 여자가 좀 더 높았다. 베이커리 구매 속성에서 세대별로는 20대는 미각관심형(44.7%)이고, 30~50대에서는 건강관심형(p<0.001)이었다. 베이커리 제품을 구매할 때 요인으로 맛 61.8%, 영양 17.6%, 가격 9.1%였다. 맛에 있어서 세대별로는 20대 73.9%, 30대 65.8%, 40대 55.8% 그리고 50대는 46.0%(p<0.001)였다. 베이커리 제품의 이용 형태는 프랜차이즈 베이커리 70.4%, 윈도우 베이커리 16.0%였으며, 세대별에 따른 프랜차이즈 베이커리 이용 형태는 20대 70.2%, 30대 78.1%, 40대 72.1%이고, 50대 56.0%였다(p<0.001). 베이커리 제품의 선호도에 있어서는 20대는 샌드위치류를 37.3%, 50대는 12.0% 선호하였다(p<0.001). 천연 발효빵은 20대 14.9%, 50대 37.0% 선호하였다(p<0.001).

  • The purpose of a study was the present condition comparative analysis by the case of Bakery in Hotels. The sample was selected first grade hotels in seoul. The method of research was In-depth interview. The questionee were mamagers and chefs each hotel bakery. Interview was accomplished average 45minutes. The period of the research was from 1th of Februrary, 2002 to 28th of February, 2002. The survay was composed of product operation, employee operation, equipment operation, customer operation, sales and bakery characteristics. the data was analyized by SPSS10.0 mean, maximum value and minimum value were salected. Recently, as it is getting higher of importance of bakery in the food service market and many major companies run into a bakery industry, the researches about bakery have advanced, however in fact, materials or researches about hotel bakery are fewer than franchise, in-store bakery and mass production enterprise. Especially, each hotel exchanges their information through benchmarking but data analysis - accurate materials, sales, the present condition equipment is not easy to perform. The purpose of this study was to be helpful for studying hotel bakery for others by analysis. The data was analyzed by each hotel characteristics, employee, equipment, sales, productions and the present condition sales.
