흑염소 추출액 제품에서 품질 지표의 도출에 관한 연구 (Establishment of Quality Index on the Black-goat Meat Extracts)

  • To assess the quality characteristics of black-goat meat extracts and to develop their quality index, the ingredient ratio, manufacturing process and general composition of black-goat meat extracts were investigated. A partial meat of black-goat had high protein content(20.2∼21.6%) and low lipid content (1.9∼3.3%). The crude protein contents, 3.5∼6.1%, of black-goat meat extracts had a high correlation (r=0.88, p<0.01) with black-goat meat content and the soluble solid content had a high correlation (r=0.87. p<0.01) with the subsidiary material content. Two commercial products had total bacteria of 10$^1$∼10$^2$ cfu/ ml. showing the necessity of pressure sterilization of final process.

바이오매스 기반 종이 플라스틱의 제조 및 응용에 대한 고찰 (A Study on Manufacturing of Paper Plastics Based on Biomass and Their Applications)

  • Recently, applications of biomass-based plastics have increased according to the eco-friendly policy of the reduction of carbon dioxide emissions in domestic and foreign government. In this study, a paper plastic composite was produced by compounding polypropylene and micronized paper powder that was prepared using dry pulverization technology. Subsequently, the specimen of paper plastic was verified with mechanical properties, formability and product safety test to confirm the suitable packaging materials for food packaging. Paper plastics showed slightly lower mechanical properties than currently commercialized PP composites. However, paper plastics are valuable materials as environmentally friendly carbon-reducing material because of high biocarbon content, light weight features and applicability of existing manufacturing machines or system.

pH가 곰팡이의 지질 축적과 지방산 조성에 미치는 영향 (Effect of pH on Lipid Accumulation and Fatty Acid Composition of Molds)

  • Effect of initial PH on the lipid accumulation and fatty acid composition of some species of mold were investigated. The maximum lipid content content produced by Aspergillus niger var. macrosporus was 17.5% at PH 3.5, by Aspergillus fumigatus 23.5% at PH 3.5 by Penicillium spinulosum 12.0% at PH 4.0 and by Penicillium notatum 7.3% at PH 4.0. The major fatty acids were palmitic, stearic, oleic and linoleic acid in all experimental molds. At PH from 4.5 to 6.0, the proportion of linoleic acid was increased and those of palmitic and oleic acid were decreased with rising in PH, therefore, degree of lipid unsaturation was increased in all experimental molds.

마늘식초 제조공정을 위한 최적발효조건의 설정 (The Extablishment of Optimum Cultured Conditions for Manufacturing Garlic Vinegar)

  • This study was performed to establish manufacturing of garlic vinegar which has medical action component of garlic and functionality of vinegar. Optimum alcohol concentration, and garlic juice concentration for the mpnufacturing of garlic vinegar were 5%, 10%, respectively, and the optimum conditions were obtained when the fermentation was carried out at agitation of agitation of 120rpm and temperature of 3$0^{\circ}C$. The acetic acid content of optimum condition was 4.87% and thiosulfinate content was 37.5mg after 20days fermentation. The major organic acid compositions in garlic vinegar were oxalic acid, citric acid, malic acid and acetic acid, and free amino acid compositions were aspartic acid, threonine, serine, glutamic acid, alanine etc.

조선시대 전반기의 두장류(豆醬類)에 관한 문헌적 고찰 (A Literature Study on the Jang (Fermented Soybean Sauce) in the First Half of the Joseon Dynasty)

  • This study categorized and made considerations of the fermented soybean pastes into Meju, Chungjang, Si, mixed Jang, and other Jang in accordance with the manufacturing methods described in the fermented soybean paste section of Sangayorok (1450's), Suunjapbang (1540's) and Gyemiseo (1554). These are ancient cook books written in Chinese characters during the first half of the Joseon Dynasty. The content on the fermented soybean pastes recorded in these books included 24 items in Sangayorok, 11 items in Suunjapbang, and 14 items in Gyemiseo. In conclusion, the most important fermented soybean pastes during the first half of the Joseon Dynasty were those used to produce soy sauce-like seasoning for the purpose of a-chieving a salty taste with Meju made of soybeans as the main ingredient. The manufacturing techniques for such traditional fermented soybean pastes have been passed down through history to the present era.

시판 조제 분유의 Allergenicity에 관한 연구 (A Study on the Allergenicity of the Commercial Infant Formula)

  • I experimented on commercial infant formula in passive cutaneous anaphylaxis inhibition methods. I used several guinea pigs for this experiment. The results obtained from this study were as follows : 1) Commercial infant formula showed positive reactions, while soy-based formula showed negative reactions. 2) The products from different companies showed different reactions respectively The products of "A" company showed low allergenicity compared to the products of "B" company. The Products of "C" company showed the lowest allergenicity. 3) It seemed to be that the differences of allergenicity among the products by various companies were caused by the differences of the materials used, the combination ratio of materials, the heat treatment level, and manufacturing processes., and manufacturing processes.

  • The regulations for migration amounts in USA, EU and Korea are investigated to compare the actual overall and specific migration date from plastic food packaging materials. Among the packaging materials regulated in above countries, printing ink solvents on packaging materials is used very widely and sometimes cause off-flavor in the food by migration of residual solvents. Even though migration of the residual solvents dose not generally cause safety problems in the contained food, it certainly can generate off-flavor and finally deteriorate quality of the finished product. Therefore regulation and development of analytical method for amount of residual ink solvents are very important issue in food industry. The headspace analytical method and tenax method for residual ink solvent on food packaging materials were evaluated from the accuracy, precise, swiftness and convenience of viewpoint. Headspace analytical method was selected and recommended for using in food industry field.

  • A simple, accurate GC analytical technique for the determination of phthalates. commonly used as plasticizers during the manufacturing process of PVC bags, in blood component preparations was developed and validated. The blood component preparations were extracted with n-hexane. The n-hexane layer was evaporated to dryness and the residue was dissolved in 1 $m\ell$ of n-hexane and analyzed by GC and GC/MS.   • This research entailed collecting foreign and foreign patents on technologies for process food related ginseng, creating category of patent technology searching and conducting quantitative analysis on each technology component and schematization. A technological trend of treating or preventing multiplicity of diseases has reviewed on 6,255 domestic and foreign patents from the year 1975 to 2004. Considering the increasing number of applicant and application of patent on technology of food manufacturing and processing in the world around year 2000, it seem that these technology is developing. The related technology seems in the initial stage and common research by related technology research centers, government organization and public corporation becomes active.

시판생식의 제조공정 및 최종제품의 미생물분포 (Microflora of Manufacturing Process and Final Products of Saengshik)

  • 생식제품의 미생물학적 안전성을 확보를 위한 기초 자료로 활용하고자 생식제품 및 제조 공정 중에 있어서 Bacillus cereus, Clostridium perfringens, Staphylococus aureus 등 식중독세균을 중심으로 한 자연 환경 유래 위해미생물의 분포 및 주 오염공정을 조사하였다. 생식 원료 중 위해미생물의 검출율이 높은 원료는 주로 곡류이었으며, 원료를 일반수도수로 세척하고 동결건조 하여도 위해미생물은 완전히 제거되지 않아 원료에 대한 비가열살균 대책이 필요할 것으로 사료된다. 한편 최종제품의 위해미생물의 검출율이 원료보다 높게 나타나 제조공정 중 미생물 오염이 증가하는 것을 알 수 있었으며 위해미생물은 원료의 1차 분쇄 후 공정이 진행됨에 따라 증가하였고, 특히 외주분말(하청공장에서 원료를 세척, 건조, 분쇄한 것)을 혼합한 후 균수가 급속히 증가하였다. 공중부유균은 분쇄실과 혼합실에서 많이 검출되었으며, 생식 제조 공정에 사용되는 기계 및 기구에서도 위해미생물이 검출되어 공중부유균과 기계 및 기구의 오염, 그리고 기계에 끼여 있는 분말 찌꺼기가 제조공정 중 생식의 미생물 오염 원인이라는 것을 알 수 있었으며, 따라서 공중부유균의 살균대책 및 하청공장의 철저한 위생관리가 요구되며, 분쇄기 및 혼합기의 정기저인 소독 및 살균이 필요 할 것으로 사료된다.
