곤드레, 삼채, 아로니아 주정 추출물의 항산화 및 세포 보호 효과 (Antioxidant and Cell Protection Effects of Ethanolic Extract from Cirsium setidens, Allium hookeri, Aronia melancocarpa)

  • Cirsium setidens, Allium hookeri, Aronia melancocarpa, are popular dietary ingredients for Asian cuisine or beverage. this study attempted to search and report the antioxidant activity of extracts of aronia, gondre and samchae, which are used for food in Korea. As a result, total phenol content and DPPH radical scavenging activity tended to increase, and Gondre extract showed the highest DPPH radical scavenging activity effect. The results of a study on the ABTS radical scavenging activity of extracts of Gondre, Aronia, and Samchae showed a tendency for radical scavenging activity to increase as the concentration increased. Gondre hot water extract showed the highest ABTS radical scavenging activity. In this way, antioxidant activity was shown in the order of Gondre, Aronia, and Samchae, and the concentration showed a high activity effect at high concentrations. In the cell protection effect results, the concentration of Gondre extract was 500 ㎍/mL, the Samchae alcohol extract was used at concentrations of 2.5, 5, 7.5, and 10 ㎍/mL, and the Aronia extract was used at concentrations of 125 ㎍/mL. and showed a cytoprotective effect at 250 ㎍/mL. We hope that these research results will be used as basic data for the development of various functional foods.

잎새버섯 추출물의 생리 기능 및 음료 제조 (Physiological Function and Development of Beverage from Grifola frondosa)

  • 잎새버섯을 건조시 킨 후 메탄올과 물로 추출하여 생리활성을 측정하고 관능검사로 최적 음료 조건을 조사하였다. 건조한 잎새버섯을 메탄올과 물로 추출한 후 수율과 폴리페놀 함량은 메탄을 추출물 28.7%, 130 mg/100 g, 물 추출물 49.2%, 327 mg/100 g으로 물 추출물이 수율 1.7배, 폴리페놀 함량은 2.5배가량 높았다. 잎새버섯의 DPPH 라디칼 소거능은 메탄을 추출물에서 65.4%,물 추출물에서 76.3%으로 높았으나 SOD 유사활성능은 $1,000{\mu}g/mL$에서 $26.3{\sim}33.8%$로 낮은 것으로 나타났다. 또한, ACE 저해 효과는 메탄을 추출물에서 41.2%,물 추출물에서 75.1%로 나타났다. Tyrosinase 억제 효과는 메탄을 추출물에서 31.8%, 물 추출물에서 42.5%이었다. 이상과 같이 메탄을 추출물보다는 물 추출물에서 생리적 기능이 높음을 확인하였기에 물 추출물을 음료 제조에 이용하였다. 그 결과, 잎새버섯 음료의 최적 배합비는 잎새버섯 물 추출물 0.5%, oligosaccharide 8.0%, green tea extract 2%, jujube extract 2%, solomon's seal extract 1.0%, vitamin C 0.01%, apple extract 2%이었으며, 이 때 최종 음료의 당도는 9.8 Brix, 색도는 L, $35.05{\pm}1.08;$ a, $3.24{\pm}0.19;$ b, $13.64{\pm}0.33$으로 나타났다.

Rapid Enzymatic Fermentation of Anchovy Sauce by Protease

  • We evaluated the possibility of rapid fermentation of anchovy sauce using a commercial protease. The fermentation characteristics were monitored by response surface analysis. The content of total nitrogen was high (around 1 %) with fermentation at 51.7~57.5$^{\circ}C$ after 10.2~16.4 hours, but rapidly decreased at higher temperatures (6$0^{\circ}C$ or over), while the $R^2$ of polynomial equation was 0.9185 (p<0.05). The amino acid content rapidly decreased to approximately 600 mg% and less at high temperature (6$0^{\circ}C$ and over), and the $R^2$ was 0.9578 (p<0.01). The free amino acids were affected more by fermentation time when fermentation temperature was lower, and the $R^2$ for total free amino acids was 0.8496 (p<0.10). The $R^2$ for sweet free amino acids was 0.9144 (p<0.05). According to the results of this study, the optimal conditions for anchovy sauce fermentation were predicted to be 52.5~56.9$^{\circ}C$ and 13.3~16.4 hours, and the predicted values and actual values of each response variable were similar to each other when the fermentation was performed at a random point within the optimal range. Also, the comparison of the quality between the quick anchovy sauce and sauces currently on the market showed that the content of sweet amino acids was higher in the former than in the latter.

뉴욕 소재 한국레스토랑 고객특성 분석 (Profile of Korean Restaurant Patrons in New-york City)

  • Coupled with the international expansion of Korean culture in recent years, a number of restaurants from Korea have been trying to tap into the global market place. The purpose of this study was to identify the characteristics of non-Korean patrons in Korean Restaurants in New-york city. The survey was conducted at six popular Korean restaurants, all of which had been recognized in the Zagat Survey in recent years, located in prime business districts in Manhattan. The data collected from the six local Korean restaurants that participated in this study were qualitatively and quantitatively analyzed. After employing individual in-depth interviews with restaurant operators, a qualitative analysis identified demographic characteristics, Socioeconomic characteristics and segmentation of restaurant operation. Self-administrated survey questionnaires were used to acquire quantitative data. Primary data were collected from non-Korean patrons at the six participating Korean restaurants in New York City in 2008 (N=245). The patrons who answered the survey indicated that they were highly satisfied with the 'Food'; however, they were not satisfied with the 'Beverage' and 'Value'. In addition, older patrons (55<) were not as content with the 'Food' as the younger patrons. The most influential satisfaction variable that affected a patron's intention to revisit the Korean restaurant was 'Food' and 'Overall experience'. This study findings will help Korean restaurant operators and marketers better understand their patrons and formulate strategies to cater and target segments more effectively.

오과차(five-fruit tea)의 추출시간에 따른 성분 변화 (Changes in Component of Five-fruit Tea, with Various Extraction Time)

  • This thesis is to analyze the ingredients of five-fruit tea depending on extraction time as a basic experiment for quality improvement and industrialization of traditional Korean beverage. According to extraction time, the acidity of the tea is 2.4% at 30 minutes, 2.3% at 50 minutes and 1.7% at 70 minutes, and soluble solid is 0.22 g, 0.31 g and 0.41 g. The pH of five-fruit tea, which is 4.70, 4.85 and 4.98 at each time, and total sugar is 54.01 m9, 108.82 m9 and 142.92 mg as extraction time increases. The total amount of free sugars is 1.14 mg, 1.36 mg and 2.17 mg, and glucose, surcose and fructose which are 98.2%, 92.6% and 92.6% of the whole percentage occupy the most part of free sugars. The total free amino acids content increases to 84.94 mg, 99.67 mg and 120.40 mg. The five kinds of amino acids like serine, glutamic acid, threonine, proline and alanine amount to 94.5%, 93.6% and 94.7% at all. she variation in the percentage of free amino acids content in accordance with extraction time is as follows : threonine, extracted for 50 minutes, is reduced considerably and glutamic acid decreases gradually as extraction time increases. When proline is extracted for 50 minutes, it's rate of increase Is most high.

효소처리에 의한 블루베리 음료 생산을 위한 최적추출조건 (Optimization of blue berry extraction for beverage production using enzyme treatment)

  • 본 연구에서는 저온추출 뿐만 아니라 효소처리를 이용하여 생과형 블루베리 과일음료생산을 위한 최적의 방법을 확립하고자 하였다. 생리학적 기능성물질 추출 시 열에 의한 영양손실을 막기 위해 저온을 사용하였다. 또한 다양한 효소처리를 이용하여 혼탁 방지 및 추출수율 향상을 위한 최적의 추출조건을 확립하고자 하였다. 블루베리를 cellulase, pectinase 및 cellulase:pectinase(1:1) 혼합 효소와 효소 처리량, 추출온도, 추출시간, 추출 교반속도 등을 고려한 다양한 조건으로 추출하였을 때, 가장 우수한 추출 조건을 조사하였다. cellulase로 처리할 경우, 추출률이 85.72-86.55%, pectinase 처리구는 87.06-87.93%, cellulase:pectinase(1:1) 혼합 처리할 경우, 86.84-88.14%의 추출률을 나타냈다. 추출 온도는 $45^{\circ}C$에서 $87.91{\pm}0.05%$, 3시간 추출 하였을 경우 $87.88{\pm}0.10%$, 교반속도는 90 rpm에서 가장 높은 추출결과를 보였다. 블루베리 추출액의 당도 및 pH는 추출 조건에 관계없이 모든 처리구에서 통계학적으로 유사한 결과를 보였으나, 총 폴리페놀 함량은 pectinase 처리구에서 18.62 mg/g으로 가장 높은 값을 나타냈다. 유리당 함량은 모든 시료에서 과당과 포도당 두 가지 당류만 검출되었으며 cellulase 효소 0.10%를 처리한 블루베리 추출액의 유리당 함량이 포도당 0.51%, 과당 0.49%로 가장 높았으나 다른 처리구와 유의적인 차이는 없었다. 블루베리를 이용하여 생과일형 음료 제조를 위한 최적 조건은 cellulase: pectinase(1:1) 혼합효소 0.1%를 첨가하여 $45^{\circ}C$ 온도에서 90 rpm의 교반속도로 조사되었다.

약용 식물을 첨가한 쇠고기 분쇄육의 냉장 저장 중 품질 변화 (Changes in the Quality of Ground Beef with Additions of Medicinal Plants(Cinnamon, Licorice and Bokbunja) during Cold Storage)

  • 본 연구는 계피, 감초 및 복분자 추출물의 첨가가 냉장 저장 중 쇠고기 분쇄육의 품질에 미치는 영향을 규명하기 위하여 물 10% 첨가한 분쇄육(대조구), 계피 추출물 10% 첨가한T-1구, 감초 추출물 10% 첨가한 T-2구 그리고 복분자 추출물 10% 첨가한 T-3구 등 네 종류의 쇠고기 분쇄육을 제조하였다. 그리고 냉장 저장 중 표면 색도, 보수력, 가열 감량, 두께, 직경, pH, VBN 함량 및 TBARS 값을 실험하였다. 냉장 저장 중 $L^*$$a^*$값은 유의하게 감소하였으며(p<0.05), $b^*$값은 유의한 변화가 없었다. 그리고 약용 식물 추출물은 색깔에 영향을 미치지 않았다. 보수력은 냉장 저장 중 유의하게 증가하였으며(p<0.05), 약용 식물 추출물은 보수력에 영향을 미치지 않았다. 가열 감량은 T-1구를 제외한 나머지 실험구에서 유의하게 감소하였다(p<0.05) 그리고 두께 및 직경은 냉장 저장 중 유의한 변화가 없었으며, 약용 식물 추출물 첨가에 의한 영향은 없었다. 대조구의 pH는 6일까지 낮아지다가 9일째 높아졌으며, 약용 식물 추출물 첨가구는 저장 기간의 경과와 함께 낮아졌다. VBN 함량은 냉장 저장 중 증가하였으며, 대조구가 약용 식물 첨가구보다 높았다. TBARS 값은 냉장 저장 중 약용 식물 추출물 첨가구가 대조구보다 낮았다.

쓴 메밀에서의 루틴 추출 최적 공정 개발 (Development of Optimum Rutin Extraction Process from Fagopyrum tataricum)

  • The rutin content of Fagopyrum tataricum is 100-fold higher than that of Fagopyrum esculentum. For the development of a rutin-containing beverage, a suitable method to extract rutin from buckwheat (Fagopyrum tataricum) with high rutin yield was investigated. A roasting temperature range of $310/240^{\circ}C$ (Ed-confirm that this is indeed a range; otherwise perhaps, 'Roasting temperatures ranging from 310 to $240^{\circ}C$ were considered$\ldots$') was considered to be the best as the basic color reference. Rutin content varied according to the roasting time and heating temperature; i.e., it decreased with increasing roasting time and temperature. (Ed- this sentence is unnecessarily complicated and should be simplified to 'Rutin content decreased with increasing roasting time and heating temperature.') The optimal extraction temperature and processing time were obtained as $80^{\circ}C$ and 10 minutes to maximize the rutin concentration in the extract.

Characteristics in the components of the paprika by drying methods

  • The aim of this study was to investigate the characteristics of paprika dried by various methods. Moisture content of dried paprika was higher in vacuum freeze-dried red paprika (DRP) (11.85%) than in vacuum freeze-drying of osmotic dried red paprika in sugar (RPS), vacuum freeze-drying of osmotic dried red paprika in fructose (RPF) and vacuum freeze-drying of osmotic dried red paprika in corn syrup (RPCS). Carbohydrate content of DRP was the lowest among the dried groups, but fat, protein, and ash contents were the highest in DRP. The pH of paprika was the highest in RPF (5.34), while it was the lowest in DRP (5.05). Reducing sugar and sugar contents of RPF were 28.59 g/100 g and $5.03^{\circ}Brix$, respectively, which are the highest level among the groups. All color values in inside of paprika were the highest in RPCS, while in outside of paprika, L value is the highest in RPCS, and the value of a, b were the highest in RPS. Regarding the texture characteristics of paprika, strongness, hardness, adhesiveness, chewiness and brittleness were the highest in RPS (p<0.05).

Ready-to-drink (RTD) 커피 음료의 카페인 함량과 표시사항의 적합성 (Conformance of Caffeine Content and Labeling of Ready-to-drink Coffee)

  • 본 연구에서는 대형마트, 편의점 및 온라인 마켓에서 수집한 조제커피 제품의 카페인 함량을 모니터링하고 표시사항의 적합성을 검토하고자 하였다. 카페인의 함량은 HPLC을 사용하여 정량 분석하였다. 그 결과, 콜드브루 제품의 카페인 함량은 0.31-1.04 mg이었으며 평균 0.55 mg으로 나타났다. 제품 1개당 평균 함량은 147.27 mg/bottle로 나타나, 일일 권장섭취량을 감안하였을 때 성인 1인당 2.7병을 섭취할 수 있다. 아메리카노 제품의 카페인 함량은 0.15-0.38 mg이었으며 평균 함량은 0.28 mg 수준으로 나타났다. 제품 1개당 평균 함량은 110.42 mg/bottle로 나타나, 일일 권장섭취량을 감안하였을 때 성인 1인당 3.6병을 섭취할 수 있는 것으로 나타났다. 디카페인 콜드브루 제품의 카페인 평균 함량은 5.14 mg/bottle로 나타났으며 일반 아메리카노 제품에 비해 약 95%이상 카페인이 제거되어 식품의약품안전처에서 제시한 디카페인 제품 기준에 충족하였다. 또한, 총 카페인 함량의 허용오차인 120%를 초과하지 않아 관리가 잘 이루어지고 있음을 확인하였다.
