Quality Characteristics of Processed Mushroom Products Using Pleurotus ostreatus, Agaricus bisporus and Flammulina velutipes

  • This study examined the effects of adding Pleurotus ostreatus, Agaricus bisporus and Flammulina velutipes on the quality characteristics of cookies and multiple purposes of wheat powders. The water content, crude protein content, mineral content, color value and sensory evaluation of mushroom cookies and multiple purposes of wheat powders were measured. In the case of cookies, the water content was 1.10-1.24% and crude protein content was 8.20-9.80%. General preferences, such as appearance, color, taste and texture, increased when mushroom was added to the cookies, especially flavor, which showed a much higher preference. In the studies where mushroom was added to wheat powders, the water content was 0.57-0.92% and crude protein content was 11.90-12.80%. The addition of mushroom to both of the cookies and multiple purposes of wheat powders resulted in a remarkable increase in the mineral content, especially Fe, K. In addition, an increase in the amount of added mushrooms resulted in an increase in the hunter L and a values; however, this also resulted in a decrease in the b value.

Determination of Mineral Components in the Cultivation Substrates of Edible Mushrooms and Their Uptake into Fruiting Bodies

  • The mineral contents of the cultivation substrates, fruiting bodies of the mushrooms, and the postharvest cultivation substrates were determined in cultivated edible mushrooms Pleurotus eryngii, Flammulina velutipes, and Hypsizigus marmoreus. The major mineral elements both in the cultivation substrates and in the fruiting bodies were K, Mg, Ca, and Na. Potassium was particularly abundant ranging 10${\sim}$13 g/kg in the cultivation substrates and 26${\sim}$30 g/kg in the fruiting bodies. On the contrary, the calcium content in the fruiting bodies was very low despite high concentrations in the cultivation substrates, indicating Ca in the cultivation substrates is in a less bio-available form or the mushrooms do not have efficient Ca uptake channels. Among the minor mineral elements determined in this experiment, Cu, Zn, and Ni showed high percentage of transfer from the cultivation substrates to the fruiting bodies. It is noteworthy that the mineral contents in the postharvest cultivation substrates were not changed significantly which implies that the spent cultivation substrates are nutritionally intact in terms of mineral contents and thus can be recycled as mineral sources and animal feeds.

  • Effects of vitamins and inorganic salts on the mycelial growth and fruit-body formation of Flammulina velutipes were investigated. Thiamine was most effective on the mycelial growth and fruit-body formation, and its optimum concentration was$50{\mu}g%$. The mycelial growth and fruit-body formation were enhanced by the addition of $KH_{2}PO_{4}\:and\:MgSO_{4}$ at the concentration of 0.2 and 0.02% respectively, but other inorganic salts were ineffective for mycelial growth and fruit-body formation.

  • This study was carried out to characterize the chemical components of Flammulina velutipes during storage by different packaging film application for developing export winter mushroom to south east asia area. Changes of weight and growth rate from Flammulina velutipes were the lowest in testing packaging film at $15^{\circ}C$ among the films. The pH changes of Flammulina velutipesg was the highest in imported packaging film at $25^{\circ}C$. The changes of colors was measured by Hunter's color value, L value and yellowness (+b) were slightly decreased during storage. But the L value and yellowness (+b) were not affected by packaging films. Six organic acids were detected such as oxalic acid, lactic acid, malic acid, citric acid, acetic acid and succinic acid. The content of total organic acids were increased by storage period.

Effects of dietary supplementation with fermented spent mushroom substrates of the winter mushroom (Flammulina velutipes) on growth performance, carcass traits, and economic characteristics of Hanwoo steers (발효 팽이버섯 수확후배지의 급여 수준이 한우 거세우의 비육과 도체성적 및 경제성 분석에 미치는 영향)

  • This study was conducted to investigate the effects of fermented spent mushroom substrates (F-SMS) of Flammulina velutipes on growth performance, carcass traits, and economic characteristics of Hanwoo steers. A yeast strain (Saccharomyces sp. UJ14) and Bacillus strain (Bacillus sp. UJ03) isolated from fresh spent mushroom substrates of Flammulina velutipes were used as probiotics to prepare F-SMS. Twenty-four Hanwoo steers (14 months old) were allocated to three dietary treatments via a randomized block design and were slaughtered at 30 months of age. These treatment groups included Control (TMR), T1 (TMR containing 10% of F-SMS) group, and T2 (TMR containing 30% of F-SMS). Body weight gain was not influenced by the experimental diets. DM and TDN intakes in the finishing period were significantly (p < 0.05) greater in group T1 than in other groups. CP intake was significantly (p < 0.05) greater in group T2 than in other groups during the whole experimental period. Among carcass traits, rib-eye area and back fat thickness tended to increase with F-SMS supplementation. The appearance rate (%) of a meat yield more than grade A was the highest in group T1. The net profits increased by 1.2% and 13.3% in groups T1 and T2, respectively. In conclusion, if a proper feeding program (including feed safety) can be ensured, spent mushroom substrates of Flammulina velutipes can prove to be a highly profitable feed source for Hanwoo steers.

Occurrence of Disease Caused by Cladobotryum varium on Flammulina velutipes in Korea (Cladobotryum varium에 의한 팽이버섯 흰곰팡이병(가칭) 발생)

  • Cladobotryum varium infects the fruitbody of Flammulina velutipes during its cultivation. In the early stage of infection, white mycelia of C. varium partially attacked young fruitbody and eventually killed whole fruitbody during fruitbodies development. White fungi pathogen isolated from F. velutipes cultivation farm were investigated in pathogenicity and morphological feautres. The pathogen was identified as Cladobotryum varium. In asexual stage, $2{\sim}4$ conidiophores formed, $8.5{\sim}10.0{\times}16.1{\sim}17.0\;{\mu}m$ long and conidiospores with single septum were shaped in chains, $32.8{\sim}50.4\;{\mu}m$ in size. Size of chlamydospores were $12.7{\sim}18.0{\times}17.7{\times}48.1\;{\mu}m$ with $1{\sim}4$ septa.

Analysis of genetic characteristics and development of substrate for cultivation in brown strains of Flammulina velutipes (갈색팽이버섯의 유전적 특성검정 및 배지재료 개발)

  • Analysis of genetic characteristics of Flammulina velutipes showed that strains have a range of 85% in genetic distribution diagram. According to this result, we divided these strains into five groups. In experiment of determinating the optimum media and condition in cultivating F. velutipes, we found the optimum temperature and pH range for hypha growth were $25^{\circ}C$ and 6.0 to 7.0, respectively. in addition, the best media for growth of that in plate was MCM (Mushroom Complete Media) which have a growth length from 68 to 83 mm. In vivo test, we observed that fast growth and good density of hyphae in mixture media of douglas fir sawdust, cotton seed meal and beet pulp (6:2:2 V/V). Also when we cultivated F. velutipes in this media, we harvested high yield of fruiting body.

  • The purpose of this study was to evaluate the effects of dietary Flammulina velutipes mycelium (FVM) on broiler chick performance, pathogenic bacterial (E. coli, Salmonella) counts in caecal contents and amount of $NH_3$ in excreta. Ninety-six broiler chicks (HanHyup No. 3, Korea) were divided into four groups: 1) Control (basal diet), 2) T1 (supplemented with 1% FVM), 3) T2 (3% FVM), and T3 (5% FVM), and rose for 7 weeks. In results, there were no significant differences among treatments in weight gain, feed intake, feed efficiency and carcass yield. However, giblets were significantly increased in FVM treatments compared with control group (p<0.05). The number of Salmonella in caecum was significantly decreased in FVM treatments compared with control group (p<0.05). The number of E. coli was decreased in T2 but increased in T1 and T3 compared with control group. The emission of fecal $NH_3$ gas was significantly decreased in accordance with increasing the feeding level of FVM (p<0.05). In conclusion, our data indicated that the supplementation of high level of FVM could inhibit the Salmonella in caecum and reduce the emission of fecal $NH_3$ gas. Therefore, FVM at 5% level could be added in the diet of broiler chicks.

Formation and Characteristics of Oidia in Flammulina velutipes (팽이버섯 분열자의 생성원인 및 특성)

  • The effects of medium, incubation temperature, incubation period, pH of medium and $CO_2$ ondition during mycelial growth were investigated to study the factors associated with the formation of oidia in Flammulina velutipes. Oidia formation was increased when mycelial growth was poor, while oidia formation was inhibited in optimum condition of mycelial growth. Mating type of oidia was investigated to examine the effect of oidia formation on dikaryotic strain. Di-mon matings between oidia strains and original dikaryotic strain were carried out. Monokaryotic strains derived from oidia showed only one genotype. Seventy percent among Dimon mating strains showed slow mycelial growth and low yield of fruit-body, but others showed similar or high mycelial growth and yields in comparision with original dikaryon strain. One strain from di-mon mating demonstrated some differences in isozyme band pattern.

Changes in the CO2 and amount of mycelium growth of the liquid spawn on Flammulina velutipes (팽나무버섯 액체 종균 배양시 이산화탄소 농도와 균사 생장량 변화)

  • In this study, to produce Flammulina velutipes mushroom liquid spawn efficiently and effectively the effects of explosive aeration (supplying air with tiny bubbles) of the liquid culture medium on carbon dioxide concentration and residual sugar content in the medium on carbon dioxide concentration and residual sugar contentin the medium were measured. Carbon dioxide concentrations were measured at the outlet of the incubator. On the third day the explosive aeration greatly increased mycelial growth of the liquid spawn, and carbon dioxide concentration also greatly increased but decreased after 5 days. Free sugar contents in the liquid culture consistantly decreased up to 7 days and thereafter was not detected. The weight of the mycelia were maintained similar levels after 3 days. Total nitrogen content in the liquid medium constantly decreased during the 11days of explosive aeration. The content of free sugars in 7 days of culture was the lowest level, thus the inoculum incubated for 6~7 days was thought to be the most effective. Carbon dioxide concentration measurement at the outlet of the container during the liquid spawn incubation required low cost but was efficient to estimate the degree of mycelial growth to be used as a simple indicator.
