The Quality Characteristics of Sulgidduk added with Cheongkukjang Powder (청국장 가루를 첨가한 설기떡의 품질특성)

  • This study was performed to find the most desirable mixing formula for Sulgidduk added with Cheongkukjang powder for various benefits. The optimal mixing formulas were identified by evaluations of ingredients, the color, and the sensory and textual characteristics. As the amount of Cheongkukjang powder increased, the rice cake appeared redder, yellower and less luminous. The amount of crude ash was significantly smaller in the experimental groups than in the control group, and the amount of crude protein and crude fat was significantly high. The change in texture according to the amount of Cheongkukjang powder was not statistically significant, but hardness, adhesiveness, and cohesiveness showed significant differences(p<0.05). It was also found that chewiness increased while adhesiveness decreased as storage time increased. According to the results of the sensory evaluation, scores in the color and aroma decreased as the amount of Cheongkukjang powder increased. Overall acceptability score was highest in the 5% group, consisting of 68% of rice powder, 5% of Cheongkukjang powder, 10% of sugar, and 17% of water.

In vitro and in vivo evaluation of kenaf (Hibiscus cannabinus L.) as a roughage source for beef cattle

  • Objective: The goal of this study was to evaluate kenaf as a roughage source in vitro and its effects on meat quality of Hanwoo (Korean native) cattle. Methods: Three roughage materials, rice straw silage, ryegrass silage, and kenaf silage, were tested in a batch culture and feeding trial. Rumen fermentation parameters, including gas, pH, volatile fatty acid (VFA), and ammonia were analyzed. In the feeding trial, Hanwoo steers ($373.5{\pm}5.1kg$, n = 36, 11 month of age) were divided into three feeding groups (n = 12 each). Animals were fed with each silage and concentrate until the fattening stage. Results: Crude protein, ether extract, and non-structural carbohydrates were greater in kenaf silage. Total gas production was higher in ryegrass silage, followed by kenaf silage and rice straw silage (p<0.05). Total VFA and individual VFA (acetate, propionate, and n-butyrate) were greater in kenaf silage than rice straw silage (p<0.05). In vitro dry matter digestibility showed a similar trend to that of total gas and VFA production; it was higher in ryegrass silage and lower in rice straw (p<0.05). Throughout the feeding trial, the rice straw silage group showed significantly greater average daily gain than did the others (p<0.05). The feed conversion ratio in the group fed kenaf silage was significantly greater than that of others (p<0.05). No significant differences were observed in yield or quality traits, including carcass weight, ribeye area, backfat thickness, and scores for marbling, meat color, and fat color (p>0.05). Conclusion: The results indicated that no negative effects on growth performance and carcass characteristics occurred across treatments. Therefore, kenaf could be substituted for rice straw, which is most widely used as a roughage source in Korea.

Effect of an Astaxanthin-supplemented Diet on the Nutritional Composition of Rainbow Trout (Oncorhynchus mykiss) (무지개 송어(Oncorhynchus mykiss)의 영양 성분에 대한 astaxanthin 첨가사료의 영향)

  • This study investigated the effects of astaxanthin, which is used to improve the muscle color of fish, on the nutritional composition of rainbow trout (Oncorhynchus mykiss). The trout were fed extruded pellets containing astaxanthin (pigmented rainbow trout) or without astaxanthin (non-pigmented rainbow trout). No significant differences in the contents of crude protein and crude ash between the two muscles of the two groups were observed. However, the crude fat composition of the muscle of pigmented rainbow trout was about two times higher than that of control muscle. In the muscle of pigmented rainbow trout, the contents of docosahexaenoic acid (DHA, 22:6n-3) and eicosapentaenoic acid (EPA, 20:5n-3), which are functional polyunsaturated fatty acids, were 1.6 fold higher than in non-pigmented muscle. In addition, the contents of minerals such as Zn and Fe, vitamins (B group, C, and E), free amino acids, carotenoids and astaxanthin were increased in the muscle of rainbow trout fed pellets supplemented with astaxanthin. Specifically, the content of the bioactive compound astaxanthin, was increased six times in the pigmented muscle, as compared to the control muscle. The results suggest that a diet supplemented with astaxanthin improves the nutritional composition of rainbow trout muscle as well as improving the muscle color.

Effects of $H_2O_2$ and Papain Treatments, and Acylation on Chemical and Functional Properties of Defatted Sesame Oil Cake Protein (과산화수소, Papain처리 및 Acyl화가 분리참깨박 단백의 품질 및 기능적 성질에 미치는 영향)

  • In this study, the treatment of $H_2O_2$, papain and acylation on the protein isolate obtained from defatted sesame oil cake for the changes in amino acids composition, color, digestibility and some functional characteristics of this protein were investigated. The results showed that $H_2O_2$, papain and papain $H_2O_2$ treatment increased the rates of the protein extraction and content of protein in protein isolates when those values were compared to the alkali treatment. Also amino acid composition of the protein isolates were comparatively good, and color, and functional properties and pepsin digestibility were markedly improved. The amount of lysine, the first limiting amino acid of this protein was increased. The solubility, bulk density, water absorption, fat absorption and emulsifying properties were remarkably improved while foaming properties and digestibility was slighly decreased.

Quality Characteristics of Beef Jerky made with Beef meat of various Places of Origin (쇠고기 원산지 차이에 의한 육포의 품질 특성)

  • This paper aims to compare and evaluate the quality of beef jerky made with Korean beef meat, Korean beef cattle and imported beef meat from Australia and New Zealand through sensory evaluation, measurement of hardness, thickness and contents of the moisture and crude lipid, and microscopic texture observation (SEM). According to the sensory evaluation, beef jerky made with Korean beef meat recorded the highest score in overall acceptability; New Zealand beef meat, the lowest. The preference of beef jerky made with Korean beef meat was shown in the appearance, smell, and texture, and especially in the taste. Whereas Korean beef jerky scored highest in color, glaze and palatability, New Zealand beef meat showed the lowest score. Korean beef meat showed the lowest in hardness, but New Zealand beef meat showed the highest as shown in the result of technical evaluation through rheometer. The evaluation through colormeter concluded that New Zealand beef meat had the highest scores in L and a values, but that Korean beef meat showed the lowest score. When it comes to the color difference compared with Korean beef meat, New Zealand beef meat showed the biggest difference. Although the moisture contents of jerky made with different beef meat showed little difference, the content of the crude lipid of jerky made with Korean beef meat and Australian beef meat was lower than that of Korean beef cattle and New Zealand beef meat. When the beef jerky is dry, fat contained in the beef meat is dissolved, which causes the glaze on the outside. Scanning electron micrographs showed that Korean and Australian beef jerky had larger gaps than Korean beef cattle and New Zealand beef jerky. It was concluded that this affected the hardness of beef jerky.

A Study on the Oxidative Stabilities and Organoleptic Properties of Korean Red Pepper Seed Oil upon Species and Dried Methods (품종 및 건조방법에 따른 고추씨기름의 산화안정성과 기호성에 관한 연구)

  • The stability of red pepper seed oils during storage at 20${\pm}$3$^{\circ}C$, 40${\pm}$3$^{\circ}C$ and heating at 140${\pm}$3$^{\circ}C$ or 180${\pm}$3$^{\circ}C$ were measured to evaluate red pepper seed oil as a cooking oil. Two species of red pepper seeds (native, improved) were dried by either sunlight or heating to prepare the oil samples of NS (native, sunlight-dried), IS (improved, sunlight-dried), NF (native, heated), and IF (improved, heated). During storage at 20${\pm}$3$^{\circ}C$ or 40${\pm}$ 3$^{\circ}C$, acid values (AV) of all red pepper seed oils were higher than that of soy bean oil (SBO), however, peroxide values (POV) were similar to SBO. Antioxidative stability of NS was better than SBO but IF was not. By the heat treatments at 140${\pm}$3$^{\circ}C$ or 180${\pm}$3$^{\circ}C$, NS was identified to have better antioxidative stability than SBO and IF was the lowest. In sensory evaluation of each deep-fat fried potato-chip at 180${\pm}$5$^{\circ}C$, potato-chips fried in NS were better than that of SBO for color, taste, and flavor. NS-fried potato-chips got the highest score in overall acceptance (p<0.05), however, those of IF showed little acceptance. When blended oils (SBO: NOS, 0, 25, 50, 75%) were used, 50% blended oil was the best for taste, color, flavor, cripness, and total acceptance.

Effect of Feeding Fish Oil and Mugwort Pelleted Addition on Meat Quality of Pork (어유과 쑥 펠렛의 급여가 돼지고기의 품질에 미치는 영향)

  • Effect of fish oil and mugwort pelleted on meat quality in 40 pigs was investigated. The pigs were randomly assigned to one of the four dietary treatments : 1) Control (commercial feed 2) T1 (commercial feed supplemented with 1% fish oil and 1% mugwort pelleted 3) T2 (commercial feed supplemented with 1% fish oil and 3% mugwort pelleted) 4) T3 (commercial feed supplemented with 1% fish oil and 5% mugwort pelleted). The weight gain was not significantly difference between control and treatment groups(p<0.05). In proximate composition, crude fat of pork from treatment groups were decreased by addition level increased than that of control (p<0.05) but moisture crude protein and crude ash was no significantly difference. The total cholesterol, HDL-C and triglyceride of treatment groups was higher than that of control. LDL-C of control was higher than that of treatment groups. The pH, WHC (water holding capacity) and shear force of treatment groups were higher than control group. Especially pH, WHC and shear force was higher in T3 than other treatment groups (p<0.05). The meat color of treatment groups showed whiter than that of control group owing to higher $L^*$ value. The hardness and flavor of sensory evaluation were improved by treatments, especially in T2 and T3 (p<0.05).

Quality Comparison of Chuncheon Dakgalbi Made with Ross Broilers, Hy-Line Brown Chicks and White Mini Broilers Meat (육용 브로일러, 산란종 병아리 및 백세미육으로 제조한 춘천 닭갈비의 품질 비교)

  • This study was conducted to compare the quality of Chuncheon Dakgalbi made with meat from three chicken breeds. Ross male broilers, Hy-Line Brown male chicks and White Mini male broilers were raised for 18 d, 49 d and 35 d, respectively, and slaughtered. The thigh meat from carcasses on each breed were used for this experimented. The fat content was higher in White Mini broiler meat than Ross broiler and HY-LINE BROWn chick meat (P<0.05). No differences were observed in aroma patterns of raw meat and Chuncheon Dakgalbi between all breeds. The Chuncheon Dakgalbi made with White mini broiler meat had higher color stability and lipid oxidation stability and showed higher sensory scores such as visual color and overall acceptability. Therefore, the Chuncheon Dakgalbi made with White Mini broiler meat showed the best quality among the three chicken breeds.

Effects of Dietary Addition of Bentonite and Probiotics on Meat Characteristics and Health of Hanwoo (Bos taurus coreanae) Steers fed Rice Straw As a Sole Roughage Source (a Field Study)

  • A study was conducted to determine the dietary effects of Na-bentonite (NaB) and probiotics on meat characteristics and health of Hanwoo steers fed rice straw as a sole roughage source. A total of 24 growing Hanwoo steers (avg BW 232 kg) were assigned to two treatments which included a control diet (concentrate mix and rice straw) and a treatment diet (control diet + 0.5-1.0% NaB + 0.5-1.0% probiotics. The diets were fed for 22 months up to the time the animals were slaughtered. Dietary treatment increased (p<0.05) concentrations of trace minerals such as Zn, Cu, and Fe in the longissimus muscle compared to the control. The treatment diet did not affect cold carcass weight, yield traits such as backfat thickness, longissimus muscle area, yield index, yield grade and quality traits such as marbling score, meat color, fat color, texture, maturity and quality grade. Blood profiles of growing steers were within the normal ranges for healthy cattle. In conclusion, feeding a combination of clay mineral and probiotics to Hanwoo steers fed rice straw as a sole roughage source could have a desirable effect on improving trace mineral retention in longissimus muscle without any deleterious effects on carcass traits of steers.

Effects of Coating Syrup with Water-Soluble Extracts of Gugija(Lycii fructus) on the Quality Characteristics of Yukwa (구기자의 수용성 추출물을 첨가한 집청액이 유과의 품질특성에 미치는 영향)

  • In this study, Yukwa(YU-G) was prepared by coating in syrup with water-soluble extracts of Gugija(Lycii fructus). The Yukwa samples were stored with PE film packing with air for 12 weeks at room temperature, after which the quality and shelf-life of the Yukwa were assessed. During storage, the moisture contents of YU-G were higher than those of the Yukwa due to being coated in syrup without water-soluble extracts of Gugija(YU-NG), whereas the instrumental textural hardness values of the YU-G were lower than those of the YU-NG. Color determination indicated that YU-NG and YU-G assumed a darker color after storage, becoming both redder and yellower. The peroxide and acid values increased abruptly in the YU-NG during storage, but increased slowly in the YU-G. During the 12 weeks of storage after preparation, the peroxide and acid values of YU-G remained at less than 40 meq/kg and 4 KOH mg/g, respectively. Thus, the experimental method of syrup coating with water-soluble extracts of Gugija rendered the YU-G fairly stable against fat rancidity. The YU-G evidenced generally higher overall acceptability than YU-NG when stored.
