만두피 제조시 파래 분말 첨가가 품질에 미치는 영향 (Effect of Enteromorpha intenstinalis Powder Addition in the Quality of Dumpling Shell)

  • 다양한 생리활성 기능을 가진 파래 분말을 첨가하여 제조한 만두피의 품질특성을 측정한 결과는 다음과 같다. 호화개시온도는 파래 분말의 첨가량이 증가될수록 점진적으로 증가하는 경향을 보였다. $95^{\circ}C$에서 점도, $95^{\circ}C$에서 15분간 유지한 후의 점도 및 최고점도는 파래 분말의 첨가량이 증가함에 따라 감소하는 것으로 나타났다. 만두피의 색도는 파래 분말 첨가량이 증가할수록 명도(L값), 적색도(a값) 및 황색도(b값)는 대조군이 가장 높게 나타났으며, 각 시료간에 유의하게 감소하였다. 조리특성에서 파래 분말을 첨가한 만두피는 대조군에 비해서 중량의 증가나 부피의 증가, 수분흡수율 등이 모두 유의적으로 높게 나타났다. 만두피의 조직감은 파래 분말 첨가량이 증가될수록 경도, 탄력성 및 씹힘성은 높아졌으며, 부착성과 응집성은 감소하였다. 만두피의 관능검사 결과 전체적인 기호도는 파래 분말 5% 첨가군이 가장 좋은 것으로 나타났다. 이상의 결과를 종합하여 보면 기능성 만두피 제품 개발을 위해 파래 분말을 첨가할 경우 밀가루 대비 5% 정도 첨가할 때 기호 특성에서 적당한 것으로 사료되며, 기능적인 측면과 영양적인 측면에서 도움을 줄 수 있는 만두피로 사용될 수 있을 것으로 여겨진다.

Therefore, detailed studies, in particular at the DNA level, on genetic diversity of natural populations of wild sea lettuce, and genetic relationships between natural sea lettuce and cultivated sea lettuce are necessary from the viewpoint of plant evolution.   • Marine algae는 주된 fouling organism으로 전세계에 널리 분포되어 있고, 경제적 손실을 가져온다. 특히나 container ships와 large tanker에서 자라는 algae는 마찰력의 증가로 인한 speed 감소와 연료비의 증가와 같은 문제점을 가진다. 그래서 현재 antifouling paint로 TBT화합물을 사용하고 있지만, 이것은 해양생물에 나쁜 영향을 미치는 것으로 나타나 TBT 화합물 사용에 대해 제한하고 있다. 따라서 본 연구에서는 해조류 추출물을 이용하여 무독성 천연 방오물질의 탐색을 목적으로 우선 선박이나 양식장 그물등에 많이 부착 성장하는 가시파래를 대상으로하여 이의 antifouling 효과를 나타내는 물질을 찾고자 한다.   • The family Ulvaceae species are difficult to distinguish from one another on the basis of morphological and cytological criteria alone. ITS2 sequences are hewn to evolve quickly and have been reported to be useful for the study of intraspecific and interspecific variation and biogeography in algae (Bakker et al., 1992). We will here describe the basic characteristics of the ITS2 sequences in Ulva and Effteromorpha to compare our result with the above previous studies. (omitted)

  • The appearence of organochlorine pesticide residues in some marinealgae, e.g. Sargassum thunbergii, Ulva pertusa, Codium fragile, and Enteromorpha linza, collected from various sites of Kwang Yang Bay, southern coast of Korea, was surveyed through the year from May 1974 to March 1975. The residues were found to appear in the order to July>September>May>November≒March≒January; $\alpha$-BHC>heptachlor epoxide>dieldrin>aldrin>endrin; and in the range of 0-93 $\mu\textrm{g}$/kg dry matter.

한국 남서해안 다도해 해상국립공원의 하계 해조상 (Summer Algal Flora of Dadohae National Park, Southwestern Coast of Korea)

  • The summer algal flora and community of 9 islands in Dadohae National Park, southwestern coast of Korea, were investigated from June to September 2008. A total of 81 species (13 green, 22 brown and 46 red algae) of marine algae were identified. Among 9 islands, the number of species observed was the highest as 65 species at Jindo and the least as 37 species at Hongdo. The dominant species were Enteromorpha compressa, Ulva pertusa, Sargassum thunbergii, Gelidium amansii, Caulacanthus okamurae, Gloiopeltis furcata, and Symphyocladia latiuscula. The algal zonation of intertidal zone was figured out by Gloiopeltis furcata, Ishige okamurae, Caulacanthus okamurae-Enteromorpha compressa, Sargassum thungergii-Gelidium amansii, Symphyocladia latiuscula from upper to lower zone. The flora investigated could be classified into six functional groups such as coarsely branched form (38.1%), filamentous form (24.7%), sheet form (11.3%), thick leathery form (13.9%), jointed calcarious form (6.3%) and crustose form algae (5.7%). R/P and (R+C)/P values were 2.2 and 2.8, respectively. A cluster analysis of species occurrence was suggested that the number of marine algal species was different from greatly among the sampling sites.

고리원전의 온배수 방출이 주변 해조군집에 미치는 영향 (Effects of Heated Effluents on the Intertidal Macroalgal Community Near Gori Nuclear Power Plant)

  • This study is intended to clarify the effects of heated effluents on intertidal benthic marine algal community in Korea. The species composition and biomass of marine algae at the discharge canal of Gori nuclear power plant on the southeastern coast of Korea were investigated seasonally from February 2001 to October 2006. As a result, 54 species (7 blue-green, 12 green, 9 brown and 26 red algae) of marine algae were found at the discharge canal during the past six years. In general, the number of species observed was abundant during winter to spring and less in autumn. Enteromorpha compressa, E. intestinalis, E. prolifera and Caulacanthus ustulatus were common species found more than 80% frequency during the study period. Seasonal fluctuations of mean biomass were 1-440 g dry wt m–2 and dominant species in biomass were Enteromorpha spp. (contribution to a total biomass proportion 28%), Sargassum horneri (14%) and Amphiroa beauvoisii (14%). It is evident from the floristic composition and biomass data that unique micro-environment of the discharge canal support different communities from those on the intake or control area. Results from the large numbers of surveys before and during plant operation showed that, in the regions influenced by thermal effluents such as the discharge canal of power plants, the process of ecological succession has been proceeded. It is assumed that the uni-directional water flow and the time of overhaul largely affect the development and succession of benthic marine algal communities of the discharge canal.

두부제조시 해조류 첨가 효과 (Effect of Seaweeds added in preparation of Tofu)

  • This study was performed to investigate some quality characteristics of 새려 prepared from soybean milk and various seaweed(Undaria pinnatifida, Laminaria japonica, Porpyra tenera, Enteromorpha sp., Codium sp.) pulps in the ration of 9:1(v:v) with 20% MgCl2. The yields of tofu containing Undaria pinnatifida, Laminaria japonica, or Enteromorpha sp. increased but porphyra tenera, Codium sp. decreased in comparison with tofu prepared from whole soybean milk. The protein content of tofu containing Undaria pinnatifida, Laminaria japonica, Porphyra tenera, or Codium sp. increased but Enteromprpha sp. decreased in comparison with the tofu prepared from whole soybean milk. The content of Ca in Undaria pinnatifida, Porphyra tenera added tofu was higher than that of the tofu prepared from whole soybean milk or other seaweeds added tofu. In sensory evaluation the texture, color, taste of tofu were favored with the addition of sea mustard(Undaria pinnatifida) pulp than that of the tofu prepared from whole soybean milk or tofu prepared other seaweed. Tofu prepared was possible with adding 0.5~1.5% sea mustard to soybean milk but the feasible added amount level was 1% of sea mustard. The yields, protein Ca, and K content of tofu were increased by the more adding amount of sea mustard tan tat of the tofu prepared from whole soybean milk. The hardness values of 1% sea mustard added tofu were decreased than that of the tofu prepared from whole soybean milk ; on the other hand, elasticity, cohensiveness, gumminess and brittleness of tofu with sea mustard increased. The L and a values of tofu were lower and b values were higher with the addition of 1% sea mustard. The content of histidine, tyrosine, leusine, and phenylalanine were decreased but the other amino acid were increased in tofu prepared from 1% sea mustard pulp added to soybean milk. The saturated fatty acid and monoene fatty acid content of tofu were increased and C18:2, C18:3(${\gamma}$), C18:3, C20:5 of polyene fatty acid were slightly decreased in tofu prepared from 1% sea mustard pulp added to soybean milk.
