Survey on sanitary knowledge level and degree of HACCP practice in culinary staff employed in elementary, middle, and high schools in Chungnam province (충남지역 초.중.고 학교급식 조리원의 위생지식 및 HACCP 수행도 조사)

  • Purpose: This study was performed to examine the sanitary knowledge level and degree of HACCP (hazard analysis critical control point) practice in school culinary staff in order to provide basic information for improving hygiene of school meals. Methods: Exactly 305 culinary staff members were selected from elementary, middle, and high schools in 14 cities and rural areas, including whole administrative districts in Chungnam province. Surveyed schools were selected by convenience sampling, and one subject was selected randomly from each school. Surveys were taken by self-administered questionnaires developed by researchers and questionnaire were distributed and collected by postal mail. Results: Sanitary education administered by school dietitians to culinary staff was more frequent and longer in elementary schools, followed by middle and high schools (p < 0.001). Sanitary knowledge level and degree of HACCP practice, except for a few CCP or CP of culinary staff, were highest in elementary schools and middle school followed by high schools (p < 0.05), respectively. School class was negatively correlated with sanitary knowledge level of culinary staff (p < 0.01), and frequency of sanitary education was positively correlated with sanitary knowledge level of culinary staff (p < 0.01). Sanitary knowledge level of culinary staff was positively correlated with degree of HACCP practice (p < 0.01). School class, daily frequency of meal service, work experience, rice washing machine, and total score of sanitary knowledge were significant variables influencing degree of HACCP practice in culinary staff. Conclusion: The above results show that the following points should be considered to improve hygiene of school meals. Sanitary education should be administered more frequently by school dietitians to culinary staff, especially to those in high schools, which showed the lowest sanitary knowledge level and degree of HACCP practice. In addition, facilities and equipment required for HACCP practice should be supported in small-sized elementary schools.

Mental Health of Elementary and Middle School Students, and Related Familial-Social Factors in Health Promoting School (건강증진학교에서 초등학교와 중학교 학생들의 정신건강 실태 및 관련된 가정-사회적 요인들)

  • Purpose: This study was a part of preliminary survey for establishing Korean HPS(Health Promoting School) model which was originally suggested by WHO. Methods: Three elementary and middle schools were sampled in urban and rural area across three level of social-economic status, and survey was conducted on one class in each grade by random selection. To measure mental health and social and familial factors, self-esteem scale, self-efficacy scale, depression scale, family cohesion scale, parent-child communication scale, adolescent's mental health and problem behavior questionnaire(AMPQ), and other question items about family status and economic level were conducted. Students' mental health level was compared by region, sex, grade, and other familial and economic factors. Results: Familial and social factors such as economical and educational level of parents, number of family members were different between rural and urban area. Also, students of rural area got lower scores at self-esteem, self-efficacy, but higher scores at extroverted problem behavior than their urban counterparts. In pre-school students, high grade students' self-esteem, and family cohesion scores were lower than low grade students. And sexual differences were found across problem behavior domain and region in middle school students. Especially, the students of single-parent family and lower economic family got insistently low scores at various mental health related scales. Conclusion: These results should be considered, when the HPS model is designed and applied in Korea.

Preservice Elementary Teachers' Attitudes toward Science and Process Skills (초등 예비교사들의 과학에 대한 태도와 탐구 능력)

  • The purpose of this study is to inquire the properties and relationship of attitudes toward science and process skills of preservice elementary teachers. Two instruments were used to collect the data, SAS(Science Attitude Scales) for checking up attitude toward science and TIPS II(Test of Integrated Process Skill II) for inspecting science process skills. Three main results were revealed. First, preservice elementary teachers' the attitude toward science and science process skills could not show the significant differences by gender. This result is differ from the results of preceding researches which had set up the students of elementary, middle and high school as objects. Second, the properties of preservice elementary teachers' the attitude toward science and science process skills according to the course in high school were also differ from those of preceding researches having students as objects. The preservice elementary teachers who got the literary courses in high school were more confident in science learning and perform that those who have the academic background of science courses in high school. In addition, although they showed better abilities in two sub-scales of science process skills, the preservice teachers with science course didn't show the better science process skills than those who had taken the literary course in total score of science process skill test. Third, there was a significant relationship between attitude toward science and science process skills of preservice elementary teachers but just one sub-scale was related with science process skills. According to these results, it can be said that the preceding results with students as objects can not be applied to and preservice elementary teachers should be guided by the methods which are considering their special properties.

Depression and Related Factors for Adolescents (청소년기 우울 성향과 관련된 요인)

  • Background: Adolescence is the transitional period between childhood and adulthood. We have to pay attention to their psycho-social problems as well as their physical symptoms. In this context, we need to investigate the adolescent depression tendency and its related factors. Method : From May to June in 1008, we chose one elementary school, one middle school and one high school in Seoul and surveyed for all students who were above the 4th grade of elementary school and their parents. We analyzed the data for 3,685 students. Result: From the 6th grade of elementary school to the 1st grade of high school, the girls' DSRS(Depression self-rating scale) score was significantly higher than the boys'. The DSRS score was increased from the 2nd grade of high school for boys and from the 1st grade of high school for girls. The Pearson correlation coefficient between age and DSRS score was 0.16(p<0.01) and that between APGAR and DSRS score was -0.45(p<0.01). The median number of psychosomatic symptoms of the past month was 6, and when students complained for more psychosomatic symptoms, the DSRS scores were higher. Those who drank or smoked ranked significantly higher in DSRS score; and, those who exercised regularly, had leisure activity, and had a faithful person for counselling ranked significantly lower in DSRS score. Conclusion : Adolescents who complained of many psychosomatic symptoms needed to be screened for depression. A primary physician have to intervene about health related behavior such as family function, smoking, exercise and relieving stress.

  • Pattern Recognition measures the ability of learners to distinguish between two sets of shapes or figures. Locating similar patterns on either side of the presented problem determines a learner's capacity or aptitude for science over general studies. At Ajou University's Institute for Scientifically Enabled Youth, we conducted research using a sample composed of middle school students with general and scientific backgrounds. The result proved that Pattern Recognition measures a different creative talent other than problem solving. In our opinion, Pattern Recognition would be a method better suited to elementary learners over those in middle or high school.

  • The purpose of this study was to investigate the effects of science teaching using ARCS strategies on elementary pupils' teaming motivation and academic achievement. For this purpose, 67 children of 2 classes in the 5th grade of an elementary school were involved, and each class was assigned to experimental and comparison group. The experimental group, consisting of 33 children, were applied with the teaching method using ARCS strategies, while the comparison group, 34 children, were applied with traditional-type teaching method. The instruction effects were analyzed through pre/post-test's results using the questionnaires of loaming motivation and academic achievement. The results of this study are summarized as follows. After science lessons, it was found that the teaching method using ARCS strategies was more effective in improving learners' motives of teaming science and academic achievements than traditional instructions. And the instruction using ARCS strategies was effective to the children who were in low and middle level in academic achievement compared to those in high level.

BEHAVIORAL CHANGES IN KOREAN ELEMENTARY, MIDDLE, AND HIGH SCHOOL STUDENTS FOLLOWING BASIC EDUCATION IN MEDICAL RADIATION

  • by providing objective information regarding medical radiation for elementary, middle, and high school students in Korea, who are expected to have a high ripple effect in education, and by analyzing behavioral changes in the selection of medical radiation, this study aimed to deduce the basis for educational intervention. The tools used in the study were a questionnaire, including questions about perception, knowledge, attitude, and behavior toward medical radiation; video and Power-point materials for the lesson; simulated radiation diagnosis selection form; and radiation treatment selection form to find out about behavior. A post-test demonstrated that the objective knowledge about medical radiation of all the students turned out to be significantly higher (p<0.000) after the lesson compared to before the lesson. However, there were no statistically significant behavioral changes. Rather, for high school students, the behavior of selecting medical radiography and treatment was significantly lower (p<0.000) after the lesson. For the more impressionable children in the lower grades, the lesson must not only provide an opportunity to understand and pay attention to diverse viewpoints, but also encourage them to make ethical decisions based on value. Since it can be predicted that attitude or behavioral changes through education or publicity can be expected from adults older than high school students, issues regarding dangers like radiation exposure must be treated as an issue of value judgment predicated on multifaceted considerations.

Effective Evacuation based on Elementary School's Floor Layout (초등학교 층별 구성과 비상시 대피효율성의 관계)

  • This study compared evacuation effectiveness between the conventional school floor plan and a suggested hypothetical floor plan that was generated by a mathematical model that is commonly applied in the field of industrial engineering. Recent school buildings became much more complicated in floor planning due to the new educational system and modern curriculum than the old days. Nevertheless, architect's approach to floor composition in terms of fire emergency evacuation planning, still has no relation to optimized effective but relies more on a conventional school planning. Therefore, since elementary school buildings are much more likely to be exposed to any fire related events than middle school or high-school, emergency exit effectiveness based on spatial composition has to be seriously evaluated with a scientific method. The algorithm, which acquires the number of persons in each spatial type (node) per floor and the minimum physical distance between spatial types (arc), can propose the most optimized spatial compositing per floor regarding emergency evacuation event. Consequently, this study evaluated elementary school's fire exit effectiveness with the scientific tool and suggested the most reliable spatial composition per floor regarding possibile emergency evacuation event.

Development of Dietary Life Curriculum in Elementary and Secondary Schools Home Economics that Integrated Habermas's Three Systems of Action (Habermas의 세 행동체계를 융합한 초·중·고등학교 가정교과 식생활 교육과정 개발)

  • The purpose of this study was to develop curriculum of the elementary, and secondary school home economics that integrates three systems of action and to prepare a plan for convergence education in home economics curriculum. To achieve this goal, the characteristics of elementary, secondary school dietary curriculum integrating three systems of action, the focus of development, core competencies, and goals were derived through the review of literature. In this study, we set up perennial and sub-practical problems and selected content elements. The contents system of the developed curriculum was modified and supplemented by examining the validity of experts, and the achievement standard of the middle school home economics dietary education curriculum was developed by integrating the three systems of action. The content system of the elementary, and secondary school home economics curriculum that integrated the three systems of action is centered on practical problems, and the perennial problem is 'What should we do to practice healthy dietary life?' There are five areas of this curriculum: 'health and diet', 'food planning', 'food purchase and management', 'cooking', and 'meal', and the scope of curriculum is repeatedly expanded to 'personal and family', and 'social'. The practical problems in the five areas are composed of 10 practical problems in the two dimensions (personal & family, and society), and the practical problems and contents elements are spiralled by applying the principle of integration. The contents of this curriculum were compared with the achievement standards and learning elements of the dietary life in the 2015 elementary school practical arts, middle and high school 'technology & home economics', and the 'home economics science' curriculum. The results showed that the developed curriculum encompassed additional content beyond all the content already included in the 2015 revised curriculum.

Longitudinal analysis of the effects of social relationships with significant others in children and adolescents on academic achievement and school adjustment (아동·청소년기 중요타인과의 사회적 관계가 학업성취 및 학교적응에 미치는 효과 종단분석)

  • This study used the data from the 10th, 13th, and 16th child supplementary surveys of the Korea Welfare Panel to confirm the causal changes between social relationships, academic achievement, and school adjustment from elementary school to middle school and high school. Elementary school, which is childhood, and middle school, and high school, which is adolescence, are when relationships with parents, school teachers, and friends at home change very sensitively. is to check whether As a result of the analysis, the effect of the relationship between parents, teachers, and friends, who are important others, on academic achievement and school adjustment shows relatively different results according to each school level and gender group. The results of this study can confirm the effect of social relationships in childhood and adolescence on academic achievement and school adaptation, and furthermore, it is judged that it can be used as information to help healthy development of children and adolescents.
