A Study on the Preference of Korean Food and Revisiting Intention of Japanese Tourists (한국음식에 대한 일본관광객의 기호도 및 재방문 의사에 관한 연구)

  • This study was performed by questionnaire to investigate the preference for Korean traditional foods and revisiting intentions of Japanese tourists. The Subjects were consisted of 280 Japanese tourists staying at Gyeongju and Busan area. The results of this study were as follows: Among the respondents, $61.1\%$ selected 'taste' as the most important factor affecting the preference for korean traditional foods. On the frequency of eating, 'over 8 times per year' scored as high as $27.9\%$. The motivation of eating Korean foods was answered as 'With visiting Korea' by $48.2\%$ Thirties and forties ate Korean traditional foods more often than the others did $61.8\%$ of the Japanese tourists intended to eat more Korean traditional foods in the future. But the necessity of hygienic improvement was pointed out by $32.1\%$ of the subjects. Male subjects wanted the improvement of nutrition, taste and storage, while females shape, color and packing. The preferred Korean traditional foods were 'Bulgogi', 'Kimgui', 'BaechooKimchi', 'Bibimbap', and 'Samgaetang' in the order. On the other hand, the preference for 'Soojeongkwa', 'Songpeon', 'Kalgooksoo', 'Injelmi' and 'Sikhye' was very low. Male subjects favoured 'Cholbap', 'Ogokhap', and 'Youkgaejang', while females liked better 'Oisobaki' and 'Ddukboki. The people who were over fifties preferred 'Ssalbap', 'Boribap', 'BaechooKimchi', and 'Ggakdugi' and forties liked 'Kongbap' and 'Kimhap' better. The most effectual food items provoking revisiting intention to Korea were 'Jeon', and 'Bap', 'Meon' and 'Jjigae' were ranked in next.

Mapping of grain alkali digestion trait using a Cheongcheong/Nagdong doubled haploid population in rice

  • We performed a molecular marker-based analysis of quantitative trait loci for traits that determine the quality of appearance of grains using 120 doubled haploid lines developed by anther culture from the F1 cross between 'Cheongcheong' (Oryza sativa L. ssp. Indica) and 'Nagdong' (Oryza sativa L. ssp. Japonica). We therefore calculated the alkali digestion value (ADV), used to indirectly measure gelatinization temperature, to evaluate the quality of cooked rice in 2013 and 2014. The ADV score of frequency distribution was higher milled rice than brown rice. In total, nine different quantitative trait loci (QTLs) were found on 5 chromosomes in 2013 and 2014. Also, chromosome 5, 8 were detected over two years. We conclude that selected molecular markers from this QTL analysis could be exploited in future rice quality. In conclusion, we investigated ADV of brown and milled rice in CNDH population. This study found nine QTLs related to the ADV of brown and milled rice. The detected one marker can be used to select lines with desirable eating-quality traits because ADV is closely associated with the eating quality of cooked rice. Therefore, it will be useful to collect resources and distinguishable in many varieties for rice breeding program.

Correlations among eating habits, behaviors for dental health and dental caries of juveniles (청소년들의 식생활습관 및 구강보건행동과 치아우식증의 관련성)

  • Objectives : This study aimed to explore the influence of food intake and oral health behaviors on dental caries in juveniles. Methods : A total of 2,129 juveniles completed a questionnaire survey to identify the presence of permanent teeth caries, behaviors relevant to oral health and food intake based on the fourth National Health and Nutrition Survey. Results : Multiple logistic regression analysis showed that higher occasions of intake of carbonated drinks significantly cased dental caries in the meanwhile oral health behavior and the number of toothbrushing was in reverse proportion to dntal caries. The risk of dental caries was higher in the group of lower frequency of toothbrushing and intake of carbonated drink. Conclusions : Carbonated drinks intake and the number of toothbrushing is closely related to dental caries. So it is very important to develop oral health education program in order to improve eating habits and toothbrushing habits in juveniles.

The Study of Dietary Patterns According to Body Mass Index in Middle School Students in Seoul Area (서울지역 중학생의 체질량지수에 따른 식행동 분석)

  • This study was carried out to investigate the information concerning dietary patterns in middle school students. The subjects of this study were 420(underweight 140, normalweight 140, overweight 140) middle school students. We investigated eating habits, life habits, food attitude. Data were collected by questionnaire and analyzed with the SAS program(Version 8.1). The results of investigation are summarized and concluded as follows ; The average BMI of underweight was 18.3kg/$m^2$ , normalweight was 22.2kg/$m^2$ , overweight was 26.6kg/$m^2$ . In the case of eating habit, the overweight group shows that low frequency of meal and high of skipping meal than the others group. Also in Life habit, the overweight group shows longer of watching TV and using computer. The score of food attitude was also high in over weight group. This study can´t represent the whole middle school students in Seoul. So the survey for the whole students should be followed. We can expect to offer basic data for effective nutrition education by studying.

Evaluation of Dietary Behavior of Infants and Toddlers in Ganghwa County by Using Nutrition Quotient (NQ) (어린이 영양지수를 이용한 강화군 영·유아의 식행동 실태 평가)

  • The objectives of this study were to assess food intake frequency and food behavior of infants and toddlers by using the Nutrition Quotient (NQ). A total of 368 subjects (infants 111, toddlers 257) in Ganghwa county were analyzed in this study. The NQ was examined using an NQ questionnaire, which consisted of 19 food behavior checklist items. The items were grouped into five categories: balance, diversity, moderation, regularity, and practice. All data were statistically analyzed by SPSS 20, and significant difference was evaluated by Student's t-test and $x^2-test$. The BMIs of infants and toddlers were $16.54kg/m^2$ and $16.01kg/m^2$, respectively. The frequencies of consumption of vegetables and fruits were higher (p<0.001) in girls and toddlers compared to boys and infants, respectively. Food behavior of meal regularity (p<0.001), breakfast eating (p<0.001), and chewing well (p<0.001) were also higher in toddlers compared to infants. Total NQ score of infants and toddlers were 62.05 and 64.91, respectively, which were within medium grade. The NQ score of toddlers was higher than that of infants (p<0.0.5). NQ score was positively correlated with parent's education, monthly income, age, and exercise. Therefore, children and their parents need proper nutrition education and counseling to correct their eating habits and improve their nutritional status.

Differences in Characteristics and Dietary Habits between Volunteers and Selected Subjects in Nutrition Survey (영양조사 참여 자원자와 임의 선정자의 일반적 특성 및 식습관의 차이)

  • This study was designed to compare general characteristics and dietary habits between volunteers for a nutrition survey and non-volunteers using a questionnaire. Volunteers were recruited by advertising on the homepage of a university to assess nutritional status by examining dietary intake for three days and blood analysis. Non-volunteers were selected from some classes not related to nutrition. There were no significant differences in sex, monthly allowances, eating-out cost, drinking and exercise between the two groups, while the proportion of self-boarding was higher in the volunteer group than in the non-volunteer group, and smoking rate of volunteers was approximately 2.4 times lower than that of non-volunteers. Volunteers were less concerned about their diet than non-volunteers. No significant differences in concern about health, considering factors in their diet, self-evaluation of their diet, learning experience about nutrition, and vitamin/mineral supplement use were observed. The frequency and the place of eating-out for dinner were significantly different between the two groups. More proportions of volunteers tended to eat regularly and eat breakfast. Volunteers consumed seaweeds more frequently, and milk, fruits and fast foods less frequently than non-volunteers. Our results indicate that some characteristics and dietary habits of volunteers are different from those of non-volunteers. However, we could not show that volunteers were more interested in their diet and had desirable dietary habits than non-volunteers. Further research on the characteristics of volunteers who participate in nutrition survey may be helpful to interpret and generalize the survey results.

A Study on the Food abits of Housewives Living in Urban area and Rural Area (도시 및 농촌 거주 주부의 식습관에 관한 연구)

  • The purpose of this study is to collect basic data which will be effective in performing nutrional education. This study was conducted at Taegu area and adjacentrural area from June to July in 1986. The completely answered questionnaires were analyzed for food habits, purchase of food, the sources of nutrition information and general characteristics of housewives of 20's to 50's. The results obtained are summarized as follows ; 1) The major food of breakfast was boiled rice (93.9%). With decreasing level of education and in rural area, the percent of boiled rice was higher. 2) The frequency of eating out with family is higher in urban area, younger age, and nuclear family. 3) The preference for eating between meals appeared in order of bread and cakes, cookies, and the others. 4) The preference for desserts appeared in order of fruits, coffee, the other, coarse tea, adlay tea, and gingseng tea. 5) The purchasing place for vegetables and fruits was market (53.5%) on the whole, but in rural area, the percent of self production was higher (63.6%). 6) With increasing age and decreasing level of education, the percent of accuracy of nutrition knowledge was lower. 7) Sources in the knowledge of nutrition appeared in order of Radio and T.V., relatives, cookbooks, newspapers and magazines, lectures in cooking school. In order to promote nutritional status of family, nutritional education for housewives must be accomplished in the first place.

Survey on Consumption Pattern of Ramyon in Seoul Area (서울지역의 라면 소비실태 조사)

  • The consumption pattern of Ramyon(a deep-fried instant noodle) in Seoul area was surveyed in 1988. Of 2,432 consumers, 801 consumers were considered to be non-eating. Based on Ramyon eating consumers, most frequent consumption of Ramyon was 1-2 times per week. The frequency of consumption decreased in the order of middle school student, high school student, university student, office worker and housewife. Most consumers eat Ramyon because of convenience for meal substitution. Consumers considered that the taste of soup was more important than the texture of noodle. The most desirable texture and taste of soup were chewy and spicy, respectively. The consumption pattern of Ramyon between sex and among occupation groups were different. However, no significant differences were observed between sex and among occupation groups as far as quality factors were considered.

Subjective Stress Level Associated with Health Characteristics among First-Year Students of University: Focusing on the Freshman Health Survey in an University (대학 신입생의 주관적 스트레스 인지수준에 영향을 미치는 건강 특성 분석: 일개 대학 신입생 건강조사를 중심으로)

  • Ojectives: This study performed to analyze health promotion factors related to subjective stress level among first-year students of university. Methods: To examine the association with subjective stress level and health promotion factors, health survey was conducted with 3,892 students who were first-year students in an university by self-reported questionnaire from February 26 to March 10, 2015 in an university. Multiple regression analysis performed to identify the difference of health promotion factors by subjective stress level. Results: 1,015 students (26.1%) were on high stress level and 2,110 students (54.2%) were in healthy status. The 10.8% of them was obesity group and the 40% was alcohol use disorder group. The 8.2% had experienced depression in the last 1 year. In multiple regression models, it remained significantly the difference of subjective stress level by sex, subjective health status, sleep hours in a day, eating frequency of fruit and vegetable in a day, depression experience and suicidal thought in the last 1 year(p<0.05, p<0.01). On the other hand, it was not significant the difference by age, BMI, alcohol use disorder, eating breakfast, regular exercise and current smoking. Conclusions: To improve health promotion of first-year students of university, it should provide the intensive mental health program to women on campuses.

Factors Influencing Sleep among Korean Adolescents: Using Data from the 7th-8th Korea National Health and Nutrition Examination Survey, 2016-2020 (청소년의 수면에 영향을 미치는 요인: 제7-8기 국민건강영양조사 자료(2016-2020) 활용)

  • Purpose: This study was conducted to identify the factors influencing sleep among Korea adolescents. Methods: This was a secondary data analysis of the 7th-8th National Health and Nutrition Survey 2016-2020. Participants were 1,984 people age 12-18. Data were analyzed using frequency, percentage, χ2 test, and complex sample multiple logistic regression analysis. Results: The risk of sleeping more than 10 hours was 2.50 times higher in normal subjects, than subjects underweight in body weight perception (95% CI= 1.29-4.81). The risk of sleeping more than 10 hours was 2.10 times higher in overweight subjects, than subjects underweight in body weight perception (95% CI= 1.14-3.87). The risk of sleeping less than 8 hours was 1.36 times higher in subjects high in stress status, than subjects low in stress status (95% CI= 1.05-1.75). The risk of sleeping more than 10 hours was 1.99 times higher in subjects who had not eaten, than subjects who had been eating breakfast (95% CI= 1.11-3.55). Conclusion: Thus, it is necessary to intensify sleep management required through proper health behavior as well as the mental health management of adolescents and improvement in eating behavior.
