Characteristics and Health Benefit of Highly Marbled Wagyu and Hanwoo Beef

  • This review addresses the characteristics and health benefit of highly marbled Wagyu and Hanwoo beef. Marbling of Wagyu and Hanwoo beef has been increased in Japan and Korea to meet domestic consumer preferences. Wagyu and Hanwoo cattle have high potential of accumulating intramuscular fat (IMF) and producing highly marbled beef. The IMF content varies depending on the feeding of time, finishing diet, and breed type. IMF increases when feeding time is increased. The rate of IMF increase in grain-fed cattle is faster than that in pasture-fed cattle. Fatty acid composition are also different depending on breeds. Highly marbled Wagyu and Hanwoo beef have higher proportions of monounsaturated fatty acid (MUFA) due to higher concentrations of oleic acid. MUFAs have little effect on total cholesterol. They are heart-healthy dietary fat because they can lower low-density lipoprotein (LDL)-cholesterol while increasing high-density lipoprotein (HDL)-cholesterol. Clinical trials have indicated that highly marbled beef does not increase LDL-cholesterol. This review also emphasizes that high oleic acid beef such as Wagyu and Hanwoo beef might be able to reduce risk factors for cardiovascular disease.

  • Recently, the noise damage cases of livestock are increasing rapidly. The cases related to the livestock damage were occupied 20% of noise and vibration dispute intervention cases from 1991 to 2001. Of this results, 34% (16/38) are relative to pig, 27%(13/30) to domestic fowl and 20%(9/38) to cattle. The results of regression analysis of between the approval of damage rates (ADR) and a noise level by livestock have been derived that pigs was highly sensitive. In case of cattle, the regression model to apply the ADR according to the appraised noise level was made, but it needs to be complemented later.

사람 ?토스피라병 발생지역의 동물에 대한 ?토스피라균의 혈중 항체조사 (Serological survey on the leptospiral antibody in domestic animals in the area occurred human leptospirosis)

  • Serological survey were conducted on the leptospiral antibody in domestic animals which were fed in the three rural village occurred human leptospirosis. Names of three villages are Shinnam-li, Shinjeop-li and Jinai-li which are located in near the northeastern part of Yeoju town in Kyunggi province. Total 66 serum samples were collected from the domestic animals in which 12 dairy cows, 10 Korean native cattle, 12 pigs and 32 dogs were included. Leptospiral antibody were detected with 4 different serovars of leptospira living antigens, such as Leptospira icterohaemorrhagiae, L. pomona, L. canicola and L. tarassovi by microscopic agglutination test for each serum sample. The results are obtained as follow. 1. All 66 sera collected from the domestic animals at three villages showed negative reaction with 4 different serovars of leptospiral antigen. 2. Only one serum sample taken from a dairy cow in Shinjeop-li showed a weak positive reaction with Leptospira tarassovi. It is suggest that this positive case is not infected with L. tarassovi, but with vaccination. 3. It is indicated that all domestic animals which wen, fed in the villages occured human leptospirosis were not infected with above 4 different serovars of leptospira at least.

가축 전염병 발생에 따른 소와 닭 사체의 화학적 처리 방법의 적용 (Application of chemical treatment for cattle and chicken carcasses for the control of livestock infectious diseases)

  • In the event of an outbreak of a livestock epidemic, it has been considered that the existing burial-centered carcass disposal method should be improved ecofriendly for prevention of leachate and odors from burial basically in regard of pathogen inactivation. Therefore, the aim of this study is whether it was possible to treat the carcass of cattle and chickens using the chemical carcass treatment method. It was conducted to establish detailed treatment standards for the chemical treatment method of cattle and chicken carcasses based on the results of the proof of the absence of infectious diseases in cattle chickens. After inoculating cattle carcass with 10 pathogens (foot and mouth disease virus, bovine viral diarrhea virus, Mycobacterium bovis, Mycobacterium avium subsp. Paratuberculosis, Brucella abortus, Bacillus anthracis, Clostridium chauvoei, Clostridium perfringens, Escherichia coli, and Salmonella Typhimurium) and chicken carcasses with low pathogenic avian influenza virus, Clostridium perfringens type C, E. coli and Salmonella Typhimurium, these were treated at 90℃ for 5 hours in a potassium hydroxide liquid solution corresponding to 15% of the body weight. This method liquefies all cadaveric components and inactivates all inoculated pathogens by PCR and culture. Based on these results, it was possible to prove that chemical treatment of cattle and chicken carcasses is effective in killing pathogens and is a safe method without the risk of disease transmission. The chemical treatment method of livestock carcasses can be suggested as an alternative to the current domestic burial-centered livestock carcass treatment method, preventing environmental pollution, and contributing to public health.

Current situation and future prospects for the Australian beef industry - A review

  • Beef production extends over almost half of Australia, with about 47,000 cattle producers that contribute about 20% ($A12.7 billion gross value of production) of the total value of farm production in Australia. Australia is one of the world's most efficient producers of cattle and was the world's third largest beef exporter in 2016. The Australian beef industry had 25 million head of cattle in 2016-17, with a national beef breeding herd of 11.5 million head. Australian beef production includes pasture-based cow-calf systems, a backgrounding or grow-out period on pasture, and feedlot or pasture finishing. Feedlot finishing has assumed more importance in recent years to assure the eating quality of beef entering the relatively small Australian domestic market, and to enhance the supply of higher value beef for export markets. Maintenance of Australia's preferred status as a quality assured supplier of high value beef produced under environmentally sustainable systems from 'disease-free' cattle is of highest importance. Stringent livestock and meat quality regulations and quality assurance systems, and productivity growth and efficiency across the supply chain to ensure price competiveness, are crucial for continued export market growth in the face of increasing competition. Major industry issues, that also represent research, development and adoption priorities and opportunities for the Australian beef industry have been captured within exhaustive strategic planning processes by the red meat and beef industries. At the broadest level, these issues include consumer and industry support, market growth and diversification, supply chain efficiency, productivity and profitability, environmental sustainability, and animal health and welfare. This review provides an overview of the Australian beef industry including current market trends and future prospects, and major issues and opportunities for the continued growth, development and profitability of the industry.

The Japanese Wagyu beef industry: current situation and future prospects - A review

  • In Japan, Wagyu cattle include four Japanese breeds; Black, Brown, Shorthorn, and Polled. Today, the renowned brand name Wagyu includes not only cattle produced in Japan, but also cattle produced in countries such as Australia and the United States. In recent years, the intramuscular fat percentage in beef (longissimus muscle) from Japanese Black cattle has increased to be greater than 30%. The Japanese Black breed is genetically predisposed to producing carcass lipids containing higher concentrations of monounsaturated fatty acids than other breeds. However, there are numerous problems with the management of this breed including high production costs, disposal of untreated excrement, the requirement for imported feed, and food security risks resulting from various viral diseases introduced by imported feed. The feeding system needs to shift to one that is more efficient, and improves management for farmers, food security for consumers, and the health environment for residents of Japan. Currently, we are developing a metabolic programming and an information and communications technology (ICT, or Interne of Things) management system for Wagyu beef production as future systems. If successful, we will produce safe, high-quality Wagyu beef using domestic pasture resources while solving the problems of how to utilize increasing areas of abandoned agricultural land and to make use of the plant-based feed resources in Japan's mountainous areas.

온라인 축산물 유통 실태 조사 (Distribution status survey of livestock Products Sold via Online Websites)

  • This study is aimed to find out distribution status of online-market livestock products by purchasing and examining 120 cases of livestock products (seasoned meat: 17, 33 cases of packaged meat, 23 cases of ground meat, 19 cases of ham, 11 cases of sausage, 4 cases of bacon, 1 case of meat processing, 8 cases of Meat extract processed, and 4 cased of Dry storage of meat) at 17 On-line markets from April to August. 2015. We checked the weight of them first, and carried out ingredients test for each of processed meats. And we performed gene screening test on the products which were labelled 'Hanwoo' to investigate that the products were made of Korean native cattle. we also carried out test of identifying domestic animal species on ham, sausage and ground processed products. After weighing all products, we could know that all of them were delivered more than labelled weight or in allowable error. The result values of test which measured level of preservatives, Nitrite, Volatile Basic Nitrite (VBN), and tar Color by the type of processed meat products were in permissible range or not detected. Also, 17 beefs inspected Korean native cattle gene test were confirmed that they were made by real korean native cattle. But 2 cases of Ham, sausage, and ground processed products had difference between label and goods. In this study, we could make a decision that livestock products, distributed in On-line markets, were safe and expect to make higher degrees of hygiene for livestock products seller. Futhermore, we hoped result of this study could be used by basic data for progressive national policy decisions.

Status of Haemaphysalis tick infestation in domestic ruminants in Iran

  • The geographical distribution and ecological preferences of Haemaphysalis in domestic animals in Iran were studied 4 times a year from April 2003 to March 2005. A total of 1,622 ixodid tick specimens were collected from 3 different zones. Among them, 108 (6.7%) Haemaphysalis ticks, consisting of 6 species, were identified; H. punctata (3.4%), H. parva (0.5%), H. sulcata (0.6%), H. choldokovskyi (1.7%), H. concinna (0.06%) and Haemaphysalis sp. (0.6%). H. punctata was the most abundant species, whereas H. concinna was the rarest species collected in humid and sub-humid zones on cattle, sheep and goats. H. choldokovskyi was principally collected from sheep and goats grazed in cold mountainous areas. The infested areas consisted of Caspian Sea (Guilan, Mazandaran, Golestan, and central provinces), mountainous (Azarbaiejan, Ardebil, Kohgilouyeh, and Kordestan) and semi-dessert (Khorasan, Semnan, Herman, Sistan, and Baluchestan) zones. The Caspian Sea zone (23.6%) was the most highly infested region. The results show that various species of Haemaphysalis ticks infest domestic ruminants in Iran and each tick species show characteristic geographical distributions.

Genetic, management, and nutritional factors affecting intramuscular fat deposition in beef cattle - A review

  • Intramuscular fat (IMF) content in skeletal muscle including the longissimus dorsi muscle (LM), also known as marbling fat, is one of the most important factors determining beef quality in several countries including Korea, Japan, Australia, and the United States. Genetics and breed, management, and nutrition affect IMF deposition. Japanese Black cattle breed has the highest IMF content in the world, and Korean cattle (also called Hanwoo) the second highest. Here, we review results of research on genetic factors (breed and sex differences and heritability) that affect IMF deposition. Cattle management factors are also important for IMF deposition. Castration of bulls increases IMF deposition in most cattle breeds. The effects of several management factors, including weaning age, castration, slaughter weight and age, and environmental conditions on IMF deposition are also reviewed. Nutritional factors, including fat metabolism, digestion and absorption of feed, glucose/starch availability, and vitamin A, D, and C levels are important for IMF deposition. Manipulating IMF deposition through developmental programming via metabolic imprinting is a recently proposed nutritional method to change potential IMF deposition during the fetal and neonatal periods in rodents and domestic animals. Application of fetal nutritional programming to increase IMF deposition of progeny in later life is reviewed. The coordination of several factors affects IMF deposition. Thus, a combination of several strategies may be needed to manipulate IMF deposition, depending on the consumer's beef preference. In particular, stage-specific feeding programs with concentrate-based diets developed by Japan and Korea are described in this article.

한국 재래품종과 외래품종의 구별을 위한 초위성체 마커의 개발 (Development of Microsatellite Markers for Discriminating Native Korean and Imported Cattle Breeds)

  • 성염색체에 위치하는 5 개의 초위성체 마커(INRA30, TGLA325, UMN0803, UMN0905, UMN0929) 를 이용하여 재래소 3품종과 외래소 7품종(칡소, 한우, 제주흑우, 홀스타인, 일본화우, 샤롤레, 앵거스, 헤어포드, 시멘탈, 한우X 샤롤레 교잡종)의 유전적 특징을 확인하였다. 상업적으로 판매되는 소고기의 잘못된 원산지 표기를 통해 부당한 경제적 이득을 취하고자 하는 문제를 해결하기 위한 방법으로 소고기 샘플을 빠르고 저비용으로 확인 하기 위한 방법으로 사용하기 위해 좌위 또는 품종 특이적 대립유전자를 탐색하고 좌위별 대립유전자수, 대립유전자빈도, 이형접합도 그리고 다형정보량(PIC)을 구하여 이들 10품종의 유전적 다양성을 평가하였다. STRUCTURE 분석을 통한 군락의 분류 및 유전적 균일성 분석에서 재래소 품종과 외래소 품종으로 두개의 주요 그룹으로 나뉘어진다. 이러한 결과들은 재래소와 외래소 품종의 특이적인 유전적 차이를 나타낸다. 또한 Nei's 표준 유전적 거리로 나타난 neighbor-joining tree에서도 독립적인 계통유전학적인 위치를 보여주었다. 이러한 결과는 국내 재래종과 외래품종 사이의 유전적 거리, 품종의 역사 및 그들의 지리적 기원 사이에 명백한 차이를 나타내는 증거로 사료된다. 이러한 결과들로 이들 성염색체의 초위성체 마커들에 의해 소 품종들의 유전적 다양성과 연관성은 과학적인 기초자료로 활용되고 재래소와 외래품종 소고기를 구별할 수 있는 DNA 마커들로 이용될 수 있을 것으로 사료된다. 그러므로 이러한 마커들은 효율적인 이력추적 시스템을 만드는데 사용되어 원산지 표시 위반을 억제하는데 유용할 것이다.
