Comparison of Dietary Intakes, Urinary Excretions and Plasma Levels of Taurine in Women of Seoul and Kyunggi Area (서울과 경기지역 성인여성의 타우린 섭취량과 배설량 및 혈장 타우린 농도)

  • The purpose of this study was to investigate dietary taurine intakes, plasma taurine levels and urinary taurine excretions of women in Seoul(Kangbuk-ku) and Kyunggi(Yeoju) area, Korea. Seventy married women aged 39.7$\pm$8.9 have volunteered for this study: 36 from Seoul area and 34 from Kyunggi area. Diet samples were collected from the participants and the samples included three meals (breakfast, lunch and supper), snacks, drinks and whatever the participants had eaten for 24 hours. The plasma was obtained by allowing a 5 $m\ell$ fasting blood sample to be in a heparinized tube for 30 min and centrifuging it at 11,000${\times}$g for 20 min. The collected diets were blended, centrifuged and deproteinized. Taurine levels in the diet and plasma were determined as the dabsyl derivative using HPLC with Rf-detector. The intake of taurine ranged from 6.8 to 837.8 mg/day and its mean value was l45.5$\pm$164.0 mg/day (mean$\pm$SD). The 90th, 50th and 10th percentile values of the taurine intake were 280.0, 94.3 and 26.8 mg/day, respectively. There was a significant difference between two groups: 202.0$\pm$204.9 for Seoul area and 85.5$\pm$67.2 mg/day for Kyunggi area(p<0.00l). The taurine level in plasma ranged from 42.1 to 201.9 $\mu$mol/L and its mean value was 74.9$\pm$22.8 $\mu$mol/L. The 90th, 50th and 10th percentile values of the plasma taurine were 101.1, 70.7 and 54.6 $\mu$mol/L, respectively. There was no significant difference between Seoul area and Kyunggi area in plasma taurine level.

Effect of Dietary Inclusion of Medicinal Herb Extract Mix in a Poultry Ration on the Physico-chemical Quality and Oxidative Stability of Eggs

  • A mixture of three dietary medicinal herb extracts (MHE, mulberry leaf:Japanese honeysuckle:goldthread = 48.5: 48.5:3.0) was prepared as an additive of hen's feed. One hundred-eight, 28-wk-old Lohmann Brown hens were assigned randomly with three levels of MHE in the diet (0, 0.3, and 1%). Hens were fed for 6 wks and eggs were collected in the 6th week, and stored at $4^{\circ}C$ for 14 days to investigate the effect of MHE on the quality and oxidative stability of eggs. Internal quality of the egg including weight, shell color, albumen height, yolk color, shell weight, shell thickness, and Haugh units was not different among the dietary treatments. The oxidation stability of raw and cooked egg was determined by 2-thiobarbituric acid reactive substances (TBARS) value, 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity and 2,2'-azinobis(3-ethylbenzonthianoline-6-sulfonic acid) ($ABTS^{+}$) radical reducing ability. Results indicated that TBARS value at day 0 and $ABTS^{+}$ radical reducing ability of eggs from hens fed MHE were higher than from the control group. However, DPPH radical scavenging activity showed no difference in both raw and cooked samples. Results of the present study indicate that dietary MHE may slightly enhance the oxidative stability of eggs.

The Effect of Dietary Calcium Level on Biochemical Variables of Bone Metabolism in Ovariectomized Female Rats (식이 칼슘량이 난소 절제한 흰쥐에서 골대사 지료에 미치는 영향)

  • This study was done to evaluate the effectiveness of dietary calcium level(a diet which met 100% or twice the calcium level in AIN-76 diet) on preventing bone loss in ovariectomized rats. Forty female Sprauge-Dawley rats(body weight 200$\pm$5g) were divided into two groups. One group were ovariectomized(Ovx) while the others received sham operation(Sham). Thereafter, each rat group was further divided into normal calcium diet(NCD, 0.52%) and high calcium diet(HCD, 1.04%) sub-groups. All rats were fed on experimental diet and deionized water ad libitum for 8 weeks. Urinary pyridinoline & creatinine and serum estradiol, luteinizing hormone, calcium, phosphate, total protein, albumin, alkaline phosphatase and osteocalcin were determined. There were no significant differences in serum calcium. total protein and albumin in the two groups(Ovx vs Sham) of rats. Ovariectomized rats had significantly lower estradiol than sham operated rats. There was a highly significant correlation between total bone mineral density(TBMD) and overall level of esteradiol(r=0.59, p<0.05). Total bone mineral density did not correlate significantly with ALP or osteocalcin, although a negative trend was evident. However, the rats fed high calcium diet had a lower crosslinks value and osteocalcine than the rats fed normal calcium diet. An increased rate of bone turnover is usually associated with a decrease in bone mass bexause bone formation at each remodeling site is never as great as resorption. Ovariectomized rats fed high calcium diet had a lower crosslink value and osteocalcin; it means high cacium diet decreased bone turnover rate. The findings from the present study demonstrated that bone loss due to ovarian hormonal deficiency can be partially prevented by a high calcium diet. Futhermore, these findings support the strategy of the use of a high calcium diet in the prevention of estrogen depletion bone loss (postmenopausal osteoporosis).

Treated Olive Cake as a Non-forage Fiber Source for Growing Awassi Lambs: Effects on Nutrient Intake, Rumen and Urine pH, Performance, and Carcass Yield

  • The objective of this study was to investigate the effects of partial replacement of wheat hay with sun-dried (SOC) or acid-treated SOC (ASOC) olive cake on nutrient intake and performance of Awassi lambs. An additional objective was to study the effects of acid treatment of olive cake (OC) on its chemical composition and nutritive value. On DM basis, sun-drying of OC did not dramatically affect its chemical composition. On the other hand, treating SOC with phosphoric acid decreased (p<0.05) SOC contents of neutral detergent fiber. Twenty seven male lambs ($17.6{\pm}0.75$ kg body weight) individually housed in shaded pens were randomly assigned to one of three dietary treatments (9 lambs/treatment). Dietary treatments were formulated to be isocaloric and isonitrogenous by replacing 50% of wheat hay in the control diet (CTL) with SOC or ASOC and to meet all nutrient requirements. Dietary treatments had no effects on nutrient intake or digestibility except for ether extract. Lambs fed the SOC diet had (p = 0.05) faster growth rate, greater final body weight, and greater total body weight gain in comparison with the CTL diet, but not different from the ASOC diet. Additionally, lambs fed the SOC diet had greater (p = 0.03) hot and cold carcass weights than the ASOC diet, but not different from the CTL diet. However, feed conversion ratios and dressing percentages were similar among dietary treatments. In conclusion, replacing half of dietary wheat hay with SOC improved performance of Awassi lambs with no detrimental effects on nutrients intake or digestibility. No further improvements in the nutritive value of SOC and lambs performance were detected when SOC was treated with acid.

The Effects of Dietary Sulfur and Vitamin E Supplementation on the Quality of Beef from the Longissimus Muscle of Hanwoo Bulls

  • This study was carried out to investigate the effects of dietary sulfur (S) and vitamin E (Vit E) supplementation on the quality of beef from longissimus muscle of Hanwoo bulls. Eleven, 29 months-aged Hanwoo bulls were randomly divided into three feed supplementation groups (S (n = 4), Vit E (n = 4) and S+Vit E (n = 3)). S was given as much as 12 g/head/d and Vit E was given as much as 1,200 IU/head/d; both supplements were given for 3 months prior to slaughter. At 24 h post-slaughter, the carcasses were weighed and evaluated by official grader for carcass traits. At 48 h post-slaughter, the M. longissimus from each carcass was collected and stored at $4{\pm}0.2^{\circ}C$ for 10 days. There were no significant differences in yield and quality grades of carcass and proximate composition, physical properties and aroma pattern of meat among all groups. At 5 days of storage, the TBARS value of meat from cattle with S+Vit E supplementation was significantly lower (p<0.05) than other groups; and at 10 days of storage, the TBARS value of meat from cattle with Vit E and S+Vit E supplementations was significantly lower (p<0.05) than from cattle with S supplementation. At 5 days of storage, MetMb concentration of meat from cattle with S+Vit E supplementation was significantly lower (p<0.05) than from cattle with Vit E supplementation; and at 10 days of storage, MetMb concentration of meat from cattle with S+Vit E supplementation was significantly lower (p<0.05) than from other groups. At 10 days of storage, the redness value of meat from cattle with S supplementation was significantly higher (p<0.05) than from cattle with Vit E supplementation and the hue-angle value of meat from cattle with S and S+Vit E supplementations was significantly lower (p<0.05) than from cattle with Vit E supplementation. Dietary Vit E supplementation had a better effect on lipid stability whereas dietary S supplementation had a better effect on OxyMb stability. The dietary combination of S and Vit E created the highest protection for beef from myoglobin oxidation and thus improved the color stability of meat.

Effect of Dietary Supplementation of Eleutherococcus Senticosus, Taurine and Carnitine on Endurance Exercise Performance in Rats (가시오갈피, 타우린 및 카르니틴 보충식이가 흰쥐의 지구력운동 수행능력에 미치는 영향)

  • The effects of dietary supplementation of Eleutherococcus senticosus, taurine and carnitine on maximal endurance exercise performance along with other related parameters were evaluated in rats that underwent aerobic exercise training for 6 weeks. Thirty-two male rats (4 weeks old) were randomly divided into 4 groups, and fed experimental diets and/or aerobic exercise trained according to the protocol: SC (sedentary control group), EC (exercise-trained control group), EE (exercise-trained Eleutherococcus senticosus-supplemented group), and EETC (exercise-trained Eleutherococcus senticosus, taurine and carnitine-supplemented group). The food efficiency ratio of EC rats was significantly lower than the value for SC rats (p < 0.01). Exercise-trained control animals (92 $\pm$ 8.8 min) could run significantly longer until exhausted on the treadmill than sedentary control rats (11 $\pm$ 0.8 min) (p < 0.001). Animals fed an Eleutherococcus senticosus-supplemented diet, and an Eleuthherococcus sonticosus, taurine and carnitine- supplemented diet while undergoing aerobic exercise training for 6 weeks exhibited, respectively, 8 and 5 minutes longer running performance until exhausted than the rats fed the control diet. The gastrocnemius muscle glycogen concentration of the rats, measured at 48 hours post maximal exercise performance test, was 43% higher in EC rats than the value for SC rats (p < 0.05), but was not different among EC, EE, and EETC rats. The mitochondrial citrate synthase activity of the soleus muscle was significantly higher in EC rats compared to the value for SC rats (p < 0.01), and showed a tendency to increase, without statistical significance, in EE or EETC rats compared to the value for EC rats. These results indicate that aerobic exercise training for 6 weeks significantly improved maximal exercise performance, muscle glycogen content along with citrate synthase activity, which are important in the energy metabolism of muscle under aerobic exercise. Dietary supplementation of Eleutherococcus senticosus in rats while undergoing aerobic exercise training improved maximal endurance exercise performance without significantly affecting muscle glycogen content and enzyme activities involved in energy metabolism during exercise. Taurine and carnitine supplementation failed to show an additive effect on maximal endurance exercise performance when consumed along with Eleutherococcus senticosus.

Impact of the Selection Attributes of Restaurants Specialized in Yaksun Foods on Purchase Intention and Customer Satisfaction: Focused on Mediating Effects of the Value Awareness of Yaksun Food (약선음식 제공 레스토랑의 선택속성이 구매의도와 고객만족도에 미치는 영향: 약선음식 가치 인식의 매개효과를 중심으로)

  • The purpose of this study was to examine the influence of selection attributes of restaurants specialized in Yaksun food on purchase intentions and satisfaction level of consumers as well as mediating effects of value awareness of Yaksun food on relationships among the variables. The subjects in this study were 200 female adults in Seoul and Busan. The findings of the study were as follows: First, purchase intentions for Yaksun food were positively influenced by food quality, human service, and health effect among selection attributes for restaurants specialized in Yaksun food. Second, customer satisfaction with Yaksun food was positively affected by food quality and human service among selection attributes. Third, purchase intention for Yaksun food and customer satisfaction were positively influenced awareness of functional value, emotional value and economic value of Yaksun food. Fourth, awareness of emotional and economic value of Yaksun food had mediating effects on relationships between selection attributes for restaurants specialized in Yaksun food and purchase intentions, and awareness of functional value of Yaksun food had mediating effects on relationships between the selection attributes of restaurants specialized in Yaksun food and customer satisfaction. The findings of the study illustrate that selection attributes for restaurants specialized in Yaksun food and value awareness have an impact on purchase intentions and customer satisfaction, and value awareness of Yaksun foods has mediating effects on the relationship of selection attributes with purchase intentions and customer satisfaction.

Effects of Dietary Acidogenicity Values on Rumen Fermentation Characteristics and Nutrients Digestibility

  • This study was conducted to observe effects of dietary acidogenicity value (AV) on rumen fermentation characteristics and nutrients digestibility. The AV of feedstuffs was based on the dissolution of Ca from $CaCO_3$ powder added at the end of a 24 h in vitro fermentation. Three diets were formulated to be iso-energetic and iso-nitrogenous with different AV. Two experiments were involved in this study. In experiment 1, it appears that pH, $NH_3-N$ concentration and A:P ratio tended to decrease, but gas production, VFA production and DM disappearance tended to increase with increasing dietary AV. In experiment 2, the rumen pH tended to decrease in order of high AV>medium AV>low AV treatment, respectively. There were no significant effects of dietary AV on $NH_3-N$ concentration, enzyme activity and nutrient digestibility. In addition, total VFA and individual VFA concentrations tended to increase with increasing dietary AV without significance. In fact, we hypothesized that different dietary AV would affect rumen fermentation and nutrients digestibility because dietary AV was adjusted with fermentable carbohydrate sources. The present results indicate that differences in dietary AV between treatments were too small to affect rumen fermentation and its effects were minimal.

Status and Training Demand on Dietary Education of Kindergarten Teachers in Jeonbuk Province (전북지역 유치원교사의 식생활교육 실태와 연수 요구도)

  • The purpose of this study was to investigate the kindergarten teachers operation and demand of dietary education in Jeonbuk province. The study was carried out using a self administered questionnaire and the subjects were 148 kindergarten teachers. The questions were general characteristics of the subjects, operating status as frequency, place, education time, and training demand on dietary education. The results are as follows. All subjects were female(100.0%), more than half were 20's(62.8%) in their age, teaching career was 31.8% in less than 3 years, and 68.2% in more than 3 years. Frequency of the dietary education operation was 3 times per week(53.4%), place of education were classroom(81.9%), and education time was lunch time(87.5%). Twenty three point eight percent of the subjects recognized the facilities for education was lack, 32.6% of them did the education materials was lack. The desirable frequency of dietary education was 1~2 times per week(40.4%). About two third of the subjects(73.6%) recognized the objects of the dietary education was not only preschool children but also their parents. Most of the subjects(83.8%) had willing to get training, the proper training program was 10 hours(87.8%), and they prefer semester weekday(64.9%) than semester weekend(30.5%). Proper ratio in the core value of dietary education as environment : health : thanks was 31.8% : 40.9% : 27.2%. It is concluded that the demand on dietary education of kindergarten teachers is necessary for their education program in kindergarten.

Factors Affecting Bone Mineral Density by Dietary Pattern Group for Some Korean College Women (일부 우리나라 여대생의 식사 패턴군에 따른 골밀도에 영향을 미치는 요인 분석)

  • To investigate the effects of dietary patterns on bone mineral density and its biochemical markers among Korean healthy college women for 2 years, 34 female college students were recruited through convenience sampling. Bone mineral density was measured using Dual Energy X-ray Absorptiometry (DEXA) twice at baseline and two years later. Osteocalcin and parathyroid hormone were measured in fasting serum and N-teleopeptides of type collagen (NTx) in urine. Dietary intake was assessed by 24-hour recall method 8 times with average 4-month interval. Dietary patterns with percent energy of each food group using cluster analysis were classified into two groups. The first cluster (n = 16) was characterized with high consumption of bread, snack, fast foods, beverage and considerable of rice so it was determined as 'Modified dietary pattern group'. The second cluster was characterized with high consumption of rice and kimchi so determined as 'Traditional dietary pattern group'. There were no significant difference of age, menarcheal age, body mass index but percent of body fat by pattern groups. The traditional group showed higher value of bone mineral density among lumber spine and all femur sites at baseline and 2 years later but it was not significant after adjusted for percent of body fat. Serum osteocalcin and urine NTx was higher among the traditional group at baseline than the modified group. There were similar proportions of carbohydrate:fat:protein between groups but significantly higher intake of protein, iron, vitamin A among the traditional group. In conclusion, there were two distinctive dietary patterns among Korean college women. There was difference of bone mineral density and its biochemical markers between two patterns. Further research would be necessary to explore the relationship between dietary patterns and health risks for larger-sized and various populations.
