This study was conducted to evaluate menu pattern and nutritional contents of snack menus provided by child care information centers in Seoul. Snack menus during March 2013 (morning snack : 125 cases, afternoon snack : 100 cases), including information on portion size, were collected from five child care information centers, after which the number of menu items, menu patterns, and nutritional contents were analyzed. About two-thirds of total snack menus included two menu items. There were significant differences in service time (morning & afternoon snacks). 'Beverage+Food' pattern (66.7%) was the most commonly used; 'Beverage' pattern was significantly higher in morning snacks (10.4%) than in afternoon snacks (1.0%). Morning and afternoon snacks provided 124.5 and 170.6 kcal of energy and 116.4 and 90.9 mg of calcium, respectively, which are 8.9% and 12.2% as well as 19.4%, and 15.2% of children's daily energy and calcium requirements. To improve the quality of food and nutrition offered to children through snacks at child carre centers, a more detailed snack menu plan as well as nutritional guidelines for institutions should be developed.
Ninety-three weaning children, 8-36 Mo. old wererandomly selected from rural areas of South Korea. Food and nutrient intake level were measured by the weighing-interview method for two consecutive days in December 1976. Their weaning pattern, dietary pattern, food and nutrient intake level were analyzed. A brief summary of 4he finding follows; 1) 80% of the rural children completed the weaning by the age of 24 months. 2) 44% of 8-12 month olds were living only on breast mil while the rest of the age group received regularly a supplementary food. 3) Over half of the 8-36 Mo old children investigated were receiving the same dietary pattern, arbitrarily called 'Diet K'. Diet K consists of rice-Kimchi-seasoning-oil which is the basic components of an average Korean adult diet. This very composition of the diet K and no other variety of food included inevitably result in low intake of vitamin A, iron, calcium and riboflavin for the children. 4) The weaning children were found to be taking all nutrients except niacin in amount far from sufficient to recommended level. Particularly low were the intakes of good quality protein, iron, vitamin A, riboflavin and vitamin C which met only 15%-37% of the recommended level for 12-36 Mo. olds. 5) It was concluded that majority of the rural children of weaning age in Korea are given the simple diet K and feeding the weaning children only with the basic dietary pattern of adults can not meet the nutritional requirements. This study was performed to develop a Kdiet-index based on the definitions and characteristics of traditional Korean food. The Korean Food Pattern Index (Kdiet-index) for diseases was applied using dietary data from the 2017 National Health and Nutrition Examination Survey (KNHANES) and the association between Kdiet-index and metabolic disease was confirmed. The study subjects were 1,971 Korean adults aged >40, and the components were classified according to 14 criteria used to establish the Kdiet-index. Main ingredients up to the top 3 were designated using dish names, ingredients, and contents using KNHANES dietary data. Kdiet-index was classified using scores of ≤3 points, 4-7 points, and ≥8 points and total Kdiet-index were calculated by summing dietary scores. Correlations between Kdiet-index and obesity, hypertension, hyperlipidemia, and diabetes were analyzed. The odds ratio (OR) and 95% confidence interval (CI) for obesity were 0.531, 0.385~0.732 and for elevated cholesterol (≥240 mg/dL) indices were 0.471, 0.282~0.788, respectively, which showed a significant decreased in the risk for each disease for Kdiet-index of ≥8 points. This study confirms that metabolically related clinical results improved significantly as Kdiet-index increased and that higher Korean food pattern indices are associated with lower risks of metabolic disease

The Korean society has been dramatically changed in its population, with rapidly increasing number of multicultural families through international marriages. The objective is to investigate the dietary patterns as an acculturation for multicultural families in urban area. The research target was 89 marriage immigrant females in Daejeon, in whom 50.6 % was in their twenties and 49.4 % was in their thirties to forties. 39.3% of the subjects was from China and 28.1 % from Vietnam, which showed similar pattern to the ratio of marriage immigrants' homeland in Korea. As age goes higher, cultural adaptation in Korea was the integration pattern. Marriage immigrant females from Vietnam showed the highest rates of marginalization pattern as cultural adaptation. Moreover, those with longer marriage duration and with children tend to show higher rates of integration pattern. 'Food attitude', 'food diversity', and 'balance life' as eating behaviors are related with acculturation. In conclusion, the multicultural families in urban area showed integration acculturation patterns, which could be influenced by their socioeconomic factors, such as residence period and Korean language ability and food diversity as dietary patterns factors. Further study with a quantitative analysis is needed in order to understand the effect of dietary patterns on acculturation in the multicultural families.
The aim of this study was to investigate the dietary and lifestyle factors related to bowel pattern of female high school and college students in Gyeonggi Province. The total of 202 self-administered questionnaires (high school students 77 ; college students 125) were analyzed. All respondents were devided into four groups based on their self-reported pattern of defecation: 18 subjects ($9.0\%$) comprised the normal group, 73 ($36.1\%$) the constipation group, 73 ($36.1\%$) the constipation/diarrhea group, and 38 ($18.8\%$) the diarrhea group. Regularity of exercise was significantly higher in the college students than high school students, and times spending on a chair were longer in the high school students than college students. Most students ($72.7\%$) reported that they had stress. Fourty point six percent of the subjects reported that they had 3 meals per day, which tended to be higher in the normal and diarrhea group than constipation and constipation/ diarrhea group. Most students (69.7) skipped breakfast which was lower in the normal group than the other groups. The most preferred dietary fiber food was korean cabbage kimchi. Fifty-eight point four percent of the subjects reported that they had irregular bowel movement. Bowel movement was more irregular in the high school students than college students, and in the constipation group than the other groups. Of the subjects, $77.7\%$ had defecation frequency between three per week and three per day. Those who spent within 10 minutes for defecation were $79.6\%$, and those had difficulty in evacuating were $76.0\%$. High school students and those with constipation and constipation/diarrhea had a significantly lower defecation frequency, longer time spent at the toilet, and greater difficulty in evacuating than college students and normal and diarrhea group. The percentage of those who had feelings of residue in the intestine after defecation was $92.5\%$, and it was greater in the constipation or diarrhea group than in the normal group. Most students ($93.5\%$) reported that they had abdominal pain or discomfort. These results suggest that decreasing times spending on a chair, decreasing stress, keeping 3 meal per day at regular hours, and increasing dietary fiber intake are associated with desirable bowel pattern.
Objectives: Young children's feeding characteristics can play an important role in eating habits and health during later childhood. This study was conducted to examine the associations of feeding characteristics with dietary patterns and obesity in children. Methods: This study utilized data from the Korea National Health and Nutrition Examination Survey conducted between 2013 and 2017. In total, 802 toddlers were included, with information on their demographic characteristics, feeding practices and duration, and 24-hour recall obtained from their parents. Feeding characteristics were categorized into feeding type, duration of total breastfeeding, duration of total formula feeding, duration of exclusive breastfeeding, and age when starting formula feeding. Dietary patterns were identified based on factor loadings for the food groups for 3 major factors, with "vegetables & traditional," "fish & carbohydrates," and "sweet & fat" patterns. Overweight/obesity was defined as ≥85th percentile in body mass index based on the 2017 Korean National Growth charts for children and adolescents. Multiple regression analysis was conducted to examine associations between feeding characteristics and dietary patterns. The association between dietary patterns and obesity was analyzed using multivariable logistic regression analysis. Results: The early introduction of formula feeding was inversely associated with the "vegetables & traditional" pattern (β=-0.18; 95% confidence interval [CI], -0.34 to -0.02). A higher "vegetables & traditional" intake was associated with a lower risk of obesity (odds ratio, 0.48; 95% CI, 0.24 to 0.95). Conclusions: Feeding characteristics are associated with dietary patterns in later childhood, and dietary patterns were shown to have a potential protective association against obesity.

A computerized dietary prescription and nutritional counseling system for patients having hyperlipidemia has been developed using a personal computer. This system is composed of three programs. The first program is designed to investigate dietary history of patient, such as a dietary habit and a preference of food, to find out his incorrect dietary behavior and to give him some suggestions to correct dietary behavior. The second one is developed to analyze the energy and nutrients intake using 24-hour dietary recall method and also evaluate the status of dietary intake, especially the status of dietary fat. With these data, patient can replan pattern of his food intake including in-between-meal snack as well as regular meals. The third one is the diet and menu Planning program made using food exchange table. It provides the patient with a meal pattern suitable in his weight, activity and the other status of the body. Practicing these programs, patient with hyperlipidemia can help himself very conveniently in organizing his meal plan and in improving his dietary behavior.
Purpose: The purpose of this study was to investigate the stress, dietary habits, dietary behaviors, and health-related behavior of nurses. Method: The subjects of this study were 161 nurses studying at a cyber university. The general characteristics, stress, dietary habits, dietary behaviors, and health-related behavior of the subjects were surveyed using a self-administered questionnaire in October, 2010. The subjects were divided into two groups according to the working pattern: shift workers (n = 110) and non-shift workers (n = 51). Results: In the general characteristics, there were significant differences in marriage, monthly income, employment type, and job satisfaction between the two groups. Total stress score did not differ significantly between the two groups. In dietary habits, significant differences in meal regularity, skipping meals, skipping reasons, having regular mealtimes, frequency of snack and the snack time between shift workers and non-shift workers (p<0.05). Total score of dietary behaviors in shift workers was significantly lower than that in non-shift workers (p<0.05). Score of shift workers in taking three meals per day regularly was significantly lower than that of non-shift workers. In health-related behavior, a significant difference in sleeping time was observed between shift workers and non-shift workers. Dietary behavior showed negative correlation with shift work (r = 0.176) and positive correlation with health consciousness (r = 0.210) and perceived health status (r = 0.198) in subjects after adjustment for age, marriage, monthly income, and employment type (p < 0.05). Multiple regression analysis revealed that shift work, health consciousness, and perceived health status affected dietary behavior in subjects. Conclusion: These results indicate that shift working nurses had poor dietary habits and dietary behaviors, and these dietary behaviors are affected by their shift work, health consciousness, and perceive health status.
The purpose of this study is to compare menu patterns by sex and age (3-6, 7-12, 13-19, 20-29, 30-49, 50-64, 65 over years old) between the 1998 and 2001 National Health and Nutrition Surveys of Korea. Frequently consumed menu patterns were investigated using the 24-hour recall data for 19,809 subjects (1998:10,102; 2001:9,707). To analyze patterns, dishes were classified into 29 categories by cooking method (KHIDI 2003). The results are as follows: the most frequent menu patterns were "rice+soup+kimchi" and "rice+stew+kimchi" in both men and women in both 1998 and 2001. Intake frequency of these menu patterns, a traditional Korean menu pattern, was higher with increased age. Intake frequency of "noodles" and "bread" increased in 2001 in both men and women, compared to 1998. And these patterns increased in the younger age groups, especially women in their twenties. Menu patterns of 2001 showed greater variety than those of 1998. Overall, the men's menu patterns showed more side dishes than those of women; intake frequencies of "seasoned vegetables", "stir-fried foods", and "grilled foods" were higher in men than in women. In short, so far the main menu pattern has been "rice-style" in both men and women, and in all age groups in Korea, whereas the Western menu pattern is increasing in younger age groups. The diet of 2001 showed more side dishes than that of the 1998 menu pattern; however, certain groups such as female and males in adolescents and young adults were still a simple menu pattern. Consequently, to make recommended menu patterns and nutrition education programs for Koreans should take into consideration sex and age.
The present study was conducted to estimate the effects of dietary cholesterol on plasma cholesterol concentration, plasma lipoprotein pattern and cholesterol concentration of various tissues. Male and female, Sprague - Dawley rats were fed for 4weeks the diets providing various levels of cholesterol as 0.0, 0.2, 0.5 and 1.0%, respectively. Plasma total cholesterol concentration was little sensitive to dietary levels of cholesterol, while plasma lipoprotein pattern and cholesterol concentration of tissues were sensitive. That is, the higher the level of dietary cholesterol, the lower the propotion of HDL fraction, but the higher that of VLDL fraction. Cholesterol concentrations of liver and skeletal muscle were significantly increased by the dietary levels of cholesterol. However, no significant change was found in adipose tissue.
