Factors Affecting Lipid Oxidation In Full-fat Soy Flour (전지 대부분의 유지산화에 미치는 인자)

  • Corsoy 79 soybeans were ground into 8-(coarse) and 24-mesh (fine) full-fat soy flours. From the particle size analysis, the 8-mesh full-fat soy flours were found to have larger values for geometric mean diameter and geometric standard deviation. However, the distribution moduli of coarse and fine soy flours were similar and indicated soybeans were nearly 'brittle'. Development of hydrolytic and oxidative rancidities of coarsely and finely ground full-fat soy flours were followed from grinding to 24 hrs later. No increases in peroxide value and conjugated dienes in the oil and hexanal content in the headspace of the flour were observed when the moisture was 10.7% or less. At 14.9% moisture and above, lipid oxidation increased with increased moisture content and storage time. Free fatty acid contents increased slightly at all moisture contents. However, hydrolysis did not exceed 0.06% over the moisture range of 4 to 18%, which is of little practical significance. Fine grinding increased oxidative and hydrolytic rancidities, especially at 14.9% moisture and above. these findings indicate that raw soybeans can be ground to full-fat soy flours and stored up to 24 hrs without undergoing significant lipid and flavor deterioration if the moisture content is 11% or less.

Organic Synthesis Based on Ruthenium Carbene Catalyzed Metathesis Reactions and Pyridinium Salt Photochemistry (루테늄 카벤 촉매 복분해 상호교환 반응과 피리듐 염 광화학반응을 이용한 유기 합성)

  • In this account, three synthetic methodologies that serve as the basis for new strategies for the preparation of selected natural products are briefly introduced. One process, involving ruthenium carbene catalyzed ring rearrangement metathesis developed by Grubbs and his coworkers, transforms alkene-tethered cycloalkenes to thermodynamically more favored alkene-tethered cycloalkenes. Another ruthenium carbene promoted reaction, referred to as dienyne metathesis, was uncovered in early studies by Grubbs and his collaborators. This process converts dienynes to fused bicyclic conjugated dienes. Finally, a novel photo-electrocyclization reaction of pyridinium salts, which leads to the formation of 4-aminocyclopenten-3,5-diol derivatives, is discussed. Examples are provided to show the utility of these methodologies in natural product synthesis. Emphasis is given to studies in which pyridinium salt photochemistry is coupled with ring rearrangement and dienyne metathesis in routes for the synthesis of polyhydroxyalted indolizidine alkaloids and the construction of the tricyclic core of the lepadiformine and cylindricine alkaloids.

Effects of Chungkukjang Added with Onion on Lipid and Antioxidant Metabolisms in Rats Fed High Fat-Cholesterol Diet (양파 첨가 청국장이 고콜레스테롤혈증 유발 흰쥐의 지질 및 항산화 대사에 미치는 영향)

  • This study was carried out investigate the effects of chungkukjang added with onion (OC) and chungkukjang (C) on the lipid and antioxidant metabolisms of hypercholesterolemic rats. Thirty-two male Sprague-Dawley rats were divided into four groups after 1-week adaptation period and were fed a normal diet, high fat-cholesterol diet (HC), HC-OC or HC-C for 8 weeks, respectively. The supplementation of HC-OC and HC-C groups significantly reduced hepatic total cholesterol and AST activity. HC-C group increased high density lipoprotein, while decreasing low density lipoprotein and AI compared with HC-OC group. Conjugated dienes of HC-C group was significantly lower than those of HC-OC group. $H_2O_2$ induced DNA damage reduced significantly in HC-OC and HC-C groups compared with high fat-cholesterol diet group. $H_2O_2$ induced DNA damage exhibited significant positive correlations with hepatic total cholesterol, AST and CD. These results suggested that supplementation of chungkukjang or chungkukjang added with onion might be helpful in preventing lipid oxidation and leukocytic DNA damage. However, the health beneficial effect has not improved by the addtion of onion in chungkukjang.

Antioxidant Activity of Green Tea Extracts toward Human Low Density Lipoprotein (사람의 Low Density Lipoprotein에 대한 녹차의 항산화 활성)

  • Green tea leaves 12.5 g were extracted twice with 500 ml boiling water. The green tea extract (GTE) contained 4.67 mg solid. The GTE contained polyphenols sush as 54.12% (-) epicatechin gallate, 26.21% (-) epicatechin, 10.71% epicatechin gallate, 7.09% (-) epicatechin and 1.85% catechin. The GTE inhibited the copper-catalyzed oxidation of human LDL at the concentrations of 50 and $100\;{\mu}g/ml$ GTE in the presence of $5\;{\mu}M$ $CuSO_{4}$. The electrophoretic mobility of the LDL oxidized in the presence of $5\;{\mu}M\;CuSO_{4}$ was higher than that of the native LDL. The GTE also inhibited LDL oxidation induced by J774, human monocyte-derived macrophages and vascular endotherial cells. The LDL modified by copper or cells was inhibited by human macrophages at a much greater rate than native LDL in the presence of GTE. The GTE was found to be a potent inhibitor of modification of LDL. GTE inhibited the uptake of cell-modified $^(125)I-labelled$ LDL by macrophages. The formation of conjugated dienes was strongly inhibited in the presence of 50 or $100\;{\mu}g/ml$ GTE.

Investigation of Lichen Species as a Biomonitor of Atmospheric Ozone in 'Backwoon' Mountain, Korea (백운산(白雲山) 서식(棲息) 지의류(地衣類)를 이용(利用)한 오존 민감성(敏感性) 지표종(地表種) 선발(選拔))

  • Lichen flora of 'Backwoon' mountain, Korea, was investigated during the summer of 1998 and 1999 to screen out lichen species which can be used as a biomonitor for atmospheric ozone. The identified foliose or fructicose lichens in the area were classified into 9 families, 20 genera and 34 species. The dominant lichen species in the area were found to be Leptogium sp., Parmelia sp., Parmotrema sp., Phaeophyscia sp. and Cladonia sp. It was also found that lichen species showing a wide range of sensitiveness to air pollution were distributed in 'Backwoon' mountain. The Parmotrema austrosinense, P. tinctorum, Certrelia braunsiana and Ramalina yasudae collected in the area were exposed to ozone at the level of 200ppb, 8hr/day in controlled growth chamber for 2 weeks. Malondialdehyde(MDA), hydroperoxy conjugated dienes(HPCD), soluble protein content and OD435nm/OD415nm ratio for phaeophytinization of chlorophyll were measured and a pollution index(PI) was calculated for each lichen. Ozone exposure severely damaged to the lichens in the order of P. austrosinense>P. tinctorum>C. braunsiana>R. yasudae. P. austrosinens easily identified and widely distributed in Korea is likely to be a very useful biomonitor of air pollution, especially for ozone. These results indicate that Korean lichen species can be used as a biomonitor for air pollution to evaluate air quality contaminated with ozone.

Lipid Oxidation in Roasted Fish Meat 1. Rancidity in Roasted and/or Reheated Dark Muscled Fish (어육의 배소에 의한 지질산화에 관한 연구 I. 적색육어의 배소 및 재가열에 의한 지질의 산패)

  • Various chemical indices were analyzed to clarify the tendency of rancidity during the repeats of heating so called roasting heating and/or reheating in dark muscled fish (mackerel and pacific saury). The total lipid contents of fresh mackerel and pacific saury were $36.7\%\;and\;28.4\%$ in saturated fatty acid, $33.0\%\;and\;20.2\%$ in monoenoic acid, and $29.9\%\;and\;49.7\%$ in polyenoic acid, respectively. The ratios of unsaturated fatty acid (UFA)/Saturated fatty acid (SFA) were 1.7, 2.5 and content of total lipid was $16.5\%\;and\;13.7\%$, respectively. Peroxide content gradually increased after roasting heating and reheating in mackerel while it decreased after reheating in pacific saury. Thiobarbituric acid value also increased during roasting and heating in all the samples but decreased after reheating. Acid value increased after roasting heating and reheating in all samples, particularly it was high in pacific saury which have a high composition of UFA. More conjugated dienes were formed when the meat was roasted at $180^{\circ}C$ than at $200^{\circ}C\;or\;220^{\circ}C$, and in the filet with skin than the skinless.

  • The tendency of rancidity in roasted and/or reheated yellowfin sole and yellow croaker was investigated as typical white muscled fish. In fatty acid composition of the total lipid, saturated fatty acid was $27.4\%,\;33.4\%$; monoenoic acid, $36.5\%,\;38.7\%$ and polyenoic acid, $34.5\%,\;26.5\%$ in yellowfin sole and yellow croaker, respectively. The ratio of unsaturated fatty acid (UFA)/saturated fatty acid (SFA) were 2,6, 2.0 and content of total lipid was $1.4\%,\;0.8\%$, respectively. Peroxide content decreased after heating in yellowfin sole while decreased after heating and tended to increase after reheating in yellow croaker. Thiobarbituric acid value increased during roasting and heating in all the samples but decreased after reheating. Acid value increased after roasting, heating and reheating in all samples, particularly higher in yellowfin sole which have a high content of UFA. Conjugated dienes continuously increased during the repeats of heating, showing more increase in the fillet with Skin than the skinless.

  • This study has two goals. The First is to develop and apply a step-by-step program and the degree to which students' mathematical skills. The second is to analyze mathematical attitude change around the first grade students was done. The program for learning complement number is composed of series of 5 steps and 11 classes. Play for learning complement number, taking into account the difficulty of the learning steps 1-5 are organized. First step is composed of the classes which fragmented pieces of shapes to complete the entire geometry with fun activities for the entire part of the concept of learning and it maintenance concepts and can naturally learn by associating step. In second step, tools to take advantage of the real world and collecting the conservative concept. 3rd steps is to repair the mathematical concept of the parish in the learning stage of expansion. 4th step is halrigalri, number cards, making ten games etc. 5th step is to verify the concept of complement number and number operation ability. The concept of complement number through fun activities can improve students' mathematical skills, and mathematical attitude change. Early in the program, students use the finger to throw acid in the process. Simple addition and subtraction calculations may take a long time and error, but more and more we progress through the program using the fingers is eliminated and a more complex form calculations was not difficult to act out.

Antioxidative Effects of Sulfur Containing Compounds in Garlic on Oxidation of Human Low Density Lipoprotein Induced by Macrophages and Copper Ion (마크로파아지 및 구리 이온으로 유도한 사람 low density lipoprotein의 산화에 대한 마늘 유황 화합물의 항산화 효과)

  • Sulfur containing compounds in garlic have all be used as one of the traditional folk medicine as well as food source. The present study was performed to investigate the antioxidative compounds of 1-methyl-1-cysteine, dimethyl trisulfide and 2-vinyl-4H-1,3-dithiin. The antioxidative activity of sulfur containing compounds on human LDL was investigated by monitoring a thiobarbituric acid substances (TBARS). Sulfur containing compounds inhibited on oxidation of LDL mediated by $CuSO_4$ and macrophages in dose dependent manner with almost completely inhibition at $80{\mu}g/ml$. Antioxidant activities of sulfur containing compounds on LDL oxidation were 2-vinyl-4H-1,3-dithiin, 1-methyl-1-cysteine, and dimethyl trisulfide in order. Inhibitory effects of sulfur containing compounds on oxidation of LDL mediated by $CuSO_4$ and macrophages were degraded at much greater rate than native LDL, the LDL oxidation process was arrested as shown by the lower conjugated dienes formation at the concentration of $60{\mu}g/ml$. Sulfur containing compounds in garlic revealed at high antioxidative activity at low physiological concentration for human LDL oxidation in vitro specially, it was indicated that the antioxidative activity of 3-viny l-4H-1,2-dithiin was higher than that of the other sulfur containing compounds.

Dependence of Electronic Spectra on the Degree of Conjugation in Organocobalt(Ⅲ) Complexes (공액도에 따른 유기코발트 착화합물의 전자스펙트럼에 관한 연구)

  • The electronic spectra of enzyme-model organocobalt(Ⅲ) complexes containing completely or partially conjugated macrocyclic ligands were measured in various solvents to investigate the solvent effect on the charge transfer band for the axial cobalt-carbon bond by the extent of conjugation in the equatorial macrocyclic ring; completely conjugated, $CH_3CoL,\;C_6H_5CoL,\;CNCoL,\;CH_3CoL',\;CNCoL'$, partially conjugated $CH_3(py)Co(DH)_2, CH_3CoL"$, unconjugated dienes, $[CH_3Co(1,4-CT)](ClO_4)_2$, and open ring, $CH_3Co(salen)$. The position of the charge transfer band which corresponds to the cobalt-carbon bond was shifted to a shorter wavelength as the polarity of solvent increased and the transition energy $(E_T)$ had a linear relationship with solvent polarity parameter, Z-value, only in the case of completely conjugated system. However, the linear correlation between $E_T$and Z was not observed for partially conjugated and open ring systems.
