For the purpose of implementing health and nutrition education for college women, we investigated changes in height, weight, and daily living schedule, as well as the relationship between energy intake and expenditure, and food and nutrients intake levels for the six years from 1977 to 1982. A special form of questionaires was prepared and distributed to well-trained subjects (total 213) in order to find out their general characteristics, daily living schedule and dietary intakes. The recovery of questionaires distributed to each subject was 90%. Then the quality of their living, energy balance, nutrient intake and food intake were evaluated and the F-test was used to test the statistical significances. It was found that : 1) The range of weights and heights of subjects were between 48-50 kg, 157-161cm respectively over the 6 year period. 2) In daily living schedule, that is, the average physiological activity time including sleeping ranged from 760 to 801 minutes. Free time decreased gradually, from 318 minutes per day in 1977 to 275 minutes in 1982. Average time for study and for house work was 196-280 minutes and 68 - 157 minutes respectively for 6 years, and study time was significantly varied in each year. 3) The energy intake of the subjects averaged 1762 Kcal, whereas the expended energy was 1892 Kcal. In the energy balance determined by the relationship between energy intake and expendituye, the ratio of subjects who maintained a negative energy balance gradually increased from 53% (1977) to 64%(1982). 4) The average nutrient intake was higher than the recommended dietary allowance except for calorie (1997 - 1982), calcium (1979) and iron (1979, 1980). The total calorie intake was composed of 59-63% carbohydrate, 19 - 24% fat and 15 - 18% protein Of the total protein intake the percentage of animal was 47 -51% for six years, showing acceptable nutritional status. 5) The average total food intake of the subjects increased from 1,080 g (1977) to 1,184g (1982), but this was not a significant difference. Cereal composed the highest proportion among the total food intakes, and rice intake was 58-78% of cereals. Cereal was followed in decreasing order by vegetables, dairy products, fruits, meat and fish products. The option available for the selection of cooking methods as well as the selection of food item was limited, so there were few changes over time.
Purpose: The purposes of this study were to examine the amount of daily fluid intake among nursing home residents and to explore the caregiver's perceived barriers to elderly's fluid intake. Method: Data was collected from 111 nursing home residents and 64 caregiver's in 4 nursing homes. A random, non-consecutive three days of 24 hour fluid intake was measured and recorded. The caregiver's perceived barriers to elderly's fluid intake was assessed using a structured questionnaire. Results: The average amount of daily fluid intake was 1,035(SD=359)ml with the range of 210m1 to 2,050ml. About 52% (n=58) of the subjects had a less than adequate fluid intake. The amount of daily fluid intake was significantly associated with age, mental status, physical functioning, and the number of oral medications ordered. The most frequently mentioned caregiver's perceived barrier was elderly's concern about incontinence with increased fluid intake. Conclusion: Inadequate fluid intake among nursing home residents is prevalent. To enhance adequate hydration of nursing home residents, an institution wide nursing intervention is necessary.

The purpose of this study was to analyze average kimchi intake, general characteristics, frequency of daily meal intake, intakes of vegetables and fruits, and nutrient intakes in four serving size groups based on data from the Korea National Health and Nutrition Examination Survey 2010~2012. The results showed an average amount of kimchi intake in subjects of 115.6 g, ranging from 0 g to 605.94 g. For daily meal intake except snacking according to kimchi serving size, all daily meal intakes increased significantly with increasing kimchi serving size (p<0.0001), and tendency of kimchi intake increased with more eating-out. As kimchi serving size increased, total intakes of vegetables and salted vegetables increased significantly (p<0.0001). However, unsalted vegetables intake did not show significant difference. Intake of fruits also increased with increasing kimchi serving size. As the serving size of kimchi increased, intakes of energy, carbohydrates, protein, fat, sodium, and potassium increased significantly (p<0.0001). For intake of sodium, intakes of all groups exceeded 2,000 mg, which is the recommended level for Koreans. Moreover, the fourth serving size group consumed three times (6,546.35 mg) more sodium than the recommended level.
This studies were carried out to assess the effects of feeding bovine colostrum on growth and feed intake of mouse. A total of 30 mice were divided into three groups(10 mice for each groups), and treatments(colostrum, city milk, or no milk as the control) were randomly assigned. Average daily intake of solid feed during the experimental period were 4.73, 3.95 and 3.41g for control, normal milk, and colostrum, respectively. Average daily intake of milk were 0, 9.93, and 10.17g for control, normal milk, and colostrum, respectively. Average daily water intake were 6.28, 4.743, and 4.67g for control, normal milk, and colostrum, respectively. The growth rate of the colostrum group was 16.7% higher compared to the control group (P<0.05). There were differences in the concentrations of IL-4 and IL-13 associated with allergy in mouse blood at colostrum and city milk feeding as compared with control.
This study was designed to investigate the effects of dietary calcium. serum estrogen level and physical activity on the bone status of 116 healthy elderly women living in urban area. Current calcium intake was assessed by convenient method(refered to as Ca intake) and calcium containing food frequency method(refered to as Ca index) Daily activity record was used for the estimation of physical activity level, and serum estrogen level was measured from fasting blood of subjects. The rate of bone resorption was evaluated by the determination of hydroxyproline(Hpr) in fasting urine with correction for creatinine excretion. The results of this study are summarized as follows : 1) Average daily Ca intake of subjects was 621.4$\pm$155.8mg, which is above the Korean recommended dietary allowances. However 44.8% of the subjects consumed Ca below RDA level. Ca index score was significantly correlated with the bone status(P<0.05), Ca intake did not show significant correlation with the bone status although a positive trend of influence was evident. 2) Average serum estrogen level of subjects was 18.7$\pm$9.8pg Contrary to our anticipation. estrogen level did not show any significant relation to age and bone status. 3) Daily physical activity was classified into four categories by activity intensity : sedentary. moderate, active and severe. The average physical activity of subjects belong to moderate level. and the bone status was significantly related to the physical activity(P<0.01) 4) Among other influential factors such as age, pocket-money. family type. drinking, smoking and BMI, there was a significant difference between bone status and BMI(P<0.05). 5) Multiple regression analysis of variables showed that physical activity has greater effect than other variables when the entire subjects were taken into account. However. eliminating the subjects whose bone status rated as excellent(Hpr/cr<0.009), Ca index showed higher correlation than physical activity. These results have demonstrated that dietary calcium intake is the primary important factor for keeping good bone health and that bone status of subjects with a sufficient calcium intake is affected by various factors such as physical activity, age, smoking. BMI and others.
The objectives of this study were to investigate 1) the foods intake as well as nutrients intake, 2) the nutritional knowledge, and 3) the relations between the foods and nutrients intakes and nutritional knowledge in adolescent rhythmic gymnasts (RGs). The results are summarized as follows. Average daily intakes of energy, calcium, iron, vitamin A, vitamin B$_1$ vitamin B$_2$ and niacin were in 45-74% of the RDAs for Koreans. Average daily energy intake was only about 50% of energy expenditure by physical activities. Average daily intakes of each food group were generally lower, but intakes of breads and confectionaries, sugar and sweets, milks and dairy products, and instant foods were higher in the RGs compared to the nonathletic students of the same age from the National Health and Nutrition Suvey. The contribution of empty-calorie foods such as breads and confectionaries, beverage and instant foods to the major energy nutrients were high. Mean of total nutritional knowledge score of RGs was 28.4 of total score 50. In categorical score of nutritional knowledge, the RGs make a best score on food sources and they get the lowest marks for food exchange. Among the nutrients, intakes of crude fiber, animal Fe, Na, K, vitamin A, carotene, vitamin B$_1$ niacin and vitamin C and, among the food groups, intakes of mushrooms, fruits and meats had relations with one of the total or categorical nutritional knowledge scores in the RGs. In conclusion, nutritional status of adolescent RGs was poor due to their unbalanced diet composed of empty-calorie foods, and their undesirable food intake pattern was supposed to be related to the low nutritional knowledge score of them. These results indicate that the RGs should be given more nutritional knowledge to improve their nutritional status and the exercise performance.

A study was performed to assess dietary intake and serum levels of $\beta$-carotene and the influence of preference for hot taste on $\beta$-carotene intake in Korean female college students. Daily intake of $\beta$-carotene was estimated with a questionnaire composed of food item of high $\beta$-carotene contents and the average daily intake level was 4089$\pm$2400$\mu\textrm{g}$. The major sources of $\beta$-carotene included carrot, pumpkin, spinach, tomatoes and red pepper powder. 14$\pm$10% of total dietary $\beta$-carotene intake was from foods containing red pepper powder. The average amount of red pepper powder added to bean sprout soupr were 0.32$\pm$0.34g. Subjects preferring hot taste added significantly larger amount of red pepper powder(p<0.05) than those not preferring hot taste. Subjects of the lowest quartile of $\beta$-carotene intake level showed the lowest precentage of subjects preferring hot taste. The average serum $\beta$-carotene concentration was 36.5$\mu\textrm{g}$/dl and large variation in the amount among the subject has been observed. The level of dietary $\beta$-carotene intake and serum $\beta$-carotene concentration of Korean female college students were not significantly correlated but both were higher than levels in reports from western countries. These results indicate that $\beta$-carotene intake levels of the subjects are adequate and the preference for hot taste affects $\beta$-carotene intake significantly.
This study assessed the association between vitamin D sufficiency (serum 25(OH)D ${\geq}30ng/mL$) and alcohol consumption using data from the Korea National Health and Nutrition Examination Survey conducted in 2009. The following characteristics were obtained in 7,010 Korean participants ${\geq}19$-years-of-age: serum 25(OH)D level, alcohol consumption (drinking frequency, drinking number of alcoholic beverages on a typical occasion, average daily-alcohol intake), and potential confounders (age, residence, housing status, occupation, total fat and lean mass, smoking, physical activity, history of liver diseases, liver function, and daily intake of energy, protein, and calcium). After adjusting for confounders, vitamin D sufficiency in men was significantly associated with drinking frequency, number of alcoholic drinks consumed, and average daily alcohol intake; odds ratio of 1.21-1.72, 2.17-3.04, and 2.27-3.09, respectively. Increase in the three alcohol drinking-related behaviors was also linearly associated with increase in serum 25(OH)D level in men. By comparison, there was no significant association between alcohol intake and serum 25(OH)D level in women. The positive association between vitamin D sufficiency and alcohol consumption was evident only in Korean men.
This study was conducted to investigate the growth performance indices among male commercial crossbred Korean native chickens from hatch to twelve weeks of age. A total of 312 one-day-old male birds were used for 6 groups of the commercial crossbred Korean native chicken within 1 paternal line and 6 maternal lines (1A, 2A, 3A, 4A, 5A, and 6A). The chickens were allocated to 24 battery cages to give 4 replicates per each crossbreed with 13 chickens per cage. Ad-libitum feeding was practiced throughout the experimental period and fresh water was available via nipple drinkers at all times. Body weight and feed intake were measured at two-week interval. Among six crossbreeds, the 2A group had the greatest (p < 0.05) body weight at week 8 and the greatest average daily weight gain in week 6 - 8. However, crossbreed 2A had the lowest viability (p < 0.05) at week 8 of all crossbreed groups as well as higher uniformity (p > 0.05) at week 2 than the others. No difference (p < 0.05) was found in any crossbreed Korean native chicken's growth performance indices including body weight, average daily gain, average daily feed intake, feed efficiency, uniformity, and viability after week 8. With this in mind, crossbreed 2A had greater bodyweight, average daily gain, average feed intake, and feed efficiency than the other Korean native chickens 84 days after hatch, although they had lower uniformity and viability than the others.

Rice is a staple food source in Asian countries. In paddy field, rice plant can take up toxic elements through its roots from contaminated soils, and its leaves and grain can absorb the toxic elements deposited on the soil surface. A totla of 40 soil and polished rice samples were collected around four abandoned metal mines in Korea and analyzed for As, Cd, Cu, Pb and Zn by atomic absorption spectrophotometer (AAS). The average contents of As, Cd, Cu, Pb and Zn in rice grain grown on the contaminated soils were 0.247, 0.174, 4.694, 0.804 and 16.78 mg/kg, respectively. These levels are higher than worldwide average concentrations. Assuming the rice consumption of 169 g/day by overall households in Korea, the estimated daily intakes from the rices were found to be 33, 48, and 63% for As, Cd, and Pb, respectively, of the acceptable daily intake (ADI) suggested by the FAO/WHO Joint Food Additive and Contaminants Committee.
