Product Characteristics of Comminuted Sausages as Affected by Various Fat and Moisture Combinations

  • Comminuted sausages with reduced fat (25-0%) and increased moisture (19-44%) combinations were manufactured, and their chemical composition, and physico-chemical, textural and sensory properties were determined for the selection of the most palatable sausage treatment. The moisture and fat contents of the comminuted sausages varied from 55-79% and 26.4-2.14%, respectively, whereas, the protein content was relatively constant at 13.5-14.5%. Expressible moisture (EM, %) decreased with increased fat addition, and the high-fat control sausage (~25% fat) had lower EM than those with lower than 15% fat addition. Increased fat level also increased Hunter L values (lightness) of sausage samples taken from the core, and differences in lightness were observed between 15 and 25% fat level at the initial mixture. Sausages without fat addition had different textural characteristics from high-fat control sausages in most texture profile analysis (TPA) values. However, no differences in TPA values were observed among treatments with added fat (<25%) in the formulation. Results of the sensory evaluation showed that the most appropriate fat content of comminuted sausages to have better sensory properties ranged from 15-20% of added fat at the initial mixture. These results also indicated that decreased fat and increased moisture contents produce sausages with higher EM and lower lightness. Comminuted sausages without fat addition had different textural characteristics from the high-fat control.

Evaluation of Curing and Flavor Ingredients, and Different Cooking Methods on the Product Quality and Flavor Compounds of Low-fat Sausages

  • The effects of ingredients added (first cutting ingredients vs. both first and second cutting ingredients), and cooking method (smoking vs. boiling) on product quality and volatile compounds were examined for low-fat and regular-fat sausages. Regular-fat sausages had slightly higher pH values (6.2-6.3) than those (6.1-6.2) of low-fat counterparts. However, the pH values of the sausages were not significantly affected by the different ingredients and cooking methods (p>0.05). Approximately 30 volatile compounds were identified from these comminuted sausages. The headspace concentrations of 4-methyl-1-[1-methylethyl]-3-cyclohexen-1-ol, ${\alpha}$- terpenyl acetate, eugenol, trans-caryophyllene and myristicine were lower in low-fat and regular-fat sausages containing the first cutting ingredients alone, than in those with both cutting ingredients. The volatile compounds of the smoked comminuted sausages were mostly phenols and hetero-compounds, and a lot of volatile compounds were shown before the retention time (RT) of 30 min. However, not many volatile compounds were detected in the boiled sausages prior to the RT of 30 min.

Utilization of Transglutaminase for the Development of Low-fat, Low-salt Sausages and Restructured Meat Products Manufactured with Pork Hams and Loins

  • This study was performed to determine whether transglutaminase (Aciva-TG, TGase) can be used to reduce the salt level in low-fat sausages and to replace emulsified meats (10%) for the manufacture of restructured meat products (RMP). Pork hams and loins were collected from a local retail market in Gwangju, Korea and used for the manufacture of sausages and RMPs, respectively. TGase at the level of 0.1% can permit the reduction of the salt level from 1.5% to 1.0% in low-fat comminuted sausages without any quality defects, however a crumbly texture was found if the salt level was reduced below 1.0% even though it combined with certain amounts of TGase. No differences in chemical composition and physical properties were observed (p>0.05) among treatments. Approximately 0.3% of TGase can replace 10% emulsified meats, which are normally used for improvement of binding capacity to manufacture RMPs, without quality defects. This study suggests that TGase could be used for the manufacture of low-fat, low-salt functional meat products for the improvement of textural characteristics and binding capacity without adverse effects.

Antioxidant, Antimicrobial, and Curing Potentials of Micronized Celery Powders added to Pork Sausages

  • Meat industries utilize plant material such as celery in cured meat products. Extraction of valuable bioactive compounds, nitrates and nitrites often involves processes that increase cost or lack sustainability. Thus, this study investigated the effect of ball-milled celery powders (CP) on the physicochemical, antioxidant, and antimicrobial properties along with curing efficiency in comminuted meat product. Pork sausages loaded with CPs with different average particle sizes: 265 ㎛ (T1), 68 ㎛ (T2) and 7 ㎛ (T3) were compared to those added without and with sodium nitrite (150 ppm). The a⁎ values were increased for sausages with larger particle size. The L⁎ values decreased for all CPs. Residual nitrite for all particle sizes increased in the earlier stages and decreased at the end of storage period. The curing efficiency also increased for larger size particles with an increase until day 9 followed by a gradual decrease. Superfine CP had a tendency to improve the antioxidant activities. The antimicrobial activity of CPs was not comparable with nitrite added sausages. The textural parameters remained unaffected by particle size. Thus, instead of extracts or juices, micronized CPs could be used to improve the antioxidant activities and curing efficiency of label friendly reformulated meat products.

자몽 종자 추출물을 첨가한 저지방 세절 소시지의 이화학적, 조직적 특성 및 향균 효과 (Physicochemical and Textural Properties, and Antimicrobial Effects of Low-fat Comminuted Sausages Manufactured with Grapefruit Seed Extract)

  • 본 연구는 젖산나트륨과 자몽 종자 추출물의 첨가량을 달리하여 저지방 소시지에 첨가하여 제조한 후 냉장$(4^{\circ}C)$저장 중 이화학적 및 조직적 성상과 항균 효과에 미치는 영향을 관찰하기 위하여 실시하였다. 수분, 지방 그리고 단백질의 범위는 각각 $73.9\~75.9\%,\;1.3\~2.4\%$ 그리고 $15.8\~17.1\%$이었으며 pH는 $6.09\~6.26$의 범위로 젖산나트륨의 처리구가 저지방 대조구와 자몽 종자 추출물에 비해 비교적 높은 값을 보였다. 보수력과 진공감량은 젖산나트륨과 자몽 종자 추출물의 첨가에 따라 뚜렷한 변화를 보이지 않았다. 저장별 효과에서 보수력은 저장기간이 길어져도 차이를 보이지 않은 반면 진공감량은 저장기간이 길어질수록 증가하는 경향을 보였다. 보수력과 진공감량에서와 마찬가지로 젖산나트륨과 자몽종자 추출물의 첨가는 소시지의 보수력과 진공감량에 변화를 주지 못하였다. 명도와 적색도는 소시지의 제조시의 값이 10주차 때까지 유지되었으며 다만 황색도만 저장기간이 길어질수록 증가하였다. 젖산나트륨과 자몽 종자 추출물 첨가에 따른 조직감 검사에서 자몽 종자 추출물은 조직감에 뚜렷한 영향을 주지 않은 반면 젖산나트륨은 조직감에 영향을 주어 저지방 대조구에 비해 높은 경도와 저작성을 나타내었다. 조직감에 대한저장별 효과에서 다만 응집성만 저장기간이 길어짐에 따라 증가하는 경향을 보였을 뿐 나머지는 조직적 특성의 큰 변화를 보이지 않았다. 자몽 종자 추출물을 $0.2\%$ 첨가할 때부터 항균 효과를 보여 $0.3\%$의 자몽 종자 추출물 첨가로 10주 때까지 $10^3\;CFU/g$을 유지하여 젖산나트륨의 처리구와 유사한 항균효과를 보여주었다. 본 연구에서 얻은 결과를 종합해 보면 천연 식물 첨가물인 자몽 종자 추출물을 $0.3\%$ 정도 첨가하는 것이 천연의 젖산나트륨 $(3.3\%)$을 사용할 때와 비교하여 저지방 대조구와 유사한 물성을 가지며 항균효과를 보여 합성 보존료의 대체제로사용 할 수 있을 것으로 판단된다.
