Quality Characteristics of Cheese Analogs Containing Lipoxygenase-Defected Soymilk and ${\alpha}$-Chymotrypsin Modified Soy Protein Isolate

  • Cheese analogs using lipoxygenase-defected soymilk and ${\alpha}$-chymotrypsin modified soy protein isolate (SPI) were prepared. Color, textural properties, sensory attributes and melting spreadability of cheese analogs were evaluated and compared with mozzarella cheese, and relationships between textural properties, sensory attributes and melting spreadability of cheese analogs were analyzed. Off-flavors were not mostly discriminated. Cheese analogs containing 10% SPI untreated and containing 6% and 8% SPI treated by ${\alpha}$-chymotrypsin in ${\Delta}E$ value of color were the most similar to mozzarella cheese. Quality characteristics and melting spreadability of cheese analogs were highly affected and improved by ${\alpha}$-chymotrypsin modification. Sensory attributes and melting spreadability of cheese analogs containing 6% SPI treated by ${\alpha}$-chymotrypsin were the most similar to mozzarella cheese, while in textural properties, cheese analogs containing 10% SPI were the most similar with mozzarella cheese. Hardness in sensory attributes was highly positively correlated with hardness (r>0.65), adhesiveness (r>0.56), chewiness (r>0.77) and gumminess (r>0.76) in textural properties, while it was highly negatively correlated with melting spreadability (r>-0.68).

Effects of Fat Reduction on the Stability, Microstructure, Rheological and Color Characteristics of White-Brined Cheese Emulsion with Different Emulsifying Salt Amounts

  • Cheese emulsion is an intermediate product for the production of cheese powder and needs to be stable, homogeneous and pumpable characteristics to convey to the spray drier. This study was conducted to evaluate the effects of fat reduction and emulsifying salt (ES) amount in cheese emulsion systems on the physicochemical characteristics. Reduced-fat (RF) and full-fat (FF) white-brined cheese emulsions were produced with different dry matters (DM; 15%-25% excluding ES) and ES concentrations (0%-3% based on cheese weight). Stable cheese emulsion was obtained at lower DM in RF cheese emulsion than that of FF cheese emulsion. Reduction in the amount of ES resulted in instability of both emulsions. Apparent viscosity with pseudoplastic flow behavior significantly increased with the decrease of fat content in stable cheese emulsions. Microstructure of emulsions appeared to be related to the fat content, stability and degree of emulsification. Reduction of fat content caused to get less lightness and more greenness in color, whereas yellowness was significantly decreased by increase in the amount of ES. In conclusion, fat reduction resulted in higher viscosities of cheese emulsion due to inducing the increment of protein, and the addition amount of ES considered as very important factor to produce stable cheese emulsion without protein precipitation or cream separation. Therefore, for preparation of RF cheese emulsion using a variety of white-brined cheese, lower amounts of DM would be suggested in this study to obtain homogenous droplets in the atomizing process of spray drying.

Some Properties of Fresh and Ripened Traditional Akcakatik Cheese

  • Akcakatik cheese (yogurt cheese) is produced by drying strained yogurt with or without adding cloves or black cumin. The main objective of this study was to detect the properties of both fresh and ripened Akcakatik cheeses and to compare them. For this purpose the biogenic amine content, volatile flavor compounds, protein degradation level, chemical properties and some microbiological properties of 15 Akcakatik cheese samples were investigated. Titratable acidity, total dry matter, NaCl, total nitrogen, water soluble nitrogen, ripened index, histamine, diacetyl and acetaldehyde levels were found to be higher in ripened cheese samples than in fresh cheese samples. On the other hand, the clove and black cumin ratios were found to be higher in the fresh cheese samples. Sodium dodecyl sulphate polyacrylamide gel electropherograms of cheese samples showed that protein degradation was higher in ripened cheese samples than in fresh samples, as expected. The dominant Lactic acid bacteria (LAB) flora of Akcakatik cheese samples were found to be Streptococcus salivarius subsp. thermophilus and Lactobacillus delbrueckii subsp. bulgaricus.

치즈 소비 행태에 대한 소비자 조사 (Cheese Consumption: A Nationwide Survey of Korean Women aged 25 Years and Older)

  • To gain insight on cheese consumption and develop strategies for the cheese industry, we conducted a survey of 742 women (age 25 or older) who were responsible for purchasing food for their families. Of them, 49.5% consumed cheese more than once a week and 25.1% expected that the cheese consumption of their families would increase, whereas only 7.1% expected a decrease in consumption. The most important considerations for purchasing cheese were taste and price. Of the respondents, 40.6% purchased domestic cheese, whereas 49.1% were unconcerned about the country of origin. Of them, 20.6% had experience of purchasing farm-made cheese, and 62.7% of them were satisfied with the cheese. These results suggest that cheese consumption will increase in the future, and that with attention to quality improvement and advertising, domestic farm-made cheese consumption could increase accordingly.

Cholesterol Free Mozzarella Cheese 제조에 관한 연구 (Studies on Cholesterol Free Mozzarella Cheese Manufacture)

  • 혈중 콜레스테롤 농도를 저하시키는 건강지향적인 불포화 지방산을 다량 함유한 옥배유로 원료유 지방을 표준화하여 cholesterol free Mozzarella cheese제조 후 특성을 살펴 보았다. 치즈 제조용 원료유는 안정성이 있었고, 최종 시료인 치즈에서 휘발성 유리지방산은 콜레스테롤 상승에 영향을 미치는 palmitic acid가 일반 치즈인 대조구에서 가장 높게 측정된 반면에 실험구인 옥배유를 첨가하여 만든 치즈는 동맥경화 및 성인병 등의 예방, 치료에 도움을 주는 linoleic acid 조성 이 가장 높게 나타나 영양학적으로 우수한 결론이 돌출되었다. 포화지방산에 대한 불포화지방산의 비율은 대조구가 7:3, 옥배유를 첨가하여 만든 치즈가 2:8로 나타났으며, 콜레스테롤은 대조구의 43.58 mg/100 g에 비해 옥배유를 첨가하여 만든 치즈는4.34 mg/100g만 측정되어 건강에 유의한 결과가 나타났다. 결과적으로 본 연구는 혈중 콜레스테롤 저하효과를 나타내는 휘발성 유리지방산을 다량 함유하고, 콜레스테롤 함량이 대조구의 10%수준인 영양학적으로 우수한 건강지향적인 cholesterol free Mozzarella cheese를 제조할 수 있었다.

단백분해 효소 활성(蛋白分解 酵素 活性)이 Cheddar Cheese의 품질(品質)에 미치는 영향(影響) (Effect of Proteinase Activity on the Cheddar Cheese Quality)

  • Cheddar cheese의 품질(品質)을 향상(向上)시키기 위하여 Streptococcus lactis KCTC 1913으로부터 curing에 의하여 선발(選拔)된 proteinase-negati변이주(變異株)로 제조한 Cheddar cheese 숙성중의 단백질 분해 양상(蛋白質 分解 樣相)을 전기영동(電氣泳動) 및 액체 chromatography에 의해 연구하였으며, 그 결과(結果)를 요약(要約)하면 다음과 같다. 1. Starter bacteria의 생균수(生菌數)는 cheese의 숙성(熟成)이 진행(進行)됨에 따라 감소(減少)하였으며 야생형 균주(野生型 菌株)로 제조한 cheese에서는 급격히 감소(減少)했으나 변이주(變異株)로 제조한 cheese에서는 완만하게 감소(減少)하였다. 2. 전기영동(電氣泳動)에 의한 cheese casein의 분해 양상(分離 樣相)은 야생형 균주(野生型 菌株)와 변이주(變異株)로 제조한 cheese간에는 차이가 없었으나, 숙성 진행(熟成 進行) 단계에 따라 차이가 나타났다. 3. Sephadex G-25 column에 의해 cheese의 고미성분(苦味成分)을 분별(分別)한 결과 green cheese와 3개월 숙성(熟成)시킨 cheese에서 각각 3개의 fraction으로 분별(分別)되었으며 숙성(熟成)이 진행(進行)됨에 따라 분자량(分子量)이 비교적 적은 bitter peptide나 유이(遊離) 아미노산으로 전환(轉煥)되는 경향(傾向)을 나타내었다. 4. 3개월 숙성(熟成)된 cheese를 관능검사(官能檢査)한 결과 색택(色澤)에는 별 차이가 없었으나 조직(組織)과 풍미(風味)에 있어서는 변이주(變異株)로 제조한 cheese가 야생형 균주(野生型 菌株)로 제조한 cheese보다 기호성(嗜好性)이 더 좋았다. 5. Cheddar cheese의 생산수율(生産收率)은 변이주(變異株) 사용시, 야생형(野生型)균주를 starter로 사용한 것보다 0.14% 높았다.첨가 식빵이 가장 기호에 맞는 것으로 평가되어 Sourdough 첨가 %와 method에 따라 score 차이를 보였다. 등의 단계별로 약간의 차이를 보였지만, 동결 80일 후의 활력은 대부분이 유사한 것으로 나타났다. 각각의 처리구간에 점도의 차이는 있지만, sucrose와 sorbitol의 비율이 1:2인 것이 점성면에서는 가장 좋은 것으로 나타났다. Frozen yogurt mix의 보수력은 점도와 밀접한 관계가 있었다(p<0.05). Sorbitol함량이 증가될수록 hardness와 cohesiveness는 증가되었지만, elastisity는 감소되었다. 또한 Str. thermophilus는 처리구간에 큰 차이를 보였지만(p<0.05), L. bulgaricus와 mixed culture는 차이를 보이지 않았다(P>0.05).)의 발생율(發生率)이 감퇴(減退)되고 있음을 관찰(觀察)할 수 있었는 바, 이것은 유산균 발효유(乳酸菌 醱酵乳)의 음용효과(飮用效果)인 정장(整腸)과 면역증진효과(免疫增進效果)에 따라 소화기질환(消化器疾患)의 예방(豫防)이 가능했던 것으로 확인된다. 그리고 유산균 발효유(乳酸菌 醱酵乳)의 소비량(消費量)과 소화기질병(消化器疾病)의 발생율간(發生率間)에는 r = -0.704 (p<0.01) 과 같은 매우 유의(有意)한 상관계수(相關係數)가 성립(成立)되고 있었다.효과에 대한 연구가 시행되어야 하며 분자생물학적인 방법을 사용하여 그 기전을 규명하여야 한다.아니라 주의집중력(注意集中力)에 직접적으로 효과를 나타내는 것으로 해석할 수 있었다. 또한 이같은 소견으로 주의력결핍(注意力缺乏)${\cdot}$과잉운동장애환아(過剩運動障碍患兒)에서의 충동성(衝動性)은 이 장애의 중심증상이 아니거나, 이들 약물투여에 의해 호전되지 않거나, 호전의 측정에 문제가 있을 수도 있겠다. 마지막으로 주의력결핍(注意力缺乏)${\cdot}$과잉운동장애(過剩運動障碍)에서

Changes in the Mineral Components in Cheese Juice (Aqueous Phase of Cheese) during Ripening

  • Four different types of cheeses were measure detailed changes in the mineral concentrations of cheese-serum during ripening. Concentrations of minerals in cheese juice were measured. The pH value using the low pH method (LPM) cheese was significantly (p<0.05) lower than that of other cheeses. Similarly the total Ca, S, Mg, and P contents of LPM cheese were significantly lower in than those of other cheeses. Ca, S, Mg, and P remained in colloidal form, while other minerals were mostly in soluble forms after 1 day. The minerals associated with the structure of cheese (i.e., casein or colloidal calcium phosphate) remained largely insoluble even after 1 month of ripening.

대두 Cheese의 제조와 그의 일반 성분 및 수응도에 관한 연구 (Preparation of various soy cheese and their physicochemical and sensory characteristics)

  • For the manufacture of soybean cheese, curds were made from soy milk using either lactic starter or CaCl$_2$and ripened for 3 weeks. When papain was added during ripening, the amout of soluble protein increased. The yields of 3 soybean cheese were 76~88%, indicating that considerable loss of soy protein did not occur during the processing. During the period of ripening the change of moisture content was about 1 n. Total acidity of 3 soy cheese increased, demonstrating the production of lactic acid through lactic fermentation. Texture determined by Instron showed that 3 soy cheese had their own characteristic texture profile curve and that the cheese without papain treatment received the highest textural parameters. 3 manufactured soy cheese received 3-4 (good-very good) sensory scores in appearance, flavor and texture. General acceptibility of 3 cheese were evaluated as desirable or very desirable.

치즈 물성의 객관적 측정을 위한 고찰 (Objective Measurements of Textural and Rheological Properties of Cheese)

  • The textural and rheological properties of cheese are major attributes for the characterization of cheese types, ripening, and consumer preferences. The use of small amplitude oscillatory rheological testing has made it possible for cheese researchers to assess the major properties of cheese, such as melting behavior and storage modulus, without irreversible deformation. In addition, large deformation testing such as textural profile analysis can assess properties such as hardness of cheese. While the sensory properties of cheese are valued by consumers, objective and reliable measurements are paramount for researchers. Ongoing development and refinement of scientific measurement methods of cheese are vital.

The Role of Ca Equilibrium on the Functional Properties of Cheese: A Review

  • The functional properties of cheese, such as texture and melt, are known to be controlled by several important parameters. Recently, the characteristics of Ca in cheeses, especially the form of Ca (insoluble (INSOL) or soluble) and the shift in Ca equilibrium (i.e., from INSOL to soluble Ca), during aging has received a lot of attention. The INSOL form of Ca, which is present as a structural form in casein, plays a critical role in determining the functional properties of cheese during the early period of ripening (~1 mon). It seems that there is always a reduction of INSOL Ca content in cheese during ripening and there are also factors that can affect the shift in Ca equilibrium. These factors may include the composition of cheese milk, cheese manufacturing pH, acid development during aging, adopting curd-washing in various methods, pre-acidification of milk, etc. There have been many studies showing that the rheological and melting properties of cheese during ripening were significantly (p<0.05) affected by the shift in Ca equilibrium. Therefore, for cheese makers, it is now possible to predict/manage the functional properties of cheese by monitoring and controlling Ca equilibrium in cheese during aging.
