Physicochemical Characteristics and Fatty Acid Composition of the Meat from Korean Native Black Pig with Different Slaughter Weight

  • The Korean native black pig (KNP) have several desirable meat qualities, which are highly demanded by Koreans in spite of its slow growth rate, low feed efficiency, and small litter size. The aim of this study was to evaluate meat quality and fatty acid composition of KNP at different slaughter weight in order to provide information to industry. Ninety female KNP of the same age (220 days) were divided into three groups by live body weights (30 pigs per each group); live weight of 50$\sim$59 kg (T1), 60$\sim$69 kg (T2) and 70$\sim$80 kg (T3), respectively. After slaughtering the longissimus dorsi muscle (LD) and backfat from each group were obtained after 24 hr chilling. Crude protein content and shear force of LD from T3 was higher than that from T1 and pH of LD was significantly lower in that from T1 than from T2 and T3. Color measurement indicated that LD of T2 group had a higher $L^*$-value and lower $a^*$-value than those of T1 and T3. Slaughter weight of KNP generally did not affect the fatty acid composition of LD and backfat but the content of oleic acid (C18:1) of T2 in LD was significantly higher than those of T1 and T3. The results may provide basic information to industry to promote the production and processing of KNP, and assist in meeting the Korean consumer's demand.

Influence of Shopping Orientation of Female Consumers in Their 20s and 30s on Motivation for Brand-Switching in Purchasing Cosmeceuticals -Focusing on Whitening, Sunscreen, and Anti-Aging Treatments- (기능성 화장품 쇼핑성향이 상표전환 동기에 미치는 영향)

  • This study obtains information required for a comprehensive understanding of the brand-switching behavior by cosmetics consumers and for the establishment of effective strategies to make customers more loyal to the company. The study examines the relationships between customer shopping orientation and brand switching motives with respect to cosmeceuticals. A descriptive survey method using a self-administered questionnaire was employed. The sample consisted of 1,258 females between the ages of 20's and 30's residing in Seoul and the Gyeonggi area who use whitening products, sunscreen, or other anti-aging cosmetics. The results showed that shopping orientation influenced brand-switching motives in regards to purchasing cosmeceuticals. The orientation of depending on information and seeking fashion trend were the major factors to induce brand-switching behavior in purchasing whitening products, sunscreen, and anti-aging treatments. However, there were differences in the type of factors of shopping orientation and in their intensity of affecting brand-switching motives depending on the specific cosmeceuticals. In particular, in the case of sunscreen, as compared to other products, the customer shopping orientation should be considered from more diverse perspectives in order to formulate effective marketing strategies related to brand switching. In light of these results, customer shopping orientation with respect to cosmeceuticals is a variable that influences the cause brand switching. Therefore, differentiated marketing strategies that reflect the different characteristics of shopping orientation according to each item of cosmeceuticals are recommended to improve the satisfaction level of the companies' target market. Current consumer needs for practical benefits and for new products should be simultaneously reflected in the plans for new product development of each type of cosmeceutical.

A Survey on the Actual Wearing Condition for the Improvement of Fit of Brassiere (브래지어의 맞음새 향상을 위한 착용실태 조사 -1924세대 소비자를 중심으로-)

  • We conducted a questionnaire survey of 481 Korean female college students and measured anthropometrically 2 girth of their bodies(bust, under bust girth) in order to understand the psychological needs about brassiere and the physical characteristics of consumers aged between 19 and 25(the 1924 generation). There were two major problems to be solved to improve the fit of brassiere in aspect of size. First, most brands for this age group aimed at product differentiation mainly on visual design not on brassiere size. According to the body measurements, the distribution of brassiere size had 6 sections '70AA, 70A, 70B, 75AA, 75A and 75B cups' showing a rate of 63.8% but most brands for this age group were producing '75A, 80A, 85A, 75B, 80B and 85B cups' showing a rate of 24.7%. Second, most subjects of this survey didn't know their own breast size and the sizing system of brassiere which are necessary in order to select the proper brassiere size. And most subjects were wearing a bigger size brassiere than their own body size even though one was in the range of '75A, 80A, 85A, 75B, 80B and 85B'. It might be possible that the dimensions of brassiere products in the market and the sizes indicated on the labels do not correspond. For increasing the consumer satisfaction it is necessary to adjust the production rate of brassiere sizes and to develop ergonomic brassiere products with proper dimensions and shapes for each brassiere size.

A Study on Buying Behavior of Jeans in accordance with Clothes-shopping orientation - focused on high school students in Seoul - (의복쇼핑성향에 따른 진바지 구매행동 연구 -서울지역 고등학생을 중심으로-)

  • This paper is designed to suggest marketing strategies suitable for each classified group by subdividing high school students, the new-generation consumers, by clothes-shopping orientation at jean markets and by identifying the demographic characteristics and the purchasing behavior of each classified group. The subjects consist of 644 high school students. female and male, in Seoul, who responded to my questionnaire research. In terms of the clothes-shopping orientation, pleasure shopping orientation, brand-based shopping orientation, fashion-oriented one, convenience-oriented one and economic one are in sequence. In light of the consumer group based on the factors of clothes-shopping tendencies, the convenience-oriented group ranks first, which is followed by pleasure shopping group, brand-based shopping group and economic one. The subjects turn out to have purchased jeans at time of necessity, The subjects are most liable to get information from their friends, which is followed by their shopping experiences and display. And they turn out to be little affected by family members, salespersons and the press. They regarded aesthetic standards as one of the most important standards, which are followed by size, fitting, personality expression and prices in order. On the other hand, they think little of such factors as friends and similarity. In terms of the standards to make a selection of shops, the respondents cite the quality of goods, the prices of jeans, and service. They didn't think much of the importance of the persuasion of those around them, the convenience of mass transportation facilities, and the approving rate of brands and so on. They resort to wholesale markets, department stores and low-pricing shops in sequence. They turn out not to be satisfied with product guarantees, and fashion. They relied on aggressive approaches like exchanges and refund in case they were dissatisfied with jeans.

A Study on the Perception and Consumption Behavior of Blended Tea and Siberian Chrysanthemum - Focusing on female college students in their 20's - (블렌딩티와 구절초에 대한 인식과 소비행동 연구 - 20대 여대생을 중심으로 -)

  • In this study, consumers' perception and consumption behavior of blended tea were investigated. Also, consumer perception of Siberian chrysanthemum, consumption behavior, and awareness of efficacy were investigated. As a result of the survey, it was confirmed that it was necessary to develop a blended tea with taste and flavor characteristics that consumers prefer, having the capability of relieving stress, and preventing cold or respiratory disease. In addition, the degree of recognition of Siberian chrysanthemum was very low, and the recognition of the efficacy appeared in the order of 'cold relief' and 'respiratory disease relief'. Factor analysis results, safety attributes, health attributes, product attributes, marketing attributes, and sensory attributes were factorized into five factors, and after analysis, it was concluded that the sensory attributes of taste and aftertaste were considered the most important. Consumers surveyed appeared to consume blended tea for 'relieving mood or stress relief', to enjoy the taste, and to prevent cold or respiratory diseases. Siberian chrysanthemum displays efficacy in cold relief and relief of respiratory diseases. Therefore, developing Siberian chrysanthemum as a blended tea could be a practical application that can expand the range of its use, making it more popular and increase its commercial applications.

Consumer Perceptions of Nutrition Labeling at Fast-Food Restaurants in Seoul (서울지역 소비자의 패스트푸드점 영양 성분 표시에 대한 인식)

  • This study investigated customer perception of nutrition labeling at fast-food restaurants in Korea. Five hundred and fourteen customers with previous experience at fast-food restaurants were surveyed in July 2012 in Korea. A total of 502 completed questionnaires were analyzed (98.0%). The questionnaires asked about the general characteristics of the subjects, their perceptions and opinions of nutrition labeling at fast-food restaurants, any nutrients they would like to see included in nutrition labels, and their preferred nutrition labeling methods at fast-food restaurants. Of the respondents, 59.4% were male and 40.6% were female; 42.4% indicated that they eat at fast-food restaurants two to three times a month. Half of respondents (54.2%) knew of nutrition labeling of fast-food restaurants, with females being more aware than males. Males trusted nutrition labeling at fast-food restaurants more than females did, and more males than females responded that nutrition labeling helps when selecting healthy menu items. As for satisfaction with nutrition labeling at fast-food restaurants, males were more satisfied than females, and customers between 30 and 39 years old showed the highest rates of satisfaction. Calories was the criterion that most respondents (66.3%) wished to pre-displayed, followed by sodium and trans fat levels. Respondents mostly preferred nutrition labels at fast-food restaurants to be in the form of symbolic icons (36.5%). The results of this study can help shape the application of nutrition labeling at fast-food restaurants and can be used to help establish guidelines for nutritional education for customers in Korea.

Comparison and Correlation Analysis of Different Swine Breeds Meat Quality

  • This study was performed to determine the influence of pig breed and gender on the ultimate pH and physicochemical properties of pork. The correlations between pH and pork quality traits directly related to carcass grade, and consumer's preference were also evaluated. The pH and meat grading scores for cold carcasses of 215 purebred pigs (Duroc, Landrace, and Yorkshire) from four different farms were obtained. Meat quality parameters of the pork loin were analyzed. Duroc and female animals were more affected compared to other breeds and male pigs. Duroc animals had the highest ultimate pH, carcass back fat thickness, marbling scores, yellowness, and fat content (p<0.05). Landrace pigs had the highest color lightness and cooking loss values (p<0.05). Among all trait parameters, marbling scores showed the highest significant differences when evaluating the impact of breed and gender on meat quality characteristics (p<0.001). Ultimate pH was positively correlated with carcass weight (0.20), back fat thickness (0.19), marbling score (0.17), and color score (0.16) while negatively correlated with cooking loss (-0.24) and shear force (-0.20). Therefore, pork samples with lower ultimate pH had lower cooking loss, higher lightness, and higher shear force values irrespective of breed.

  • The purposes of this study were to investigate the influences of need for cognition (NFC) and fashion leadership on regret after purchasing fashion goods in female consumers and examine the relationships between regret and its dependent variables (i.e., dissatisfaction, regret resolution, and rebuying intentions). Data collection was conducted through a survey for females in their 20s~40s, and 642 questionnaires were used for final data analyses in which frequency analysis, factor analysis, reliability analysis, and regression were applied using SPSS 14.0. The results were as follows. The higher NFC was or the lower fashion leadership was, the higher the degree of regret, as NFC and fashion leadership both had a significant influence on regret. In terms of the dependent variables, the higher the degree of regret, the higher the degree of dissatisfaction and ultimately the lower the rebuying intentions. In addition, the influence of regret on regret resolution and the influence of regret resolution on rebuying intentions were significant. This study verified that consumers' characteristics and feelings of regret had a significant influence on their buying behavior of fashion goods. The results suggest that consumers' feelings of regret (which influence consumer satisfaction and rebuying intentions) should be considered in terms of competitive marketing strategies at fashion companies.

Analysis of Factors Influencing Consumption of Environment-Friendly Forest Products (친환경임산물 소비에 영향을 미치는 요인 분석)

  • The purpose of this study was to investigate the characteristics of consumers purchasing environmentfriendly forest products, and to examine the factors affecting consumption expansion. A survey was conducted among 400 consumers over the age of 20 years. A logistic regression analysis was performed based on age, income, gender, level of education, residence area, whether or not they had children, satisfaction with product price, and product reliability. The results revealed that females were more likely to consume environment-friendly forest products than males; married people tended to buy more environment-friendly forest products than single people; and respondents with a high level of education and with children consistently showed higher willingness to purchase environmentfriendly forest products. To expand consumption of environment-friendly forest products, marketing strategies targeting well-educated, female consumers with children should be implemented.

Comparative Study on the Korean and Chinese Consumers' Preference for Processed Foods using Korean Pears - Focusing on the 20s Women - (한국 및 중화권 소비자들의 국내산 배 가공식품에 대한 기호도 비교 연구 - 20대 여성을 중심으로 -)

  • This study aimed to develop processed foods that can be tailored to the tastes of consumers in countries to enter domestic and foreign markets utilizing fresh Korean pears, in which the consumption is decreasing. A survey was also conducted on three types of samples (pear jelly, pear rice cake, and pear muffin). As a result, both Korean and Chinese women aged in their 20s preferred pear muffins the most among the pear products evaluated. Pear jelly and rice cake were preferred by Chinese consumers because of their sweet taste (p<0.05). Pear rice cakes were preferred because of their texture (p<0.05). Pear muffins were not significant in all items except for odor/flavor and sweetness, but Korean consumers had a high preference for them and showed a significant preference for colors (p<0.05). Pear muffins were most familiar to both Korean and Chinese consumers showing a high willingness to purchase. An analysis of the preference inducement factors of consumers in each country of the three processed foods containing pears using Check-All-That-Reply (CATA) showed that the consumers of both countries preferred the 'pear odor/flavor' characteristics of pear jelly, and that pear rice cakes were preferred by Chinese consumers compared to Korean consumers. Pear muffins were preferred by Korean consumers. Overall, pear muffins are the product expected to be most suitable for female consumers in Korea and China aged in their 20s.
