인공생장호르몬을 사용하여 생산되는 우유의 안전성에 대한 미국소비자들의 관심에 관한 연구 (Consumer Concerns for Safety to Cow's Milk Produced by Biotechnology in the United States)

  • The purposes of this study were to determine the factors that influence consumer concerns for safety to cow's milk produced using food-related biotechnology and to find the similarity and difference among concern factors relating short-term and long-term risk perception. Telephone interviews were conducted and the data were collected from households(n=1,466) nationwide in the U.S. And the data were analyzed by probit model and LIMDEP softare package. The data demonstrated that consumers were concerned about food safety from consuming milk produced using food-related biotechnology. The concerns were found to be influenced by demographic factors(gender in short-term, gender and age in long-term) as well as psychological aspect such as outrage(heard about bGH, milk belief about naturalness, expected benefit in short-term, heard about bGH, expected benefit in long-term) and attitudinal factors(animal rights group, locus of control in short-term, animal rights group, cancer history, locus of control in long-term). The results suggest that consumers have concerns for safety to cow's milk produced by biotechnology and the most factors influencing consumer concerns were similar between short-term and long-term period, though a few factors such as cancer history, milk belief about naturalness and age were different.

Roles of Milk Fat Globule Membrane on Fat Digestion and Infant Nutrition

  • Milk fats are present as globules emulsified in the aqueous phase of milk and stabilized by a delicate membrane architecture called milk fat globule membrane (MFGM). The unique structure and composition of the MFGM play an important role in fat digestion and the metabolic programming of neonates. The objective of this review is to compare the structure, composition, and physicochemical characteristics of fat globules in human milk, bovine milk, and infant formula. It provides an overview of the fat digestion process and enzymes in healthy infants, and describes the possible roles of the MFGM in association with factors affecting fat digestion. Lastly, the health benefits of the MFGM on infant nutrition and future perspectives are discussed with a focus on brain development, metabolic response, and gut health.

  • Milk is an important fluid in glycobiology because it contains a number of short carbohydrate chains either free or as glycoconjugates. These compounds as a class are the most abundant component and benefit the infant by developing and maintaining the infant's gut flora. New and emerging methods for oligosaccharide analysis have been developed to study milk. These methods allow for the rapid profiling of oligosaccharide mixtures with quantitation. With these tools, the role of oligosaccharide in milk is being understood. They further point to how oligosaccharide analysis can be performed, which until now has been very difficult and have lagged significantly those of other biopolymers.

  • Milk from dairy cows has long provided a high quality source of protein and selected micronutrients as calcuim to most populations. Recently, a relationship between disease risk and consumption of specific bovine ${\beta}$-casein fraction either A1 or A2 genetic variants has identified. Populations, which consume milk contain high containing high levels of ${\beta}$-casein A2 variants, have a lower incidence of cardiovascular disease and type 1 diabetes. Furthermore, consumption of milk with the A2 variants may be associated with less severe symptoms of autism and schizophrenia. The mechanism of action focuses on ${\beta}$-casein A1 and related forms preferentially that are able to produce a bioactive opioid peptide, ${\beta}$-casomorphin-7(${\beta}$-CM-7) during digestion. Infants may absorb ${\beta}$-CM-7 due to an immature gastrointestinal tract. Adult, on the other hand, appear to reap the biological activity locally on the intestinal brush boarder. ${\beta}$-CM-7 can potentially affect numerous opioid receptors in the nervous, endocrine, and immune system. Whether there is a definite health benefit to milk containing the A2 genetic variant is unknown and requires further investigation.

아토피피부염에서 모유를 통한 식품 알레르겐에의 감작 (Sensitization of Food Allergen in Breastfed Infant with Atopic Dermatitis)

  • Breastfeeding has been known as the best feeding practice to prevent allergies including atopic dermatitis (AD) However, the benefit on the prevention of allergic disease is still controversial. The objectives of this study were to examine the rate of sensitization to the protein of eggs, cow's milk and soy in exclusively breastfed infants and to evaluate antigen-antibody reaction between breast milk and serum of AD infant. Data on feeding and food hypersensitivity were obtained for 62 AD infants (32 male, 30 female) aged < 6 month who had visited Samsung Medical Center from September 2001 to May 2003. Food hypersensitivity was determined by measuring specific IgE to egg, cow's milk and soy. Specific IgE levels > 0.7 kU/L by CAP assay (Pharmacia, Uppsala, Sweden) were considered positive. The rates of sensitization in breastfed infants were $41.9\%$ (26/62) to egg, $30.6\%$ (19/62) to milk and $18.0\%$ (11/62) to soy. Immunoblotting analyses were performed using breast milk with the matched serum of seven AD infants (4 male/3 female). Binding patterns of AD infant's IgE to breast milk extract showed visible specific band for immunoglobulin, especially in case of a lactating mother who did not completely restricted ingestion of egg, milk and soy. These results indicate that sensitization to food allergen develops via breast milk feeding. Breast milk feeding should be recommended in infants at risk of developing allergic disease, but maternal intake of highly allergenic food might be restricted for prevention and treatment of food allergy among the babies with AD.

Pistachio, Pomegranate and Olive Byproducts Added to Sheep Rations Change the Biofunctional Properties of Milk through the Milk Amino Acid Profile

  • This study was carried out to determine the effects of adding pistachio shell (PIS), pomegranate hull (POM), and olive pulp (OP) to the diet on milk amino acid and fatty acid parameters in Awassi sheep. In the study, 40 head of Awassi sheep, which gave birth at least twice, were used as animal material. Sheep were fed a control diet without added byproducts (CON), rations containing PIS, POM, and OP. Milk amino acid profile was determined by liquid chromatography-tandem mass spectrometry, milk fatty acid gas chromatography-flame ionization detection device. There was a dramatic reduction in alanine, citrulline, glutamine, glutamic acid, glycine, leucine, ornithine and alphaaminoadipic acid in the research groups. In the PIS group, argininosuccinic acid, gammaminobutyric acid, beta-alanine and sarcosine; In the POM group, asparagine, gammaminobutyric acid, beta-alanine, and taurine; In the OP group, a significant positive increase was found in terms of alanine, histidine, gammaminobutyric acid, and taurine amino acids. The applications in the study did not have a statistically significant effect on the ratio of short, medium and long chain fatty acids in milk (p>0.05). In the presented study, it was determined that PIS, POM, and OP, which were added to the sheep rations at a rate of 5%, caused significant changes in the milk amino acid profiles. In this change in milk amino acid profiles, the benefit-harm relationship should be considered.

  • Human breast milk contains numerous biomolecules. Human milk oligosaccharides (HMOs) are the third most abundant component of breast milk, after lactose and lipids. Amongst the synthetized HMOs, 2'-fucosyllactose (2'-FL) and lacto-N-neotetraose (LNnT) are widely studied and are considered safe for infant nutrition. Several studies have reported the health benefits of HMOs, which include modulation of the intestinal microbiota, anti-adhesive effect against pathogens, modulation of the intestinal epithelial cell response, and development of the immune system. The amount and diversity of HMOs are determined by the genetic background of the mothers (HMO secretors or non-secretors). The non-secretor mothers secrete lower HMOs than secretor mothers. The breastfed infants of secretor mothers gain more health benefit than those of non-secretor mothers. In conclusion, supplementation of infant formula with 2'-FL and LNnT is a promising innovation for infant nutrition.

ECONOMICS OF MILK PRODUCTION IN DHAKA DISTRICT-A CASE FOR SAVAR THANA

  • This study was conducted to compare the of rearing native and cross-bred dairy cows and returns received from them. For this purpose, 144 cows of 132 household from 24 villages were randomly selected. of them, 96 were native cows and 48 were cross-bred cows. The study revealed that among the structure of cost components, labour charge occupied the major share in the total cost of milk production per litre. The total cost of rearing native and cross-bred cows was Tk. 14,155 and Tk. 19,854 per annum, respectively. The average net cost of milk production per litre was Tk. 14.12 for native cows and Tk. 0.52 and for cross-bred cows were Taka 3.40. The benefit-cost ratio of milk per litre was higher (1:1.33) in cross-bred cows than native ones (1:1.04). The study further showed that in comparing with bulk line cost, the price of milk per litre received by the farmers was higher in cross-bred cows than native cows. Therefore, the study recommends dairying with cross-bred cows as encouraging and viable commercial enterprise in Banfladesh.

Current status of global dairy goat production: an overview

  • The global goat population continues to grow and is now over one billion. The number of goats raised primarily for milk production is also growing, due to expanding demand. Most of the world dairy goat production and consumption is in Asia, but a global view of the dairy goat sector reveals important lessons about building successful modern dairy goat industries. The most organized market for goat milk is found in Europe, especially in France. The European goat sector is specialized for milk production, mostly for industrial cheesemaking, while also supporting traditional on-farm manufacturing. Government involvement is significant in sanitary regulation, research, extension, support for local producer organizations, and markets, and ensures safety and quality. Nonetheless, producers are still vulnerable to market fluctuations. New dairy goat industries are developing in countries without a long goat milk tradition, such as China, the United States, and New Zealand, due to rising consumer demand, strong prices, and climate change. The mix of policies, management and markets varies widely, but regardless of the country, the dairy goat sector thrives when producers have access to markets, and the tools and skills to sustainably manage their livestock and natural resources. These are most readily achieved through strong and inclusive producer organizations, access to technical services, and policies that enable the poor and marginalized groups to benefit from increasing demand.
