Physicochemical Properties of Xylooligosaccharide as Food Material (식품소재로서의 Xylooligosaccharide의 물리화학적 특성)

  • Physicochemical properties including viscosity, temperature and pH stability, color turbidity and moisture retention power of xylooligosaccharide(XO) as food material were investigated to apply to food process. The viscosity of 70 bx XO was 930 cP at $20^{\circ}C$ and 90 cP at $60^{\circ}C$, which was higher than that of sugar but lower than that of other oligosacchrides. XO remained stable after heat treatment for 1hr at $100^{\circ}C$ and pH 2.5 to 8.0 indicating excellent heat and pH stability. The pH of XO was measured $5.0{\pm}0.1$ and the color turbidvity of XO was very low at pH $2.5{\sim}4.0$. The color turbidity of XO increased as pH increased, but it was not high enough to affect food process. When heated with 1% glycine the color turbidity of XO was very low and changed little with pH changes. To measure moisture retention power XO was stored at $25^{\circ}C$ and 75% relative humidity for 71 day. XO retained more than 95% of the original weight; whereas sugar lost 28%. These results suggest that XO has useful physicochemical properties for various food process to improve the functionality of food.

Physicochemical properties, bioactive composition, and antioxidant activity of different coffee beans dependent on the cultivation region (원산지에 따른 커피의 이화학적 특성, 생리활성 성분 및 산화방지 활성)

  • Five types of coffee bean, which are usually imported and consumed in Korea, were roasted at $250^{\circ}C$ for 15 min and extracted by using a filter coffee machine. The physicochemical properties, functional components, and radical scavenging activity of coffee bean extracts were investigated. The pH of extract was the highest among the extracts and the soluble solid contents of extracts were $0.9-1.0^{\circ}Bx$. The acidity of the extracts was in the range from 0.46-0.55%, which was not significantly different from the control. Indonesian coffee bean extract showed the highest brown color intensity and contained the highest amounts of caffeine and chlorogenic acid. The highest total polyphenol content was found in Kenyan coffee bean extract. Coffee bean extracts from Indonesia and Kenya showed significantly higher radical scavenging activities than the other extracts. This study showed that coffee bean extracts from Indonesia and Kenya contained a large number of bioactive compounds and high antioxidant activity.

Quality Properties of Makgeolli Brewed with Various Rice and Koji (쌀 품종을 달리한 입국의 제조 및 막걸리의 품질 특성)

  • The aim of this research was to analyze makgeolli with nineteen kinds of rice and koji. Among 19 rice, 18 rice were domestic products and one rice was an import. For the properties of koji made with 19 kinds of rice, the acidity was over 5.0 and the saccharogenic power was more than 60SP. Makgeolli brewed with 19 kinds of rice and the koji of each rice were analyzed for alcohol contents, pH, total acidity and solid contents during fermentation. After fermentation, raw liquor's alcohol degree was set 6.0%, the pH ranged 3.47-3.76, the total acidity 0.27-0.44%, the solid contents and the reducing sugar were $2.7-4.6^{\circ}$Bx and 2.49-6.01 mg/mL. Organic acid was detected 5 kinds (oxalic, malic, lactic, acetic, succinic acid) and free sugars were found such as glucose, maltose and fructose. Hwayoung, Hopum and Sura were higher than the residue in 15 kinds of rice in the preference test.

Effects of High Performance Greenhouse Films on Growth and Fruit Quality of Tomato (기능성 피복재가 토마토 생육 및 품질에 미치는 영향)

  • This study was performed to investigate the effect of high performance greenhouse films on growth and fruit quality of tomato. For this purpose, polyolefin (PO), fluoric, antidrop, antifog and thermal films were compared to normal film, ethylene vinyl acetate (EVA). In spectral irradiance of the films, UV ($300{\sim}400nm$) transmittance was highest in fluoric film and lowest in PO film. PAR (photosynthetically active radiation, $400{\sim}700nm$) transmittance was higher in fluoric, thermal and PO film, and near infrared ray (NIR, $700{\sim}1,100nm$) transmittance was higher in high performance films, compared to the EVA film. Total light transmittance was higher in order of fluoric, antifog, anti drop, PO, thermal, and EVA film. Day air temperature in greenhouse was highest under fluoric film and lowest under EVA film due to the light transmittance, while night air temperature was highest under PO and anti drop film due to the thickness of film. Tomato fruits grown under the high performance films had 0.2 to $0.5^{\circ}Bx$ higher soluble solids and 15 to 30% higher lycopene content, compared to those grown under the EVA film. The results showed that tomato fruit quality such as soluble solids and lycopene content can be heightened in terms of much irradiation and better light quality of high performance films, compared to the nomal film, EVA film.

Effects of the Fermentation Periods on the Qualities and Functionalities of the Fermentation Broth of Wild Vegetables (발효기간이 산야채 발효액의 품질과 기능성에 미치는 영향)

  • To determine optimal fermentation period of wild vegetables mixed with black sugar without microorganisms during plant extract fermentation food processing, changes in chemical components, quality characteristics of the fermented broth, and physiological functionality during fermentation period were investigated. pH and $^{\circ}Bx$ of fermented broths decreased gradually during fermentation period. Except persimmon leaf, viscosity of fermented broths of wild vegetables decreased after 3 months fermentation period. Amylase activity increased to $167{\sim}800%$ of its initial level after 6 months fermentation period, and invertase activity decreased by $60{\sim}170$ units after 1 month fermentation. No significant level of cellulase activity was observed. In the sensory evaluation test, inherent flavors and tastes of the wild vegetable decreased during the fermentation period, while those of others gradually increased. Overall acceptability was the highest after 3 months fermentation. Content of total phenolic compounds and electron-donating ability were highest after 3 to 4 months fermentation period, and decreased thereafter. Except Mugwort, tyrosinase inhibitory activity was found in all fermented broths. SOD-like activities were $23.0{\sim}25.1$ and $27.0{\sim}29.2%$ in fermentation broths of acacia flower and persimmon leaf, respectively, and were maintained throughout the fermentation period. Based on these results, fermentation period of 3 to 4 months was determined to be appropriate for plant extract fermentation food processing.

Crop Characteristics of Sweetpotato (Ipomoea batatas L.) Germplasms for Optimizing the Selection of Resources (우수자원 선발을 위한 고구마 유전자원의 주요 특성 평가)

  • This study was conducted to investigate the crop characteristics of 181 sweetpotato germplasms collected from Korea and overseas. The longest shoot vine length was observed in IT232211 (354.8 cm) and the shortest shoot vine length was observed in IT232185 (32 cm). The maximum numbers of shoot branches and nodes were produced by IT232091 (23.0) and IT232174 (67.8), respectively. Differences in Rapid Visco Analyser profiles were observed for pasting parameters such peak, trough, final, breakdown, and setback viscosities; and pasting temperature. The peak and breakdown viscosities were highest in IT232050 and IT232010, at 338.3 and 207.2 Rapid Visco Unit (RVU), respectively. The trough viscosity was lowest in IT232019 at 103.8 RVU. IT232101 had the highest final viscosity (284.6 RVU), and IT232192 had the highest setback viscosity (81.7 RVU). IT232197 had the highest pasting temperature at 86.8℃, and that of IT232134 was lowest at 72.7℃. To evaluate functional substance content, we analyzed 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity and total polyphenol content. The highest frequency proportion of starch was in the 10%-15% range (50.8% of the plants), followed by the 5%-10% range (38.1% of the germplasms). Sugar content ranged from 13.5 to 33.3% (23.2% on average); the highest frequency proportion of sugar was in the 20%-25% range (56.9% of the germplasms), followed by the 25%-30% range (25.4% of the germplasms). The highest frequency proportion of water was in the 70%-80% range (52.5% of the germplasms), followed by the 60%-70% range (44.2% of the germplasms). Our results provide basic data for the selection of useful resources and for the development of new sweetpotato varieties.

Fruit Quality and Occurrence of Brown Leaf Spot Disease (Pseudocercospora vitis) according to the Width of Plastic Shelter in the Grape 'Campbell Early' (포도 '캠벨얼리'의 비가림 폭에 따른 과실품질 및 갈색무늬병 발생양상)

  • The objective of this experiment was to evaluate the effects of application wide plastic shelter (WPS) in the 'Campbell Early' grape. WPS was developed 30cm wider than standard plastic shelter (SPS; 210cm). Under the plastic shelter, the average daily temperature was $2{\sim}3^{\circ}C$ higher than ambient temperature, but WPS treatment was $0.5{\sim}1^{\circ}C$ higher than SPS treatment. However, relative humidity 15~20% lower than ambient and shown different result between two treatments annually. The occurrence of brown leaf spot disease caused by Pseudocecospora vitis on the vineyard decreased 55.6% (2012) and 17.2% (2013) under WPS than SPS. Grape bunches collected two harvest seasons (2012, 2013), were analyzed fruit quality (total soluble solid; TSS, titratable acidity; TA, berry weight, berry size). In 2012, grapes had no differences in the quality of two treatments, but in 2013, significantly increase $0.4^{\circ}Bx$ of TSS and decrease 0.8% of TA on the WPS than SPS. It suggests that the application WPS reduced the incidence of brown leaf spot disease annually, and then affect to the fruit quality.

Breeding of 'Seeberry' F1 Hybrid Strawberry (F1 종자 딸기 '씨베리' 육성)

  • 'Seeberry' is a short-day $F_1$ hybrid strawberry for seed propagation, that was released by the Protected Horticulture Experiment Station (RDA, Republic of Korea) in 2013. Inbred lines derived from domestic germplasms and selected varieties were used to develop this cultivar. 'Seeberry' originated from a cross of two inbred lines: a male parent 'Wongyo 3115' with high firmness and a female parent 'Wongyo 3116' with excellent fruit shape and high yield. 'Seeberry' cultivar should be grown with a crown diameter of over 10 mm to reveal its unique characteristics. 'Seeberry' has an upright plant shape with elliptic leaves, 12-15 flowers per cluster, vigorless growth habit, and average flower bud differentiation compared to vegetatively propagated cultivars. Fruits of 'Seeberry' are conical, having light skin color and approximately 15-16 g in average weight. Yield of this cultivar is about 92% lower than that of 'Akihime', but 'Seeberry' has excellent taste, sugar content of $9.7^{\circ}Bx$, acidity of 0.6%, and good texture. With regard to disease and pest resistance, 'Seeberry' is sensitive to powdery mildew, aphids, and the two-spotted spider mite, and is resistant to anthracnose.

Physicochemical Characteristics and Antioxidant Activities of Bioresource Juices from Jeju (제주 생물자원 착즙액의 이화학적 특성 및 항산화 활성)

  • We aimed to provide the basic data for the development of a beverage using the juices from bioresources from Jeju. Our results show that pH and $^{\circ}Bx$ of the bioresources ranged 2.0-6.5 and 3.3-16.8, respectively. Rubus coreanus Miquel juice had the highest total phenol content (47.3 mg gallic acid equivalent (GAE)/100 mL). Citrus sphaerocarpa juice showed higher rates of 1,1-diphenyl-2-picryl hydrazyl (DPPH) radical scavenging (86.8%) than those of other juices. However, the oxygen radical absorbance capacity (ORAC) value ($2,409.5{\mu}M$ TE/mL) of Citrus sudachi Hort. ex Shirai juice was higher than those of other juices. A high correlation (R=0.7343) was observed between the pH and ORAC values for the 20 bioresources. Furthermore, a high correlation (R=0.8752) was found between the phenolic contents and DPPH radical scavenging for the 5 citrus fruits. These results suggest that the bioresources in Jeju could be used as natural antioxidants for the development of functional foods, including healthy beverages.

Development of Bulgogi Sauce added with the Concentrate of Jujube Flesh Left around Seed (대추씨 주변 과육 농축물을 활용한 불고기 소스 개발)

  • This study was carried out to develop concentrate of residual jujube flesh around the seed as a thickening agent of Bulgogi sauce. Quality characteristics and sensory test of Bulgogi sauces added with jujube concentrate (30%, 35%, 40%, 45%, 50%) were evaluated in comparison with control sauce containing xanthan gum as a thickening agent. Moisture content of Bulgogi sauce added with 30% jujube concentrate was the highest (74.59%). As content of jujube concentrate increased, moisture contents in Bulgogi sauces significantly decreased. Sugar content of control sauce ($30.82^{\circ}Bx$), was lowest among the sauces. As content of jujube concentrate increased, Sugar content of sauces significantly increased ($33.00{\sim}34.38^{\circ}Bx$). Salinity (%) was highest in control sauce (1.38%), and there was no difference in salinity among the sauces depending on the amount of jujube concentrate. Viscosity was highest in sauce added with 50% jujube concentrate (43.33 cP) and lowest in sauce with 30% jujube concentrate (13.20 cP). As content of jujube concentrate increased, viscosity tended to increase significantly. Spreadability was highest in sauce added with 30% jujube concentrate (8.88 cm). As the amount of jujube concentrate increased, spreadability of sauce tended to decrease significantly. Color value was different according to the contents of jujube concentrate in sauces. L-, a-, and b-values of control sauce were highest at 40.19, 1.5, and 24.57, respectively. The results of the sensory test for Bulgogi sauce showed that overall preference was significantly highest in sauce added with 35% jujube concentrate. Moreover, sauce added with 35% jujube concentrate was preferred the most in terms of appearance, taste, and fluidity. Meanwhile, the results of the differentiation test showed a significant difference in color intensity, jujube flavor and taste, sweet taste, and salty taste. However, no significant difference was observed in fluidity. The results of the preference test for Bulgogi seasoned with sauces added with jujube concentrate showed that overall preference and flavor, taste, and texture preference were highest in Bulgogi seasoned with sauce added with 35% jujube concentrate. However, no significant difference was observed in preference towards appearance among the samples.
