균질 처리가 막걸리 고형분의 현탁 안정성에 미치는 영향 (Effect of Homogenization on Suspension Stability of Makgeolli)

  • The effect of homogenization treatment on the suspension stability of makgeolli was evaluated. The non-soluble solids of makgeolli that were not homogenized were precipitated at 1.0-68 mm after 10 minutes of standing and 2.0-70.5 mm after 30 minutes of standing. On the other hand, in the makgeolli homogenized with a blender for more than 20 seconds, no precipitated non-soluble solids were observed during the initial 10 minutes, and when it was left still for 30 minutes, it showed precipitation of 2.0 mm (control 58.0 mm). The makgeolli treated with a high-pressure homogenizer did not show any sedimentation until 30 minutes of standing. In the sensory evaluation, the high-pressure homogenized makgeolli had a score of 3.93, whereas non-treated had a score of 2.80, which was improved by 40% by homogenization.

  • With the steady growth in the scale of the domestic traditional liquor industry, the interest in makgeolli has also been increasing. As the demand for makgeolli increases, interest in manufacturing differentiated makgeolli by adding additional raw materials such as fruits is increasing. In this study, makgeolli with low storage persimmon juice was manufactured, and the sweet taste of persimmon was imparted without adding sweeteners. Unsweetened, high-quality persimmon makgeolli with an alcohol content of 15% or more was manufactured and its quality characteristics were analyzed. Yeast was selected after producing fermented yeast by treating domestic isolated yeast and commercial yeast. Upon producing fermented yeast, persimmon makgeolli was manufactured by varying the amount of persimmon juice added to the fermented yeast. As a result of analyzing the quality characteristics of persimmon makgeolli, the pH was 4.02-4.25, the total acid (citric acid, %) was 0.30-0.43, the amino acidity (glycine, %) range was 0.05-0.15, and the alcohol content (%) was 15.64-18.48.(p<0.05). Reducing sugar (%) was 1.82-12.68 and total sugar (%) was 1.41-10.42, exhibiting a tendency to increase as the amount of reducing sugar and total sugar and the amount of juice added increased (p<0.05). Considering the sensory characteristics, a sample with 50% persimmon juice added showed a significantly higher residual sugar content, and the residual sugar content had a positive effect on the sensory characteristics. Therefore, 50% persimmon juice was added when making persimmon makgeolli. It is suitable for high-quality, non-sweetened persimmon makgeolli that preserves the taste of persimmon, which suits the consumers'taste.

한국농수산대학 재학생의 학교생활 감성 분석 및 영농의지에 관한 연구 (A Study on the Sensibility Analysis of School Life and the Will to Farming of Students at Korea National College of Agricultural and Fisheries)

  • 본 연구에서는 한농대에 재학 중인 3학년 학생을 대상으로 대학생활 선호도 및 졸업 후 영농의지를 파악하기 위하여 설문조사를 실시하였다. 연구 분석에는 구조화되지 않은 데이터의 분석 기법으로 오피니언 마이닝과 텍스트 마이닝 기법을 이용하였으며, 텍스트 마이닝의 결과는 워드 클라우드로 시각화하여 정보를 추출하였다. 또한 감성분석 결과를 이용하여 졸업 후 농사일을 하려는 학생들의 영농의지에 대한 통계적 분석을 하였다. 대학생활 호감도 조사는 대학 이미지, 자기 역량, 기숙사, 교육시스템, 미래 비전 등 5개 분야에 전체 10개 항목에 대하여 이루어졌다. 감성 분석을 위한 긍·부정 사전은 수집된 응답지에서 긍정과 부정의 감정을 분류하여 긍정어 사전과 부정어 사전을 각각 만들어 분석에 이용하였다. 분석 결과 10개 평가항목 가운데 대학 지원 당시의 '대학 이미지', 10년 후의 '자기 모습' 항목은 70% 이상, '자기 역량'과 '현재의 한농대' 항목은 60% 이상의 긍정적 감정을 나타냈다. 반면 '대학 기숙사' '교육과정' '장기현장실습' '한국 농업의 미래' 항목에 대해서는 긍정적 감성보다 부정적 감성이 높게 나타났다. 성별, 영농기반, 입학 동기에 따른 영농의지 차이의 교차 분석에서는 성별, 입학 동기에 따른 영농의지는 통계적으로 유의미한 결과가 나타났으나, 영농기반에서는 유의미하지 않은 결과가 나타났다. 또한 영농의지에 대한 이항 로지스틱 회귀분석에서는 통계적으로 유의미한 변수는 '입학 동기'로 파악되었으며, 본인의 의지로 입학한 학생일수록 영농의지가 형성될 확률이 높게 나타났다.

상토의 조성에 따른 느티나무 묘목의 생육특성 (Growth Characteristics of Zelkova serrata Seedlings as Affected by Mixed Nursery Soil)

  • This study was conducted to find out the optimum composition of nursery soil for raising seedling of Zelkova serrata. The treatments were regulated with the three different soil types : full peat moss(PM 100%), peat moss + perlite + vermiculite(1:1:1), peat moss + perlite + vermiculite(1:2:1). The full peat moss(PM 100%) showed the highest photosynthetic activity such as maximum photosynthesis rate(PN max), water use efficiency(WUE), Fv/Fm, PIabs and SPAD value. And also, full peat moss(PM 100%) showed relatively better growth performances. As a result of surveying the whole experiment, full peat moss(PM 100%) soil increases growth performances and enhances overall quality.

통일 이후 남북한 농업관리조직 통합방안 (Integration Scheme for Agricultural Governance of South and North Korea After Unification)

  • This study suggests integration scheme for agricultural governance of South and North Korea after unification by comparing and analyzing their current agricultural governance, assuming drastic changes of economic system in integration process after unification. The North Korea's critical food shortage will force reformation of its agricultural governance to be the top priority in integration process after unification. The agricultural governance of South and North Korea has comparable structures. However, the North Korea's agricultural governance is extremely inefficient because it is established for political purposes. The integration scheme suggested includes expansion of Rural Development Administration, integration of research institutes, establishment of branch of Korea National University of Agriculture and Fisheries, transformation of existing North Korea's organization into South Korea's system and preparation of training programs for North Korea's officials.
