Study on Dietary Usage and Prohibition on Beef in Joseon Dynasty (조선시대 고문헌에 나타난 소고기의 식용과 금지에 대한 고찰)

  • This study investigated data on beef dietary consumption during the Joseon Dynasty Period, including "the Annals of the Joseon Dynasty", "the Diaries of the Royal Secretariat", and "Ilsongnok". Beef stands for superstitions as well as respect, broad-mindedness, exquisite culinary taste, and is a symbol of taste. In the historic record, we found two extremely opposite trends; specifically, Ugeum (牛禁, forbidding beef consumption and indulgence in beef). On the one hand, believing that they were the rudimentary foundation to Korea's agriculture, Joseon authorities tried to protect cows and bulls as valuable agricultural assets. Meanwhile, there were several officially sanctioned beef consumption events in the Joseon period. These included Jesu (祭需, food for ancestral rites), Daejup (待接, servings), Hasa (下賜, bestowment), and Hogue (犒饋, comforting soldiers with culinary methods). These included offerings to the departed spirits, servings, bestowment, and comforting soldiers with culinary methods. Especially in Joseon's Yeonhang (燕行) Journals, we can see different beef distributions and preferences between Japan and China. Furthermore, The Annals of the Joseon Dynasty even addressed the general issue of beef treatment; special methods for beef processing, beef distribution, tool materials, and prices of beef.

Hepatoprotective Effects of Potato Peptide against D-Galactosamine-induced Liver Injury in Rats

  • The effect of some peptides on hepatoprotection and cecal fermentation against D-galactosamine (GalN)-treated rats was studied. In acute hepatic injury tests, serum alanine aminotransferase (ALT), aspartate aminotranferase (AST), and lactic dehydrogenase (LDH) activities were remarkably increased after injection of GalN. However, potato and soybean peptides significantly decreased GalN-induced alterations of serum ALT and AST activities. Hepatic thiobarbituric acid-reactive substance (TBARS) concentration in GalN-treated groups fed potato and soybean peptides was significantly lower than that in GalN-treated control group. Hepatic glutathione level in the GalN-treated group fed potato peptide was significantly higher than that in GalN-treated control group. Furthermore, cecal Lactobacillus level in GalN-treated groups fed potato and soybean peptides was significantly higher than that in GalN-treated control group, and cecal short-chain fatty acid concentrations in GalN-treated group fed potato peptide were significantly higher than in GalN-treated control group. These results indicate that potato peptide may improve the cecal fermentation and prevent the GalN-induced liver damage in rats.

Quality characteristics of fresh cut apples during storage according to processing steps and browning inhibitor treatment

  • We examined the changes in the physicochemical quality characteristics and antioxidant activity of fresh-cut Fuji apples (Malus pumila) during processing and storage after treatment with browning inhibitors. The primary aim was to elucidate processing suitability and storability. We observed that in the processing stage of slicing fresh Fuji apples, there were no significant differences in 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azinobis (3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radical scavenging ability and ferric-reducing antioxidant power (FRAP). However, after NaClO treatment, total flavonoid and total polyphenol contents decreased. When freshcut Fuji apples were treated with browning inhibitors and stored at 4℃, the L value and hardness decreased; however, the weight loss rate increased based on the storage period of all fruit groups treated with Citrus unshiu Markovich (CuM), calcium ascorbate (CA), and ascorbic acid (AA). The pH increased after 2 days of storage in 1% CuM and after 6 days of storage in 1% CA; however, no changes in pH were observed during the storage period in 1% AA. The DPPH radical scavenging activity was generally good under storage conditions of 1% AA at 4℃ and 1% CA at 20℃. Furthermore, FRAP remained relatively constant under storage conditions of 1% CA. The quality characteristics and antioxidant activity of fresh-cut fruits during processing and storage can be used as basic data for industries. Furthermore, we can gain confidence in quality improvements by improving the production and distribution environment of fresh-cut agricultural products.

  • Externally, there is urgent need Strengthening the competitiveness of agriculture in terms of production, processing and consumption. And development of high-quality services is particularly essential for provide safe food to consumers, internally. We studied the concept of service science, service models and service development methodology, then researched strengthening agricultural competitiveness through analysis of service viewpoint. After then, in the service level and service science, we elicit the service components for the defined new business, which is composed of private service and supporting service for Mungyeong omija industry. In this research, we evaluate the possibilities that agriculture is not primary industries but service industries for competitiveness. We suggest four key service composition for win-win strategy in Mungyeong omija industry. That is authenticity service, decision price service, decision rating service, establish infrastructure for year-round sale.

A Research on the Residual Pesticide Content of Dried Agricultural Products from Ulsan (울산지역 건조농산물 가공품의 잔류농약 분석)

  • This study was conducted to evaluate the safety of 208 types of residue pesticides on 150 dried agricultural products in Ulsan. The pesticide residues were detected using GC-MS/MS, LC-MS/MS, GC/ECD, GC/NPD, and LC/PDA. The detection rate was 19.3% (29 of 150 samples), and 28 types of pesticides were detected. Two of the 29 pesticide residues exceeded the maximum residue limit (MRL). Difenoconazole was detected in Ulleungdo aster, and chlorothalonil and chlorpyrifos were detected in chili pepper leaves. In the vegetable group, the frequency of pesticide residues was found to be the highest in dried leafy vegetables, followed by dried fruiting vegetables other than cucurbit vegetables, and then dried stalk and stem vegetables. The pesticide types detected in the commercial dried agricultural products were fungicide (60%), insecticide (23.8%), and acaricide (16.3%). In the validation study, the values of limit of detection (LOD), limit of quantitation (LOQ), coefficient of determination (R2), and recovery rate were in the range of 0.0001-0.0409 mg/kg, 0.0003-0.1241 mg/kg, 0.994-0.999, and 81.58-116.79%, respectively. The ratio of estimated daily intake (EDI)/acceptable daily intake (ADI) was 0.00002-0.31395%.

Metabolite Profiling and Bioactivity of Rice Koji Fermented by Aspergillus Strains

  • In this study, the metabolite profiles of three Aspergillus strains during rice koji fermentation were compared. In the partial least squares discriminant analysis-based gas chromatography-mass spectrometry data sets, the metabolite patterns of A. oryzae (KCCM 60345) were clearly distinguished from A. kawachii (KCCM 60552) and only marginal differences were observed for A. oryzae (KCCM 60551) fermentation. In the 2 days fermentation samples, the overall metabolite levels of A. oryzae (KCCM 60345) were similar to the A. oryzae (KCCM 60551) levels and lower than the A. kawachii (KCCM 60552) levels. In addition, we identified discriminators that were mainly contributing tyrosinase inhibition (kojic acid) and antioxidant activities (pyranonigrin A) in A. oryzae (KCCM 60345) and A. kawachii (KCCM 60552) inoculated rice koji, respectively. In this study, we demonstrated that the optimal inoculant Aspergillus strains and fermentation time for functional rice koji could be determined through a metabolomics approach with bioactivity correlations.

Comparison of Chemical Composition, Quality, and Muscle Fiber Characteristics between Cull Sows and Commercial Pigs: The Relationship between Pork Quality Based on Muscle Fiber Characteristics

  • This study aims to compare the chemical composition, quality, and muscle fiber characteristics of cull sows and commercial pigs, investigating the effect of changes in muscle fiber characteristics on pork quality. The proximate composition, color, pH, water-holding capacity (drip loss and cooking loss), protein solubility, total collagen content, and muscle fiber characteristics of cull sows (n=20) and commercial pigs (n=20) pork were compared. No significant differences were found between cull sows and commercial pigs in terms of proximate composition, drip loss, protein solubility, or total collagen content of their meat (p<0.05). However, cull sow pork exhibited a red color and a higher pH (p<0.05). This appears to be the result of changes in muscle fiber number and area composition (p<0.05). Cull sow meat also displayed better water-holding capacity as evident in a smaller cooking loss (p<0.05), which may be related to an increase in muscle fiber cross-sectional area (p<0.05). In conclusion, muscle fiber composition influences the pork quality; cull sow pork retains more moisture when cooked, resulting in minimal physical loss during processing and can offer more processing suitability.

Biological Detoxification of Lacquer Tree (Rhus verniciflua Stokes) Stem Bark by Mushroom Species

  • The stem bark of Rhus verniciflua (RVSB) has been used in herbal medicine to treat diabetes mellitus and stomach ailments for thousands of years in Korea, despite its content of the plant allergen, urushiol. A new biological approach for the removal of urushiol from RVSB using mushrooms is described. All mushroom species (11 sp.) employed in this study were able to grow on RVSB, although the growth rate (mm/day) was lower than the control (sawdust). The components of urushiol congeners [C15 triene (m/z 314), C15 diene (m/z 316), C15 monoene (m/z 318), and C15 saturated (m/z 320)] were purified by HPLC and identified by GC-MS. A C15:3 (3-pentadecatrienly catechol) was found to be most abundant in RVSB. Urushiol analogues decreased remarkably from 154.15 to 10.73 mg/100 g (approximately 93%) by Fomitella fraxinea, whereas Trametes vercicolor showed only a 1.46% degradation capacity despite its 2 fold higher growth rate. Similarly, laccase activity was found to be high for F. fraxinea and low for T. vercicolor. Moreover, approximately 98% detoxification was accomplished by F. fraxinea cultivated on RVSB supplemented with 20%(w/w) rice bran. These findings suggest that mushrooms can be used in the detoxification of RVSB.

On the composition of free sugars, fatty acids, free amino acids and minerals in Lycium fructus (구기자의 당, 아미노산, 지방산, 무기물 조성)

  • Gugija, Lycium fructus, grown widely in Korea has long been used as a chinese herbal medicine. For utilization as a new resource in food industry, and as a fundamental study for processing various gugija products, the chemical compositions of Lycium fructus were studied. Three different kinds of free sugar were analyzed by HPLC, and the composions were glucose, 5.6% : fructose, 5.81% : sucrose, 4.39%, respectively. Free amino acids isolated as a major components in dried Lycium fructus were aspartic acid/asparagine, and glutamic acid/glutamine. The major fatty acids were linoleic, oleic, and palmitic acids, and these composed about 82.98~89.64% of total fatty acids. There are not much differences in contents of the major fatty acids among varieties in the fruits, Lycium fructus. The $Ca^{{+}{+}}$, $Fe^{{+}{+}}$ contents of chinese variety were higher than those of other fruit varities studied.

Development of a Salt Taste Sensor for Improvement on Meal HabitDirection Method (식습관 개선을 위한 음식 짠맛센서 개발)

  • The amount of salt intake of Korean people is 11.4 grams per a day, which is 2.3 times of the recommended daily salt intake by WHO - 5 grams of salt a day. The relationship between high salt consumption and increased risk of high blood pressure, observed not only in hypertensive but also in normotensive patients. High salt intake is also associated with an increased risk of heart attack, cerebral ischemia and osteoporosis. Therefore, this research is for developing a salt taste sensor to reduce sodium consumption and improve meal habits for the perception of a more bland taste of most foods. When the sensor was put into food sample, current intensity achieved with distribution cables. Current intensity was correlate with a simple equivalent of salt taste stimulus intensity. The salt taste sensor consists of salinity & temperature measuring probe, signal processing circuit and LCD display & LED warning light. When salinity is going over a set point, LCD displayer indicate salt taste on LCD panel by percent value (%), and at the same time, blue LED light change to red LED light. So we could know the grade of salt taste in soup before meals conveniently and objectively. The results show that operating range of 10 to $80^{\circ}C$ and accuracy of ${\pm}0.1%$ were achieved with an analysis time of about 2 or 3 sec. Moderate reductions in salt intake can help to avert adult diseases and lead a healthy life.
