Development of Charcoal Containing Paper for Packing Grades( I ) - Ethylene Gas Adsorption - (숯을 활용한 포장재 개발에 관한 연구 (제1보) - 에틸렌 가스흡착 -)

  • The charcoal is known to have gas adsorption capability and is used frequently to mitigate the unpleasant smells from food and clothing. It is also used to treat water to remove dissolved organic and inorganic substances. In this paper, we applied the several different kinds of charcoals to the papers in three different ways to investigate if charcoal application method affects its gas adsorption capability. Wet end addition, making multiply, and coating method were tested. Specific ethylene gas adsorption capabilities were measured. Experimental results shows that manufacturing conditions of the charcoal itself changed its gas adsorption properties. The boxes used for agricultural produces, and the packaging paper for flowers are to be well fitted application for the charcoal added paper. Mulch paper, which needs opacity and air permeability with proper strength properties, is another candidate for the application of charcoal added paper.

Effect of SNS Characteristics on Consumer Satisfaction and Purchase Intention of Agri-food Contents (SNS 특성이 농식품 콘텐츠의 소비자만족과 구매의도에 미치는 영향)

  • Recently, The development of information and communication technologies is having a very strong effect on the agri-food industry. Especially, agri-food content utilizing social network services such as Facebook and Twitter led to direct communication with consumers stirred into a new distribution channel. The purpose of this paper is to provide way to successful utilization of agri-food contents and improvement of purchase intention. The results of analyzing the relation between the three characteristics of SNS-social presence, conversation and interaction frequency-, consumer satisfaction and purchase intention are summarized as follows. First, characteristics of SNS of social presence and conversation have a positive effect on consumer satisfaction. Second, the interaction frequency does not have positive effect on consumer satisfaction. Finally, the consumer satisfaction has a positive effect on purchase intention.

  • The demand for food safety has emerged as a major social issue due to changes in diet patterns and consumers' perceptions, along with the advancements in society and the development of the food industry. Consumers are demanding more information about the food they consume, and are sensitive to food scandals. With such interest in food safety, blockchain technology is attracting attention as a means of effectively responding to poor food management resulting in food fraud or unsafe distribution. By ensuring the accuracy of, and trust in, traceability in the food supply chain, it is possible to build trust between traders and to ensure safe food distribution. This paper proposes a next-generation agri-food distribution system that can provide and manage (for suppliers, consumers, and distribution officials) a variety of agri-food information, such as the history, distribution, safety, quality, and freshness of food. Information on product status and distribution status in all processes, including production, processing, distribution, sales, and consumption, can be monitored and controlled in real time (anytime, anywhere), and users can check the safety level of each type of food in real time through an app.

  • BACKGROUND: For safety evaluation of imported agri-food in Korea, the multiresidue analysis method was establised for unregistered organophosphorus pesticides, aspon, chlorthion, chlorthiophos, crotoxyphos, demeton-O, demeton-S, demeton-S-methyl, dioxathion, heptenophos, iodofenphos, leptophos, methyl-trithion, propetamphos and sulfotep. METHODS AND RESULTS: The used method for multiresidue analysis in brown rice and orange used as representative samples of imported agri-food was the official method of Korean Food and Drug Administration. The results of validation test of 13 organophosphorus pesticides except crotoxyphos for multiresidue analysis method are compared to the criteria such as specificity, linearity, accuracy, precision and limit of quantification. CONCLUSION: The used method for multiresidue analysis of unregistered 13 organophosphorus pesticides except crotoxyphos in Korea can surely be used as an official method for routine analysis of imported agri-food.

Effect of High Vanillin Treatment on Storage Quality of Fresh-cut Apples

  • The effect of post-cut vanillin treatment at high concentrations on changes of quality and microorganism in fresh-cut apples was studied. Apples (Malus domestica Borkh. cv. Fuji) were sliced, treated by dipping in different vanillin solution, 0, 40, 80, and 120 mM, packed in polyethylene bag, and then stored for up to 3 weeks at $4^{\circ}C$. Changes in total aerobic bacteria, yeast and molds, browning, soluble solids, and titratable acidity during storage were investigated. Growth of total aerobic bacteria throughout storage was strongly inhibited by vanillin regardless of treatment concentrations. Growth of yeast and molds was inhibited by vanillin of all concentrations until 2 weeks of storage. Levels of browning index, soluble solids, and titratable acidity were not significant difference among the treatment conditions until 2 weeks of storage. However, when stored for 3 weeks, browning index increased more at 80 or 120 mM vanillin, while soluble solids and titratable acidity more be decreased by 120 mM vanillin as compared with other treatment conditions. These results show that the usage of vanillin in processing of fresh-cut apples had a limitation for maintaining quality.

The Use of Near Infrared Reflectance Spectroscopy (NIRS) for Broiler Carcass Analysis

  • NIRS uses reflectance signals resulting from bending and stretching vibrations in chemical bonds between carbon, nitrogen, hydrogen, sulfur and oxygen. These reflectance signals are used to measure the concentration of major chemical composition and other descriptors of homogenized and freeze-dried whole broiler carcasses. Six strains of chicken were analyzed and the NIRS model predictions compared to reference data. The results of this comparison indicate that NIRS is a rapid tool for predicting dry matter (DM), fat, crude protein (CP) and ash content in the broiler carcass. Males and females of six commercial strain crosses of broiler chicken (Gallus domesticus) were used in this study (6$\times$2 factorial design). Each strain was grown to 16 weeks of age, and duplicate serial samples were taken for body composition analysis. Each whole carcass was pressure-cooked, homogenized, and a representative sample was freeze-dried. Body composition determined as follows: DM by oven dried method at 105$^{\circ}C$ for 3 hours, fat by Mojonnier diethyl ether extraction, CP by measuring nitrogen content using an auto-analyzer with Kjeldhal digest and ash by combustion in a muffle furnace for 24 hour at 55$0^{\circ}C$. These homogenized and freeze-dried carcass samples were then scanned with a Foss NIR Systems 6500 visible-NIR spectrophotometer (400-2500nm) (Foss NIR Systems, Silver Spring, MD., US) using Infra-Soft-International, ISI, WinISl software (ISI, Port Matilda, US). The NIRS spectra were analyzed using principal component (PC) analysis. This data was corrected for scatter using standard normal “Variate” and “Detrend” technique. The accuracy of the NIRS calibration equations developed using Partial Least Squares (PLS) for predicting major chemical composition and carcass descriptors- such as body mass (BM), bird dry matter and moisture content was tested using cross validation. Discrimination analysis was also used for sex and strain identification. According to Dr John Shenk, the creator of the ISI software, the calibration equations with the correlation coefficient, $R^2$, between reference data and NIRS predicted results of above 0.90 is excellent and between 0.70 to 0.89 is a good quantifying guideline. The excellent calibration equations for DM ($R^2$= 0.99), fat (0.98) and CP (0.92) and a good quantifying guideline equation for ash (0.80) were developed in this study. The results of cross validation statistics for carcass descriptors, body composition using reference methods, inter-correlation between carcass descriptors and NIRS calibration, and the results of discrimination analysis for sex and strain identification will also be presented in the poster. The NIRS predicted daily gain and calculated daily gain from this experiment, and true daily gain (using data from another experiment with closely related broiler chicken from each of the six strains) will also be discussed in the paper.

Comprehensive comparison of the primary and secondary metabolites and antioxidant activity of Polygoni multiflori Radix by processing methods (가공 방법에 따른 하수오의 영양성분 및 항산화 활성의 종합적인 비교)

  • This study investigated the changes in the physiochemical property, phytochemical content, nutritional content and antioxidant activity of Polygoni multiflori Radix by steam, aging, and fermentation. After processing Polygoni multiflori Radix (PMR), pH slightly decreased, while acidity increased (pH 5.70→4.78, acidity 0.23→0.29%). The reducing sugar content increased after aging and fermentation from 1.19 mg/g (PMR) to 1.40 (fermented PMR, FPMR), 1.30 (red PMR, RPMR), 1.53 (fermented red PMR, FRPMR), 1.99 (black PMR, BPMR), and 2.33 mg/g (fermented black PMR, FBPMR). Total phenolic content was highest in PMR (6.05 mg/g) and total flavonoids and maillard product were increased after aging and fermentation of PMR, and were the highest in BPMR (1.60 mg/g) and FBPMR (2.76 O.D.), respectively. The major phytochemical was 2,3,5,4'-tetrahydroxystilbene-2-0-α-glucoside, which were highest in PMR (64.9 mg/g) with 46.47 mg/g at FPMR, 33.94 mg/g at RPMR, 48.76 mg/g at FRPMR, 36.68 mg/g at BPMR and 34.35 mg/g at FBPMR. The main fatty acids and free amino acids were detected as palmitic acid (C16:0) and proline, respectively. Generally, 2,2-diphenyl-1-picrylhydrazyl and 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid) diammonium salt radical scavenging activities and FRAP reducing powers were shown high in PMR (39.06%, 98.32%, and 2.61 O.D. in extracts concentration 1.0 mg/mL), then were decreased after aging and fermentation.

Exploratory Study on the Phenomena of Entrepreneurship Education in Food and Agriculture Sectors Based on the Grounded Theory Approach (근거이론접근법에 기반한 농식품분야 창업교육현상에 관한 탐색적 연구)

  • This study analyzes the entrepreneurship education phenomena for agri-food entrepreneurs whose main business is the production of agricultural products and the sale of processed products, using the qualitative study Strauss & Corbin(1998)'s evidence theory approach. From the entrepreneur's point of view, I would like to summarize the phenomena that appear in education, and to prepare a theoretical basis for explaining the phenomena. The importance of entrepreneurship education is emphasized to cultivate the ability to develop and provide products tailored to customers. The necessity of education leads to an increase in demand according to the situational awareness of the founders, and the quantitative increase in entrepreneurship education in the agri-food sector is a clear trend. Inevitably, the need for various discussions on systematic and effective entrepreneurship education is raised. For the study, an interview was conducted with preliminary or entrepreneur who have experienced entrepreneurship education in the agri-food sector. As a research method, I use Strauss & Corbin(1998)'s approach and analyze qualitative data using QSR's NVIVO 12 program. Through this study, it was found that contextual and systematic entrepreneurship education in the agri-food sector has the effect of strengthening competitiveness and strengthening sales. There is a need for follow-up management of trainees. Strengthening the competitiveness of start-ups is based on training professional manpower through education and linking regions with cities. Strengthening sales is based on product planning and market development. This study explores entrepreneurship education in the agri-food sector, which has not been actively conducted in the past. Exploratory analysis on the experiences of the founders of agri-food sector as education demanders has an important meaning for understanding the phenomenon of start-up education.

  • The purpose of this study is to investigate development of the solar salt industry in Korea. To achieve the objective, the study defined the concept of advancement and competitiveness improvement regarding the solar salt industry, and identified a present situation and problems of the solar salt industry. The result showed that to develop the solar salt industry in Korea, production system should be modernized, and distribution system should be changed to get consumer's trust, and it should be informed outstanding characteristics of Korean solar salt to consumers. Finally, the government and related corporation should push related system and policy such as traceability system to develop the solar salt industry in Korea.

  • Purpose - The continuously fluctuating consumer who desires simplicity and convenience has had much influence on the food industry. This trend has led to a new food market sector known as HMR (Home Meal Replacement). This study aims to understand the status of the HMR market in United States. Research Design, Data, and Methodology - In order to research the status of the HMR market, quantitative analysis and secondary research were carried out. By using data from Euromonitor, Agriculture and Agri-Food Canada, we have estimated food segment sales contributions to the HMR market in United States. Results - HMR products are being sold in various channels such as traditional stores, convenience stores, and even farmers' markets. Some restrictions on the HMR products exist for food safety. Conclusions - HMR industry in United States has expanded continuously. To keep pace with the growth of the HMR market, the United States government has focused on food and safety regulations with regards to the products used in HMR. Finally, this study discusses the implications for Korean HMR market.
