A Study on Cultivating Korean Chefs for the Globalization of Korean Food (한식 세계화를 위한 한식조리사 양성 방안 연구)

  • The principal objective of this study is to determine the most appropriate methods to increase global recognition of Korean food. In service of this objective, interviews were conducted with Korean food specialists who worked for a Korean culinary educational institute in Seoul, as well as cooking experts who worked for restaurants in super deluxe hotels. The study was conducted for 10 days from Feb $21^{st}$ to March $2^{nd}$ in 2009. The results of the study were summarized and synthesized into some key opinions. First, one of the main concepts in Korean culinary education should involve the selection of a small group of the best members and training them to a world class level at a traditional HanOk style institute. Second, to establish a standard for trainee recruitment, we selected a group of members consisting of about 20 persons over the age of 18 years who had earned a degree or were scheduled to graduate from university chef training and had also worked for over 5 years in the field, additionally, foreigners were allowed to apply to the institute. The educational term is one year and some benefits, such as a fixed amount of subsidies to help in daily living, free dormitory housing a certificate of course completion, and an employment guarantee. Third, the educational program consisted of two stages one was the specialist course in which traditional foods were covered and the other was the menu development course, which dealt with the creation of new Korean foods. Fourth, unique programs, including specialized foreign foods experience halls or commission education, were instituted in an effort to raise the level of world recognition of the superiority of Korean food.

Analysis of Citizen's Attitude to the Foodwaste (II) (음식쓰레기에 관한 실태조사(II))

  • This study was conducted to analysis citizen's attitude and style to the foodwaste from l0th Sept. to 30th Sept. in 1996. The research was used questionare method and analysis was used prequency analysis and cross table method by SPSS (scientific statistics). The foodwaste of householdwaste account for 24.8%, and the magnitude by the kinds of garbage were waste from pre-cocking stage, fruitshell, foodwaste remained after eating, septic foodwaste during storage. The more the housewives'age are young, foodwaste volumne were much. Most remained foodwaste after eating were soup and pot stew. The main cause of foodwaste production was overvolumne cooking. 88.8% of answers think that a menu can be useful to reduce foodwaste. The survey showed that 87.3% of answers put into the meter-rate bag after removed wetness of garbage. 84.1% of answers thought that the recycling of foodwaste needed, but the practical housewife was only 21%. For the suitable treatment of foodwaste, Survey showed that the consistent policy of goverment and continuous publicity was needed essentially, and that the public notice of TV or radio was effective. All of answers would like to participate in recycling of foodwastes whether public-posting or personal-posting. To set up vessel of posting at household, the proper purchase price and space of institution are needed, also the solution of sanitory & aesthetic problem and the collection of composting-product must be achieved smoothly.

Effect of Nutrition Educatioh of School Lunch Programs -On Dietary Pattern of Elementary School Children in Pusan Area- (학교급식 프로그램의 영양교육적 효과 -급식교 및 비급식교 어린이의 식생활에서 본-)

  • This paper proposes to research on the actual conditions of dietary life of some children with similar living standard. They were in the 4th and 5th grades of two elementary schools located at Tongrae-ku Pusan City and the survey period was from March to April in 1989. One part was 0 elementary school childern with school lunch and the other part was ones in K elementary school without school lunch. This survey shows the effect of nutrition education of school lunch on the intake of food and nutrient the pattern of food consumption and untrient intake and the knowledge level of nutrition and results in calling attention to the importance of school lunch and the necessity f its expanded paractice and bringing up some problems to be solved in order to excute more improved program of school lunch. As the results of analysis first the school lunch group demonstrated desirable pattern of food consumption and nutrient intake school lunch aims at by the effect of nutritional education of the scheduled school lunch program and turned out to be superior in food and nutrient intake. physical index and level of nutrient knowledte to the non school lunch group. Secondly since both groups show the lack of calcium intake it is necessary to establish a meal plan to increase calcium source and in order to improve the quality of school lunch it is desirable to plan a program considering proper amount of meal service by age and sex selection of menu based on preference research various cooking methods and and food mixing fit for standard food consitiution of school lunch.
