To assess diet quality by food group intake and to investigate the interrelationship of age, dietary diversity score(DDS), dietary variety score(DVS), dietary frequency score(DFS), food group intake and nutrient intake with food group intake, a dietary survey was conducted with 176 preschool children aged 1 to 6 in Busan using a 24-hr recall method. Food group intake was assessed by food number consumed and intake frequency by six food groups(grain, meat, vegetable, fruit, dairy, sweets group). The mean food numbers consumed and intake frequencies by six feed group were 3.1 and 4.0 in the grain group, 3.6 and 4.0 in the meat group, 3.5 and 4.1 in the vegetable group, 1.0 and 1.1 in the fruit group, 1.3 and 1.5 in the dairy group, 1.4 and 1.4 in the sweets group respectively. As age increased, the intake frequency of the grain group(p<0.05) increased but that of the dairy group(p<0.05) decreased significantly. The DVS and DFS didn't show significant correlations with intake frequency of the dairy group. The grain group intake had significant positive correlations with intakes of the meat, vegetable, and fruit groups. The vegetable group intake had signigicant positive correlations with intakes of the grain and meat groups. The dairy group intake had significant positive correlation with sweets group intake but negative correlations with intakes of the grain and vegetable groups. As the intake frequency of the meat group increased, the NAR(nutrient adequacy ratios) of all nutrients and NAR(mean adequacy ratio) increased significantly. NARs of provein iron, vitamin B$_1$, niacin had the highest correlation with the meat group intake and those of protein, calcium, phosphorous, and vitamin B$_2$ had the highest correlation with the dairy group intake. NARs of vitamin A and vitamin C had the highest correlation with intake of the vegetable and fruit groups respectively. This study was conducted to compare the dietary factors which influence on the bone status of 28 women in urban and 30 women in rural area. Urinary excretion of hydroxyproline(Hpr) and Calcium(Ca) were measured as biological markers of bone resorption. Mean daily intake levels of total protein, animal protein, total calcium, calcium, calcium from milk and milk products, animal calcium, Ca / P ratio by 24 hr recall method were significantly higher in urban women. However, mean daily sodium(Na) intake levels were not significantly different between two groups. Ca Index score and Na Index score by food frequency methods were also significantly higher in urban than in rural subjects. While urinary Ca excretion elves of two groups were similar, Na excretion levels were significantly higher in rural women. Mean urniary levels of Ca / creatinine(cr) and Hpr / cr as bone status index were within normal range and not significantly different between two groups. However, prevalence of poor bone status as assessed by hydroxyproline was higher in rural women. Na Index, urinary Ca excretion and Ca / cr ratio were significantly correlated with bone status(Hpr / cr) in urban women, while only age was related to bone status in rural women. These demonstrated that high Na intake results in increased urinary excretion of Na and Ca and could cause bone resorption. Multiple regression analysis indicated that Na Index score and age have greater effect than other variables in urban women and only age has greater effect in rural women.
This research was performed to investigate the effects of NEP (Nutritional Education Practice) program developed by KHyDDI (Korea Hypertension Diabetes Daegu Initiative) for hypertension and diabetes patients. The subjects were 116 patients (hypertension 70, diabetes 46) who had completed basic education program at the education information center and four-session program was implemented for them. Nutrient intake was analyzed and compared before and after the program by 24-hr recall method and evaluate weight, waist circumference, body fat, blood pressure and eating habits in terms of nutrition knowledge, eating behavior, salty taste assessment. The improved results after the program were observed in weight, waist circumference, body fat ratio, blood pressure, slightly salty taste in salty taste assessment, nutrition knowledge, eating behavior, sodium, energy, carbohydrate and protein intake ratio to total energy (p < 0.001). Therefore, this program is effective in the improvement of weight, waist circumference and eating behavior, and the continued management would lead to the prevention of cardio-cerebrovascular diseases in the community.
The objective of this study was to investigate the nutritional and health status of women industrial workers by working fields. One hundred forty eight (105 lead and 43 office) workers were recruited from March 2005 to October 2005. Information on age, education, smoking and drinking status were collected using questionnaire and nutrient intake and diet quality of workers were assessed by average of two-day 24 hr recall method. Biochemical indexes including blood lead level (PbB), indexes for iron status, serum calcium (Ca) and serum lipid profiles were analyzed from fasting venous blood or serum. Results showed that education level of lead workers was lower than that of office workers (p<0.05), but nutrient intake levels were not significantly different by working fields. Overall nutritional status of the subject were good except for calcium, vitamin $B_2$, C and folic acid intakes. PbB of lead workers were significantly higher than that of office workers while mean corpuscular hemoglobin concentration (MCHC) and serum Ca levels were significantly lower in lead workers. MCHC was positively correlated with zinc intake (r=0.166) and serum Ca was positively correlated with vitamin C intake (r=0.179). This study confirms that lead workers need extra care to keep their health and nutritional management especially for the nutrients known to interact with lead. Tailored nutrition education for workers at specific working fields needs to be more focused for the improvement of health status of industrial workers.
The purposes of this study were to estimate nutritional intakes of the long-lived elderly and to obtain the data for establishing dietary guidelines that may be recommended for the general population for the sake of longevity. The subjects of the study were 300 elederly people of age over 85 years living in Kyungpook Sung-Ju area who had no problem in daily living. Four times of food consumption survey were carried out seasonally by the repeated 24-hr recall method for one year. Mean daily energy intakes and RDA percentage of energy intakes of the male and female subjects were estimated as 1222 kcal(67.9%) and 1047 kcal(65.4%) respectively. Mean daily intakes of nutrients were estimated as 38.3g for protein, 287mg for calcium, 5.8mg for iron, 314R.E. for vitamin A, 0.6mg for vitamin B1 and 0.43mg for vitamin B2 The mean RDA percentages of nutrients intake were 64.4% and 59.8% for protein in male and female, 39.8% for Ca, 48.3% for Fe, 44.9% for vitamin A, 60% for vitamin B1, and 35.8% for B2. The average PFC ratio of energy-yielding nutrients throughout the year in male and female were 15.1 : 15.2 : 69.7 and 13.8 : 13.2 : 73.0 respectively. The mean daily intakes of energy and most of nutreints were significantly high in winter season. The contribution of plant food sources to nutrient intakes were over 60% for protein and fat, 50% for calcium, and 70% for iron. Long-lived elderly people an Sung-Ju, Kyungpook showed considerably smaller physiques compared to the avergae Korean elderly, however their average BMI fell in normal range. The subjects were consuming much less energy and nutrients compared to the present Korean RDA for the elderly over age 75. The subject showed relatively good health state in spite of low intakes of energy and nutrients. Therefore it seems to be necessary to establish a set of new RDA for the elderly over age 8.5.
The purpose of this study was to investigate the effect of smoking on dietary behavior and nutrient intake among the male college students. The subjects were divided into three groups; non smoker(n=84), moderate smoker(n=68), and heavy smoker(n=89) according to duration and degree of smoking. And they were asked for general characteristics, life style, eating pattern, food frequency, and nutrient intake using questionnaire and 24-hr recall method. The mean age, height, weight, and BMI of the subjects were 26.2$\pm$6.2 years, 173.3$\pm$5.3㎝, 66.5$\pm$9.3㎏, and 22.1$\pm$2.7㎏/$m^2$, respectively. The type of residence and frequency of alcohol drinking were significantly different among three groups; the frequency of self-boarding and alcohol drinking in moderate smoker and heavy smoker was higher than those in non smoker. Comparing with non smoker, the frequency of skipping meals, especially breakfast and supper, was significantly high in moderate smoker and heavy smoker. The most common reason why heavy smoker skipped meals was ‘eating habit’, while it was ‘lack of time’ in non smoker. The results showed that the heavy smoker tended to drink coffee more often compared to the other two groups. There were no significant differences in nutrient intakes among three groups. In conclusion, heavy smoking students have unhealthy dietary behaviors in terms of high frequency of alcohol drinking, habit of skipping meals and frequent coffee drinking showing a strong need of proper education on smoking withdrawal and meal practice for them.
Recent studies have shown that environmental, biochemical, nutritional or genetic factors affect bone mineral density (BMD). The purpose of the present study was to investigate the effect of vitamin D receptor (VDR) gentotype and nutritional status on BMD of elderly women living in a rural area. Three hundred thirty five elderly women over 65 years in Asan participated the study. Data for demographic and nutrient intakes were obtained by survey with a two day 24 hr recall method. BMD was measured by broadband ultrasound attenuation (BUA) using quantitative ultrasound (QUS). VDR genotypes of the subjects analyzed with Bsm I restriction enzyme were bb (92%), Bb (7%) and BB (1%). No differences were found between genotypes bb and Bb/BB in age, menopausal age, body mass index and body fat. BUA of bb genotype was higher (62.5 $\pm$ 15.6 dB/MHz) than Bb/BB genotype (56.1 $\pm$ 17.6 dB/MHz) by Student's t-tests. Correlation analyses showed strong negative correlation of BMD and age, but positive correlation with BMI, energy and calcium intake. When subgroup analyses were conducted after stratification by the median calcium intake level (412.9 mg/d), the above median calcium intake group showed significant difference in BUA by VDR genotype while the lower median calcium intake group did not show significant difference. The current study confirmed interaction of calcium intake and VDR genotype in association with BMD. Further nutritional intervention will be needed to improve calcium status of the elderly women living in rural areas.
This study was done to explore the effect of Korean women's salt usage behavior on their sodium intake and excretion according to aging. Dietary sodium intake and salt usage behavior were analyzed to compare the difference between young and middle-aged women. One hundred fifty six young women and 77 middle-aged women without hypertension or any current medication were recruited. Body mass index, waist hip ratio, blood pressure were measured from each subject. Salt usage behaviors were surveyed with questionnaire, sodium intake with 24-hr recall method, and sodium excretion with spot urine. Middle-aged women were more obese than young women according to body mass index and waist hip ratio. Blood pressure was significantly higher for the middle-aged. Young women consumed more fats and middle-aged women more carbohydrates. Middle-aged women consumed more sodium and potassium, and excreted more sodium. Among questionnaire items, kimchi, soup or pot stew, or salted vegetables were found to be related with high sodium diet. Salted vegetables and salted nuts and potato chips were significantly correlated with young women's high sodium diet, while soy sauce on fried food, kimchi, salted vegetables accounted for middle-aged women's high sodium diet. With these results, we concluded that middle-aged women consumed more carbohydrates, less fat, and more sodium and potassium than young women. Middle-aged women frequently choose kimchi, soup or pot stew, or salted vegetables, and they contribute to high sodium intake. We recommend to choose low-salt kimchi, less soup or pot stew, and more fresh vegetables for lower sodium diet.
This study was conducted to identify dietary factors that may affect the occurrence of gastric cancer in Koreans. Preoperative daily nutrition intake and diet quality of patients diagnosed with gastric cancer were evaluated. Collected data were comparatively analyzed by gender. The results were then used to prepare basic materials to aid in the creation of a desirable postoperative nutrition management program. The subjects of this study were 812 patients (562 men and 250 women) who were diagnosed with gastric cancer and admitted for surgery at Soonchunhyang University Hospital between January 2003 and December 2010. Nutrition intake and diet quality were evaluated by the 24-hr recall method, the nutrient adequacy ratio, mean adequacy ratio (MAR), nutrient density (ND), index of nutritional quality (INQ), dietary variety score (DVS), and dietary diversity score (DDS). The rate of skipping meals and eating fast, alcohol consumption, and smoking were significantly higher in males than those in females. The levels of energy, protein, fat, carbohydrate, phosphorous, sodium, potassium, vitamin $B_1$, vitamin $B_2$, niacin, and cholesterol consumption were significantly higher in males than those in females. Intake of fiber, zinc, vitamin A, retinol, carotene, folic acid were significantly higher in females than those in males. MAR in males was significantly higher (0.83) than that in females (0.79). INQ values were higher in females for zinc, vitamin A, vitamin $B_2$, vitamin $B_6$, and folic acid than those in males. The average DVS was 17.63 for females and 13.19 for males. The average DDS was 3.68 and the male's average score was 3.44, whereas the female's average score was 3.92. In conclusion, males had more dietary habit problems and poor nutritional balance than those of females. Our findings suggest that proper nutritional management and adequate dietary education for the primary prevention of gastric cancer should be emphasized in men.
The purpose of this study was to evaluate the nutritional status of elderly women living in residential homes by estimating nutrients and food intakes. Food consumption survey was conducted by 3-day 24hr recall method with 99 elderly women aged 65 to 90 years from three residential homes in Seoul, Choonchun and Chunan and 46 free-living elderly women aged 65 to 88 years from Chunan as control group. Food intake data was converted into nutrient intake using computer aided nutritional analysis program. Mean energy intake and percentage of recommended daily allowance (RDA) of residential home residents were 1696㎉ and 101% of RDA while those of control were estimated as 1939㎉ and 119% of RDA. On average, absolute amount of nutrient intakes of residential home residents were slightly higher than control group. Subjects in control group showed significantly lower carbohydrate and vitamin A intake, while vitamin C intake was higher. However, nutrient intake quality determined by INQ (Index of nutritional quality) was significantly higher among control subjects in most nutrients except vitamin A than residential home residents. Intakes of calcium, vitamin A and riboflavin of all subjects in this study were less than 75% RDA meaning that nutritional status of calcium, vitamin A and riboflavin was insufficient and could possibly result in nutritional deficient. Some food groups such as milk or other dairy products must be strongly suggested to improve nutritional status of elderly women in this study. According to the results of this study, meal plans of residential homes are quite adequate in quantity of micronutrients, but need to be improved in both quantity and quality of micronutrients.
