  • Antifungal activities of domestic plants were examined to develop natural anti-microbial agents, able to protect onion from spoiling microorganisms during their storage. A fungus was isolated from spoiling onion and identified to Penicillium sp. ON-211, based on the morphological characteristics of conidiophore and conidia. Chloroform extracts of Juniperus chinesis Linnaeus, Juniperus. chi. var. horizontalis, water extract of Thujs orientalis Linnaeus' seed and the n-hexane extract of Juniperus. chi. var. horizontalis N. showed remarkable antifungal activties against this fungus.

  • Culture concentrate of probiotic Lactobacillus johnsonii PF01 inhibited the growth of Staphylococcus aureus, which was confirmed by agar well diffusion method. Protease treatment of PF01 culture concentrate indicated that the antimicrobial substance of PF01 was a bacteriocin. Investigation of PF01 genome revealed the existence of a gene similar to that of helveticin, which showed 34.9% and 41.0% identity with those of L. helveticus 481 and L. crispatus K313, respectively, thereby suggesting that the bacteriocin produced by strain PF01 is a helveticin homolog.

  • We studied adsorption isotherm, surface properties and antibacterial activity of Cu treated activated carbon fiber (ACF). The BET surface area of Cu treated ACF are distributed to $688.2-887.8m^2/g$. The adsorption results show that BET surface areas move gradually to lower value with increasing treated Cu mole concentration. Using t-method, the specific micropore volumes and average pore size were obtained. From the SEM study, it is also observed that many of micropores in activated carbon fiber are blocked surface after the treatment. And we also observed that the activity of E. coli in kind of colon bacillus increases gradually to larger range with increasing Cu mole ratio. From these results, we suggest the antibacterial mechanism for metal treated ACF.

  • This study is for the application of functional antibacterial packaging to fresh food. Zeolite/Zinc-polypeptide was coated on PP film at concentrations of 5%, 10%, and 15%, degree of dispersion was verified through FESEM and FT-IR analysis. In addition, the antibacterial and antifungal properties of the films were analyzed according to the control group and the concentration of coating materials. As a result, the degree of dispersion of coating material was irregular but wide, depending on the concentration of Zeolite/Zinc-polypeptide on the surface of PP film. The antibacterial effect against E. coli was over 99.9%, and the growth of R. oryzae was inhibited about 70%. Therefore, it was confirmed that Zeolite/Zinc-polypeptide had antibacterial and antifungal properties against E. coli and R. oryzae even after coated on PP film. In conclusion, Zeolite/Zinc-polypeptide coating film is expected to be effective in preventing corruption and improving the shelf life of fresh food as a functional packaging material. In order to be applied to various fresh foods in the future, storage experiments are additionally required with temperature and humidity conditions according to fresh foods.

  • In present work, the anti-bacterial effect of silver/activated carbon (Ag/C) composites prepared by the ${\gamma}$-irradiation of $AgNO_3$ solution on Escherichia coli (E. coli) has been studied. Characteristics of the Ag/C composites were identified by scanning electron microscopy (SEM), X-ray diffraction (XRD) and atomic absorption spectroscopy (AAS). The inhibitory concentration of E. coli was found to be 0.387 ppm and the sterilizing concentration for the tested organism was 1.017 ppm. These results support the evidence that Ag/C composites have strong antibacterial activity to E. coli.

  • In present work, the antimicrobial effect of silver-nanoparticles/celite (SN/C) and silver carbonate/celite (SC/C) composites on Escherichia coli (E. coli) by use of silver nanoparticles and silver carbonate has been studied. Characteristics of the SN/C and SC/C composites were identified by scanning electron microscopy (SEM), X-ray diffraction (XRD) and atomic absorption spectroscopy (AAS). SN/C and SC/C composites showed antimicrobial activity and the minimum inhibitory concentration of E. coli were 0.541, 0.344 ppm and the complete sterilizing concentration for the test organism were 1.427, 1.623 ppm. From the results we identified that SN/C and SC/C composites have antimicrobial activity to E. coli.

  • We studied th physicochemical properties and the antibacterial effects of the Ag-treated activated carbon. The adsorption isotherms for the series of Ag-impregnated activated carbons represented typical Type-I. The surface area of the impregnated carbon was in the range of $740~1110\;m^{2}/g$, while the surface area of starting materials was $1440\;m^{2}/g$. Using t-plot, ${\alpha}_{s}$}-plot as well as DR-plot, and the volume of micropore was obtained. From the SEM study, the highly developed porous structure and the homogeneous distribution of Ag on the surface of activated carbon were confirmed. Finally, antibacterial effects of Ag-treated carbon aginst E. coli was discussed.

  • In the current research for natural product with antimicrobial effects, various extracts of Mulberry Leaves against microorganisms were evaluated in terms of the minimum inhibitory concentrations(MIC). In general, Candida albicans was more antimicrobial activity than the other microorganisms such as Streptococcus mutans, Staphylococcus epidermis, and Staphylococcus aureus. The maximum activity was exhibited by ethanol extract of the leaves of Mulberry Leaves against Candida albicans (MIC, $1600{\mu}g/ml$). These results suggest that ethanol and water extracts of Mulberry Leaves have a potential antimicrobial activity.

  • This study was carried out to get a industrial information about a possibility of IgY antibody production, antimicrobial activity and properties of IgY antibody in egg yolk. The residual antibody activities of IgY were 91.5% after heating for 30min at 6$0^{\circ}C$. At the same time. these activities, were 73.2% after heating 15min at $65^{\circ}C$ and decreased vapidly at 7$0^{\circ}C$ and little antibody activity was left after heating for 15min at 8$0^{\circ}C$. When the prepared IgY was incubated at various pH ranges from 7 to 2 for 5hr at 37$^{\circ}C$., the antibody activity was stable from pH 7 to 4 and remained to 69.8% at pH 3.

  • In this study, ethylene vinyl acetate (EVA) and low density polyethylene (LDPE) composite films (EVA/LDPE-OSP) containing calcined oyster shell powder (OSP) were prepared using twin-screw extruder as an antimicrobial packaging material. The OSP composite was initially prepared and then incorporated into an EVA/LDPE blend at different ratios (0, 1, 3 and 5%) to develop the EVA/LDPE-OSP composite films. The as-prepared EVA/LDPE-OSP composites films were evaluated using FT-IR, DSC, TGA, OTR, WVTR, SEM and UTM as well as antimicrobial activity was examined using JIS Z 2801:2000 standard. OPS endowed the antimicrobial potency to the composite films against Gram-positive (Staphylococcus aureus) and Gram-negative (Escherichia coli) bacteria. In addition, the incorporation of OSP remarkably enhanced the thermal stability. OSP as a natural biocidal agent can be used as a multifunctional additive in packaging industry such as improving the thermomechanical properties and preventing the microbial contamination of packaged products.
