The relationship between water deficit stress and monodehydroascorbate reductase (MDHAR) activity was determined in lettuce (Lactuca sativa L.) leaves under water stress condition imposed by with-holding water for 72 hrs. Relative water content determined in water deficit stressed lettuce leaves gradually reduced from 91.29% to 74.58%, and water content of medium drastically decreased 4.73% after quitting of irrigation. Hydrogen peroxide content in leaves subjected to water deficit stress rapidly increased, but soluble protein content rapidly decreased when those were compared to control plant. The relationship between relative water content and hydrogen peroxide content in stressed leaves positively correlated with $R^2$=0.8851, but soluble protein content reversely correlated with $R^2$=0.9826. Total chlorophyll content in stressed plant leaves was higher than that of control plant, and increased rapidly in early stage of treatment of both stressed and control plants. Carotenoid content was higher than that of control plant, and the ratio of carotenoid to total chlorophyll in stressed plant was higher as compared to control plant. As water deficit stress continued progressively, total ascorbate content in stressed plant leaves was a little higher than that of control plant. But dehydroascorbate (DHA) content within 6 hr of water deficit stress was higher than that of control plant, and then, content of control plant in 12 hr of stress treatment higher than that of stressed leaves. The activity of monodehydroascorbate reductase of cytosolic and chloroplastic tractions increased dramatically, and mRNA of MDHAR was highly detected by probing $^{32}P$-labeled single stranded MDHAR RNA of lettuce plant leaves subjected to water deficit stress. Relationship between MDHAR activity and relative water content and hydrogen peroxide highly correlated with $R^2$=0.9937 and 0.8645, respectively.

Nutritional compositions and antioxidative activity of Kabocha squash (Cucurvita maxima Duch) as health food were compared with those of pumpkin (Cucurvita moschata Duch). Kabocha squash had higher soluble solids and twofold harder flesh than pumpkin. Crude protein, crude lipid and total amino acid contents of Kabocha squash were higher than those of pumpkin. Major free sugar in Kabocha squash was sucrose, and its content were 2.1 times higher than that of pumpkin. Major organic acids of Kabocha squash and pumpkin were succinic and malic acid, respectively. Kabocha squash had higher amounts of vitamins $A,\;B_1,\;B_2,\;C$ and C than pumpkin, while both showed similar mineral contents except for iron. Contents of Total pectin and hydrochloric acid soluble pectin of Kabocha squash were 17.00 and 7.37 g/100 g AIS, respectively. In pumpkin, total pectin content was 25.14 g/100 g AIS, and water soluble pectin content was higher than those of other pectin fractions. Contents of carotenoid in Kabocha squash and pumpkin were 285.91 and 24,62 mg% d.b., respectively. Kabocha squash had higher electron-donating radical-scavenging activity, SOD-like activity and nitrite-scavenging effect than pumpkin.

The aim of the study was to investigate the antioxidant content and activities of ethanol extract of the edible flower Dianthus chinensis L. (DCE) as well as its inhibitory activities against nitric oxide (NO) production in macrophages and growth and adhesion of human cancer cells. The total polyphenol, flavonoid, and carotenoid levels of DCE were 19.0 mg gallic acid equivalent/g, 65.7 mg quercetin equivalent/g, and $95.0{\mu}g/g$, respectively. The 2,2-diphenyl-1-picrylhydrazyl radical scavenging activity and ferric reducing antioxidant power of DCE at a concentration of $1,000{\mu}g/mL$ were 44% and 51%, respectively. In lipopolysaccharide-treated RAW 264.7 macrophages, treatment with DCE at concentrations of 500 and $1,000{\mu}g/mL$ resulted in significantly reduced NO levels (to 7~23% of the control). In H1299 human lung carcinoma cells and HCT116 human colorectal carcinoma cells, treatment with DCE at concentrations of 250, 500, and $1,000{\mu}g/mL$ resulted in dose-dependent growth inhibition. DCE was also effective in inhibiting adhesion of both H1299 cells (to 55% of the control at concentration of $1,000{\mu}g/mL$) and HCT116 (to 26~40% of the control at concentrations of 250, 500, and $1,000{\mu}g/mL$). These results suggest that DCE exerts antioxidant, anti-inflammatory, and anti-cancer activities in vitro.
Potentilla kleiniana is a perennial herb beloning to Rosaceae family. Herein we investigated the effect of light intensity, light quality and chemical elicitor on plant growth and the accumulation of bioactive compounds in P. kleiniana. After 60 days of cultivation under different shading level [0% (200 μmol·m−2·s−1), 35% (95 μmol·m−2·s−1), 55% (65 μmol·m−2·s−1), 75% (40 μmol·m−2·s−1)] in the greenhouse, chlorophyll and carotenoid content were the highest under 35% treatment, however, plant height, leaf number and biomass were the highest under non-shading. As a result of cultivation among strong light condition as a control, florescence and three mixture light sources [red:white:blue (RWB) = 8:1:1, red:blue (RB) = 8:2, red:green:blue (RGB) = 8:1:1] as treatments in plant growth chamber (25 ± 2℃, 185 ± 3 μmol·m−2·s−1), growth, biomass, chlorophyll content low difference between total phenolic compouds and flavonoid content were higher under RWB treatment. DPPH radical elimination ability was the highest under all treatments especially florescence and RGB treatment except control. As a result of treating chemical elicitor [salicylic acid (SA), methyl jasmonate (MeJA)] concentration (0, 50, 100, 200 μM) respectively, plant height, petiole diameter and biomass were higher under non-treatment, MeJA 50 μM. It was investigated that fresh weight and dry weight under MeJA 50 μM treatment were especially a little high. Total phenolic compounds and flavonoid content of SA 50 μM treatment was the highest but DPPH radical elimination ability was significantly the highest under MeJA 200 μM (88.65%) and MeJA 50 μM (87.84%) treatment. Thus, this study suggested that we determined optimal shading and light quality in the greenhouse and plant growth chamber also confirmed bioactive compound content, antioxidant ratio increase according to different chemical elicitation concentration.
This study is to examine nutrients in the persimmon peel develop processed products and analyze their quality properties. The persimmon peel powder was rich in nutrients with 4.35% of moisture, 3.01% of protein, 1.02% of lipid, 2.02% of ash and $5.7^{\circ}Brix$ of Sugar concentration as well as 82.5 mg% of total carotenoid. As far as quality properties of Sulgidduk were concerned when the 5% addition persimmon peel resulted in the highest level of watery content and the more colors were added the lower the L value became and the higher a and b values. As the result of measurements using a texture analyzer, hardness, adhesiveness, cohesiveness, springiness and chewiness property decreased flexibility increased. The sensory test results revealed that the 3% added persimmon peel Sulgidduk was the best.

Purpose: This study aimed to investigate the association of total dietary antioxidant capacity (TAC) with oxidative stress and metabolic markers among patients with metabolic syndrome according to gender. Methods: A total of 346 subjects aged 30~59 years with two or more risk factors of metabolic syndrome were recruited from a general hospital near Seoul in South Korea between 2010 and 2012 based on data from the medical checkup. Biochemical indices for oxidative stress and metabolic markers were measured. Food consumption data from 3-day food records were linked with the antioxidant capacity database for commonly consumed Korean foods to estimate individual's TAC. Results: Average dietary TAC of the study subjects was 132.0 mg VCE/d/1,000 kcal in men and 196.4 mg VCE/d/1,000 kcal in women. Levels of ${\gamma}$-glutamyltransferase (GGT), systolic blood pressure, diastolic blood pressure, and blood triglycerides were reduced significantly according to increasing TAC in men, but there was no significant trend in women. Intakes of total flavonoids and carotenoids were significantly negatively correlated with GGT (p < 0.05) and d-ROMs (p < 0.01) in men, whereas those of ${\alpha}$-tocopherol (p < 0.05) and ${\gamma}$-tocopherol (p < 0.05) were positively correlated with biological antioxidant potential (BAP) in women. The odds ratio of high oxidative stress indices and abnormal metabolic markers according to TAC level were not significant in either men or women. Conclusion: The results show that dietary TAC was partially associated with oxidative stress and metabolic markers among patients with metabolic syndrome. Further research is required for elucidating the association between dietary TAC and incidence of metabolic syndrome and chronic diseases within a large population in prospective studies.
Color is one of the quality determining factors for pepper powder. To measure the color of pepper powder, several methods including high-performance liquid chromatography (HPLC), thin layer chromatography (TLC), and ASTA-20 have been used. Among the methods, the ASTA-20 method is most widely used for color measurement of a large number of samples because of its simplicity and accuracy. However it requires time consuming preprocessing steps and generates chemical waste containing acetone. As an alternative, we developed a fast and simple method based on a visible/near infrared (Vis/NIR) hyperspectral method to measure the color of pepper powder. To evaluate correlation between the ASTA-20 and the visible/near infrared (Vis/NIR) hyperspectral methods, we first measured the color of a total of 488 pepper powder samples using the two methods. Then, a partial least squares (PLS) model was postulated using the color values of randomly selected 3 66 samples to predict ASTA values of unknown samples. When the ASTA values predicted by the PLS model were compared with those of the ASTA-20 method for 122 samples not used for model development, there was very high correlation between two methods ($R^2=0.88$) demonstrating reliability of Vis/NIR hyperspectral method. We believe that this simple and fast method is suitable for highthroughput screening of a large number of samples because this method does not require preprocessing steps required for the ASTA-20 method, and takes less than 30 min to measure the color of pepper powder.

This study evaluate the quality characteristics and antioxidative properties of acorn starch mook containing spirulina (0%, 0.5%, 1%, 1.5%) and soy protein (3%). The pH of acorn starch mook containing the spirulina and soy protein decreased with increasing amount of spirulina decrease in pH means an increase in acidity. In addition, the moisture content was 87%. The lightness of acorn starch mook containing spirulina and soy protein decreased with increasing amount of spirulina and soy protein. The L and a values of the Hunter color system were decreased significantly increasing spirulina content, and the b value increased. In contrast, with increasing spirulina and soy protein content, the L and a increased significantly and the b value. Texture analysis revealed higher hardness and springiness of acorn starch mook containing spirulina than the control. The total phenol content was highest in the acorn starch mook containing 1.5% spirulina and 3% soy protein. The antioxidant activities of the acorn starch mook containing spirulina and soy protein increased with increasing amount of spirulina and soy protein. The $IC_{50}$ value of 1.5% spirulina and 3% soy protein was 166.2 mg/mL for DPPH. The results of the sensory test were best in the acorn starch mook containing 1% spirulina.

The biological compounds such as vitamin C, carotenoids, hesperidin and naringin were determined in Yuza grown in Geoje, Goseong, Gohung and Namhae. Also, activities of electron donating, nitrite scavenging and tyrosinase were detected by concentration of water extracts made from Yuza peel. Vitamin C contents of flesh sample were 6.34${\Pm}$0.12-10.74${\Pm}$1.25 mg/100 g and its contents of peel were 2.17-3.57 times higher than flesh. The carotenoid contents of peel were higher than flesh, and its contents were abundant (over 6.0 mg/100 g) in peel of Yuza grown in Goseong and Namhae-native, while Goheung-native and improved samples were detected below 3.6 mg/100 g. The contents of total phenols were the highest in flesh (11.11${\Pm}$0.10 mg/100 g) and peel (31.76 mg/100 g) of Namhae-improve Yuza. The contents of hesperidin and naringin were about 4.81-7.80, 3.07-4.62 times higher in peel than flesh. Electron donating ability of water extracts made from Yuza peel was 52.78${\Pm}$1.13-66.88${\Pm}$0.53%, in over 5 mg/mL; especially, its ability in Namhae sample was significantly high in reaction system added over 5 mg/mL of water extracts. Nitrite scavenging ability in all samples was below 30% in reaction system added 1 mg/mL of water extracts. Inhibition activity of tyrosinase in reaction system added 2.5 mg/mL of water extracts was only observed in Namhae samples, but the other samples were increased in reaction system added over 5 mg/mL of water extracts.

Acid-activated clays (SUPER-DC, DC-A3, and P1) are used for the bleaching of cold-pressed rapeseed oil. In this study we tested the bleaching performance of cold-pressed rapeseed oil according to the different reaction time (20, 40, 60, 80 min) and temperature (40, 80, $120^{\circ}C$). Oil color (lightness, redness, yellowness), pigments (chlorophyll A and carotenoid content) and quality properties (fatty acid composition, tocopherols (${\alpha}$, ${\beta}$, ${\gamma}$, ${\delta}$), and plant sterols (${\beta}$-sitosterol, campesterol, stigmasterol) content) were analyzed. The results showed that bleaching of cold-pressed rapeseed oil with 2% acid-activated clays at $40^{\circ}C$ for 20 min, brightness (L) increased, but redness (a) and yellowness (b) decreased. Bleaching of cold-pressed rapeseed oil with 2% DC-SUPER at $40^{\circ}C$ removed chlorophyll A and carotenoids pigments significantly. In addition, about 50% of total tocopherol content in cold-pressed rapeseed oil was reduced by bleaching. Originally total tocopherol content was 46.62mg/100g in cold-pressed rapeseed oil. But after bleaching, total tocopherol content was 12.67mg/100g (20 min bleaching), 15.31mg/100g (40 min bleaching), and 13.56mg/100g (60 min bleaching). However plant sterols content in cold-pressed rapeseed oil remained unchanged by bleaching. Overall, acid-activated clays were useful for the bleaching of pigmented rapeseed oil.
