Quality Characteristics of Jochung Containing Various Level of Steamed Garlic Powder (증숙마늘 분말 첨가 조청의 품질특성에 관한 연구)

  • This study was performed to investigate the effect of steamed garlic powder (SGP) on the quality characteristics of Jochung, saccharide by barley melt. Physicochemical properties and sensory quality were determined in Jochungs were prepared that 5% (SGP 5), 10% (SGP 10), 20% (SGP 20) and 30% (SGP 30) of SGP to sikhe for making jochung and hard boiled (W/W). Turbidity and viscosity of SGP added groups increased than control, significantly. The viscosity was $133{\pm}10^3$ cps in control group, it higher than SGP added groups ($140{\pm}11^3{\sim}272{\pm}2^3$ cps). The pH decreased with increasing SGP concentration. Reducing sugar was significantly higher in SGP added groups than control group, especially 30% SGP addition group in $44.66{\pm}0.26$ mg/100 g. HMF (Hydroxymethyl-furfural) content increased with increasing of SGP concentration, and 30% SGP addition group was higher in 48% than control group. In HPLC determination, free sugars content increased with amounts of SGP addition level. Fructose and glucose contents increased while maltose and raffinose contents decreased. Fructose content was $0.84{\pm}0.02$ mg/100g in control group but $1.36{\pm}0.03{\sim}1.62{\pm}0.01$ mg/100 g in SGP added groups. In the sensory evaluation, the color of Jochung decreased dose dependently with the SGP. Garlic flavor was significantly greater in SGP added groups compared to that of control group. The overall acceptability had not significantly difference among control, SGP 5 and 10 group. Preference was decreased in contain more than 20% of SGP added groups. The optimal concentration of SGP was found in the range of less than 10%.

The Effects of Supplementation of Ascidian Tunic Shell into Laying Hen Diet on Egg Quality (산란계 사료에서 우렁쉥이껍질 첨가가 계란 품질에 미치는 영향)

  • This study was conducted to evaluate the feeding value of ascidian tunic shell the effects of its dietary supplementation on laying performance, egg-yolk pigmentation, egg-shell strength and egg taurine content. A total of 168 brown layers at the age of 29wks in commercial cage were fed for 4 wks with 7 different diets containing ascidian tunic shel1(AST) at varying levels of 0$\sim$5% Dm or 0% AST with 100ppm carophyll red. No differences were found in egg production and weight among the treatments indicating that ascidian tunic shell did not adversely affect the laying performances. Adding the ascidian tunic shell to the diets increased egg-yolk pigmentation compared to the control and resulted in simillar or better effect on egg-yolk pigmentation compared to 100ppm carophyll red. The data suggest that ascidian tunic shell may be used as feed ingredients in layer diet enrichment of egg-yolk pigmentation in the place of carophyll red(chemical pigment). Specific gravity and breaking strength of egg shell were significantly increased by the adding ascidian tunic shell to the diet, suggesting that ascidian tunic shell may be used as feed ingredients for increasing egg shell strength. Also taurine content of egg was significantly increased with increasing supplementation of ascidian tunic shell to the diet(p<0.05). Therefore, ascidian tunic shell may be used as feed ingredients in laying hen diet to improve egg quality such as egg-yolk pigmentation, egg-shell strength and egg taurine enrichment.

  • 1. 닭 우모색에 있어서 흑색 melanin이 착색을 이압하는 I gene은 8주시 체중을 억제하는 작용을 하였다. 2. Barring을 나타내는 B gene이 I gene과 E gene이 나타났을 때 8주시 체중을 더욱 억제하였다. 3. 확장 흑색인자인 E gene과 I gene이 상호작용을 할 때에 8주시 체중을 억제하나 I gene이 억제작용 하는 이상의 작용은 하지 않았다. 4. I gene의 성장률 억제작용은 8주시 체중이 900-1,100g였을 때 평균 암탉에 있어서 37g 수탉에 있어서 25g 수탉에 있어서는 40g이었다. 이 시기의 성장률에 대하여 I와 E B S.의 공동작용은 더욱 억제작용을 하였는데 890-1,070g시에 암탉에 있어서는 45g, 수탉에 있어서는 53g였다. (중략)

Pigmentation of egg yolks with astaxanthin from the yeast phaffia rhodozyma (이스트 phaffia rhodozyma 유래 astaxanthin의 난황착색에 관한 연구)

  • The red yeast Phaffia rhodozyma, which contains astaxanthin(3, 3'-dihydroxy-$\beta$, $\beta$-carotene-4, 4'-dione) as its primary carotenoid, was tested as a dietary pigment source for egg yolks of laying hens. When the yeast was fed to laying hens at several concentrations, the intensity of redness in egg yolks was dependent on the yeast concentration in the feed and the deposition period. Addition of P rhodozyma in feed did not cause any visible adverse effect on laying hens.

  • 연둣빛 신록이 온 산과 들판을 뒤덮어 어디론가 떠나고 싶은 화창한 봄날, 새들이 옹기종기 모여 앉아 큰 소리로 지저귀는 미곡 창고 옆에 자리한 전남 강진군 군동면의 군동농업협동조합을 찾았다. 강진군 군동농협은 미곡 영농 조합으로, 총 1,690명의 조합원 중 1,180명이 65세 이상의 고령자이다. 군동면은 여느 농촌처럼 젊은 사람들의 도시 이주로 심각한 고령화를 겪고 있다. 지속되는 고유가 및 물가 상승, 금융 시장의 급변, 농축산물 수입 개방 가속화와 같은 요소들이 지역 경제를 더욱 어렵게 하고 있다. 이러한 힘든 여건 속에서 군동농협은 신용 사업 및 공제 사업 등의 난항을 겪고 있지만, 희망을 잃지 않고 영농 소득 증대 및 사업 확대를 위해서 애쓰고 있다. 그 결과 2007년도에는 농협중앙회의 공제 부문 평가 항목에서 실적이 우수하여 NH보험 연도 대상 본상 부문에서 동상을 수상하기도 했다. 또한 경제 사업 부문에선 각종 영농 자재를 적기에 농가에 공급하거나, 유류 판매 사업에서 큰 실적을 거두는 등 좋은 결과들을 냈다. 사회 환원 사업에도 힘쓰고 있어 영농 자재 환원과 조합원 자녀 장학금 수여 등 활발한 활동을 보이고 있다. 그리고 무엇보다 일본 수출 작물인 착색단고추(파프리카)가 꾸준한 수출 증가 추세 속에 군동면을 대표하는 효자 작물이 되고 있다

Lipofuscin pigment in adult Clonorchis sinensis (간흡충에 나타나는 리포푸신 색소)

  • 실험동물에서 짧은 기간 감염시킨 후 얻은 간흡충(Clonorchis sinensis)에서는 거의 볼 수 없지만, 간, 담도 수술 또는 부검을 실시할 때 사람에서 얻은 간흡충중에는 검은 색소를 갖는 것을 관찰할 때가 있다. 이 색소는 살아 있는 간흡충에서도 명백하며, 색소가 없는 간흡충은 색이 분홍빛이고 투명한데 비하여 색소가 있는 것은 검은색을 띠고 불투명하다. 사람에서 얻은 간홉충 모두가 검은 색소를 갖고 있는 것은 아니며, 이제까지의 경험으로는 30세 이상 어른에서 얻은 간흡충중 그 길이가 약 1cm이상인 것에서 나타난다. 이 색소의 성분에 대하여 과거에는 빌리루빈, 또는 숙주 혈구세포에서 유래한 철을 포함하는 색소일 것이라고 생각하고 있었다. 저자등은 이 색소가 간흡충의 노쇠현상과 관련된 것으로 생각하고, 그렇다면 lipofuscin일 것이라고 생각하였다. 위의 가정을 확인하기 위하여 육안적으로 분명히 검은 색소가 있은 충체의 조직절편을 만들고, H & E, prussian blue, bilirubin, Fontina-Masson, PAS, amylase-PAS, Ziehi-Neelsen 및 AFIP method for lipofuscin등 8가지 조직화학적 염색을 실시하였다. 색소는 H & E, prussian blue, bilirubin, montana-Masson염색으로 착색되지 않았으며, PAS, amylase-PAS, Ziehi-Neelen, 및 AFIP method for lipofuscin에 염색되어 이것이 조직화학적으로 리포푸신 색소임을 확인하였다. 색소를 다시 전자현미경으로 관찰한 바 색소과립안에는 모양이 등글거나 타원형이고 크기가 $0.05~0.240{\mu}m$인 세포막구조가 산재하였음을 발견할 수 있어 간흡충의 검은 색소는 리포푸신 색소임을 다시 확인할 수 있었다.

Influence of Seasonal incidence and Defoliation Degree of Marssonina Blotch on Fruit Quality and Shoot Growth of 'Fuji'/M.9 Apple Tree (갈색무늬병의 시기별 이병 및 낙엽 정도가 '후지'/M.9 사과나무의 과실품질 및 신초생장에 미치는 영향)

  • This study investigated the influence of seasonal incidence and defoliation degree caused by Marssonina blotch (Diplocarpon mali Harada et Sawamura) on shoot growth and fruit quality of 'Fuji'/M.9 apple tree. The occurrence of marssonina blotch in Gunwi region was observed from the mid of July 2009, and percentage of defoliation was about 10% in the end of October. In 2010, that started in the early of June. By the end of September, percentage of defoliation was 20% and it reached 50% in late October. Secondary growth of terminal shoot in 2010 was three times as much as that in 2009. In 2009, the soluble solid contents and the red color (hunter a value) during fruit maturation increased to $13.8^{\circ}Brix$ and 16.2, respectively. In 2010, the soluble solid content during fruit maturation remained in the $12.1-12.6^{\circ}Brix$ range after early October, and the red color began to increase after the end of September when the percentage of defoliation was 20%. As for fruit quality by defoliation degree, the red color decreased when defoliation percentage of bourse shoot at the end of October was more than 30%. Fruit weight and soluble solids also decreased when defoliation percentage was more than 50%. Fruit length and diameter of over 30% defoliation treatments begun to decrease after the middle of August, compared with those of under 30% defoliation treatment. Photosynthetic rate of the leaves that was located at the secondary growth of bourse shoot was similar to that of leaves which was located at the middle of bourse shoot. However, the size and the soluble solid content of fruit were not affected by photosynthesis activities of bourse shoot leaves which was develop in the secondary shoot growth.

A Characteristics Analysis of Archaeological Chemistry on the Ceramics Excavated from Kiln Site in Dongkok-Town, Gimje in Korea (김제 청도리 동곡마을 도요지 출토 도자기의 고고화학적 특성 분석)

  • The purpose of this study is to analyze the characteristics of Punchong and Whiteware pottery excavated from the kiln site in Dongkok-Town, Gimge. Scientific analysis is carried out to evaluate the physical and chemical properties of the body and glaze. The physical properties indicate the gradual development of the production technology with respect to the kiln operating conditions and period. In chemical properties, the ceramic body is found to be made of raw materials from the same source, but the mixing method depends on the type of Punchong and Whiteware pottery, the production kiln, and period. Whiteware pottery is manufactured with less over 1.3% of the colorant content and more about 1.2% of the $K_2O$ flux content than Punchong pottery. This compositions allow easier vitrification at the same temperature. These characteristics which is low colorant content and high flux content become more prominent as lately. The ceramic glaze is likely to have changed the type of raw materials used after 16~17C, as the contents of MgO, $TiO_2$, MnO, $P_2O_5$ are less three to ten times than 15C.

The Effect of Several Paper Bags on Fruit Skin Coloration of Red Skin European Pear 'Kalle' (봉지종류가 적색과피 서양배 'Kalle'의 과피색 발현에 미치는 영향)

  • This study was conducted to elucidate the relationship between light and coloring and to obtain basic results for promoting redness expression in 'Kalle' (Pyrus communis L.) pear skin. It was investigated in location of anthocyanin layer by microscopic observation and differences in skin color expression of 'Kalle' bagged with paper bag which has different light transmittance rate and inside temperature. However, there was no anthocyanin layer in the brown skin and golden yellow color, anthocyanin layer was distributed in epidermins or hyperdermis of red skin pear and apple. Dark red colored 'Kalle' had more anthocyanin content, $29.8mg{\cdot}100g^{-1}$ FW than light red colored apple 'Hongro'. Light transmittance rate of physical characteristics used paper bags was the highest in white paper bag, 42.2% and it also had more light quantity, $8.9{\mu}mol$ than any other tested paper bags in specific wave length 650-655 nm. The maximum temperature of inner bag was higher about $3^{\circ}C$ in yellow paper bag. The red coloration and anthocyanin contents in no bagged fruits were higher than in any other bagged fruit. However, red color expression among the bagged fruits was higher in white paper bag than in double layered black paper bag and yellow paper bag. Also, chromaticity value seemd to be a good index to explain variation of fruit skin color, because anthocyanin content and chromaticity value were higher. Based on these results, it is desirable to cultivate 'Kalle' without bag for stable redness expression but bagging is essential for decreasing damage by insect in Korea. Further examination to find suitable time of removing paperbag for redness expression and decreasing insect damage. In addition, it is required to develop paperbag whose transmittance rate is high in specific light wavelength or temperature of inner bags is low. Influence of Leaf Number on Berry Quality of 'Campbell Early' Grape (포도 '캠벨얼리' 품종의 엽수 조절에 따른 과실 품질변화)

  • This study aimed to determine optimum leaves per shoot in 'Campbell Early' grape through investigating changes of fruit quality after veraison 70~75 berries of first cluster and 35~40 berries of second cluster at 30 days after full bloom. Soluble solids content (SSC) increased dramatically during 28 days after veraison and afterwards it was stabilized. 15 leaves per shoot treatment showed fast increase of SSC from early veraison and reached to over 16.0oBx at 28 days after veraison. No considerable increase of SSC were occurred on either 5 or 0 leaves per shoot treatments after veraison. Titratable acidity (TA) was decreased continuously during 28 days of berry ripening in the all treatments. In 15 leaves per shoot treatment, TA decreased fast during first 7 days after veraison and continuously decreased to 0.5% by harvest time. While, 5 and 0 leaves per shoot treatments showed TA decrease slightly only at the early veraison. Hunter L and b values of 15 leaves per shoot treatment decreased fast during first 7 days of veraison, and gradually decreased by 14 days, whereas Hunter a value increased fast during the first 7 days from veraison. Total anthocyanin content in 15 leaves per shoot treatment increased fast from 7 days of veraison and the increase became slow after 28 days of veraison. Other treatments showed no significant difference from veraison to harvest time.
