  • In order to examine the anticariogenic effect after fluoride varnish was applied to sound enamel and artificial caries enamel, anterior teeth of healthy cattle were used and divided into four groups such as group 1 (sound enamel), group 2 (application of fluoride varnish to sound enamel), group 3 (artificial caries enamel) and group 4 (application of fluoride varnish to artificial caries enamel). Remineralization on the surface of enamel and changes of crystalline structure after demineralization were observed by using a field emission scanning electron microscope (FE-SEM). Quantitative analysis of Ca and P was measured by using the energy dispersive X-ray spectrophotometer (EDS). The following conclusions were obtained: 1)Surface pattern of enamel was the roughest in group 3 due to the defects caused by porosity and microcracks. Group 4, group 1 and group 2 were followed in order; 2) It was found that pattern of crystalline structures in a group of application of fluoride varnish and a group of no application showed bigger change in artificial caries enamel than that in sound enamel. In other words, groups 4 and 1 showed a similar pattern; 3) The contents of Ca and P were higher in groups of application of fluoride varnish (group 2 and group 4) than in groups of no application of fluoride varnish (group 1 and group 3). Taken results of this study together, in the case of application of fluoride varnish, crystalline structure was changed by remineralization even in the sound enamel. In particular, porous structures showed a smooth and uniform pattern due to the recalcification in the artificial caries enamel. In addition, according to results of EDS analysis, the contents of Ca and P were increased and it had great anticariogenic effects which inhibit decalcification of sound enamel and artificial caries enamel.

  • In Korea, Red pine(Pinus densiflora) stands at a very important place, historically, culturally, and emotionally and it is one of the tree species that can produce domestic timber as forest resources economically. The growing space for Red pine forest in Korea is gradually reducing while the space for deciduous tree forests including oak series is gradually increasing. Thus, it is required that the research work should be done on renewal for pine forest retention and its related forest management practices. This research aims at developing stable, sustainable management forests and inducing nature renewal by grasping growth environment and succession process through the pattern of stand and structure analysis of the red pine(Pinus densiflora) for central region. The pine forests in central region were classified into four communities, such as Acer pseudo-sibolianum, Quercus acutissima, Lindera erythrocarpa, and Pinus densiflora and they are showing different characteristics by pattern according to their growing district. There appeared a lot of red pines in the upper layer, but there existed high weight of broad-leaved forest tree species, such as oak series in the middle layer and the appearance of the red pine was meager in the lower layer. Therefore, it appears that the red pine has a high influential ecological strength in terms of correlativity; however, if the red pine in tree layer is dead by aging in nature state with the lapse of time, it is considered that oak species, such as Quercus mongolica, Quercus variabilis, and Quercus serrata will be dominant below sub-tree layer. In addition, there appear differences in characteristics and growth pattern of the red pine forest depending on stand pattern, so it is considered that a differential application method should be employed in the pine forest management.

  • In this work, we performed the methanation reaction using synthesis gas ($H_2/CO_2$) for the process to produce synthetic natural gas (SNG) for $4^{th}$ methanation reactor in SNG process proposed by RIST-IAE. Experimental conditions were changed with temperature, pressure and space velocity. At this time, $CO_2$ conversion, $CH_4$ selectivity and $H_2$ concentration after reaction were investigated. As a result, $CH_4$ selectivity by the $CO_2$ methanation increased with lower space velocity and higher pressure. On the other hand, in the case of temperature, the maximum value was shown at $320^{\circ}C$. From these results, it was found that the optimum condition of the fourth reactor suitable for the SNG process was obtained.

  • This study investigated the effect of heat treatments on the quality characteristics of fresh-cut 'Romaine' lettuce by treating in hot water (45, 50, and $55^{\circ}C$) for 2 minutes. Sensory properties, respiration rate, ethylene production, microbial growth, browning index, total phenolics (TP), vitamin C, and antioxidant properties (DPPH, ABTS, and FRAP assays) of samples were evaluated after 5 days at $5^{\circ}C$. All heat treatment conditions tested in this study did not affect the change in TP after storage. Treatment at $45^{\circ}C$ enhanced respiration rate and ethylene production wheres decreased vitamin C content and antioxidant activities. There was no significant difference in browning index at $45^{\circ}C$ treatment. The rapid tissue softening occurred when treated with $55^{\circ}C$ hot water for 2 minutes. The $50^{\circ}C$ heat treatments exhibited the best quality index including texture and color, and inhibited microbial growth and browning after storage. In addition, the $50^{\circ}C$ heat treatment showed the highest vitamin C content and antioxidant activities (DPPH, ABTS, FRAP assay) after storage. Therefore, the $50^{\circ}C$ heat treatment can be used to maintain quality and antioxidant property of fresh-cut 'Romain' lettuce.

  • Panax ginseng C. A. MEYER is one of the most widely used herbal medicines in the Asian countries and has diverse functions including anti-diabetic action. The dysfunctions of mesangial cells in hyperglycemic conditions are implicated in the development of diabetic nephropathy. Insulin-like growth factors (IGFs) are also associated with the onset of diabetic nephropathy. Thus, we examined the effect of ginsenosides against high glucose-induced dysfunction of primary cultured rat mesangial cells. In the present study, high glucose increased IGF-I and IGF-II secretion in mesangial cells. Ginsenoside total saponin (GTS) prevented high glucose-induced increase of IGF-I and IGF-II secretion in mesangial cells. In addition, GTS prevented high glucose-induced increase of lipid peroxide formation and decrease of GSH contents. GTS also ameliorates high glucose-induced increase of arachidonic acid release and decrease of prostaglandin $E_2$. In conclusion, GTS prevented high glucose-induced dysfunction of mesangial cells via inhibition of oxidative stress and arachidonic acid pathways.

  • The effects of oil unsaponifiables (8 species) and methanolic plant extracts (53 species) on the thermal oxidation of oils during 14 or 16 hour heating at $180^{\circ}C$ were studied by analyzing the fatty acid composition of soybean oil or cottonseed oil. All the unsaponifiables tested did not show any antioxidative activities on the thermal oxidation of soybean oil. However, among the 53 species of methanolic plant extracts, some species (Rheum undulatum L., Chelidonium majus L. var. asiaticum and Eugennia caryopyllata T.) showed very strong antioxidative activities on the thermal oxidation of cottonseed oil. The antioxidative activities of methanolic extracts of these 3 species on thermal oxidation of cottonseed oil during an extended heating period were also studied by heating cottonseed oils for 7 hours a day for 8 days at $180^{\circ}C$. The methanolic extracts of Chelidonium majus L. v. asiaticum and Eugennia caryopyllata T. greatly reduced both polymer formation and linoleic acid decomposition after the 8 day heating at $180^{\circ}C$. However, the methanolic extracts of Rheum undulatum L. was effective for the reduction of polymer formation, but not for the reduction of linoleic acid decomposition.

  • Fresh ginger harvested in Seosan, Choongchengnam-do, was used to investigate the pretreatment effect before long-term storage. Wounded ginger were cured at the temperature of 25, 30, $35^{\circ}C$ and the RH 83 and 93% for 1, 3, 5, 7 days, respectively Then the cured ginger were stored in the laboratory scale storage room ($12^{\circ}C,$ 95% RH) in order to find out the optimum curing condition. At a constant temperature and a RH. the longer ginger were cured, the more their weight was decreased; at a constant temperature and a curing period, the higher RH was, the less weight was lost. During the curing process, sprouting rate was accelerated at temperature higher than $30^{\circ}C$ and humidity higher than 90%; mold growing was observed at any temperature and humidity, but especially at $35^{\circ}C$ the rate was relatively faster when the curing time was increased. Hardness of wound surface cured at 93% RH was relatively higher than those cured at 83% RH at all temperatures. The weight loss of store ginger after curing was $2.0{\sim}8.2$ after 30 days and $7.2{\sim}14.2%$ after 60 days storage. Compared with all results through a screening procedure, the condition of 3-days curing at $25^{\circ}C$ and 93% RH showed th best result for minimizing quality changes during storage.

  • To investigate pertinent packaging treatment of fresh-cut potatoes (Solanum tuberosum L.), potato cubes were subjected to passive, gas exchange, and vacuum packaging conditions. Low density polyethylene film (LDPE), polypropylene film (PP), anti-fogging film (AP), and perforated film (PF) were used as passive packaging treatments. Mixed gases of 5% $CO_2/5%\;O_2$ (MA1) and 10% $CO_2/5%\;O_2$ (MA2) were applied as gas exchange packaging. Packs filled with cubes were kept at $5^{\circ}C$, and changes in weight loss, surface color, vitamin C content and sensory quality of cubes were analyzed during storage. Respiration rate of cubes was 2.11 times higher than that of intact raw potatoes at $5^{\circ}C$. Gas concentrations in passive packaging was maintained at 1-2% $O_2$ and 4-14% $CO_2$ after 7 days. Gas levels changed depending on films used. Cubes packed in PP and MA2 showed lowest weight loss and browning during storage. Firmness of cubes was not affected by packaging treatment. Vitamin C content was highest in cubes packed with AF. Cubes packed in MA2 showed highest quality upto 10days storage, followed by those packed in PP and AF.

  • Dried black soybeans were soaked in water at the temperature range of $4^{\circ}C{\sim}100^{\circ}C$ and in salt or sugar solution at $100^{\circ}C$ in order to investigate their effects on the cooking ratio and diffusion property of color pigments. As the temperature increased, the equilibrated absorbance at 490nm of soaking water after 120min was linearly increased. The activation energy for diffusion of color pigments were found to be 4.23 Kcal/mole at the range of $60^{\circ}C{\sim}100^{\circ}C$ and 8.31 kca1/mo1e at $4^{\circ}C{\sim}60^{\circ}C$. The cooking ratio, % cooked beans after heating, of black soybeans were more affected by the salt concentration that of sugar. Both concentrations reduced the cooking ratio as they increased. The sorption isotherm of Kongjaban showed a quite different curves between the storage at $4^{\circ}C$ and $25^{\circ}C$. The sorption and desorption rates during storage could be represented by the equation of $log({\frac{dw}{dt}}{\times}10^3))=alogt+logb$ with a very high correlation.
