Shelf-life Extension of Yukwa (oil puffed rice cake) by $O_2$ Preventive Packing (유과 저장성 향상을 위한 산소 차단 포장시험)

  • For extending the shelf-life of Yukwa (oil puffed rice cake) which is one of the most favorable Korean traditional rice snack, the Yukwa was packed in $O_2$ preventive container and substituted the air with $N_2$ gas or packed with $O_2$ absorbent (ageless sachet). The quality of Yukwa stored at $35^{\circ}C$ was evaluated by POV, AV and TBA including sensory evaluation. The POV of oil in Yukwa of $N_2$ substitute pack and absorbent sachet included were 5.3 and 11.9 meq/kg, respectively, while no packing (control) was 195.5 meq/kg after 90 days storage at $35^{\circ}C$. AV and TBA were also same trend but the gap with the control was not so big. The Yukwa, $N_2$ gas substituted, was better in quality than absorbent treatment in sensory evaluation and no difference was detected in quality of 90 days storage Yukwa at $35^{\circ}C$ with 15 days. The main reason for lower sensory score of absorbent treatment was that the $O_2$ absorbent also absorbed the flavor component of Yukwa.

Packaging Techniques to Prevent Winter Kimchi from Inflation (겨울 김치에 대한 팽창 방지 포장 기법)

  • The effect of various packaging methods on Kimchi quality was investigated in order to develop the packaging techniques for preventing commercial Kimchi Products from ination and explosion due to fermentative gas evolved during storage and distribution. Kimchi was packaged in different methods; atmospheric (AP), check-valved (CV), double (DP) and vacuum (VP) packaging. The quality of Kimchi during storage at $10^{\circ}C$ was evaluated ill terms of gas composition, free volume, pH, titratable acidity, color index, lactic acid bacteria and sensory properties. $O_2$ concentration decreased to about 1% at $6{\sim}8$ days of optimal ripening time in all packages except DP, in which it remained around 20%. $CO_2$ concentration reached $70{\sim}90%$ after $6{\sim}8$ days in AP, CV and DP, while it stayed around 10% in DP. The free volume in AP had typical sigmoidal curve similar to $CO_2$ concentration changes. It remained almost constant in CV and DP, but started to increase at the late stage of storage In VP. There was no significant influence of packaging methods on the other quality attributes such as pH, titratable acidity, color index (L.b/a), lactic acid bacteria count and sensory evaluation score. As results, it could be proposed to employ CV and DP method as the effective packaging techniques for preventing commercial Kimchi products from inflation.

가스치환포장 및 감마선을 병용처리한 최소가공 절임배추의 품질특성

  • 세계적으로 최소가공식품(minimally processed foods)의 시장이 확대되면서, 최소가공된 과채류의 미생물학적 안전성 확보가 중요한 사안으로 대두되고 있다. 이에 본 연구는 김치제조용 원료배추를 모델로 하여 감마선 및 가스치환 포장법을 병용한 절임배추의 미생물학적, 이화학적 특성을 평가하였다. Fresh-cut상태의 절임배추(염농도 3%)를 각각 air, 100% $CO_2$, 25% $CO_2$/75% $N_2$가스를 주입하여 포장한 후 0, 0.5, 1, 2 kGy의 선량으로 감마선 조사하여 3주 동안 저장하면서 분석에 사용하였다. Total aerobic bacteria, coliforms, Salmonella, lactic acid bacteria의 분포를 살펴본 결과, $CO_2$혹은 $CO_2$/$N_2$포장과 감마선을 병용처리한 경우 저장기간 동안 total aerobic bacteria, coliforms 및 Salmonella 모두 1kGy의 선량에서 90% 이상 감소시킬 수 있는 것으로 나타나, 일반 함기포장보다 효과적인 것으로 나타났다. 색도 및 물성은 포장방법에 따른 차이를 보이지 않았으며, pH의 경우도 감마선 조사 및 가스치환 포장시 더욱 효과적으로 유지할 수 있었다. FRAP(ferric reducing antioxidant power) value 및 DPPH radical 소거능과 같은 생리활성 능력을 측정한 결과 포장방법 및 감마선 조사에 의한 차이를 보이지 않았다. 따라서 가스치환 포장 및 감마선 조사를 병용시 함기포장구 보다 낮은 감마선 조사선 량에서 병원성 미생물을 제어할 수 있었으며, 이화학적 품질이 우수하고 저장성이 향상된 절임배추를 제조할 수 있었다.7로 4$0^{\circ}C$ 진공건조와 -7$0^{\circ}C$ 동결건조의 L값 변화보다 큰 변화를 보였고, 또한‘a’값과 ‘b’값의 경우도 마찬가지로 5$0^{\circ}C$ 열풍건조의 경우가 양파의 내부와 외부면의 적색도 및 황색도 변화가 크게 일어나는 경향을 나타내었다. 건조과정 중 vitamin C의 함량변화는 건조에 의한 수분함량의 감소로 vitamin C의 함량은 상대적으로 증가하였고, -7$0^{\circ}C$ 동결건조의 경우가 가장 높은 vitamin C의 증가량을 나타내었고, 그와 반대로 5$0^{\circ}C$ 열풍건조의 경우는 열에 의한 vitamin C의 변화로 인한 상대적 증가량은 감소하는 경향을 나타내었다.아현미가 더욱 조밀하였다. 10시간 탈삽처리에서 상품성이 우수하였다. 그러나 25'E 28시간 탈삽처리는 탈삽의 균일도가 다른 처리에 비해 떨어지는 경향이었다. 경우, 사과표피의 색도 변화를 현저히 지연시킴을 확인하였다. 또한 control과 비교하여 성공적으로 사과에 코팅하였으며, 상온에서 보관하여을 때 사과의 품질을 30일 이상 연장하는 효과를 관찰하였다. 이들 결과로부터 대두단백질 필름이 과일 등의 포장제로서 이용할 가능성을 확인하였다.로 [-wh] 겹의문사는 복수 의미를 지닐 수 없 다. 그러면 단수 의미는 어떻게 생성되는가\ulcorner 본 논문에서는 표면적 형태에도 불구하고 [-wh]의미의 겹의문사는 병렬적 관계의 합성어가 아니라 내부구조를 지니지 않은 단순한 단어(minimal $X^{0}$ elements)로 가정한다. 즉, [+wh] 의미의 겹의문사는 동일한 구성요 소를 지닌 병렬적 합성어([$[W1]_{XO-}$ $[W

Effect of Initial Freshness of the Japanese Spotted Mackerel on Freezing Storage of the Fish (점고등어의 초기선도(初期鮮度)가 동결저장(凍結貯藏)에 미치는 영향(影響))

  • Japanese spotted mackerels(Scomber tapeinoephalus) were stored at $0^{\circ}C$ for 7days as the maximum, and then, they were stored again at $-3.5^{\circ}C$(partial freezing) or $-20^{\circ}C$(freezing), respectively. During storage by partial freezing, the fishes with a longer period of prestorage at $0^{\circ}C$ showed an earlier increase in the number of bacterial cells on their skin, however, it was not apparent in the freezing storage. K value of the fishes with 7 days of prestorage increased from 20% to 65.4% for 36 days of partial freezing storage, that of the fishes prestored for 0 and 4 days were 39.9% and 53.2% respectively. On contrastly, no drastic increase in K value was observed in the fishes of freezing storage. Content of volatile nitrogen of the fish muscle prestored for 4 days gradually increased from 10mg% to 29.4mg% and 17.2mg% during 36 days of partial freezing and 83 days of freezing storage respectively, that of the fishes with 7 days of prestorage showed no significant increase, moreover, it was decreased within early period of both of the storages. Free drip from the fishes with partial fleering was higher almost 5 times than that from the fishes with freezing, the highest free drip was observed from the fishes with 4 days of prestorage.

A Study on the Problem of the Transformed Sijo Texts Haedonggayo and 'Eobusasisa' (시조 작품의 교감 간제 - <해동가요>와 <어부사시사> -)

  • It is extremely crucial in academic researches to clarify exact spellings and original contents of the works under analysis. In the case of Sijo, the works in different collections of poems with the same title prove to have been transformed in its spellings and expressions through the long period. Therefore it has been a very important step which should be taken prior to a research of Sijo that spellings and expressions of those works be compared and checked. In this point of view, I believe the book titled A Full Collection of Sijo. Yokdae Sijojunseo, written by me can be of great help to identify the expressions and contents. Moreover this book enables us to check authors and melodies of the works. This is a study on the aspects and phases of transformation of an original work by examining 'Eobusasisa'. The findings are the following: first of all, the number of collections including 'Eobusasisa' is unexpectedly small; secondly, how the original work was transformed and modified in various collections. A representative collection including 'Eobusasisa' as a transformed style into Sijo is Haedonggayo, where 38 poems out of 40 of 'Eobusasisa' are collected. All the modifications and changes have been checked in this study. To sum up, it is very important to compare the variations of a Sijo work with each other. It enables us to check up and to identify the writers, spellings, expressions, and melodies.

Encoder Type Semantic Segmentation Algorithm Using Multi-scale Learning Type for Road Surface Damage Recognition (도로 노면 파손 인식을 위한 Multi-scale 학습 방식의 암호화 형식 의미론적 분할 알고리즘)

  • As we face an aging society, the demand for personal mobility for disabled and aged people is increasing. In fact, as of 2017, the number of electric wheelchair in the country continues to increase to 90,000. However, people with disabilities and seniors are more likely to have accidents while driving, because their judgment and coordination are inferior to normal people. One of the causes of the accident is the interference of personal vehicle steering control due to unbalanced road surface conditions. In this paper, we introduce a encoder type semantic segmentation algorithm that can recognize road conditions at high speed to prevent such accidents. To this end, more than 1,500 training data and 150 test data including road surface damage were newly secured. With the data, we proposed a deep neural network composed of encoder stages, unlike the Auto-encoding type consisting of encoder and decoder stages. Compared to the conventional method, this deep neural network has a 4.45% increase in mean accuracy, a 59.2% decrease in parameters, and an 11.9% increase in computation speed. It is expected that safe personal transportation will be come soon by utilizing such high speed algorithm.

Formant-broadened CMS Using the Log-spectrum Transformed from the Cepstrum (켑스트럼으로부터 변환된 로그 스펙트럼을 이용한 포먼트 평활화 켑스트럴 평균 차감법)

  • In this paper, we propose a channel normalization method to improve the performance of CMS (cepstral mean subtraction) which is widely adopted to normalize a channel variation for speech and speaker recognition. CMS which estimates the channel effects by averaging long-term cepstrum has a weak point that the estimated channel is biased by the formants of voiced speech which include a useful speech information. The proposed Formant-broadened Cepstral Mean Subtraction (FBCMS) is based on the facts that the formants can be found easily in log spectrum which is transformed from the cepstrum by fourier transform and the formants correspond to the dominant poles of all-pole model which is usually modeled vocal tract. The FBCMS evaluates only poles to be broadened from the log spectrum without polynomial factorization and makes a formant-broadened cepstrum by broadening the bandwidths of formant poles. We can estimate the channel cepstrum effectively by averaging formant-broadened cepstral coefficients. We performed the experiments to compare FBCMS with CMS, PFCMS using 4 simulated telephone channels. In the experiment of channel estimation, we evaluated the distance cepstrum of real channel from the cepstrum of estimated channel and found that we were able to get the mean cepstrum closer to the channel cepstrum due to an softening the bias of mean cepstrum to speech. In the experiment of text-independent speaker identification, we showed the result that the proposed method was superior than the conventional CMS and comparable to the pole-filtered CMS. Consequently, we showed the proposed method was efficiently able to normalize the channel variation based on the conventional CMS.

Water Properties of Electrolytic Machine by Stainless Diaphragm and Effects of Electrolytic Ice Water Storage For Keeping Freshness of Squid, Todarodes pacificus (스테인레스 극판을 이용한 전해수장치의 수질특성과 오징어 선도유지를 위한 전해수 빙장 효과)

  • This study was undertaken to prolonging the freshness in Squid(Todarodes pacificus) on the effects of ice storage methods(tap water ice, electrolytic water ice) using stainless diaphragm electrolytic instrument and also test an efficiency of instrument. Basically, stainless diaphragm electrolytic instrument studied for changes of pH on difference water flow and ampere. The lower water flower and higher ampere made low pH on acid part of electrolytic instrument. Squid samples were stored in tap water ice, acid part of electrolytic water and base part of electrolytic water and used in studying the changes of VBN and skin color through storage. Acid water had strong sterilization effects and VBN was lower levels of acid water than the others. Base water had not sterilization effects. Tap water ice storage was more sterilizing effects than base water ice storage but less effects than acid water ice storage. Lightness of Squid skin showed getting decrease at storage of ice water of all storage methods but acid water ice storage showed more retarding than the other two storage. From these results, it could be suggested that acid electric water ice storage is effective in extendance the shelf-life of squid at chilled storage.

고에너지 이온빔에 의한 이차전자 발생 수율 및 에너지 측정

  • 박막 표면에 대한 경원소 분석법인 탄성 되튐 반도법을 개발하여 수소, 탄소, 질소등 분석에 이용하고 있다. 이때 입사 입자로 Cl 9.6MeV를 이용하였는데, 표적 표면에 탄소막이 흡착되는 현상을 발견하였다. cold trap 및 cold finger를 사용하여 진공도를 개선하므로서, 탄소막 흡착의 한 원인으로 알려져 잇는 chamber 주변의 진공도 변화를 시켜보았다. 하지만 전혀 탄소막이 생기지 않는 10-10torr 이하 진공을 만드는 것은 많은 비용과 장비를 필요로 하는 상당히 힘든 작업이어서, 이차적으로 탄소막이 표적 표면에 달라 붙게 하는 원인으로 추정되는 이차 전자의 발생을 고에너지 이온빔으로 조사하였다. 일반적으로 이차전자의 발생은 이온빔과 표적과의 충돌에 의한 고체 표면으로부터의 전자방출 현상으로 오래전부터 연구되어져 왔다. 여기에는 두가지 다른 구조가 존재하는 것으로 알려져 있다. 그 중 하나는 입사 입자의 전하와 표적 표면사이 작용하는 potential 에너지가 표적 표면의 일함수(재가 function) 보다 클 때에 일어나는 potential emission이다. 즉 표적 궤도에 존재하는 전자와 입사 이온빔 사이의 potential 이 표적의 전자를 들뜨게 만들고, 이 potential의 크기가표적의 표면 장벽 potential 보다 충분히 클 뜸 전자가 방출하는 현상을 말한다. 다른 또 하나의 방출구조로는 입사 이온이 표적 표면의 원자와의 충돌에 의해 직접저인 에너지 전달을 통한 전자 방출을 말하는데, 이를 kienetic emission(이하 KE)이라 한다. 본 연구에서는 Tandem Van de graaff 가속기로 고에너지 이온빔을 만들어 Au에 충돌시키므로서 kinetic emission을 통하여 Au에서 발생한는 이차전자의 방출 수율 및 에너지를 측정하였다.장구조로 전체 성장 양식을 예견할 수 있다. 일반적인 경향은 Ep가 커질수록 fractal 성장형태가 되며, Ed가 적을수록 cluster 밀도가 작아지나, 같은 Ed+Ep에 대해서는 동일한 크기의 팔 넓이(수평 수직 방향 cluster 두께)를 가진다. 따라서 실험으로부터 얻은 cluster의 팔 넓이로부터 Ed+Ep 값을 결정할 수 있고, cluster 밀도와 fractal 차원으로부터 각각 Ed와 Ep값을 분리하여 얻을 수 있다. 또한 다층 성장에 대한 거칠기(roughness) 값으로부터 Es값도 구할 수 있다. 양방향 대칭성을 갖지 않은 fcc(110) 표면과 같은 경우, 형태는 다양하지만 동일한 방법으로 추정이 가능하다. (110) 표면의 경우 nearest neighbor 원자가 한 축으로 형성되고 따라서 이 축과 이것과 수직인 축에 대한 상호작용이나 분산 장벽 모두가 비대칭적이다. 따라서 분산 장벽도 x-축, y-축 방향에 따라 분리하여 Edx, E요, Epx, Epy 등과 같이 방향에 따라 다르게 고려해야 한다. 이러한 비대칭적인 분산 장벽을 고려하여 KMC 시뮬레이션을 수행하면 수평축과 수직축의 분산 장벽의 비에 따라 cluster의 두께비가 달라지는 성장을 볼 수 있었고, 한 축 방향으로의 팔 넓이는 fcc(100) 표면의 경우 동일한 Ed+Ep값에 대응하는 팔 넓이와 거의 동일한 결과가 나타나는 것을 볼 수 있다. 따라서 이러한 비대칭적인 모양을 가지는 성장의 경우도 cluster 밀도, cluster 모양, cluster의 양 축 방향 길이 비, 양 축 방향의 평균 팔 넓이로부터 각 축 방향의 분산 장벽을 얻어낼 수 있을 것으로 보인다. 기대할 수 있는 여러 장점들을 보고하고자 한다.성이 우수한 시편일수록 grain의 크기가 큰 것으로 나타났고 결정성이 우수한 시편의 경우에서는 XR

Isolation and Antibiotic Susceptibility of Enterococcus spp. from Fermented Soy Paste (콩발효식품에서의 장구균과 항생제 내성특성)

  • To evaluate the antibiotic risk of $Enterococcus$ in fermented soy paste, $Enterococcus$ spp. were isolated and identified from 31 $Cheongkukjang$ and 17 $Doenjang$, samples. Exactly 123 $Enterococcus$ spp., 119 from $Cheongkukjang$ and four from $Doenjang$, were ultimately isolated. The most frequently collected $Enterococcus$ isolates in $Cheongkukjang$ were 69 strains of $E.$ $faecium$ and 20 strains of $E.$ $faecalis$. All four $Enterococcus$ spp. from $Deonjang$ were identified as $E.$ $faecium$. All isolates were sensitive to ampicillin, chloramphenicol, penicillin, and tetracyclin $E.$ However, they showed broad spectra from sensitivity to resistance to erythromycin, ripampin, and streptomycin. Vancomycin minimum inhibition concentration (MIC) of $Enterococcus$ spp. from $Cheongkukjang$ ranged from 0.25 to 8 ${\mu}g/mL$. Almost all strains were sensitive to vancomycin, but eight strains showed intermediate resistance to vancomycin. Seventeen strains showing the highest MIC of 8 ${\mu}g/mL$ among all isolates were evenly distributed among $E.$ $faecalis$, $E.$ $faecium$, $E.$ $gallinarum$, and $E.$ $casselifalvus$, in which the strong resistant genes of $van$A and $van$B for vancomycin were not detected. Overall antibiotic resistance of $Enterococcus$ isolates was relatively low and particularly low vancomycin resistance was similar to those of $Enterococcus$ isolates obtained from other foods. Therefore, the antibiotics resistance of $Enterococcus$ and especially vancomycin-resistant $Enterococcus$ spp. from $Cheongkukjang$ and $Doenjang$, is not hazardous.
