품종을 달리한 오디즙 첨가 샐러드 드레싱의 품질특성 (Quality Characteristics of Salad Dressing Added with Mulberry Fruit Juice from Different Breeds)

  • 본 연구는 품종이 다른 오디즙(청일뽕, 과상2호)을 샐러드 드레싱에 첨가(0, 10, 20, 30%)하여 품질특성을 평가하였다. 샐러드 드레싱의 pH는 오디즙 첨가량이 증가할수록 감소하였고 과상 2호 첨가군이 높게 나타났다. 점도와 당도는 오디즙 첨가량이 많을수록 증가하였다. DPPH 전자공여능은 대조군이 15.60%였으며 오디즙 첨가군이 19.73~50.83%으로 더 높았으며 과상 2호 첨가군이 청일뽕 첨가군보다 DPPH 전자공여능이 더 높았다. 오디즙 첨가량이 증가할수록 명도 L값과 황색도 b값은 낮아졌으나 적색도 a값은 높아졌다. 관능검사 결과 오디즙 30% 첨가군이 가장 높게 평가되었으며 샐러드와의 조화도에서도 30% 첨가군이 가장 좋게 평가되었다. 이상으로 과상2호 오디즙 30%첨가군이 가장 높게 평가되었다.

정신분열병과 기분장애 환자의 언어적 기억능력과 기억과정의 특성에 대한 연구 (Verbal Memory Function and Characteristics of Memory Process in Schizophrenia and Affective Disorder)

  • Objectives:This study was to compare verbal memory ability among patients with schizophrenia, bipolar manic patients and unipolar depressive patients, and to understand their charicteristics of memory process. Methods:All subjects were hospitalized patients and had been interviewed by using the Structured Clinical Interview for DSM-IV(SCID). Schizophrenic patients(N=40), bipolar manic patients(N=17), and unipolar depressive patients(N=20) were assessed with K-AVLT for verbal memory and with K-WAIS for verbal IQ. Three groups were compared regarding total immediate recall, delayed recall, delayed recognition, learning curve, memory retention, and retrieval efficiency under controlled verbal IQ. Multiple regression analysis was performed to find which clinical factors have an influence on verbal memory ability. Results:In MANCOVA, differences of verbal memory test scores among the groups were statistically significant(F=1.800, p<.05). In post hoc analysis, Patients with schizophrenia and bipolar mania showed poorer performance in immediate recall, delayed recall, delayed recognition, retrieval efficiency than unipolar depres- sive patients. And schizophrenics performed poorly in delayed recall, delayed recognition, retrieval efficiency than nonpsychotic affective disorder group, but no difference in total immediate recall, delayed recall, delayed recognition, retrieval efficiency between the schizophrenic group and the psychotic affective group. Conclusions:These results partially confirm previous reports of verbal memory ability among major psychiatric disorders. Our results showed that psychotic symptoms were related with verbal memory, and longer duration of illness was related with poorer performance in schizophrenia and unipolar depression.

정신분열병 환자에서 인지기능 및 정신병적 증상의 상관관계 (Correlation between Cognitive Functions and Psychotic Symptoms in Schizophrenic Patients)

  • Objectives : The purpose of this study was to investigate whether the cognitive functions would be correlated with psychotic symptoms and whether antipsychotic treatments would affect the cognitive functions after 8 weeks. Methods : The thirty-five schizophrenic patients were conducted in this study. The psychopathology was measured using PANSS. The memory function, executive function, and sustained attention were measured using Memory Assessment Scale(MAS), Wisconsin Card Sorting Test(WCST), and Vigilance(VIG) and Cognitrone(COG) in Vienna Test System. After 8 weeks of antipsychotic treatment, we retested the cognitive tests. Results : 1) The cognitive tests after the 8 week's treatment showed significant improvements in memory and executive function in the schizophrenic patients. On the other side, sustained attention did not show improvement. 2) The change of PANSS were correlated with perseverative response, perseverative error and total correct in WCST at baseline. WCST scores at baseline were correlated with negative symptoms, but not positive ones. Conclusion : These study suggests that 1) the impaired sustained attention could be a vulnerability marker in schizophrenia, 2) memory & executive function deficit could be reversible after treatment, and 3) medication might have a benefit in improving the cognitive functions in schizophrenia. Furthermore, the data supports that the better premorbid executive function was, the more favorable was the treatment response in schizophrenic patients. Finally, this study indicates that executive function might be an index of treatment improvement.

중년전업주부의 음주경험 (The Drinking Experience of Full-time Middle-aged House Wives)

  • There are few research on the social drinking experience reported by women. Thus, it is necessary to understand the increasing tendency of womens drinking experience in the sociocultural context. This study was aimed to explore and delineate the drinking experience of full-time house wives base don Strauss and Corbin's grounded theory (1998). The subjects of this study were 10 full-time middle-aged house wives who were living in Seoul region. The data were collected through several in-depth interviews and observations until the theoretical saturation was achieved. The data were analyzed using Strauss and Corbin's grounded theory method. The results of this study generated a paradigm that the drinking experience of the full-time middle-aged house wives has a core category of 'free-oneself-from' and is also connected with mingling, anguish, accessibility, reaction of other people, change, personal resources, self-expression and building relationships by drinking. All processes from the occurrence of the central phenomenon to extinction are as follows; 1) Starting the process of the drinking experience for mingling and resolving anguish, and by having an easy accessibility; 2) Perceiving the process of reaction by other people, physical change of herself. and psycho-behavioral change; 3) Experiencing the process of free-oneself from thorough drinking; 4) Acknowledging the process of the resources for free-oneself-from; 5) Selecting the process of self-expression according to the resources; 6) Building the process of the relationship with drinking as a way of self-expression. Based on this paradigm, 4 hypothesis and 4 types are generated. Thus, this study suggests that it is useful to develop nursing interventions to improve the self-esteem of the full-time middle-aged house wives and to provide them various methods of problem solving strategies. This study also proposes that there should be a strategic program for the women so that they could make a route for positive self-expression by achieving a proper relationship with drinking.

치과위생사의 치과감염에 대한 인식도 조사 (A research of dental hygienists' recognition on dental infection)

  • The purpose of this study was to examine the recognition level related to the infection prevention in dental medical institute in dental hygienists and to offer basic data of enhancing the knowledge education in dental hygienists on the infection prevention according to it. As a result of collecting and analyzing data by using the self-administered questionnaire on April 27, 2008 targeting 230 dental hygienists who are working at hospitals and clinics in P,K region, the following conclusions were obtained. 1. Dental hygienists' recognition on hospital-virus treatment method was indicated to be averagely 1.20 out of 3-point perfection. 2. The recognition on infection was indicated to be averagely 2.64 out of 4-point perfection. The statistically significant difference was shown with the appearance of periodical health examination(t=-2.42, p<.05) and by infection-education experience(t=2.28, p<0.05). 3. The recognition on an infection disease was indicated to be averagely 4.38 out of 8-point perfection. The significant difference(t=3.52, p<0.05) was shown depending on task in charge. 4. The recognition on the infection prevention in dental treatment institute was indicated to be averagely 4.89 out of 7-point perfection. The recognition on the infection prevention of dental treatment institute in dental hygienists, who work for general hospital, was indicated to be the highest. Accordingly, it was considered to be required an effort for dental hygienists, other dental-medical practitioners, and patients to be able to treated safely by enhancing the recognition level on infection prevention in dental hygienists and by maximally reducing exposure to infection in dental medical institute.

Gas Chromatography/Mass Spectrometry를 이용한 뇨중 Amineptine과 그 대사체 분석방법에 관한 연구 (Analysis of Amineptine and its Metabolites in Human Urine by Gas Chromatography/Mass Spectrometry)

  • 뇨시료 중 amineptine의 (dihydro-10, 11-dibenzo[a, d] cycloheptenyl-5-amino-7-heptanoic acid) metabolites를 분석하기 위한 최적조건을 찾기 위하여 pH 변화에 따른 추출률과 세가지의 유도체화시약에 대한 반응성을 조사해본 결과 pH는 9.5, 유도체화시약은 carboxylic acid group에 MSTFA로 반응 시켰을 경우 좋은 결과를 나타내었다. GC/MS를 이용하여 amineptine을 복용한 사람의 뇨를 분석한 결과 amineptine과 그 대사물질인 dihydro-10, 11-dibenzo[a, d] cycloheptenyl-5-amino-5-pentanoic acid ($C_5$-metabolite)와 $C_5$-metabolite의 lactamized product인 ${\delta}$-lactam을 확인하였다. Amineptine과 그 metabolite들을 GC/MS-SIM mode로 분석하기 위한 monitoring ion들은 m/z 192를 공통 이온으로 선정하였으며, 각각의 분자이온을 선정하였다. Amineptine의 excretion study 결과, amineptine, ${\delta}$-lactam 및 $C_5$-metabolite는 4시간이내에 70-90%가 배설되었고 20시간 이내에 거의 배설이 완결되었다.

블루베리 가루를 첨가한 쌀 파운드케이크의 품질 특성 (Quality Characteristics of Rice Pound Cake prepared with Blueberry Powder)

  • This study investigated the physicochemical and sensory characteristics of rice pound cake prepared with various amounts of blueberry powder. The weight of rice pound cakes with additions of 2~8% blueberry powder increased from 418.58 to 420.50 g. The volume and specific loaf volume of rice pound cakes prepared by adding blueberry powder were lower than those of the control. The baking loss rate for the control was 7.72% and that of rice pound cakes prepared by adding blueberry powder decreased by 6.98~6.56%. The moisture contents of rice pound cakes added with blueberry powder were higher than the control. The pH levels for rice pound cakes prepared with blueberry powder ranged between 6.47 and 7.58 and that of the control was 8.11. The microstructural observation by scanning electron microscopy (SEM) showed well developed air cells of control. DPPH radical scavenging activity of the control group was 13.6%, whereas pound cakes prepared by adding blueberry powder ranged from 35.2~78.8%. The "a" value of redness was increased, but L and b value were decreased significantly by additions of blueberry powder. The full textural properties of rice pound cakes were being significantly increased by additions of blueberry powder. Sensory evaluation scores in terms of appearance, flavor, taste, texture and overall preference for pound cakes showed that 4~6% of substituted sample groups were higher than those of others. The results of this study suggest that additions of 4~6% blueberry powder was the best substitution ratio for rice pound cakes.

  • 90년대 후반에 내전이 끝난 캄보디아는 태국이나 베트남에 비해 정치, 경제적으로 안정되지 못한 상황이다. 어린이들에 대한 교육환경 역시 좋지 않아, 기초과학을 접할 수 있는 기회가 적을 뿐 아니라, 대도시를 벗어난 곳에서는 과학교육이 거의 이루어지지 못하고 있는 현실이다. 수도 프놈펜에서 북서쪽, 차편으로 4시간 거리에 있는 뿌삿시 끄로압에서 몬테소리 유치원을 운영하고 있는 한국봉사단의 요청으로 한국천문학회는 2016년 상반기에 관심있는 학회 구성원들을 중심으로 천문학 교육 프로그램 지원단을 구성하여 6월말부터 25일까지 2주 동안 현지 어린이들을 대상으로 천문학 교육 프로그램을 수행한 바 있다. 모두 50여명의 초, 중등 학생들이 참여하여 성황리에 마무리된 캄보디아 교육 프로그램의 성과와 시사점, 앞으로의 계획 등을 소개하고자 한다.

오디 농축액을 첨가한 머핀의 품질 특성 (Quality Characteristics of Muffins Added with Mulberry Concentrate)

  • 본 연구는 뽕나무열매인 오디를 이용하여 오디농축액을 첨가하여 일상생활에 쉽게 접하는 머핀을 제조하였다. 오디머핀의 최적화를 찾아내고 품질특성과 신제품의 가능성을 알아보고자 하였다. pH, 비중, 제품의 비체적, 색도, 기계적 품질 특성과 기호도 검사를 실시하였다. 오디 농축액 첨가량이 많을수록 pH는 낮고 비중은 감소하였다. 색도는 L, a, b값이 감소하였고 탄력성은 증가하였다. 외관은 15% 첨가군이 6.4로 가장 높은 값을 나타냈고, 나머지 시료는 5.1-5.9사이의 값으로 비슷한 기호도를 보였다. 전반적인 기호도는 20%첨가군이 가장 높은 기호도를 보였고 20% > 15% > 10% > 0% > 25%순 이었다. 오디농축액의 첨가로 품질의 저하가 있었지만 유지나 물량의 조절과 유화제의 첨가로 제품의 향상이 기대되며 15~20첨가로 기호도가 높아지리라 사료된다.

조리교육 만족도 및 요구도에 관한 연구 - 4년제 조리전공 대학생들을 중심으로 - (A Study on Student Satisfaction with Educational Environment, Innovation Configuration, and Intervention Demand of Students in Culinary Practice Education - Focusing on University Students Majoring in Culinary Arts -)

  • 본 연구는 조리 관련 학과를 전공하고 있는 일부 4년제 대학생을 대상으로 조리 실습 교육에 대한 인식 수준을 조사하여 조리교육의 발전 방안을 모색하고자 하는 목적으로 수행되었다. 교육은 지식을 전달하고 학습자의 특정한 태도와 행동을 형성하기 위하여 의도적이면서 조직적으로 학습을 유도하여 지식, 정보, 적절한 상황이나 조건을 준비하는 것으로서 조리교육 만족도와 요구도를 살펴 조리 실습교육의 의미와 학생의 입장에서 조리학습교육을 이끌어나가기 위하여 조사 분석하였다. 이에 본 연구에서는 특정한 상황에 맞는 대학교육서비스 품질 측정도구를 개발하고, 이를 통하여 대학 조리 실습교육 품질을 결정하는 요인을 도출해 보았으며, 26개의 품질속성에 대해 중요도-만족도 변환지수를 이용하여 해석한 결과, 저학년일 경우 실습흥미, 진로필요, 현장실무 레시피, 전공 관심 증가, 전공학과만족 순으로 중요하다고 인식하였으며 고학년일 경우 현장 레시피, 실습흥미 재료시범 순으로 중요하다고 하였다.
