The Health Status according to the Age and BMI of Male Workers in Daegu.Gyeongbuk Region (대구.경북지역 20, 30대 남성 근로자의 연령 및 BMI에 따른 건강상태)

  • The purpose for this study was to investigate the health status according to the age and BMI by interviewing male workers in their twenties and thirties in the Daegu Gyeongbuk region. The body measurement was assessed by height, weight, BMI, body circumference (waist, hip), waist-hip ratio and body fat mass. The health status has been analyzed and assessed as normal group, health concerned group and health suspected groups. Weight, percent ideal body weight (PIBW), BMI and body circumference (waist, hip) and waist-hip ratio was proven higher according to the order of obese group, overweight group and normal group. Waist-hip ratio was proved to be higher in the thirties group than the twenties. Body fat mass was higher in the obese, overweight and normal groups. In the concerns of health status, the ratio of health concerned group and health suspected group increased according to the increase of BMI. Blood pressure (SBP, DBP) was higher in the obese group than in the normal group and overweight groups, and blood glucose was higher in the thirties than in the twenties. SGOT, SGPT, ${\gamma}-GTP$ has been proven higher in the obese group than in the normal group and overweight group, ${\gamma}-GTP$ was higher in the thirties than in the twenties. Investigating the correlation of the anthropometric characteristics and biochemical characteristics, the heavy weight resulted in heavier BMI, PIBW, body circumference (waist, hip), waist-hip ratio and higher body fat mass. Blood pressure (SBP, DBP), total cholesterol, blood glucose, SGOT, SGPT and ${\gamma}-GTP$ all became higher according to these influences. In conclusion, male workers have to recognize that health status becomes worse and possibilities of chronic disease prevalence rate increases according to aging and the increase of BMI. Accordingly, it is necessary to make an effort to prevent chronic diseases.

Effects of Dietary Supplementation of Sea Tangle Extracts on the Excretion of Neutral Steroids and Bile Acid in Diabetic Rats (다시마 추출물의 급여가 당뇨쥐의 중성스테로이드와 담즙산 배설에 미치는 영향)

  • The present study was conducted to investigate the effect of dietary supplementation of sea tangle extracts on the excretion of neutral steroids and bile acid in diabetic rats. Sprague-Dawley rats were fed on AIN-76 based experimental diets containing methanol extracts (2%, w/w) or water extracts (4%, w/w) of sea tangle for 4 weeks. And then they were induced to be diabetic by receiving streptozotocin (45 mg/kg BW) intramuscularly. The dried fecal weight was increased significantly in water extracts group compared with control group. The fecal content of cholesterol was higher in extracts groups of sea tangle than in control group. But there was no significant difference in fecal excretion of cholesterol between methanol and water extracts groups. The fecal excretion of coprostanol was increased significantly in water extracts group compared with the control group. The fecal excretion of bile acid was increased significantly in sea tangle extracts groups compared to the control group. These data suggest that dietary supplementation of sea tangle extracts might reduce the incidence of atherosclerosis through increasing the excretion of neutral steroids.

  • 본 연구는 확대기 가정주부의 가사노동 시간관리 전략방안을 모색하기 위한 자료를 제공하려는 데 그 목적이 있으며, 연구결과를 요약하면 다음과 같다. 첫째, 주부의 가사노동시간은 1일 평균 6시간정도로서 80년대보다 감소한 것으로 나타났으며 유의적인 변수는 주부 의취업여부와 가족수이다. 둘째, 가사노동시간관리전략은 주부의 교육수준, 취업여부, 첫자녀나이, 월 총소득에 따라 의미있는 차이가 나타났다. 가사노동 시간관리전략의 하위영역인 가족성원간의 분담화는 주부의 취업여부, 첫 자녀나이, 가족수에 따라서 의미있는 차이가 나타났다. 가사노동 계통화에서는 가사노동 시간관리 전략의 하위영역중 가장 높은 평균점수를 나타냈으나 변수간에는 유의적인 차이가 나타나지 않았다. 가사노동 간소화는 주부의 교육수준, 취업여부, 결혼지속년수, 주거형태, 가족수, 월총소득에서 유의적인 차이가 나타난것으로 보아 대다수의 주부들이 가사노동을 간소화시키려는 의지가 있음을 알 수 있다. 가사노동 기계화는 주부의 교육수준, 월 총소득에 따라 유의적인 차이가 나탄났다. 세째, 가사노동시간에 영향을 미치는 가사노동시간관리전략은 간소화, 사회화 및 분담화로서 가사노동시간감소에 영향을 미치고 있으며, 계통화와 기계화는 가사노동 시간증가에 영향을 미치는 전략으로 나타났다.

Effects of combined intervention of isoflavone supplementation and exercise on bone metabolism in growing rats (이소플라본 보충과 운동의 병행이 성장기 쥐의 골격대사에 미치는 영향)

  • Purpose: This study examined the effects of combined intervention of isoflavones and exercise on bone mineral density, bone mineral content, and biochemical bone markers. Methods: Forty rats were divided into four groups; Control, Isoflavones (IF), Isoflavones + Running (IFR), and Isoflavones + Swimming (IFS). All of the rats in this study were fed an experimental diet and deionized water ad libitum for nine weeks. Bone mineral density (BMD) and bone mineral content (BMC) were estimated using PIXImus (GE Lunar Co, Wisconsin.) in spine and femur nine weeks after feeding or training. Results: The combined intervention did not affect weight gain, mean food intake, or food efficiency ratio. The serum concentrations of ALP and osteocalcin were not significantly different by combined intervention. The urinary DPD crosslinks values were not significantly different by combined intervention. There were no significant differences in serum PTH, calcitonin, and estradiol among all groups. Spine BMD, spine BMC and femur BMC were not significantly different by combined intervention. However, femur BMD was significantly higher in the IFR group than in the control group. Compared with the control group, spine BMD, spine BMC, and femur BMD per weight were markedly increased in the isoflavones supplementation and combined intervention group. In addition, femur BMC per weight was significantly higher in the IFS group than in the control group. Compared with the isoflavones supplemented group, BMD and BMC were not significantly different by combined intervention. Conclusion: It can be concluded that isoflavones supplementation or combined intervention of isoflavone and exercise had a beneficial effect on spine and femur peak bone mass in growing female rats.

Salt-related Dietary Behaviors of University Students in Gyeongbuk Area (경북지역 대학생의 소금섭취 관련 식행동 조사)

  • The purpose of this study was to investigate self-assessed preferences for saltiness as well as salt-related dietary behaviors of university students in Gyeongsangbuk-do. Data were collected from subjects, including 175 male and 225 female university students. This survey was conducted using self-boarding questionnaires. Exactly 29.5% of all students answered 'salty' for their self-assessed preference of saltiness, and 42.5% indicated 'salty' for their assessed saltiness of university foodservice operations. Salt-related dietary behavior scores were significantly different among monthly spending money (P<0.01), self-assessed preference of saltiness (P<0.001), frequency of using university foodservice operations (P<0.001), and assessed saltiness of university foodservice operations (P<0.001). Among the 15 items of salt-related dietary behaviors, 4 items scored over 3.00/5.00, including frequent eating-out or consumption of delivered foods, kimchi, soy paste soup or other broth soups, and ramyon (instant noodle). Males revealed higher preferences for ham or sausage (P<0.05), table salt (P<0.01), broths (P<0.01), and complete consumption of soups and stews (P<0.01), whereas females showed greater preferences for eating-out or delivered foods (P<0.01). Overweight students showed higher preferences for all broths and complete consumption of soups and stews (P<0.01).

The Quality and Antioxidant Properties of Cookies Containing Codonopsis lanceolata Powder (더덕 분말을 첨가한 쿠키의 품질특성 및 항산화활성)

  • We investigated the feasibility of incorporating Codonopsis lanceolata (C. lanceolata) powder into cookies as a value-added food ingredient. The density and moisture content of the dough was not significantly affected by the addition of C. lanceolata powder (p>0.05); the pH ranged from 6.01-6.51. The spread ratio decreased significantly with the increasing levels of C. lanceolata powder added (p<0.05). The lightness decreased, but both browning and hardness increased significantly with the higher amounts of C. lanceolata powder in the formulation (p<0.05). The 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging activities were increased significantly (p<0.05) and correlated well with increasing amounts of C. lanceolata. In consumer acceptance tests, the addition of C. lanceolata powder, up to 10% (w/w), had a favorable effect on consumer preferences for all the attributes tested. Based on these observations, we recommend cookies with 5% C. lanceolata powder to take advantage of its functional properties without sacrificing consumer acceptability.

Quality Characteristics of Low-Salted Yacon Pickles with Leaf-mustard and Pepper (갓과 고추를 첨가한 저염 야콘 피클의 품질 특성)

  • To improve a low-salted yacon pickle, the change of quality characteristics during the storage of yacon pickles were investigated at $18^{\circ}C$ for 50 days using two-way ANOVA. One factor that was added was the leaf-mustard and pepper (A), the other was storage time (B). The leaf-mustard and pepper were added to increase the yacon pickle's taste, flavor, and properties. The sugar content, total acidity and salinity were significant for factor A and B. With the interaction effect of the two factors, yacon pickles increased as storage time increased. The L value was not significant for factor A but significant for factor B. The a and b values were significant for the two factors. All Hunter's color value had the interaction effect. The shearing force was not significant for each factor, and yacon pickles did not show a softening effect. In the results of the sensory evaluation, color, taste, and overall preference were significant for factor A and B, yet the flavor was only significant for factor B. The texture was not significant at all. In the overall preference, yacon pickles were higher at 30 and 40 days and also, had the interaction effect. Yacon pickles were not above the 3.0% of salinity.

Quality characteristics of Yakju containing pretreated lotus leaves (전처리를 달리한 연잎을 이용한 약주의 품질특성)

  • This study aimed to find an effective preservation method of lotus leaves for the preparation of lotus-leaf Yakju throughout the year. The characteristics of Yakju containing lotus leaves pretreated by blanching, steaming, roasting, and drying were investigated in this study. The chemical properties of Yakju (pH, amino acidity, alcohol content, and volatile acid content) were significantly different for all treatments, except for the total acid content. The polyphenol content ranging from 315.89 to 462.63 ppm (p<0.05) was significantly different depending on pretreatment method L color value for Yakju was not significantly different all treatments, while a value was significantly different in Yakju containing frozen stored leaves after pretreatment. The b value was lowest for the blanching treatment, and was significantly different for all treatments. Among the organic acids present in Yakju, the oxalic, citric, and malic acid contents were significantly different for all treatments. In sensory evaluation, lotus-leaf Yakjus containing fresh leaves and dried leaves were preferred to the others in color and flavor among Yakjus prepared with lotus leaves before cold storage. However, among the Yakjus prepared with lotus leaves after cold storage, that containing blanched leaves was preferred to the others in terms of flavor, taste, and overall acceptability.

The Effect of Eating Habits and Lifestyle on the Food Intake of University Students in Daejeon (대전지역 대학생들의 식생활 실태 및 생활습관이 식품섭취에 미치는 영향)

  • To investigate the effect of eating habits and lifestyle on the food intake of university students in Daejeon, 104 male students(26.75%) and 282 female students(73.75%) were surveyed about their food intake, eating habits, and lifestyle using the questionnaire. The major food served as breakfast was steamed rice(76.05%) and there was a little significant difference between male and female. The major food served as lunch was also steamed rice(73.77%) and male students ate it more than female ones. According to the survey, 41.95% of the subjects had breakfast regularly, and 24.35% seldom, which showed no significant difference between male and female. In case of lunch, the percentile of subjects(54.55%) who had regularly eaten lunch was more than that of breakfast, and there was a little significant difference between male and female. The survey said most subjects(49.22%) had eaten dinner irregularly, which rate was higher in male students. The meal skipped usually was the breakfast(24.35%), which rate was higher in female students. The reason why the subjects skipped the meal was mainly due to the lack of sufficient time for breakfast and lunch, and for dinner to the weight loss. Among the subjects, 80% said they were non-smokers; 96.44% in female students and 35.58% in male ones. In case of drinking, most subjects said they sometimes drank(67.19%) and the frequency of drinking was once or twice a month(51.99%), which showed the significant difference between male and female. In the aspects of effects of drinking and smoking on the food intake, the drinking practice after eating was shown to be the highest(55.98%); smoking generally affected the food intake, which showed the difference between male and female. Food intake during the examination period didn't show any differences to the usual one or increased a little bit, which showed a difference between male and female. Losing appetite during the examination period was shown mainly in the female students. When they felt blue or tired, the food intake decreased, which showed a significant difference between male and female was shown. When feeling good, the food intake significantly increased, which showed a significant difference between male and female. Therefore, there was a significant difference between male and female in the actual eating habits and in the aspects of food intake.

The Quality Characteristics of Cookies Prepared with Agaricus blazei Murill (아가리쿠스 버섯 가루를 첨가한 쿠키의 최적화 연구)

  • The purpose of this study was to determine the optimal mixing ratio of Agaricus blazei Murill powder and butter in the preparation of cookies. The experimental design utilized herein was based on central composite design for response surface methodology, which included 10 experimental points, including 2 replicates for Agaricus blazei Murill and butter. The physical, mechanical, and sensory properties of the test were measured, and these values were applied to the mathematical models. A canonical form and perturbation plot showed the influence of each ingredient on the final mixed product. The spread ratio increased significantly with an increase in Agaricus blazei Murill powder and butter (p<0.05). The response surface methodology was applied to evaluate the effect of Agaricus blazei Murill powder and butter on cookie moisture and color (L, a) (p<0.001). Sensory evaluation showed significant values for color (p<0.05), flavor (p<0.05), texture (p<0.05) and overall quality (p<0.01) in the predicted model. The optimum formulation by numerical and graphical methods was calculated as follows: Agaricus blazei Murill powder 3.63 g, butter 55.37 g.
