A Study on Textural Characteristics of Imitation Proceessed Cheese Formulated by Delactosed Nonfat Dry Milk (탈유당 탈지분유를 이용한 모방치즈의 조직특성에 관한 연구)

  • This study has been concerned with the possibility of delactosed nonfat dry milk(DENFDM, lactose 4.25%) formation into conventional imitation processed cheese(IPC). The effect of DENFDM was mainly a contribution to fracturability, elasticity and gumminess, while hardness and cohesiveness were decreased. Similarly calcium caseinate and sodium caseinate were contributing to cohesiveness, hardness, elasticity and gumminess. Delactosed NFDM has a potential beneficial effect as a partial replacement of caseinate in the formation of the imitation processed cheese to characteristics close to commercial processed cheese.

  • Frozen sardine meat paste for fish sausage was prepared to obtain the basic data on improving the quality of sardine sausage, and its gel formation ability was compared with meat paste from raw sardine. In addition, its quality stability was studied during frozen storage. For the preparation of frozen sardine meat paste, the addition of 4% of sorbitol and 0.3f of polyphosphate to the fish meat appeared effective to keep the processing suitability and storage stability. Also, the gel formation ability of the frozen sardine meat paste was not inferior to that of raw sardine paste.

Physicochemical Properties of Whey Protein Isolate (WPI의 물리화학적 특성에 관한 연구)

  • In this study, the physicochemical properties of cheese whey protein isolate (WPI) were measured. The total amount of amino acids in WPI was 89.5% and the proportion of essential amino acids was 44.6%. Among these, leucine, lysine, isoleucine, and valine were shown in large amounts. At various pHs, the solubility of WPI (82-88%) was higher than that of sodium caseinate, (5-79%). The solubility of WPI was not affected by variation of pH. It was shown that the emulsifying capacity of WPI was higher than that of egg yolk by 1.6 times, but the stabilities of emulsions made with WPI and egg yolk was almost same each other at 65-97% and 60-89%, respectively. The foaming capacity of WPI was higher than that of egg white, at 323.3% and 186.6%, respectively, but the foam stability of WPI was similar to that of egg white.

  • Health functional foods refer to food which manufactured in the form of a tablet, capsule, granule or pill, using materials and ingredients with useful function for a human body in Korea. It needs to be confirmed as safe. Microbiological analyses on 37 samples of botanical raw materials used in the health functional food were performed. Microbiological analyses and probability of irradiation using PSL on 4 samples of aloe powder products were studied. In health functional food ingredients APC was $10^{3}-10^{6}\;CFU/g$ and coliform counts were $10^{2}-10^{5}\;CFU/g$. Among 37 samples B. cereus were found in 12 samples. Four samples of aloe powder products were tested for possible irradiation using preliminary PSL, Two samples of aloe powder products showed positive on preliminary PSL test for irradiation.

  • 식품의약품안전청은 소비자가 해당 식품에 대한 불만이나 소비자의 피해가 있는 경우 신속하게 신고하도록 하기 위해 식품의 용기 포장에 "소비자 불만 등 신고는 국번없이 1399"의 표시를 의무화 하기로 했다. 또한 복합원재료를 사용한 제품에 개별원료로 사용한 것처럼 표시하지 못하도록 하는 등 현행 제도상의 일부 미비점을 개선 보완하여 소비자에게 식품선택 보장을 위한 올바른 정보제공을 하고자 식품등의 표시기준 일부개정고시(안)을 행정 예고했다. 본고에서는 주요내용과 신구조문을 비교해 살펴보도록 한다.

  • 지난 1월 6일에 미국 FDA와 FSIS(Food Safety and Inspection Service)의 영양표시법(Labeling regulations)이 최종 발표되었다. FSIS는 육류, 가금류 그리고 이런 원료가 $3\%$이상 함유된 가공식품(가공육$2\%$ 이상)을 관장하고 FDA는 그외 식품을 관장하는데 두 기관의 최종 규칙간의 차이는 $\bullet$FSIS는 경쟁사 제품과의 비교를 금지 $\bullet$FSIS는 최종기한을 `94년 7월로 3개월 연장 $\bullet$표시규칙의 예외를 적용받는 `소규모업체`의 정의 $\bullet$Stearic acid의 표시 $\bullet$4세이하 어린이용 식품에 대한 단백질 함량 표시 등이다.

Analysis of quercetin in extract of Hovenia dulcis Thunb (헛개나무과병추출물 중 퀘르세틴 분석)

  • Based on the Korean Health Functional Food Act, health functional foods are dietary supplements containing nutrients or other substances that have nutritional or physiological effects. Since generic health functional food items have been expanded, this project was performed to develop a standardized analytical method of examining such sale items. The method exhibited high linearity in the quercetin calibration curve ($R^2$ > 0.999) over concentrations of $0-40{\mu}g/mL$. The limits of detection and quantitation for quercetin were $0.12{\mu}g/mL$ and $0.36{\mu}g/mL$, respectively, while quercetin recovery was 97.1-105.4 % with standard deviations of 1.15-3.11 %. To verify the accuracy of the analytical methods, the labeled amounts of purchased health functional foods were monitored. The recovery rate for multiple quercetin concentrations ranged from 82.5-105.1 % of the labeled amounts. Thus, the new method was suitable for all cases.

Distributions of Microorganisms and Identification of Pathogenic Bacteria Isolated in Raw Beef of Jangzorim (장조림 원료육의 미생물 분포 및 분리 병원성세균의 동정)

  • Raw beefs used fer Jangzorim production were evaluated fur contamination of pathogenic bacteria and microorganisms related to spoilage and food safety. Eleven groups of mesophilic, psychrotrophic, and anaerobic microorganisms, and total coliforms were selected to evaluate degree of food contamination. Nine strains including Bacillus cereus, Clostridium botulinum, C. perfringens, and Listeria monocytogenes were selected to evaluate incidences of pathogenic bacteria. Raw beefs harbored large populations of microorganisms, which decreased greatly after heat treatment. Psychrotrophic microorganisms were found to be more abundant than other microorganisms. B. cereus, C. perfringens, and L. monocytogenes were isolated from raw beefs, whereas C. botulinum, Escherichia coli O157:H7, Salmonella spp., Shigella spp., Staphylococcus aureus, and Yersinia enterocolitica were not isolated. Isoiates from Cereus selective agar, clostridium Perfringens agar, and Oxford agar were in 99.8, 99.9 and 98.6% agreements with B. cereus, C. perfringens, and L. monocytogenes at species level, respectively. B. cereus produced enterotoxin with CRET-RPLA method, whereas C. perfringens did not produce enterotoxin with PET-RPLA method.
