Purpose: With the 2021 revision of dietary guidelines in Korean emphasizing environmentally sustainable dietary practices, this study attempted to develop an evaluation tool to comprehensively evaluate the degree of practice and compliance with food and nutrient intake, dietary habits, and dietary culture guidelines based on the revised dietary guidelines. Methods: The candidate evaluation items were collected by reviewing 934 literature reviews on domestic and foreign dietary evaluations. Fifty-nine candidate items were derived by selecting the items corresponding to dietary guidelines. The content validity ratio (CVR) cutoff point evaluation was conducted with 11 experts to delete 11 items that did not meet the CVR standard. Fifty-five pilot survey candidate items were selected through revision and additional process according to expert opinion. Seventy final candidate items were selected by adding 15 questions for validity verification and reference. A pilot survey was conducted online and offline on 332 adults aged 19-64 in Seoul and the metropolitan area, and exploratory factor analysis was used to verify the construct validity of the evaluation items. Through exploratory factor analysis, the Kaiser-Meyer-Olkin, Bartlett's sphericity test, variance explained, and Cronbach's alpha criteria were confirmed in each process. Results: Exploratory factor analyses derived three criteria: food and nutrient intakes (11 items), eating behaviors (9 items), and dietary culture (14 items), consisting of 34 evaluation items. Conclusion: The present scale was validated and can be used for comprehensive evaluations of the dietary guidelines for Korean adults in a simple way.

This study was conducted to analyze recognition, applicability, class satisfaction, and needs as well as students' attitudes for eating behavior by 1st and 3rd graders of a mixed middle school located in Gyeonggi area in relation to food and nutrition section of the Technology and Home Economics curriculum and thereby provide basic data for development of strategies of educational effect maximization of food and nutrition in the curriculum. 522 questionnaire were collected and statistically processed. Findings from this study are as follows. Both 1st and 3rd graders were found to exhibit relatively low preference for technology and home economics curriculum. While 1st graders were more interested in the subject than 3rd graders, the frequency of practical use of the food and nutrition section in every day life was higher in 3rd graders than that in 1st graders. For food and nutrition section of the subject, preference level of the 1st graders was higher than 3rd graders. The 1st graders were higher than 3rd graders in the needs for food and nutrition section as well as in usefulness in every day life of the unit. The applicability in every day life of the unit was found to be generally higher, with 1st graders having a higher level of applicability than 3rd graders (p<0.001). Class satisfaction of the unit was higher in 1st graders than 3rd graders, with the most satisfactory unit being 'basics and practice of cooking' both for 1st and 3rd graders. Needs for food and nutrition unit were higher in 1st graders than 3rd graders, with the unit highly needed being 'basics and practice of cooking' both for 1st and 3rd graders. Regarding interrelation of the degree of preference, need, applicability and class satisfaction, as the preference was high on food and nutrition, the degree of need, applicability, and class satisfaction was high. As respondents recognized food nutrition section necessary, they were more satisfied and showed high applicability for the section. Therefore, contents of food and nutrition section should be improved with re-organization of educational and subject contents so that they will be best fit for students by grade, to increase preference, applicability and necessity in every life. In addition, to maximize the applicability of the subject in everyday life, sufficient class-time should be assigned for the purpose of experiment- and practice-based education, and a wide range of teaching strategies are needed to increase students' interest in the subject.

The aim of this study was to investigate middle school students' perceptions of dietary education in Technology-Home Economics classes. Out of the 444 survey respondents of 3rd grade middle school students in Gyeonggi area, 78.1% of them appeared to have obtained knowledge and information on diet and nutrition primarily from the dietary education delivered in Technology-Home Economics classes. Specifically, 62.6% stated "The current dietary education was useful." and 67.3% said "School dietary education was necessary." However, 88.7% was not even aware of the current Dietary Education Support Act, which was enacted in 2009. On the basis of the 28 subject categories in dietary education, in general, the more interested students were in a specific subject, the more actively they applied their knowledge of that subjects in real situations. In all categories, female students had a greater degree of interest and were more likely to apply that know lodge than male students. Among the 28 subjects, they had greatest interest in 'Dining Manners and Etiquette' and 'Nutrition and Meals for Adolescents' while they expressed relatively little interest in the subject of 'Cooking and Culinary Education'. Their perception of the necessity of dietary education was most highly influenced by their interest in the subject 'Nutrition and Meals for Adolescents', which was followed by gender difference and 'Dining Manners and Etiquette' as the most influential subjects.
Purpose: Given that the indicators related to chronic diseases are important to evaluating goals of the national health policy, the aim of this study was to develop dietary behavior items available in the Korea National Health and Nutrition Examination Survey. Methods: The dietary behavior items were developed based on the literature reviews, need assessment of the field, expert focus-group interviews, and expert advisory meeting. Questions for each dietary behavior item were developed by reflecting on environmental, personal, and behavior factors of the ecological frame and then revised through expert focus-group interview and expert advisory meeting. The understanding and reliability of the developed questionnaire were assessed by cognitive interview and test-retest reliability. Results: The developed items were sodium and salt intake, added and simple sugar intake, enough time to consume a meal for all ages, caffeine drinks and fresh/healthy food intake for children and adolescents, and limited dietary intake, fresh/healthy food intake for seniors. In most questions except some questions on sodium and salt intake, subjects understood over 70% and consistency of responses based on the kappa values was acceptable. Conclusion: Developed dietary behavior items are expected to be useful for evidence-based nutrition policy, interventions and research targeting dietary patterns through investigating and monitoring dietary behavior patterns.
Purpose: A comprehensive evaluation item was developed to assess adolescent dietary habits and nutritional practices, considering food intake, eating behaviors, and food culture, such as social support and food environment. Methods: The 59 candidate items of the evaluation checklist were obtained based on the results of the eighth Korea National Health and Nutrition Examination Survey data, Korea Dietary Reference Intakes, dietary guidelines for adolescents, Youth Risk Behavior Survey data, national nutrition policies and dietary guidelines, and literature reviews. Four hundred and three middle and high school students residing in metropolitan areas participated in a survey using the 58-item checklist, which was selected through expert evaluation and content validity ratio analysis. The construct validity of the assessment tool for the quality of adolescent diets was assessed by exploratory factor analyses to determine if the checklist items were organized properly and whether the responses to each item were distributed adequately. Results: The Bartlett sphericity test was significant for each area (p <0.001), and the eigen values were greater than one. The Kaiser-Meyer-Olkin and cumulative proportions by areas were food intake (0.765 and 56.8%, respectively), eating behaviors (0.544 and 64.8%, respectively), and food environment (0.699 and 62.4%, respectively). Twenty-two checklists were determined for the final evaluation items for the adolescents' dietary habits and nutritional practices and were categorized into three distinct factors: food intake (10 items), eating behaviors (4 items), and food environment (8 items). Conclusion: The evaluation items for adolescent dietary habits and nutritional practices is a useful checklist for easily and quickly assessing the dietary qualities and reflecting Korean adolescents and their food environmental factors related to a sustainable diet.

The purpose of this study is to examine the previous literature in home economics and contents and achievement standards of 2009 revised curruculum in relation to character education. To achieve this purpose 1) the literature review in human development and family, self-management and consumption life, food, clothing, and housing life area is critically discussed in relation to character education, and 2) curriculum contents and achievement standards are analysed in relation to the six pillars(trustworthiness, respect, responsibility, fairness, caring, and citizenship) of character education proposed by Josephson Institute. The results of analysis are verified by five experts in home economics content areas. Specific results of relation between home economics contents/achievement standards and six elements of character education are as follows. Human development and family area is most closely related with all elements of character education among other content areas. In Self-management and consumption life areas, self-management sub-area is very closely related with responsibility element; and consumption life sub-area is very closely related with citizenship element. In food area, health diet and eating sub-area is very closely related with trustworthiness, respect, and responsibility elements; and eco-frendly diet and food sub-area is very closely related with all six elements. In clothing area, clothing and self-expression sub-area is very closely related with trustworthiness, caring, and citizenship elements; and eco-friendly clothing and clothing reform sub-area is very closely related with responsibility, caring, and citizenship elements. In hosing area, housing and living environment sub-area is very closely related with responsibility and caring elements; and sustainable living and decorating living space sub-area is very closed related with trustworthiness, fairness, and citizenship elements.

The purpose of this study was to investigate the eating behaviour and nutrition knowledge of middle school students and satisfaction of dietary life instruction in Technology Home economics subject. The data was collected by means of questionaire from the total of 510 middle school students who were living in Daegu and Gyeongbuk province and final 493 questionaires were analyzed by using the SPSS/WIN 17.0 program. Education effect was examined by analyzing the satisfaction and interesting of instruction, help degree to family life, nutrition knowledge, eating behaviour. The percentages of satisfaction of instruction were as follows: very satisfaction(8.9%), satisfaction(36.8%), average(43.2%), unsatisfaction(8.3%), very unsatisfaction(2.2%). The reason of unsatisfaction was tedious lecture highly. The form of instruction they want was experiment practice class, they interested in cooking class. The total mean score for nutrition knowledge was low as 7.29/12, the score of female and the third year class students were high significantly. Help degree to family life, eating behaviour were self-evaluated using a Likert 5-point scale. The total mean score for help degree to family life was low as 3.30, the eating behaviour was 3.55, the first year class had the highest and the third class student had the lowest score. The items of eating less salty, regular diet, having normal body weight, doing not eat instant and fast food, the diet of thinking environment were low. Therefore education of diet in home economics subject is require to improve their dietary behaviour and satisfaction of instruction.

This study was to offer a basic data for setting up new curriculum and preparing for effective instruction and education methode on md and nutrition section by researching & analyzing the degree of necessity, difficulty and utilization in actual life of food and nutrition section which requires a close relation with actual life and home economics for the second grade students who studied home economics in the first grade in a middle school. The results obtained were as follows. A highest number of students$(38.9\%)$ responded that 'they learned skills required in home life such as cooking, laundry and childcare' on a question of home economics recognition and the next highest percentage of students$(27.5\%)$ responded' they learned of healthy life and correct human building through home economics education'. For the recognition of a food and nutrition section the highest percentage of students$(38.8\%)$ responded that 'they learned the knowledge and principle of food nutrition for the improvement of a food and nutrition', and the next highest percentage of students$(30.7\%)$ responded 'they teamed practical skills required in actual life'. The meal and nutrition of juvenile, and the principle and practice of cooking was highly ranked in order for the necessity on the food and nutrition section, girl students accounting for higher percentage than boys in overall food and nutrition section and all areas. A nutrition of juvenile, a meal of juvenile, and the principle of cooking and cooking practice was middle ranked in order for the difficulty of the food and nutrition section. Girl students recognized overall food and nutrition section more difficult and also they recognized a nutrition of juvenile and a meal of juvenile more difficult than boy students, but boy students recognized the principle of cooking and cooking practice more difficult than girls. On the practical use of the food and nutrition section in actual life, a meal of juvenile, the principle of cooking and cooking practice, nutrition of juvenile was low ranked in order. Boy students practically used overall food and nutrition section including a meal of juvenile and nutrition of juvenile in detail with high percentage, and girl students practically used the principle of cooking and cooking practice with high percentage. . Regarding interrelation of the degree of necessity, difficultly and utilization on food and nutrition section, as the degree of necessity was high on food and nutrition, the degree of practice was high in all the areas, and as respondents recognized food and nutrition section difficult, they practically used a food and nutrition section at low percentage.

This study aimed to identify sustainable dietary practices, concepts, and factors that hinder practice from the perspective of high school students and suggest what the current sustainable dietary education should be supplemented. The study utilized photovoice to compare and analyze the differences in sustainable dietary practices based on the implementation of sustainable dietary education among high school students. A group of 7 participants, who did not provide sustainable dietary education, submitted 65 photos, while a group of 8 participants who underwent the education submitted 80 photos. The results of this study showed that the overall awareness of sustainable diet concepts among all participants was highest in the health area (66.54%), followed by the environment (23.74%) and consideration (9.73%). Categorizing the results according to the sustainable dietary area revealed a diverse range of concepts extracted through sustainable dietary education, with an increase in the number of small areas. It was observed that the majority of the research participants were consuming foods with high sugar and sodium content, and they tended to consume more delivery food or dining out rather than cooking meals themselves. Interview results also indicated that while students demonstrated a conceptual understanding of sustainable dietary habits, there were cases where this understanding needed to translate into practical actions. This study is significant in utilizing the qualitative research method of photovoice to uncover the meaning and practical examples of sustainable dietary habits from the perspective of high school students. The results can be utilized to enhance and guide sustainable dietary education programs.
