Texture Characteristics of Seokibyung as affected by ingredients (석이병의 재료배합비에 따른 Texture특성)

  • The objective of this study was to evaluate the effect the Seokibyung, when the ingrdients were changed in a variety aspects ; the amount of Seoki flour to rice flour, and several kinds of sweeteners such as sugar, honey and syrup and condition of water. The evaluation of these result were as followings ; 1. According to sensory evaluation, the, flavor, grain, softness, moistness, chewiness, sweetness, overalquality of Seokibyung were the most excellent the mixture of 60g sugar, 280g rice flour, 70g glutious rice flour and 10.5g seoki flour mixed in 90$m\ell$ boiled water. 2. According to Instron evaluation that the higer level resulted to the left to the right treatment that Hardness : syrup, honey, sugar Cohesiveness : honey, syrup, sugar, Adhesiveness : syrup, honey, sugar Gumminess : honey, syrup, sugar Springness : honey, sugar, syrup, Chewiness : honey, syrup, sugar. there was no significant difference among the three treatment groups in each experimental group. 3. The Color & color difference evaluation_that Overall color difference was sugar, honey, syrup in turn. 4. percentages of moisture of honey-added, sugar-added and syrup-added Seokibyung were 42.49%, 41.45% and 36.73% respectively.

Analysis of Biological Activities and Functional Components in Different Parts of Asparagus (아스파라거스 부위별 유효성분 및 생리활성 분석)

  • In this study, various constituents and biological activities of different parts of asparagus were analyzed and compared. The Ca content was high in the leaves, K was significantly high in the top 25 cm of the spear, and Fe and Na were significantly high in the roots. The ascorbic acid, rutin, total polyphenol, and total flavonoid contents were high in the leaves, and the asparagine and glutathione contents were significantly high in the top 25 cm of the spear and roots, respectively. The bottom 5 cm of the spear had the highest saponin content compared with all other parts. The DPPH and ABTS radical scavenging activities were the highest in the leaves. The bottom 5 cm of the spear had the highest α-amylase inhibitory activity, whereas the stem showed the highest anti-inflammatory activity. These results suggest that the usually inedible parts of asparagus may be highly valuable as high-quality functional components owing to their antioxidative and anti-inflammatory activities.

Numerical Study on Spring-Neap Variability of Net Volume Transport at Yeomha Channel in the Han River Estuary (한강하구 수로별 순 수송량과 대.소조기 변화에 따른 염하수로의 순 수송량 변동에 관한 수치해석적 연구)

  • The EFDC model with find grid resolution system connecting the Gyeong-Gi bay and Han River estuary was constructed to study on spring-neap variability of net volume transport at each channel of the Han River estuary. The simulation time of numerical model is 124 days from May to August, 2009 with freshwater discharge at Han, Imjin and Yeseong River. The calibration and verification of model results was confirmed using harmonic components of water level and tidal current. The net volume transport was calculated during 30 days with normal freshwater conditions at Seokmo channel and Yeomha channel around Ganghwado. The ebbing net volume transport of 44% and 56% is drained into Gyeong-Gi bay through Yeomha and Seokmo channel, respectively. The ebbing net volume transport nearby Seodo at Yeomha channel convergence flooding net volume transport at Incheon harbor, and drain (westward direction) through channel of tidal flat between Ganghwado and Yeongjongdo to the Gyeong-Gi bay. The averaged net volume transport during 4 tidal cycles was compared to variation of spring-neap periods of the Yeomha channel. The convergence position is moved up- and down-ward according to spring-neap variability. The movement of the convergence zone is appeared because 1) increasing of discharged rate tidal flat channel between Ganghwado and Yeongjongdo at the spring period, 2) The growth of barotropic forcing with downward direction at the spring tide, and 3) The strength of the baroclinic pressure gradient is greater than spring with mixing processes.

Growth, Biomass and Net Production of Quercus Species (I) - With Reference to Natural Stands of Quercus variabilis, Q. acutissima, Q. dentata, and Q. mongolica in Kwangju, Kyonggi-Do - (참나무류의 성장(成長) 및 물질생산(物質生産)에 관한 연구(硏究)(I) - 경기도(京畿道) 광주지방(廣州地方)의 굴참나무, 상수리나무, 떡갈나무, 신갈나무 천연임분(天然林分)을 대상으로 -)

  • Four natural Quercus stands in Kwangju, Kyonggi-Do, of which ages ranging from 32 to 38 years old, were studied to compare their growth, biomass and net production. Ten $10m{\times}10m$ quadrats were set up and ten sample trees were harvested for dimension analysis in each stand. The largest mean DBH and height were shown by Q. acutissima stand, and followed by Q. variabilis stand, Q. mongolica stand, and Q. dentata stand in descending order. Tree density was the highest at Q. variabilis stand, and followed by Q. dentata stand, Q. mongolica stand, and Q. acutissima stand in descending order. Biomass was the largest at Q. acutissima stand(122.73t/ha), and followed by Q. variabilis stand(87.03t/ha), Q. mongolica stand(72.14t/ha), and Q. dentata stand(38.56t/ha) in descending order. Net production was the greatest at Q. mongolica stand(7.49t/ha/yr.), and followed by Q. variabilis stand(6.47t/ha/yr.), Q. acutissima stand(6.06t/ha/yr.), and Q. dentata stand(3.52t/ha/yr.) in descending order. The highest net assimilation ratio was exhibited by Q. acutissima stand (3.275), and followed by Q. variabilis stand(2.898), Q. mongolica stand(2.888), and Q. dentata stand (1.840) in descending order. The difference in net assimilation ratio and net production among four stands was caused by differences in their leaf biomass. The difference in net production and biomass among four stands was due to that in the distribution of net production among stems, branches and leaves.

Comparison of Phenolic Acid from Shoots of Aralia elata and Kalopanax pictus Cultivated in Korea Using UPLC-DAD-ESI(+)-QToF/MS (UPLC-DAD-ESI(+)-QToF/MS를 이용한 국내산 두릅나무 및 음나무 순 내 페놀산 특성 비교)

  • BACKGROUND: In this study, shoots of Aralia elata and Kalopanax pictus which belong to the Araliaceae family were analyzed using UPLC-DAD-ESI(+)-QToF/MS to characterize of individual phenolic acids. METHODS AND RESULTS: Total thirteen phenolic acids were identified, and nine hydroxycinnamic acid derivatives have been identified for the first time in shoots of Aralia elata and Kalopanax pictus. For total phenolic acid content (mg/100g dry weight), shoots of Aralia elata and Kalopanax pictus showed 754.8 and 845.3 mg/100g, respectively. 5-O-Caffeoylquinic acid (49%) and 3,5-di-O-caffeoylquinic acid (44%) were found as major phenolic acids in Aralia elata, while 5-O-caffeoylquinic acid (91%) was a major component in Kalopanax pictus. CONCLUSION: On comparing the two plants, it was considered that the biosynthesis of 3,5-di-O-caffeoylquinic acid can be affected by 5-O-caffeoylquinic acid in Aralia elata.

  • 전립선암은 슬픈 남성의 암이다. 시작부터 끝까지 그렇다. 가장 빠르게 증가하는 암이며 조기에 발견되는 비율도 낮다. 끝은 어떤가. 발기부전과 요실금이란 상처를 남겨 남성을 더욱 슬프게 한다. 암 완치율 세계 최고를 자랑하는 한국도 전립선암 앞에서는 고개를 못 든다. 하지만 마냥 좌절할 일도 아니다. 전립선암을 '순한 암'으로 만들 것이냐 혹은 '슬픈 암'으로 놔둘 것이냐는 본인에게 달렸다.

  • "삼월하늘 가만히 우러러보며 유관순 누나를 생각합니다. 옥속에 갇혔어도 만세부르다 푸른하늘 그리며 숨이졌대요~" 강소천 선생이 지은 유관순 노래다. 삼월이면 어김없이 다가오는 삼일절인데, 삼일절은 인쇄인에게도 특별한 날이다. 1919년 3월 1일 만세운동은 보성사에서 '독립선언서'를 '인쇄'해 배포함으로써 전국적으로 확산할 수 있었기 때문이다. 2013년 94주년 삼일절을 맞아 독립운동에 앞장섰던 보성사와 인쇄인들에 대해 알아본다.
