Effect of Gamma Irradiation on the Sterilization of Red Pepper Powder (고추가루의 살균(殺菌)을 위한 ${\gamma}$-선(線) 조사효과)

  • In order to investigate the hygienic status of commercial red pepper powder, one sample was directly prepared from raw red pepper which was purchased at market and the other one was a commercial red pepper powder. They were used for the investigation upon the status of microbial contamination, effect of irradiation for sterilization and physicochemical changes during 3 months of storage. Total bacterial counts of commercial red pepper powders were 3.83 to $6.68{\times}10^6$ per gram and coliform group was shown to be positive in some products. Total bacteria and coliform group were sterilized by the irradiation of 9 kGy and 3 kGy, respectively and no microorganisms were grown up until 3 months of storage at room temperature. The $D_{10}$ values of total viable bacteria in red pepper powders were 1.52 to 1.58 kGy. Chemical components such as moisture, total and reducing sugars were slightly decreased during the storage period. The contents of capsanthin and capsaicin were partly affected by the high dose irradiation but the difference between unirradiated and irradiated groups was diminished with the elapse of storage period.

Component Analysis and Antioxidant Activity of Adenophora triphylla (잔대의 함유성분 분석과 항산화 활성)

  • The levels of minerals, amino acids, fatty acids and sugars and antioxidant capacity of Adenophora triphylla (AT) root were investigated. The moisture, crude protein, crude lipid, crude ash and carbohydrate contents of the AT root were $3.4{\pm}0.3,\;9.4{\pm}0.1,\;1.6{\pm}0.1,\;3.7{\pm}0.2$, and $81.9{\pm}0.5$, respectively. Among the minerals present in root, potassium content was the highest. Total amino acid contents were $103.5{\pm}9.1$ mg/g. Palmitic acid was the most abundant fatty acid in AT root. The vitamin E and C levels in AT root were $1.1{\pm}0.1$ and $5.2{\pm}0.5$ mg/100 g, respectively. The antioxidant activity of 70% ethanol extract and fractions of the AT root has been determined by the scavenging of the stable radical DPPH; the result showed that the chloroform fraction was the most active, as the amount required for 50% reduction of DPPH after 30 min ($RC_{50}$) was $103.7{\mu}g$, followed by 70% ethanol extract ($265.4{\mu}g$), hexane fraction ($104.4{\mu}g$), ethyl acetate fraction ($104.4{\mu}g$), butanol fraction ($108.9{\mu}g$) and aqueous fraction ($484.1{\mu}g$).

Preparation and Properties of Phytosphingosine Ascorbate with Retaining Skin Development Effects (피부 활성을 갖는 Phytosphingosine Ascorbate의 합성)

  • In the human skin, vitamin C (L -ascorbic acid) that is well known as the activated materials has effects that is skin anti-aging and wrinkle repair by giving impetus to collagen biosynthesis and anti-oxidation, and that is the sun screen, a wound recovering, inhibition melanogenesis and so on. In spite of its effects, vitamin C has the defects of the skin stimulation and easily oxidized instability by water, air, heat and light. For solving their matters, many investigation is advanced and its results are synthesized the various vitamin C derivatives. And yet they have not solved the unstable property of vitamin C and were still insufficient for the comparing with the effect of the pure vitamin C itself. In this study, in order to prepare vitamin C derivative of being improved the stability and to apply vitamin C effect in the skin, we prepared new vitamin C derivative, phytosphingosine ascorbate, by using phytosphingosine, one of sphingolipids, which have a distinguished skin affinity. Phytosphingosine ascorbate can be prepared as the ionic bond between amine group (-NH$_2$) of phytosphingosine and hydroxy group (-OH) of vitamin C by way of the relatively simple reaction. So the structure and properties of the synthesized phytosphingosine ascorbate was confirmed the use of elemental analysis (C 58.3 : H 9.3 : N 2.8 : O 29.5), MALDI TOF-MS (Mw=492.58), Ultraviolet spectra (268.5nm), lH NMR, FT-IR spectra, thermal analysis (m.p=l54$^{\circ}C$), HPLC and so on. And we could confirm the anti-bacterial and anti-oxidation effects. Based on these results, we could confirm to prepare a new material that was expected of both effects of vitamin C and phytosphingosine and that is improved properties of vitamin C.

  • Milled rice was subjected to check the eating quality of rice at various conditions of packaging with haft paper(packaging material made of paper), PE and yellow loess in the ambient conditions($18{\sim}25^{\circ}C$, $18{\sim}34%RH$. Rice packed with yellow loess was shown higher eating quality and less changes in the content of moisture loss and free fatty acid than control(kraft paper, PE). Eventually, yellow loess packaging showed a better performance in the rice storage than kraft paper and PE.

Changes of Nutritional Compounds and Texture Characteristics of Peaches (Prunus persica L. Batsch) during Post-irradiation Storage at Different Temperature (감마선 조사와 저장온도에 따른 복숭아의 품질특성 변화)

  • The gamma irradiation process was performed to prolong a shelf-life of peaches and the effects of a gamma irradiation on the nutritional, physiochemical and sensory characteristics of peaches were evaluated during a post-irradiation storage at $4^{\circ}C$ and $25^{\circ}C$. Nutritional, physiochemical and sensory characteristics of peaches were stable at 1 kGy of an irradiation, a recommended dose for fruits and vegetables by CODEX, and the viable cell counts of contaminated microorganisms were reduced by 2 decimal reduction, at this dose. After a 1-week storage at ambient condition, the microbiological quality of the 1 kGy irradiated peach was stable, while all the non-irradiated peaches were deteriorated Furthermore, cold storage enhanced the shelf-life of the gamma irradiated peach and the nutritional and physiochemical characteristics of the peaches were comparatively stable up to 6 weeks. Right after gamma irradiation, the sensory evaluation results were not different in any of the samples, and the sensory quality of the irradiated peaches was adequate for a 4-week storage at $4^{\circ}C$. Our results suggested that gamma irradiation at 1 kGy can be used to enhance the shelf-life of peach without a significant loss in the quality attributes, especially upon cold storage after radiation treatment.

Water Properties of Electrolytic Machine by Stainless Diaphragm and Effects of Electrolytic Ice Water Storage For Keeping Freshness of Squid, Todarodes pacificus (스테인레스 극판을 이용한 전해수장치의 수질특성과 오징어 선도유지를 위한 전해수 빙장 효과)

  • This study was undertaken to prolonging the freshness in Squid(Todarodes pacificus) on the effects of ice storage methods(tap water ice, electrolytic water ice) using stainless diaphragm electrolytic instrument and also test an efficiency of instrument. Basically, stainless diaphragm electrolytic instrument studied for changes of pH on difference water flow and ampere. The lower water flower and higher ampere made low pH on acid part of electrolytic instrument. Squid samples were stored in tap water ice, acid part of electrolytic water and base part of electrolytic water and used in studying the changes of VBN and skin color through storage. Acid water had strong sterilization effects and VBN was lower levels of acid water than the others. Base water had not sterilization effects. Tap water ice storage was more sterilizing effects than base water ice storage but less effects than acid water ice storage. Lightness of Squid skin showed getting decrease at storage of ice water of all storage methods but acid water ice storage showed more retarding than the other two storage. From these results, it could be suggested that acid electric water ice storage is effective in extendance the shelf-life of squid at chilled storage.

Hepatoprotective Effects of Pig Placental Hydrolysates on Liver Damage-induced Rats by Injecting Carbon Tetrachloride (사염화탄소 주입으로 간손상을 유발시킨 백서에서 돈태반가수분해 물 투여가 간기능 보호에 미치는 영향)

  • The aim of this study was to determine hepatoprotective effects of pig placenta hydrolysates (PLA) on liver damage-induced rats. Sprague Dawley rats were subcutaneously injected with carbon tetrachlorides and divided into 4 groups: negative control (DMSO treated), two PLA treated groups, low dosage of PLA (LPLA; 300 mg/kg body weight) and high dosage of PLA (HPLA; 1000 mg/kg body weight), and silymarin treated group (80 mg/kg body weight). Rats in each group orally received assigned compounds for 3 weeks. For the normal control group vehicle (corn oil) was injected. After 3 weeks, liver and spleen weights were greater in the two PLA and silymarin groups than the negative control group. After bromosulfalein (BSP) treatment, the clearance rates were in the descending order of negative control > LPLA > HPLA = silymarin and serum BSP levels exhibited the opposite trends of the clearance rates. Serum levels of aspartate aminotransferase, alanine aminotransferase, triglyceride, and cholesterol lowered with PLA in a dose-dependent manner. The decrease with HPLA was similar to that with silymarin. In addition, triglyceride, cholesterol, lipid peroxides levels in the liver decreased in HPLA and silymarin compared to the negative control. The liver morphometry was improved in HPLA- or silymarin-treated rats in comparison to the negative control. In conclusion, HPLA administration ameliorated the hepatotoxicity as much as silymarin in rats injected with carbon tetrachlorides.

Effect of Extracts from Sargassum siliquastrum on Shelf-life and Quality of Bread (꽈배기 모자반 추출물 첨가에 의한 빵의 저장성 및 품질 증진 효과)

  • The purpose of this study was to examine the qualities of breads added with 0.01%, 0.1% and 1% of Sargassum siliquastrum extracts (SSE). The result of total microbial count showed that breads with SSE were reduced with increasing storing time, especially bread with 1% SSE was reduced about 2 log cycle as compared to that of control. The moisture content of the bread added SSE and non-added bread were not significantly different during the early storage period, but after 9 days of storage, the moisture content of control was 13% decreased while that of the SSE added bread was decreased by only $5{\sim}6%$. In the color, lightness and yellowness of bread diminished with increasing amounts of SSE in bread while conversely, redness increased. In sensory evaluation, bread containing 0.01% and 0.1% SSE were preferred than the control over total preference, while bread containing 1% SSE showed the lowest preference. These results suggest that the addition of 0.1% SSE in bread had a good effect on improving the preservation and development of quality.

Effects of Some Soil Conditioners on Soil Physical Properties and Lettuce Growth (토양구조개선제(土壤構造改善劑) 처리(處理)가 토양물리성(土壤物理性)과 상추생육(生育)에 미치는 영향(影響))

  • This study was conducted to investigate the effects of some soil conditioners, such as polyacrylamide(PAM), polyvinylalcohol(PVA) and Bitumen emulsion, on aggregate formation and stability, wetting angle, sorptivity and penetrability of the soil with different textures : sand, sandy loam, loam and clay loam. A pot experiment was carried out to find out the effect of treatment on the germination and growth of lettuce with three textures : sand, sandy loam and silt loam. Soil aggregates larger than 2mm in untreated soils at dry condition were naught in sand, 45% in sandy loam, 80% in loam and 90% in clay loam. Treatments of soil conditioners tended to increase the occurrence of soil aggregate larger than 2mm, which were 20~25% in sand, 55~75% sandy loam, but not affected greatly aggragate occurence in loam and clay loam. The aggregate instability was decreased by the soil conditioner treatment. The wetting angles of the soils were greatly changed by hydrophobic of Bitumen, but those were changed slightly by PVA and PAM application. The sorptivity and penetrability data indicated that the effects of different materials on these parameters differed depending upon soil texture. Application of PVA and PAM were no effect exceptive in sand. Application of Bitumen revealed that water movement was not showed in all soils. The germination rate, root weight and top plant weight of lettuce were increased in all soils by PAM treatment as compared to untreated soils. Particularly the greater effect was occurred in sand soil than in sandy loam and silt loam. PAM increased greatly the moisture content and air phase of soils.

Interaction between Light and other Factors Affecting Germination of Oenothera lamarckiana Ser. Seed. (큰달맞이꽃 종자발아(種子發芽)에 영향하는 요인(要因)과 광간(光間)의 상호작용(相互作用))

  • In this experiment, interactions between light and other factors such as chilling, alternating temperature, moisture, content, oxygen, and seed coat which affect germination of Oenothera lamarckiana Ser. seed were investigated to study the physiological effects of light on the germination. Light induced the initial stage of seed germination before radical protrusion by affecting embryo rather than seed coat even under anaerobic condition or low water potential (-18 bars). This light effect on germinability of seed was suppressed by blue light irradiation and the effect was increased with increment of blue light intensity and irradiation time. However, the blue light effect was reversible. Chilling, alternating temperature, softening of seed coat and light showed promotive interaction in the induction of seed germination. Irradiation of filtered light (monochrome), however, reduced chilling effect on germination. Hydrogen-ion concentration and gibberellic acid treatment had no effect on light or dark germination.
