The Retrogradation of Steamed Korean Rice Cake (Jeungpyun) with Addition of Gums (검류 첨가에 의한 개량 증편의 노화억제 효과)

  • Gum was added to Jeungpyun (steamed Korean rice cake) to extend the shelf life and prevent retrogradation. The hardness of Jeungpyun was analyzed and the type of retrogradation was calculated by the Avrami equation. Guar gum, xanthan gum and pullulan were added to the steamed Korean rice cake at contents of 0.05%, 0.1% and 0.5% (w/w). The moisture contents of the steamed Korean rice cake stored at $4^{\circ}C$ remained unchanged over the three days. When the concentration of added gums was less than 0.1 %, the hardness was lower than that of the non-added gum. At a gum concentration of 0.5%, the hardness of Jeungpyun with added guar gum and xanthan gum was higher than that of pullulan and non-added Jeungpyun. The types of retrogradation varied according to the amount and the kind of the added gums. The type of retrogradation of pullulan-added rice cake was similar to that of xanthan-added rice cake. The Avrami exponent of pullulan-added and xanthan-added Jeungpyun was 1.4${\sim}$1.49 and 1.25${\sim}$1.43, respectively. As the concentrations of pullulan were increased from 0.05% to 0.5%, the time constant (1/k) increased from 5.37 to 15.65. Pullulan and xanthan gum were confirmed to be more effective than guar gum for preventing the retrogradation of the steamed Korean rice cake known as Jeungpyun.

Comparison of Rice Properties Between Rice Grown Under Conventional Farming and One Grown Under Eco-Friendly Farming Using Hairy Vetch (친환경 무농약 재배와 관행 재배 쌀의 특성비교)

  • The properties of non-waxy rice, Dongjin 1, cultivated with conventional farming (CF) and environmentally-harmonized farming (EHF) using hairy vetch were compared to determine rice water absorption, physicochemical and pasting properties, antioxidant activities of brown and white rice, and a sensory evaluation of cooked white rice was carried out. EHF was treated with green manure crops such as hairy vetch and chitinase, which produce microorganism culture solution. CF was applied with seed disinfection treatments, fertilizer herbicides, and agricultural chemicals for the control of pests and diseases. The absorption level of EHF rice was higher than that of CF rice grain, regardless of the cultivation methods used. The ash and crude lipid contents were higher, but protein and dietary fiber contents were lower in the CF rice than in the EHF rice. The total starch content, water binding capacity, and swelling power of white rice were higher than those of brown rice, regardless of the cultivation methods used. The DPPH's antioxidant activity was shown as follows: EHF brown rice, EHF white rice and CF rice, in a decreasing order. The initial pasting temperature of EHF rice was lower than that of CF rice, but the peak, cold, and breakdown viscosities exhibited reverse trends. The sensory evaluation showed that the cooked white rice cultivated with EHF was not significantly different from that cultivated with CF (p<0.05). The overall preference of cooked rice did not show significant differences between the two cultivation methods (p<0.05).

Effects of Condensed Molasses Soluble on Chemical and Biological Properties of Soil, and Nitrogen Mineralization (당밀농축용액이 토양의 화학 및 생물학적 성질과 질소의 무기화에 미치는 영향)

  • This study was carried out to evaluate the effects of condensed molasses soluble (CMS) treatment on the mineralization of N, chemical properties and soil microbial population under the incubation condition with unsaturated water content during the 7 weeks at $25^{\circ}C$ in the different levels of CMS application. The results indicated that the total nitrogen content of soil was increased with increasing application rate of CMS and this trend was maintained up to 7 weeks. With CMS treatment content of $NH_4-N$ was gradually decreased. However, the content of $NO_3-N$ in the soil was gradually increased with incubation time due to the nitrification under the unsturated water condition. The CMS treatment increased the microbial populations such as bacteria, actinomycetes and fungi, which may be due to the availability of more nutrients such as amino acids, sugars and other minor elements from CMS. The pH of soil was found to be reduced by the addition of CMS, Whereas, electrical conduvtivity of soil was correspondingly increased with increasing application rate of CMS.

Induction of Apomixis by Chemical Mutagen Treatment and Ovule Development in Inbreed lines of Corn (옥수수 자식계통들에서 화학적 돌연변이 유발성질 처리에 따른 apomixis 유발과 배주발생)

  • M1 plants which were produced from seed soaking in chemical mutagen, EMS or NaN$_3$, appeared wide morphorogical variations such as dwarf, albino, twisted leaf, white streaked leaf, and purpled stem. In mutants of reproductive organs, there were monoecious plants such as female-flower plant and male-flower plant, multiple spikes, and steriled plants among M1 plants. Also, barren stalk was increased significantly in M1 plants. Ear bagging at ear initiation stage prevented seed set on cob in normal plants. In spite of ear bagging, M1 plants which had cobs with seed set was 3.9-11.2% of stalks developed from seeds soaking with mutagens, but only three or four kernels could be matured on a cob. Ear bagging after mutagen injection into initiating ear produced 5.1-10% in cobs with seed set, but only 1.7-6.3 kernels could be matured. Cobs removed silk at four hours after artificial pollination increased the rate of cobs with seed set to 27%. Microscopic observation confirmed that ontogeny of kernels matured from ear bagging and mutagen treatment would be both adventitious and diplosporous apomictic reproduction. Chromosome set of M2 seedling was found to be diploid type in chromosomal counting of root tip. As M$_2$ plants showed an uniform appearence within each lines and their CV of plant height were ranged 4-6% in each lines, we concluded that they were apomictic progeny. But we could not find any marker traits combined with apomixis.

Study on the Silage from Rice Straw and Persicaria Thunbergii (볏짚과 고마리(Persicaria Thunbergii Gross var. Coreana Gross ex Nakai)의 혼합Silage 제조에 관한 연구)

  • To improve the feed value of rice straw, Tongil type rice straw and Persicaria Thunbergii Gross var. coreana Gross ex Nakai were mixed in the ratios of 10 : 90 (T1), 20 : 80 (T2), 30 : 70 (T3) and 40 : 60 (T4) in fresh weight and ensiled for 6 weeks. The chemical composition of fresh materials and silage, the organic acid contents and pH in silage were determined. And the results obtained were summarized as follow: 1. The crude protein content in rice straw was 8.18% of DM basis and that in Persicaria Thunbergii was 14.47%. And the nitrogen-free extract content in rice straw was 44.66% and.. that in Persicaria Thunbergii was 51.13%. 2. The optimum moisture contents were appeared in T2 as 72.12% and T3 as 66.43%. Considerably high crude protein contents were determined from all of treatments. 3. The pH of silage was varied from pH 3.8 of T1 to pH 4.5 of T2. And Total organic acid contents were increased from T1 to T4, but the percentage of lactic acid contents to total acid contents were decreased. 4. It was concluded that good quality silage could be made from rice straw with Persicaria Thunbergii and the best ratios of rice straw: Persicaria Thunbergii were between 20 : 80 and 30 : 70 in fresh weight.

Effect on Growth and Quality of Oriental Melon (Cucumis melo L. var. makuwa Makino) by Interspace Mulching between Polyethylene Film House (하우스 동간멀칭이 참외의 생육 및 품질에 미치는 영향)

  • Effects of interspace mulching between polyethylene film house on growth and quality of oriental melon were followed. Soil moisture in control was 26.0%. Those of black nonwoven fabrics sheet and black film were less 1.2% and 2.9% than control, respectively. Soil temperature in control plot was $2.4^{\circ}$ Those of black nonwoven fabrics sheet and black film were higher $0.8^{\circ}$ and $1.8^{\circ}$ than control, respectively. Black film was better than control in stem length, leaf number and area, chlorophyll content, xylem exudate, first flowering and fruit riping periods. Black film was better in fruit weight and soluble solid, and lesser in fermented and malformed fruit ratios, and increased 28% in marketable fruit ratio to control, 1,864kg. This results were mainly from vinyl coverage between polyethylene film house to intercept rainfall and to increase soil temperature, which fasted growth of roots after transplanting in winter season.

Effects of Gamma-Irradiation and Fumigation on Microbial Growth, Color and Absorption Properties of Dried Red Pepper during Storage (감마선과 훈증처리가 저장 중 건고추의 미생물 생육, 과피 색도 및 흡광 특성에 미치는 영향)

  • Comparative effects between commercial fumigation (methyl bromide/MeBr, phosphine $gas/PH_3$) and gamma irradiation (5, 10 kGy) on dried red pepper were investigated in terms of it microbiological quality, moisture content Hunter's colors, and UV-visible spectra during storage for 8 months at mom temperature. The non-treated control samples showed total aerobic bacteria as $4.8\times10^5\;CFU/g$ in powdered state and $1.8\times10^2\;CFU/g$ in whole red repper. While yeasts and molds were $1.7\times10^5\;CFU/g$ in powdered pepper and $5.0\times10^2\;CFU/g$ in whole pepper, respectively. The effect of chemical fumigant on microbial decontamination was negligible, whereas irradiation at 5 kGy was proven to reduce the microbial populations by 2 to 3 log cycles that could improve the hygienic quality of powdered pepper. Moisture content of the samples showed no noticeable changes resulting 1mm irradiation or fumigation. Immediately after treatments, irradiation or fumigation reduced Hunter's lightness (L), redness (a), and yellowness (b) of the samples (p<0.05), but there was no difference in color parameters between the control and all treated stoups after 4 months of storage. It was found that storage period was more influential than irradiation or fumigation to changes in moisture and color of dried red pepper and ie powder.

Effect of Priming Treatment Using PEG on Seed Germination in Acer mono Max. (PEG를 이용한 priming 처리가 고로쇠나무 종자 발아에 미치는 영향)

  • This study was conducted to improve the germination percent and germination speed by seed priming using polyethylene glycol (PEG) 8,000 solution on Acer mono seed because it has low and irregular germination characteristics. Seed priming was carried out under 0, -0.25, -0.5, -1.0 and -2.0 MPa of water potential at $20^{\circ}C$ for 3 days. Primed seeds showed higher percent germination, germination speed, mean germination time (MGT) and germination performance index (GPI) than unprimed seeds. Especially, primed seed with -2.0 MPa of water potential had the highest germination properties. And primed seeds had a lower dormancy than the unprimed seeds. Relative growth rate and T/R ratio of seedling from primed seeds were measured to survey the effect of seed priming on the seedling vigor as well as seed germination. The seedlings from primed seeds at -2.0 MPa of water potential showed the highest relative growth rates of height and root collar diameter, however, the lowest value in T/R ratio. This study suggested that seeds priming at -2.0 MPa of water potential under $20^{\circ}C$ for 3 days enhanced not only the percent germination, germination speed, MGT and GPI but also the vigor and growth of seedlings in Acer mono.

Quality characteristics of cookies added with Takju pomace powder (탁주 주박 분말을 첨가한 쿠키의 품질 특성)

  • This study investigated the quality characteristics of cookies added with the powder of pomace powder, which was produced as a by-product in Korean rice wine (Takju). The quality of cookies was evaluated based on moisture content, color, hardness, and sensory evaluation. Cookies were prepared by addition of 0, 5, 10, and 15% Takju pomace powders to basic flour formulation. The pH values of dough added with Takju pomace powder were 3.04-6.52, which was lower than that of the control group. The moisture contents of cookies were 6.92-6.52% and were lowest in cookies added with 15% Takju pomace powder. The L value was reduced according to the increase in Takju pomace powder. On the contrary, a value increased. Especially, a value of the control was negative (-0.96) while those of cookies added with Takju pomace powder were positive. There were no significant differences in the b value of these cookies. For texture, hardness of cookies was lowest in 15% Takju pomace powder cookies. The results of the sensory evaluation compared to cookies with 10% powder Takju pomace were superior in appearance, taste and overall preference.

Effect of Heating system on Roof garden for Turf growth (옥상 잔디녹화시 Heating system의 효과)

  • This study was carried out to utilize the waste heat from office building for turfgrass culture on a roof garden. Heating system had been installed in the middle of soil profile on the turf areas in the garden plots. The results showed that the installation of heating system increased the shoot density, turfgrass quality, coverage rate, and root length compared with the control plots. The surface temperature of heating plots reached at $10.9^{\circ}C$ when the control plot showed $0^{\circ}C$, however, the soil moisture content was decreased 1.9% by the heating system. When the height of the snow accumulation reached over a 15cm, the it took only 4 days to melt out completely, while the height did not changed those period at the control plots. When the water temperature in boiler increased to $60^{\circ}C$ from a proper temperature of $55^{\circ}C$ in turf growth, the desiccation from leaf tip was started to occur caused by drought stress. More detail research should be followed in stress physiology in turf management in roof garden operation.
