A Study on the Effects of Sodium Nitrite on Lipid Oxidation of Pork during Cooking (돈육(豚肉)의 가열처리중(加熱處理中) 아질산염(亞窒酸鹽)이 지질산화(脂質酸化)에 미치는 영향(影響)에 관(關)한 연구(硏究))

  • The effects of sodium nitrite on weight loss, pH, color development, color and lipid oxidation for the cooking of longissimus pork muscle were studied. Higher cooking temperature and grinding of sample increased the extent of weight loss, but sodium nitrite lowered it. Cooking decreased pH and sodium nitrite lowered the level of decrease in pH. Sodium nitrite developed color and controlled discoloration with higher lightness. The content of malonaldehyde was generally accelerated by cooking, but was considerably reduced at higher cooking temperature and for longer cooking time. Sodium nitrite acted as an antioxidant but the antioxidant effect decreased with increasing cooking temperature and time. Cooking reduced the extent of each lipid on the whole. Phosphatidyl choline and phosphatidyl ethanolamine were the major phospholipids of pork, and their contents decreased during cooking. The major fatty acids in total lipids were oleic acid and palmitic acid. Those in phospholipids were linoleic acid ana palmitic acid. The high level of polyunsaturated fatty acids and essential fatty acids in phospholipids decreased during cooking. Sodium nitrite had an antioxidant effect on polyunsaturated fatty acids in both total lipids ana phospholipids.

Effects of Electron-Beam Irradiation and Storage on Cholesterol 7-derivatives Products of Meat (전자선 조사와 저장기간이 식육의 콜레스테롤 7-유도체 산화물의 발생량에 미치는 영향)

  • Beef, pork and chicken meat that retailed in market were used as experimental samples. Some samples in raw state were packaged with PVDC as aerobic and vacuum condition. The other samples were cooked until internal temperature arrived at $70^{\circ}C$ using electric oven and then packaged immediately in the same way of raw samples. After these samples were irradiated by electron beam (0, 1, 2 kGy), irradiated samples were stored in refrigerator $(2{\sim}4^{\circ}C)$. Identification and quantification of cholesterol oxides were analysed at 0, 7, 14 days. The results were following. The results indicated that raw-vacuum packaged lower detected than that of other treatments. In raw-vacuum packaged, the amounts of $7{\beta}-hydroxycholesterol$ were detected slightly $(below\;0.5\;{\mu}ug/g)$ during storage, and 7-ketocholesterol were detected during every stored time and amounts of this detection were $8.02{\sim}101.30\;{\mu}g/g$. In cooked-aerobic packaged, total amounts of detection were higher than that of other treatments, total amounts of cholesterol oxides were detected about $51.18{\sim}155.90\;{\mu}g/g$ during storage. In all results, pork and chicken samples were similar to the results of beef samples. In all results, total amounts of cholesterol oxides increased significantly as irradiation dose and storage time increased (P<0.05).

  • P $b_2$S $r_2$( $Y_{1-x}$ C $a_{x}$)C $u_3$ $O_{8+}$$\delta$/ samples were prepared with x=0.4~0.6 and small $\delta$. To minimize the extent of oxidative decomposition reaction which occurs during the preparation of this phase, two annealing steps were adopted : First, sintered samples of P $b_2$S $r_2$( $Y_{1-x}$ C $a_{x}$)C $u_3$ $O_{8+}$$\delta$/ are oxygenated under 100% $O_2$, which leads to a large $\delta$(e.g., $\delta$=1.8). Second, the resulting samples are deoxygenated under 0.1~1.0% $O_2$in $N_2$, lowering $\delta$ to desired values. This two-step annealing procedure minimized the extent of oxidative decomposition. However, even with the two-step annealing procedure, the oxidative decomposition of P $b_2$S $r_2$( $Y_{1-x}$ C $a_{x}$)C $u_3$ $O_{8+}$$\delta$/ cannot be completely suppressed if $\delta$ is to be reduced to maximize $T_{c}$. Electrical resistivity data show that $T_{c}$(onset) is a function of hole concentration in the Cu $O_2$layer, and the optimum hole concentration for the maximum $T_{c}$ is achieved when $Ca^{2+}$is substituted for $Y^{3+}$between 0.5 and 0.6 A $T_{c}$(onset)=80K has been observed for one such sample, and this is the highest $T_{c}$(onset) yet reported for this compound.ed for this compound.nd.

  • BiPbSrCaCuO계 초전도 소결체에 산화은을 첨가하여 자기 부양 효과를 나타나는 시료의 제작 조건을 조사하였다. 2%의 산화은이 첨가된 시편에서 자기 부양 효과가 가장 효과적으로 관측되었다. toroidal자석에서 관측되는 자기 부양 효과는 자석의 중심부분에서만 발생하며, 자석의 ring부분에서는 관측되지 않았다. 이 결과는 본 연구의 자기 부양 효과의 발생에는 자석의 형상 및 자속의 분포 형태와 밀접한 관련성이 있음을 의미한다. 자기 부양 효과에 관한 측정 결과로부터 자속 밀도가 극소가 되는 장소에 초전도체가 놓이게 되면 초전도체는 반자성효과로 인하여 초전도체의 상하로부터 작용하는 자기력을 받게 된다. 또한 산화은을 첨가하지 않은 BiPbSrCaCuO계 초전도체와 2%의 산화은이 첨가된 시편의 자기부양 효과를 조사한 결과 pinning center의 역할이 중요함을 알 수 있다.

Toxic Effects of Metal Plating Wastewater on Daphnia magna and Euglena agilis (Daphnia magna와 Euglena agilis를 이용한 도금폐수 독성평가)

  • The ecotoxicity tests for metal plating wastewater were conducted using Daphnia magna (D. magna) and Euglena agilis (E. agilis). Evaluation for sources of toxicity was performed by 1) Correlation analysis between the concentration of individual metals in the metal plating wastewater and the toxic effects on D. magna, 2) Toxicant identification evaluation methods including graduated pH method, EDTA procedure and sodium thiosulfate procedure, 3) Comparison of toxic effect value ($EC_{50}$ or $LC_{50}$) of individual metal on D. magna and it's concentration in the metal plating wastewater. To evaluate the possibility of E. agilis, a Korean domestic organism, as a test model organism for metal plating waste water, E. agilis toxicity test was also assessed using on-line euglena ecotoxicity system (E-Tox system). Based on toxicant characterization test using D. magna, it was expected that SS, oxidants and heavy metals are responsible for toxicity of metal plating waste water. Especially Cu, Hg, and Ag were the major cationic metals that caused toxicity. E. agilis is less sensitive than D. magna based on the $EC_{50}$ value however it shows prompt response to toxic test substances. E. agilis shows even a significant effect on the cell swimming velocity within 2 min to toxic metal plating wastewater. Our study demonstrates that E. agilis test can be a putative ecotoxicity test for assessing the quality of metal plating waste water.

  • Samples of refined soybean oil were irradiated with lights from a 20-watt incandescent tungsten lamp, a 20-watt fluorescent daylight type lamp, a 20-watt low-pressure mercury vapor germicidal lamp, and direct sunlight for an experimental period of 147 days. Some samples were stored in a dark room throughout the period as a control. The peroxide values of all samples were measured every week. The induction period of the samples was arbitrarily taken as the time required for the samples to reach a peroxide value of 15. The induction period of the control was estimated at 198 days. Those of the samples irradiated with the incandescent light, the fluorescent light, the ultraviolet light, and the sunlight were estimated at 196, 119, 52 and 6 days, respectively. The sunlight showed by far the strongest prooxidant activity whereas the incandescent light showed the weakest but distinct prooxidant activity. The small temperature differences observed among the various samples throughout the experimental period did not seem to affect the oxidation rates of the irradiated samples in any significant way.

Chimie Douce Synthesis of Chalcogen-Doped Manganese Oxides (칼코겐이 도핑된 망간 산화물의 저온합성 연구)

  • manganese oxides have been prepared by Chimie Douce redox reaction between permanganate and chalcogen element fine powder under acidic condition (pH = 1). According to powder X-ray diffraction analyses, the S- and Se-doped manganese oxides are crystallized with layered birnessite and tunnel-type -MnO2 structures, respectively. On the contrary, Te-doped compound was found to be X-ray amorphous. According to EDS analyses, these compounds contain chalcogen dopants with the ratio of chalcogen/manganese = 4-7%. We have investigated the chemical bonding character of these materials with X-ray absorption spectroscopic (XAS) analysis. Mn K-edge XAS results clearly demonstrated that the manganese ions are stabilized in octahedral symmetry with the mixed oxidation states of +3/+4. On the other hand, according to Se K- and Te L1-edge XAS results, selenium and tellurium elements have the high oxidation states of +6, which is surely due to the oxidation of neutral chalcogen element by the strong oxidant permanganate ion. Taking into account their crystal structures and Mn oxidation states, the obtained manganese oxides are expected to be applicable as electrode materials for lithium secondary batteries.

  • An attempt was made to determine some trace metals in highly concentrated samples using micro sampling technique in flame atomic absorption spectrophotometry. Major instrumental parameters and optimun analytical conditions investigated were the measuring time of instrument (the speed of electronics), sample volume, burner height, aspiration rate, and fuel to oxidant ratio. Advantages of the present technique are not only rapid, simple, and sensitive with good precision but also capability of analyzing small volume of sample and ability to handle highly concentrated samples without serious burner clog-up problem compared to conventional flame atomic absorption.

The Characterization of Controlled Low Strength Material (CLSM) Using High CaO Fly Ash without Chemical Alkaline Activator (고칼슘 플라이애쉬를 이용한 알칼리 활성화제 무첨가 저강도 유동화 채움재 특성 평가)

  • The experimental investigation aims at developing controlled low strength materials (CLSM) using a self-cementitious fly ash (FA) as a binder and a bottom ash (BA) as a aggregate. The fly ash and bottom ash used in this study were obtained from a circulating fluidized bed combustion boiler (CFBC) which produces relatively high CaO containing fly ash. To find the optimum mixing condition satisfying flow consistency and unconfined compression strength (UCS), the CLSM specimens were prepared under various mixing conditions, including two types of aggregate and different weight fractions between fly ash and aggregate. Additionally, the prepared specimens were evaluated using a scanning electron microscope (SEM) and X-ray diffraction (XRD). The results of this study demonstrate that the water content satisfying flow consistency ranges from 42% to 85% and the flowability is improved with increasing the fraction of aggregate in whole mixture. The USC ranges from 0.3 MPa to 1.9 MPa. The results of UCS increases with increasing the fraction of aggregate in FA-sand mixtures, but decreases with increasing the fraction of aggregate in FA-BA mixtures. SEM images and XRD patterns reveal that the occurrence of both geopolymerization and hydration. The results of this study demonstrate that CFBC fly ash could be used as an alternative binder of CLSM mixtures.

The Formation of Cholesterol Oxidation Products during Its Drying and Cooking in Squid (오징어 건조 및 조리 중 콜레스테롤 산화물 생성)

  • Cholesterol oxidation products(COPs) such as 7-ketocholesterol, 7 ${\alpha}$, 7 ${\beta}$-hydroxycholesterol and 25-hydroxycholesterol were analyzed for ensuring the safety of squid during its drying and cooking. In addition. changes of malonaldehyde in squid during its drying and cooking were also investigated. Cholesterol was detected 636.4m9/1009 in fresh sample, which was decreased during its drying and cholesterol contents in dried sample were 468.9mg/100g, 486.8mg/100g, respectively, while COPs contents of sun and hot air dried samples increased about 6.2 times more than those contents of fresh sample. Regardless of cooking methods, the contents of COPs in dried products increased after cooking. Especially, those contents were determined 127.3 mg/g in sun dried samples were cooked by microwave oven. The malonaldehyde contents of dried products increased after cooking, its contents in cooked samples by an microwave oven after sun dried were about 4.3 times more than in control products. In general, a small quantity of COPs were formed in dried samples which were cooked by a steam.
