Changes in Free Amino Acids by Lipid Deterioration in the Biological System of Rice Bran (미강지방질의 산패에 따라 생성된 산화 지방실이 유리아미노산의 변화에 미치는 영향)

  • The damaging effect of peroxidized lipid on amino acid was studied in rice bran by determining the free amino acid content in abiological system. The content of free amino acid in the rice bran stored in the controlled atomsphere of $35^{\circ}C$ with relative humidity of 65% for 180 days, increased during the first 60 days of storage, and then decreased as the lipid peroxidation proceeded. The content of free amino acid in the sample exposed to the air of $25-30^{\circ}C$ with relative humidity of 70-90% for 100 days decreased rapidly in the beginning period of the storage. The lipid oxidation developed much faster in the rice bran exposed to the air than in the rice bran stored in the controlled atmosphere. The correlation coefficients between the total content of free amino acid and degree of peroxidation for the samples of both conditions were above -0.8, which is significant(p<0.05). The changes in the concentration of serine, glutamic acid, proline, methionine, lysine, histidine, and arginine were significantly correlated with the degree of lipid oxidation(p<0.05) for the samples stored in the controlled atmosphere and the open air. It was observed that peroxidized lipid has damaging effects on protein in the bilogical system of rice bran.

Changes in Quality Characteristics of Green Tea Beverage PET during High Temperature Storage (녹차음료 PET제품의 고온저장중의 품질 특성 변화)

  • The objective of this study was to characterize quality changes of PET-packaged green tea beverage during 4-week storage at $60^{\circ}C$. Changes in oxygen transmission of the PET bottle package and cap removal torque were also examined. MXD6 blend PET bottle showed stability in the gas barrier. Its cap removal torque was kept stable during the 4 weeks. pH, color value, contents of vitamin C and catechin showed significant changes during the storage while caffeine and amino acid did not change significantly. Four alcohol flavor components (hexanol, linalool, menthol, and ${\alpha}$-terpineol) increased rapidly during the first three weeks while d-limonene did not show significant change. Sensory test showed decrease in astringent flavor lowering the product flavor and acceptability.

새만금 간척지 적응 구근화훼작물 선발과 경관농업 이용

  • 전북 서해안 새만금 지역에 조성되는 간척지 면적 28,300ha의 30%인 8,400ha 정도가 농업용지로 사용되는 계획이 확정됨에 따라 해당 용지를 효율적으로 사용 할 수 있는 다양한 활용 방안이 요구되고 있다. 대단위 농업지구가 들어설 예정지인 새만금 광활 간척지는 네덜란드와 유사하게 토양의 대부분이 미사질 양토로 이루어져있어 적용 가능한 화훼류를 적절히 선발하고 적합한 재배기술을 도입한다면 대규모 화훼제배 단지로서의 성장 가능성이 충분할 것으로 판단된다. 따라서 전북 농업기술원에서는 2004년부터 7년에 걸쳐 새만금 간척지의 농업적 활용도 제고와 경관농업 육성을 통한 관광자원화 가능성을 확인하기 위하여 72종의 원예작물 적응시험을 실시하였으며 22종의 자생식물과 튤립, 아이리스, 수선화, 히아신스, 참나리 등 5종의 구근 화훼류를 적합 화훼류로 선발하였다. '08~09년에는 내염성과 저온 및 풍해 저항성이 있는 아펠톤, 골든아펠톤, 네그리타, 프랑소와즈, 키스네리스 등을 간척지적용 가능 주요 튤립 품종으로 선발 하였는데 선발된 품종들을 대상으로 높은 염농도 하에서의 체내축적 무기성분을 조사한 결과, K와 Mg은 증가되는 경향이었으나 Ca은 감소되었으며, Cl이온은 현저하게 증가하였다. 또한 튤립체내의 산도 및 전기전도도와 항산화효소의 활성이 증가하였는데 스트레스 반응결과 유해산소가 체내에 축적되고, 이를 중화시키기 위하여 수소이온을 소모함으로써 체내의 산도는 상승된 것으로 추정되며 염분함량이 높을수록 삼투압에 의하여 뿌리에서 흡수는 양분이 적은 반면 잎 줄기의 증산작용은 동일하기 때문에 상대적으로 체내의 농도가 높아져 전기전도도가 상승된 것으로 판단된다. 식물 스트레스의 지표물질로 사용되고 있는 proline 함량도 토양내의 염도가 상승되면서 증가되었으며 엽록소 함량은 감소되는 경향을 보였다.

Optimal Condition for Torrefaction of Eucalyptus by Response Surface Methodology (반응표면분석법을 이용한 유칼립투스의 반탄화 최적조건 탐색)

  • The optimal condition for the torrefaction of eucalyptus (Eucalyptus globulus) was investigated by response surface methodology. The carbon content in the torrefied biomass increased with the severity factor (SF), while hydrogen and oxygen contents decreased. The calorific value of torrefied biomass ranged from 20.23 to 21.29 MJ/kg, depending on the torrefaction conditions. This implied that the energy contained in the torrefied biomass increased by 1.6 to 6.9%, when compared with that of the untreated biomass. The weight loss of biomass increased as the SF increased. The Code level of reaction temperature had the highest impact on the energy yield of torrefied biomass, while the effect of Code level of reaction time was considerably low. The highest energy yield was obtained at low SF.

Ternary Phased Graphene/Silica/EVOH Nanocomposites Coating Films (삼성분계 그래핀/실리카/EVOH 나노 복합 코팅 필름)

  • Ternary phased graphene/silica/EVOH nanocomposite coating materials were prepared via sol-gel process and solution blending process. From both SEM observations and XRD analysis, the exfoliated structure and dispersion state of graphene nanosheets and silica particles in the nanocomposites as well as the intercalated and exfoliated structure of the prepared graphene oxide were confirmed. The incorporation of GrO and silica at appropriate content resulted in remarkable improvement in oxygen barrier property of the ternary phased nanocompoiste-coated BOPP films, compared with that of binary(silica/EVOH) phased nanocomposite coating films, however, at excess amount of GrO and silica, very slight variation was observed due to incomplete exfoliation, dispersion of graphene tactoids, and formation of micro cracks in the silica clusters. In addition, the transparency of nanocomposite-coated film was investigated by measuring the light transmittance as a function of GrO contents, suggesting the possibility for the application of food packaging films.

Characteristics of Biochar Derived from Lignocellulosic Biomass and Effect of Adsorption of Methylene Blue (목질계 바이오매스 유래 바이오차의 특성과 메틸렌블루 흡착 효과)

  • In this study, biochar was produced from biomass waste, and its methylene blue adsorption capacity was evaluated. The major components of the biomass were cellulose, hemicellulose, and lignin. Ash content was high in waste wood. Carbonization yield decreased as carbonization temperature increased, as did hydrogen and oxygen content, but carbon content increased. Increased carbonization temperature also increased the specific surface area and micropores of biochar. At 600 ℃, biochar had the highest specific surface area (216.15~301.80 m2 /g). As a result of methylene blue adsorption on biochar carbonized at 600 ℃, oak, waste wood, and pruned apple tree branches fit the Freundlich model, while pruned peach tree branches fit the Langmuir model. In the adsorption kinetics of methylene blue on biochar, oak and pruned peach tree branches fit a pseudo-first-order model, while waste wood and pruned apple tree branches fit a pseudo-second-order model.

The Effects of Mulberry Fruit Extract Supplementation on the Serum Mineral Contents and Oxidative Stress Markers of Middle-Aged Humans Living in Choongnam Area (오디추출물 급여가 충남 일부지역에 거주하는 중년 남, 녀의 혈청 무기질 수준 및 항산화 관련 인자에 미친 영향)

  • Effects of mulberry fruit extract (MFE) on the levels of serum mineral and serum oxidative stress markers on 31 middle-aged humans (16 males and 15 females) supplemented with MFE for 4 weeks were investigated. Contents of mineral per 100 g MFE were 80.66 (Ca), 12.26 (Mg), 6.26 (Fe), 0.05 (Cu), and 4.04 mg (Zn). Relative scavenging activities of MFE and its cyanidin-3-glucoside on 1,1-diphenyl-2-picrylhydrazyl (DPPH) were 34 and 85%, respectively, using ascorbic acid as standard. Anthropometry measurements, serum mineral (Ca, Mg, Fe, Cu, and Zn)levels, and serum oxidative stress markers were analyzed before and after supplementation of MFE. After supplementation of MFE, no significant differences were observed in anthropometry measurements and levels of serum thiobarbituric acid reactive substance (TBARS) in males and females, and ferric-reducing ability plasma (FRAP) in males, whereas serum mineral levels (Fe in males, and Fe, Cu, and Zn in females) and serum FRAP levels (both males and females) increased significantly.

Antioxidative Activity of Smilax china L. Leaf Teas Fermented by Different Strains (균주에 따른 청미래덩굴잎 발효차의 항산화 활성)

  • To evaluate the functional characteristic and availability for drinking of the fermented Smilax china leaf tea by using different microbial species, various fermented leaf tea was prepared by non-fermentation (C), or the fermentation of Saccharomyces cerevisiae (S), Bacillus sp. (B), Bifidobacterium bifidus (L), Monascus pilosus (M) and Aspergilus oryzae (A), and sensory and antioxidant parameter of each brewed tea was observed. The color of the A tea was red, but the other teas were yellow in color. Furthermore, the aesthetic quality of the A and M tea was 3.95 and 3.30 point, respectively, and other teas (2.55~2.28) were similar to that of the C tea. TP of fermented tea water extract was lower than that of the C, although TF was not significantly different between the fermented and non-fermented tea. Especially, TF of the A tea was significantly lower than those of the other teas. The range of EDA ($1mg/m{\ell}$) of water and ethanol extracts of tea C and the fermented teas was 19.25~22.48%; however, tea A was only 8.04~12.49%. In addition, FRAP, FICA and LPOIA of teas were not significantly different between the fermented and non-fermented teas. On the other hand, XOIA and AOIA of tea ethanol extracts were slightly higher than those of water extracts. XOIA of water extract derived from the teas was 4.83~9.20%, while ethanol extract of these was 9.00~19.00%. However, XOIA of B and L teas water extract was not detected. Furthermore, AOIA of fermented tea water extract (30.17~48.52%) were lower than those of ethanol extract (44.09~66.93%). In this study, interestingly, antioxidant parameters, such as FRAP, FICA, LPOIA and AOIA, of the A tea water extract (0.1%) was higher than that of the other tea in spite of high decreasing rate in the contents of TP and TF. Therefore, above results imply the possibility of fermented Smilax china leaf tea as a functional food.

Quality Changes in Oyster Mushrooms during Modified Atmosphere Storage as Affected by Temperatures and Packaging Materials (저장 온도와 포장재에 따른 느타리버섯의 MA 저장 중 품질변화)

  • Modified atmosphere packaging was applied to oyster mushrooms (Pleurotus ostreatus) to study the effect of storage temperatures and packaging materialso. Whole mushrooms (200g) were package with polyethylene film $(PE,\;60{\mu}m\;thickness)$, ethylene vinyl acetate (EVA), or ceramic film (containing 5% zeolite) and stored at 0, 5, 10 and $20^{\circ}C$. Weight loss, color, firmness, gas composition $(O_2,\;CO_2)$ inside the film package and ethanol content in the tissue of MA packaged mushrooms were examined. Mushroom that were packed unwrapped in a conventional hardboard box (2 kg) lost marketability at a very early stage of storage due to weight loss, shrinkage, browning, and spore formation. During storage, film packaging prevented or retarded the deterioration of the mushrooms in the aspects of appearance, texture, and discoloration. Firmness slightly decreased with storage time. Total color difference was much higher in the control than in the film-packaged mushroom and rapidly increased at the early of storage. Correlation analysis showed a high correlation between total color difference and b values. These results were characterized by the reduced respiration rate resulting from elevated carbon dioxide and reduced oxygen levels in the package. At all storage temperatures, ethanol content in the tissue increased slightly at the early part of storage and rose considerably towards the end of the storage period. Ethanol content in the oyster mushrooms was higher in the stipe than in pileus tissues. The shelf life of the oyster mushrooms was about $8{\sim}11$ days at $0^{\circ}C$, about $4{\sim}6$ day at $5^{\circ}C$, about $2{\sim}3$ days at $10^{\circ}C$, and about $1{\sim}2$ days at $20^{\circ}C$.

Comparison of the Antioxidant Activities of Organic Solvent Fractions of Leaf and Root Extracts of Peucedanum insolens Kitagawa (왕산방풍의 잎과 뿌리의 유기용매 분획물에서의 항산화 활성 비교)

  • This study compared and analyzed the antioxidant activities of various organic solvent fractions from the leaves and roots of Peucedanum insolens Kitagawa. For this study, the dried leaves and roots of P. insolens Kitagawa were first extracted using 70% ethanol. The extracts were sequentially sub-fractionated in the order of hexane, chloroform, ethyl acetate, n-butanol, and water. The results revealed that the distribution of total phenolic contents by organic solvent fractions showed the same pattern in both the leaves and roots, with the highest in the ethyl acetate fraction (101.1±1.0 mg vs 71.2±3.4 mg of GAE/mg), but the lowest content in the hexane fraction (9.5±0.2 mg vs 7.5±2.1 mg of GAE/mg). The distribution of total flavonoid content in the organic solvent fractions showed the same pattern as that of total phenolic content. The results of DPPH, ABTS, and FRAP assays showed that the leaf and root extracts exhibited free radical scavenging activity in the same pattern, particularly, the ethyl acetate fraction had the highest activity. These results indicate that not only the roots of P. insolens Kitagawa but also the leaves possess potential substances that exhibit strong antioxidant activity. Significant correlations (R=0.903, p<0.0001, DPPH radical; R=0.891, p<0.001, ABTS radical; R=0.745, p<0.05, FRAP radical) between total phenolics and radical scavenging activities, but also significant correlations (R=0.867, p<0.001, DPPH vs. ABTS radicals; R=0.882, p<0.0001, DPPH vs. FRAP radicals; R=0.973, p<0.0001, ABTS vs. FRAP radicals) between radical scavenging activities were found in the organic solvent fractions. Therefore, as in the roots of P. insolens Kitagawa, the leaves possess strong antioxidant capacity and can be used as the main antioxidant material.
