Effects of Gamma Irradiation on the Content of Riboflavin in Egg Powder and Niacin in Chicken Breast (방사선 조사에 의한 계란분말의 리보플라빈 및 닭고기의 나이아신 함량변화)

  • Not enough data on nutritional change of foods by gamma irradiation are accumulated. It is known that amounts and digestibility of macronutrients such as carbohydrates, proteins and lipids are not significantly altered by irradiation treatment. However, among micronutrients, vitamins are known to be susceptible to irradiation. This study was conducted to investigate the change of contents of riboflavin in egg powder and niacin in chicken breast. By irradiation of 5 and 10 kGy, riboflavin contents of egg powder were respectively reduced to $80.18\%\;and\;84.80\%$ of non-irradiated sample, and niacin contents in chicken breast were reduced to $85.30\%\;and\;92.60\%$, respectively. These results suggest that the reduction rate by gamma irradiation seems to be lower in niacin content than in riboflavin, and the losses of riboflavin and niacin occur within the range of $20\%$ by irradiation of up to 10 kGy.

  • 본 연구에서는 도심지 지하철 터널을 대상으로 지반공학적 위험요소가 공사비 및 공기에 미치는 영향을 정량적으로 평가하기 위하여 잔여 리스크 개념을 이용하여 조사개소의 증가에 따른 공사비 및 공기의 신뢰도를 분석하였다. 신뢰도 분석결과, 지반조사 개소가 증가함에 따라 공사비 및 공기에 대한 위험도가 축소됨을 확인하였으며, 이러한 결과를 통하여 도심지 지하철 터널에서의 지반공학적 위험도 분석의 유용성을 확인하였다.

  • 건조 농산물을 비롯한 식품에 대한 방사선 조사가 허가, 시행되고 있으며, 그 적용 범위도 확대되고 있다. 이에 따라 건조 생약재의 위생화의 대체방법으로 방사선 조사 기술의 적용이 산업계로부터 요구되고 있다. 본 연구는 감마선 조사 생약재의 효능 변화 유무를 확인하기 위한 일환으로 수행되었다. 저자 등은 사물탕, 보중익기탕 및 삼령백출산 등이 방사선 방호 효과를 보이는 것으로 이미 보고한 바 있다. 본 실험에서는 감마선 조사(10 kGy)한 이들 한약제 각각의 방사선 방호 효과를 비조사 시료와 비교 평가하였다. 효과평가를 위하여 방사선 조사 마우스에서 소장움 생존시험, 내재성 비장집락 형성시험 및 apoptosis 측정을 시행하였다. 각 한약제의 감마선 조사 시료는 3가지 시험 모두에서 비조사 시료와 유사한 효과를 나타내었으며(p<0.05), 생체내 독성도 나타내지 않았다. 이는 생약재의 여러 가지 고유 효능 중 일부의 안정성으르 확인한 것으로 생각되며, 이 결과로 미루어 보아 감마선 조사 생약재의 효능 안정성은 한의학적 고유의 효능 비교 평가를 통하여 확인될 수 있을 것으로 사료된다. 한편, 저자 등은 감마선 조사 생약재의 유효성분 안정성 및 유전 독성학적 안전성을 확인하여 보고한 바 있다. 이들 결과를 토대로 향후 감마선 조사 행약재의 고유 효능의 안정성에 관한 체계적인 연구결과를 얻는다면 생약재의 위생화 수단으로 감마선 조사기술의 이용이 실용화될 수 있을 것으로 사료된다.

Effects of irradiated egg white on the quality of angel food cake (방사선 조사 난백이 엔젤 푸드 케이크의 특성에 미치는 영향)

  • The quality of an angel food cake prepared with albumen of irradiated eggs was investigated. Fresh shell eggs were irradiated at various doses up to 3 kGy. Egg white from irradiated eggs decreased the specific gravity and increased the pH of cake batter. The specific volume and expansion ratio of the cake increased by the use of albumen from irradiated eggs. Egg white from irradiated eggs made the crust color of cake darker, more reddish and yellowish. The textural characteristics of the cake were also affected by irradiation. Irradiation caused a decrease in hardness, gumminess and brittleness and an increase in cohesiveness and springiness. Overall, egg white from irradiated eggs apeared to make an angel food cake softer than that of non-irradiated egg white.

A Study on the Differences in the Dietary Habits, Nutrient Intake and Health Status of Vegetarian (Lacto-Ovo Vegetarian) and Non-Vegetarian Korean Elementary School Children (초등학생의 Vegetarian(lacto-ovo vegetarian)과 Non-Vegetarian의 식습관, 영양소 섭취 및 건강습관 차이에 관한 연구)

  • The objective of this study was to investigate the effects of vegetarian (lacto-ovo vegetarian) and non-vegetarian diets on dietary habits, nutrient intake, and health status. The vegan subjects were 22 children. Among them, 54.5% of the subjects had a specific religion, 36.4% had been vegetarian since weaning, and 9.1% had become vegetarian to prevent obesity or atopy. The percentages of excessive eating by the vegetarian children were lower compared to the non-vegetarian children. The rates of intake of vegetables (42.2%) and fruits and fruit juice (55.9%) by the vegetarian children were higher compared to non-vegetarian subjects. Non-vegetarian children consumed more milk, dairy products, as well as meat, fish, eggs, soybean, and tofu than the vegetarian subjects. Vegetarian children ate more bread, potato, and fruits as snacks than non-vegetarian children. Furthermore, non-vegetarian children consumed more carbonated beverages and ice cream than the vegetarian subjects (p<0.05). Generally, the subjects' energy intake was lower than standard values, and vegetarian children's calcium intake was deficient. Non-vegetarian children's fiber intake was deficient, and they consumed fat, vitamin $B_2$, calcium, and cholesterol excessively (p<0.05). Nutrition tablet intake was higher among non-vegetarian children; however, the rate of fatigue among subjects was higher among vegetarian subjects than non-vegetarian subjects. Among the vegetarian subjects, 19.6% reported that they had a cold. Consequently, for the purpose of attaining balanced physical development and growth among children, an education program that emphasizes complete diets should be prepared.

Detection of Post-Irradiation of Dry Soup Base Ingredients in Instant Noodle by Thermoluminescence Technique (라면 건조 수프 재료의 방사선 조사 검지를 위한 Thermoluminescence 활용)

  • It was determined whether thermoluminescence (TL) technique is a potential method to detect post-irradiation of dry soup base mix for instant noodle and its ingredients. The ingredients or the mixtures were irradiated, from which minerals were isolated using sodium polytungstate solution. Their TL signals (1st glow TL intensity/2nd glow TL intensity reirradiated at 48.6 Gy) were measured. The TL signals in temperature ranges of $229{\sim}295^{\circ}C$ and $229{\sim}361^{\circ}C$ showed larger differences between unirradiated and irradiated samples compared to other ranges. The average TL signals for unirradiated garlic powder, ginger powder, black pepper powder, onion powder, red pepper powder, and sesame seeds were below 0.2, while those for onion powder, red pepper powder, and sesame seeds irradiated at 10 kGy were over 20 in the two temperature ranges. The average TL signals for unirradiated soup mixture were 0.08 and 0.1, respectively, in the two temperature ranges, while those for the mixtures containing 10 kGy-irradiated onion powder, red pepper powder, and sesame seeds individually or in combination were over 7. The average TL signals for the mixtures irradiated 1, 5, and 10 kGy were over 10.

  • Silt or clay alluvium fully saturated with water generally shows low resistivity. Sometimes it is believe that the low resistivity layer is considered as good aquifer but this makes problems in the development of groundwater. To overcome this problem, we adopted induced-polarization(IP) method with resistivity method. Laboratory experiments and resistivity/IP field surveys with non-polarization electrodes were conducted for the study. Laboratory experiments shows that the increase of clay contents in the sample mixed with sand and clay give low resistivity and high chargeability. We used this experiment results in the interpretation of resistivity/IP field data which were obtained in riverbank filtration. Finally, the layer which has low resistivity and chargeabilty would be regarded as a good aquifer for the development of groundwater intake.

  • 도로의 건설을 위해서는 통상 타당성조사, 기본계획, 기본설계 및 시공의 여러 가지 단계를 밟는다. 이들 각 단계를 거치면서 일반적으로 투자비 추정액은 실제 공사비와 더욱 근접하게 되게 되나, 타당성조사 등 계획단계에서의 추정액은 실제 공사비와 상당한 차이를 보이는 것이 일반적이다. 이러한 차이는 계획물량의 추정이나, 단가의 추정 등에서도 발생할 수도 있고, 구체적인 지질조사 등이 없는 상태에서 가정한 지질조건이나 공사조건 등에 대한 불확실성으로 인해 발생한다. 현재의 일반적인 관행은 이러한 투자비 추정단계에 작용하는 불확실성을 명시적으로 고려하여 투자비 추정치의 확률적인 분포를 산정하지 않고, 하나의 확정적인 추정치만 제시하고 있어 제시된 추정치의 신뢰도를 확인하기가 곤란하다. 본 연구에서는 현재의 관행과는 달리 투자비추정에서 관여하는 불확실성을 확률분포를 사용하여 명시적으로 고려하여 추정된 투자비에 대한 확률분포를 명시적으로 파악하려는 노력을 하였다. 추정된 투자비에 대한 확률분포는 Mont Carlo 시뮬레이션 방법을 이용하여 분석하였으며, 연구의 결과와 현재 각 계획단계에서 일반적으로 용인되는 추정오차와의 관계도 분석하였다. 결과에 근거하여 도로사업에 대한 투자비 추정을 효율적으로 할 수 있는 방법을 제시하였으며, 추가적인 연구방향도 제시하였다.

  • 국내외 비유사량 추정방법에 대하여 심도있게 조사하였다. 지금까지 우리나라 댐 계획시 이용됨 비유사량 추정방법을 검토한 결과, 유사량 자료의 부족과 적절한 비유사량 추정방법의 결여로 각 댐의 비유사량 추정은 일관성이 없이 대부분 댐 설계자의 경험과 주관에 의하여 결정된 것으로 나타났다. 따러서, 본 연구에서는 새로운 비유사량 추정에 관한 1단계 연구로서 국외의 비유사량 추정방법을 조사,분석하고 국내 가용자료의 한계를 고려하여 새로운 비유사량 추정방법의 개발방향과 방법을 제시한다.

Stability of Functional Properties and Chemical Components of Gamma-Irradiated Astragali Radix (감마선 조사 황기의 기능성 및 화학적 성분에 대한 안정성 평가)

  • Stability of functional properties and chemical components of gamma-irradiated Astragali Radix (AR) were investigated to study the application of radiation technology for preservation and hygiene of medicinal herbs. Thus, ethanolic extracts and ethyl acetate fractions were prepared from gamma-irradiated and gamma-nonirradiated AR, respectively. Functional properties were estimated by comparing antioxidant activity (DPPH radical scavenging activity, lipid peroxidation inhibitory activity) and protective effect against oxidative DNA damage in human lymphocytes. Chemical components were compared by HPLC analysis, comparing with calycosin ($_{t}$ R= 15.111 min), which was isolated from ethyl acetate fraction as a standard material. Their antioxidant activities and protective effects against oxidative DNA damage showed no significant difference at the concentrations tested. HPLC analysis also showed almost same pattem. These results suggest that the functional properties and chemical components of AR are not affected largely by gamma irradiation, and radiation technology can be applied to preservation and hygiene of medicinal herbs.s.
