The aim of this study is to investigate cane molasses pretreatments for the production of cellulose by Acetobacter sp. V6, which has excellent bacterial cellulose (BC) producing capacity in the shaking culture. Among pretreatments of cane molasses, 1% (w/v) tricalcium phosphate (TP) treatment was more efficient in BC production. The physico-chemical properties of BCs that were produced in static and shaking cultures were also investigated. Although BC had an emulsifying ability, its emulsion stability was low. Water holding capacity (WHC) of BC was high; the WHC of BC produced in static culture was 14 times higher than that of $\alpha$-cellulose. In addition, the viscosity of BC was higher than that of $\alpha$-cellulose. Composition analysis by FT-IR showed no difference in composition between BC and plant cellulose. In the crystallinity analysis by XRD, all BC samples showed crystallinity. All BC samples showed reticulated structures consisting of ultrafine cellulose fibriles. Microfibriles of cellulose from static culture were especially more compact than those of cellulose from shaking culture.
The physicochemical properties of chitin and chitosan produced from lobster shrimp (Metanephrups thomosonii) shell were investigated. Lobster shrimp chitin contained 6.84% nitrogen, 0.57% fat and 0.32% ash, while chitosan contained 7.52% nitrogen, 0.13% fat and 0.33% ash. Degree of deacetylation and molecular weight of chitosan were 67.5% and $9.1{\times}105$, respectively. Yields of chitin from the shell portion and chitosan from the chitin were 15.7% and 75%, respectively. Chitin and chitosan contained 2.64 and 1.39mg/g of residual amino acids, respectively, with both the most predominant being lysine. Chemical structures of the lobster shrimp chitin and chitosan have been investigated by the IR and solid state $^{13}C-NMR$ spectra.
The seeds of Torreya nucifera, which were shown to contain high level of oil, were characterized to evaluate their possible utilization as oil source. Oil was extracted by compression from the seeds and its physico-chemical properties and, total fatty acid composition were determined. The results are summarized as follows: 1. Proximate components of the seeds were shown to be: moisture, 12.3% ; crude protein, 9.46%; crude fat, 54.29 %; fiber, 5.28 %; ash, 2.13%. 2. Physico-chemical characteristics of the seed oil were determined as follows: specific gravity 0.92, refractive index 1.470, iodine value 127, saponification value 182.2, acid value 9.5, ester value 172.7. 3. The major fatty acids of the total lipids were linoleic (46.77%), oleic (31.68%) and palmitic acid (6.92%).
Aiming to rccycle the valuable mrnpunenl such as iron oxiiles and carbon from blast turnace sludge, [he physlco-chemical property and classification charactei~stics by hydrocyclone wcie invcstigxted. Carbon in sludge wils analysed to bo cxated mostly in coarse particles of sludge as a form of graphite whereas zinc lnortly in fine particles as zinc sulfides. On thc contrxy, iron oxides wne proved to be in the form of hematite, magnetile without any segregations according to particlc sizes of sludge. From the results of classiIication test using hydmcyclane of 75 mm dm, the recovcry and dczincificatian rate of low zinc sludge wcrc in the range of 67.9-73.6%, and 72.7-86 8%, respectively.
This study was conducted to develop effective manufacturing methods of a total mixed ration(TMR) composed of broiler litter(BL) and bakery by-product(BB) for ruminants. Five experiments included a small-scaled manufacture of TMR using a deepstacking method(Exp. 1), its pelletization(Exp. 2), its field-scaled manufacture(Exp. 3), a field-scaled manufacture using an ensiling method(Exp. 4), and a mixing process of deepstacked BL and BB prior to feeding(Exp. 5). BL and BB were mixed at a ratio which makes total digestible nutrients of the TMR 69%. For each experiment, temperature, appearance and physico-chemical properties were recorded and analyzed. The chemical composition data revealed that the mixture of BL and BB showed nutritionally additive balance which resulted from a considerable increase(P<0.05) of organic matter and a desirable decrease(P<0.05) of protein and fiber up to the requirement level for growing ‘Hanwoo’ steers. Deepstacking of BL and BB in Exp. 1 and 3 resulted in a sufficient increase of stack temperature for pasteurization, little chemical losses, appearance of white fungi on the surface, and partial charring due to excess stack temperature. For Exp. 2, its pelleting, which was successful using a simple, small-scaled pelletizer, resulted in a little loss(P<0.05) of organic matter and an increase(P<0.05) of indigestible protein(ADF-CP). Ensiling the mixture in Exp. 4 made little effect on chemical composition; however, one month of the ensiling period was not enough for favorable silage parameters. Deepstacking BL alone in Exp. 5 tended(P<0.1) to decrease true protein : NPN ratio and hemicellulose content and increase ADF-CP content due to the heat damage occurred. Deepstacking or ensiling of BL-BB mixtures and simple incorporating of BB into deepstacked BL prior to feeding could be practical and nutrients-preservative methods in TMR manufacture for beef cattle, although ensiling needed further hygienic evaluation.

The following study is the result of herbal teas puffed at different temperatures between $140{\sim}220^{\circ}C$. There was change of single breadth that some carbonization occurs according to rise of processing temperature and crude ash content rises relatively, and crude protein and crude fat content had hardly changed and moisture content decreased. The solid elution rate of the herbal teas appeared by 0.18~0.27% (w/w), it increased as puffing temperature rises. The reason for the increase in solid elution rates is due to the breakage of cross bridges between the raw materials in the herbal tea which are carbohydrates, proteins, lipids and etc. after treatments of physical changes rather than chemical ones. Benzopyrene content happened difference in B(${\alpha}$)P content according to processing temperature, raw material by 0.18~0.24 ppbs.

$Prunus$$mume$ was steamed for easier removal of the pulp. The steamed fruit pulp was vacuum dried and powdered. The steamed $Prunus$$mume$ powder (SPP) was passed through a 250 ${\mu}m$ sieve, fluidized in a fluid-bed granulator, and then granulated by top-spraying with water (SPPGW) or the extract obtained from steam (SPPGE). Then the physicochemical and sensory properties of SPP, SPPGW, and SPPGE were evaluated. The flowability of powder (angle of repose $^{\circ}$) of SPP, SPPGW and SPPGE was $23.59^{\circ}$, $11.07^{\circ}$, and $13.94^{\circ}$, respectively. The water dispersibility of SPP, SPPGW, and SPPGE was 18.69, 10.04 and 6.00 sec, respectively. Also, the overall acceptance of SPP, SPPGW and SPPGE was 3.00, 3.44 and 6.56, respectively. In conclusion, SPPGE can be used as granular steamed whole fruit pulp with good powder flowability and dispersibility, and therefore consumer acceptance.
