  • Recently, the number of coffee shops has continued to increase, and information searches have been increasing for consumers who want to visit coffee shops. We wanted to find out the impact on the intention of revisiting a coffee shop by adding information search factors to the existing coffee shop's selection properties and search for the actual selection properties, and summarize the results as follows. The analysis of this study was conducted in two ways, before and after visiting a coffee shop through information search. First, the four factors and optional attributes that are important in information retrieval were the reliability of information (the number of reviews and views by coffee shops, recent postings), physical environment (the proximity of stores, the atmosphere, size, presence of side menus), visuality of information (physical environment, background, design, easy composition), merchantability (the taste of coffee, convenience of parking). In addition, the selection properties for satisfaction after visiting coffee shops through information search were derived from five general characteristics of coffee shops, menu, information consistency, taste of coffee, and convenience of parking, and among them, the consistency of information, taste of coffee, and general characteristics of coffee were found to affect the intention of revisiting again.

  • Despite a number of previous studies about cultural tourism festivals, studies on food menus in the cultural tourism festival setting have often been neglected. Considering the importance of food menus, identifying major selection attributes that satisfy visitors in a festival setting is vital. Using conjoint analysis, this study demonstrated that price was the most influential selection attributes to attract visitors. The time required between ordering and receiving food was found to be the second important selection attribute, followed by menu and place. Cluster analysis identified two distinct segments that take different sets of elements into account when making their selection decision. Conjoint simulation estimated the most preferred foodservice form in cultural tourism festivals setting would have 21.18% potential market share. The implications gained from this study provided an important starting point for determining key selection attributes in establishing strategies to enhance visitors' level of satisfaction.

  • This study was performed to develop menu satisfaction index in Business & Industry (B&I) food service and to survey customer's menu satisfaction using the index. The menu satisfaction index included 16 items with Likert 5 point. Cronbach's alpha to assess the internal reliability of the developed scales was 0.8917, which indicated highly reliable. Construct validity was assessed by principal components analysis and then four factors explaining 65.964% of the total variance were found. Among the 15 items of menu satisfaction, the average scores of all items were above 3.0 out of 5. As a result of analysis on menu satisfaction factors, 'propriety of food temperature' (3.52 out of 5) was the highest consideration followed by 'sufficiency of format' (3.46), 'excellence in food' (3.35) and 'well-being orientation' (3.31). It could be said that customer's perception on the menu quality was very positive. Four factors were correlated with overall menu satisfaction positively. Especially, 'excellence in food', and 'well-being orientation' and 'sufficiency of format' affected significantly on overall menu satisfaction. • The purpose of this study is to suggest management strategies for both upscale hotel buffet restaurants and independent buffet restaurants by conducting an IPA(Important-Performance/satisfaction Analysis) on the selection attributes for buffet type restaurants. Additionally, the effects of the selection attributes' satisfaction on the "intention to recommend" was tested. Surveys were conducted from April 15th through May 4th, 2016 by using both SNS and off-line surveys of consumers with buffet restaurants dining experiences within the previous year, of which a total number of 160 questionnaires were used for the statistical analysis. The result showed a few different selection attributes in each quadrant; additionally, food quality and menu had positive effects on the "intention to recommend" for hotel buffet restaurants, while food quality was the only selection attribute with positive effects for independent buffet restaurants. Based on the results of the study, it can be suggested for the hotel buffet restaurants to constantly develop new and unique menu items to lead the needs of the fast changing consumers of today instead of focusing on the premium characteristics of upscale hotels and their brand names. In addition, offering a variety desserts seems to be something to re-consider for both types of buffet restaurants.

Based on this objective, this study covers plans for improving marketing strategies, which contributes to menu development and purchase behavior of consumers. This study consists of two parts : a research based on the review of the literature and empirical study methods. The finding of the study would also be valuable for the development of management of advertising strategies to be implemented in the foodservice industry. Based on the survey statistics, Program SPSS 12.0 and Amos 5.0 were used in order to look into a casual relationship among group units. The findings of the demonstration analysis are as follows. Most of previous research regarding well-being in local study is psychological well-being dealt with individual health and psychological satisfaction. On the other hand, social well-being is likely to focus on public relation rather than private concerns. The fact that the term 'well-being' have not been definitely defined yet was a problem in research. Also, well-being should not be recognized as a temporary trend but as a general trend. Therefore, it is necessary to understand consumer behavior which is changeable as the circumstance of the foodservice industry changes.

First, the food quality (${\beta}$=0.221), convenience (${\beta}$=0.334), packing (${\beta}$=0.278), and employee service (${\beta}$=0.204) of home meal replacement consideration attributes had a positive (+) influence on perceived utilitarian value. Second, perceived utilitarian value (${\beta}$=0.584) had a positive (+) influence on repurchase intention. The factors to differentiate one company from other competitors in terms of the utilitarian value are the quality of food, convenience, wrapping, and services by employees. This study has illustrated the need to focus on the development of a premium menu to compete with other companies and to continue to research and develop nutritious foods that are easy to cook. Moreover, the key factors to have a distinct and constant competitive edge over other companies are the alleviation of consumer anxiety over wrapping container materials, the development of more designs, and the accumulation of service know-how.
