The sensory characteristics of 12 commercial top-fermented beers were determined by sensory descriptive analysis. Beer samples were also analyzed for soluble solids, titratable acidity, pH, reducing sugar content, bitterness unit (BU), turbidity, hunter color values, amino acid content, total phenolic content, and DPPH radical scavenging activity. Five appearance, nine aroma, six flavor/taste, and four mouth-feel related sensory attributes were evaluated by a panel of nine judges. As the result of three way analysis of variance of descriptive data, all sensory attributes except "cereal" aroma and "salty" taste showed significant differences among the beers (p<0.05). Based on the principal component analysis of the descriptive data, samples were primarily separated by first and second principal components, which accounted for 78% of the total variance between the beers with high intensities of "yellow color", "caramel aroma", and "barley taste" versus "hop aroma", "sour", and "citrus aroma". In the correlation analysis between the sensory terms and physicochemical parameters, BU, total phenolic content, titratable acidity, soluble solids, and yellowness ($b^*$) showed significant positive correlations with citrus aroma, pineapple aroma, and fresh aroma characteristics.
Local malt barleys have been examined for the quality characteristics. Regional differences in quality characteristics of malt barley were observed in a single variety. Promising barley varieties for brewing, in terms of protein contents, germinating power and diastic power were Sacheon No. 2,6,9, Mokpo 11 and 12. Possible use of certain malt barleys is suggested and discussed.

For the study, 366 copies of questionnaire were distributed among and collected from Korean women in their 20s to 60s between April and May 2016. To investigate the utility of anti-oxidant beers that contain extracts of natural substance respectively, the anti-oxidantive activity were measured and preference for anti-oxidant craft beers was surveyed among the subjects. The result suggested that the subjects had positive perception toward drinking, Korean adult women highly prefer beer among different types of alcoholic beverage, and the form of drinking changed according to the stamina, mood, situation, place, and company. Also, natural substance extracts showed high levels of antioxidant effects and, in the survey on preference for craft beers, the aronia group scored higher than other groups. The findings in this study suggest, for Korean adult women, beer with anti-oxidant ingredients can be beneficial for skin and overall health. Nuruk, a traditional Korean alcoholic beverage starter, was evaluated as an additional saccharifying agent comprising up to 1.5% (w/w) of malt weight in ale-type beer processing. Sample characteristics were monitored during fermentation, ripening, and storage. Beer containing nuruk showed higher numbers of total viable bacteria and yeast cell counts. Additionally, ethanol (6.19-6.35%), color (Standard Reference Method), foam stability ($228.49-368.24{Sigma}$), saccharogenic power (307-417), and reducing sugar (3.83-5.25%) increased as the amount of nuruk was increased, while viscosity (3.13-2.07 cP) and bitterness unit (19.68-13.13) were lower than in samples without nuruk. Overall acceptance and aftertaste of the beer were significantly higher in a preference test. These results demonstrate that nuruk can be used to produce a new type of ale.

This study was conducted to evaluate and compare new beer (NB) with market beers, e.g., New castle brown ale (NC), Victoria bitter (VB), and Coopers pale ale (CP) using physicochemical parameters. In addition, pattern recognition analyses were carried out using an electronic nose based on mass spectrometry (MS-E nose) and an electronic tongue (E-tongue) for differentiation of the different types of beer. The measured alcohol content of NB was 4.37%. NB was not significantly different compared with other types of beer with regard to bitterness unit, color, and polyphenol content (p<0.05). On the basis of the flavor pattern determined by the MS-E nose, NB was separated by DF1 (first score from discriminant function analysis), while NC, VB, and CP were located in the same group. The result of the E-tongue showed that the different samples could be clearly discriminated; NB was less sour. It was suggested that the discriminant function analysis (DFA) given by the MS-E nose and E-tongue could be used for evaluations during new product development. Furthermore, because of its simplicity, it might be possible to use the validated method for the evaluation of beer.

Experiments were carried out to find the varietal differences in histological structure and outer characteristics, and its relationships between each characters in the internodes of 15 barley varieties (5 covered barley, 5 naked barley and 5 malting barley). The length of 1st-3th internodes from the top was longer in malting barley varieties, covered barley varieties and naked barley varieties in the order, but of 4th-5th internodes was longer in naked barley varieties, covered barley varieties, and malting barley varieties in the order. The diameter of naked barley varieties internodes was much thicker that of malting barley varieties. The thickness of culm wall in 1st-3rd internodes was thicker naked barley varieties, covered barley varieties, and malting barley varieties in sequence and in 4th-5th inter-nodes was covered barley varieties, malting barley varieties, and naked barley varieties in the order. The number of large vascular bundles in covered barley varieties had more than that of naked barley varieties and malting barley varieties in 1st internodes. The size of large vascular bundles in covered barley varieties and naked barley varieties was larger than that of malting barley varieties. The size of large vascular bundles had significant positive correlation with thickness of culm wall and the diameter of internodes. The thickness of culm wall was negatively correlated with the length of internodes and culm, but positively correlated with the diameter of internodes.

This study was conducted from August 2017 to May 2018. Beer was prepared by different ratio of rice and malt and different types of beer, and quality analysis were conducted. The ratio of rice and malt was divided into 0:100 (S0), 20:80 (S1), 40:60 (S2), 60:40 (S3) and 80:20 respectively. We compared the characteristics of the mashing methods(infusion and decoction method) and investigated the characteristics of different types of beer (lager, ale, wheat beer) using yeast (bottom and top yeast). Even with different ratios of rice and malt, normal infusion time was observed and the iodine test was confirmed to be normal. Also, the mashing proceeded normally and the sugar content of the primary wort was between $21.0{\sim}21^{\circ}brix$. In mashing method, the mash concentration, color and flavor of wort were the highest in the three mash method(decoction method). During the fermentation period of beer, the sugar content, pH and yeast number did not differ significantly depending on the ratio of rice and malt, and the type of yeast. Higher alcohol and esters also had no correlation with the ratio of rice to malt, and wheat beer was somewhat higher. The higher the ratio of rice, the more the color intensity(EBC) decreased, the bitter unit(BU) and the preference decreased. When the rice ratio was higher than the malt rate, the degree of preference decreased significantly. Based on the results of this study, it is expected that the rice ratio will be less than the malt ratio and the flavor of the wort will be improved by using the deccoction method. If the malt is supplemented with the use of the special malt and the various hops according to the beer type, it may be helpful to manufacture rice beer.

This study was conducted to examine the feeding effects of FFWBG (fermented feedstuff with wet brewer’s grain) and GS(grinding soybean) in Hanwoo steers. For this research, total twenty steers(average body weight : 455.7$\pm$25.9kg) were grouped into control(formula feed), T1(formula feed:FFWBG=60:40), T2(formula feed:GS=80:20), T3(formula feed:FFWBG:GS=50:40:10), and T4(formula feed: FFWBG:GS=40:40:20), each treatment was allocated to four steers. There was a tendency to be increased average daily gain in T1, T2, T3 and T4 compared with the control even though no statistical significance was found. The feed conversion of T1, T2, T3 and T4 were beneficially better than that of control(P<0.05; 8.25, 9.44, 6.69 and 7.71 vs 11.90, respectively). The blood urea nitrogen concentration of T4 was higher than that of control(P<0.05), but the creatinine concentration of T4 was lower than that of control(P<0.05). The glucose concentration of T1, T2, T3 and T4 were higher than that of control(P<0.05; 59.39, 62.44, 62.17 and 54.00 vs 51.00mg/$d\ell$, respectively). The back-fat thickness of T3 was thicker than that of control, T1, T2 and T4. The rib-eye area of T1, T3 and T4 was wider than that of control. Appearances percentage of ‘A’ ranked meat quantity were 66, 33, 75 and 33% in control, T1, T2 and T4, respectively.
This study was conducted for a period for 5 weeks in order to evaluate effects of brewer's yeast slurry(BYS) on the growth performance, organ development and blood composition of broiler chicks. A total number of 84 one day old broiler chicks were allocated to one of three supplemented diets: 0%(control), 2% and 4% BYS. Body weight gain and feed efficiency of chicks fed the diet supplemented with 4% BYS significantly was increased by 9% and 8%, respectively, compared to the control diet(P<0.05). The BYS supplements did not affect weights of liver, heart and abdominal fat, and their ratios per body weight. However, in 4% BYS supplement group, ratio of liver to body weight significantly decreased(P<0.05) by 12%, compared to the control. The supplement of 4% BYS decreased the concentration of triglyceride by 31%, and increased the concentration of high density lipoprotein(HDL) by 26%, compared to the control(P<0.05). These results indicated that the supplementation of 4% BYS in diet can improve body weight gain as well as feed efficiency, and increased the concentration of blood HDL, and ratio of HDL to total-cholesterol of broiler chicks.
