Studies on the Milling of Barley, Naked-barley & Wheat (맥류(麥類)의 가공(加工)에 관(關)한 연구(硏究))

  • Three kinds of domestic summer grains, barley, naked-barley & wheat were used for the assessment of ash, protein, fat, crude fiber, calcium, iron & thiamine contents in the grain-pearling and flour-milling processes at the 60%, 70%, 80%, 90% yield bases and the following results were obtained. 1) Ash, protein, fat, crude fiber, calcium, iron & thiamine contents of milled grains were proportional to the milling yield in grain-pearling and flour-milling processes. 2) In the case of pearled barley, the average content of ash was 0.83%, protein was 1.31%, fat was 0.40%, crude fiber was 0.75%, calcium was 3.03mg%, iron was 2.40mg% and thiamine was 0.14% lower than the barley flour at the same level of milling yield. 3) In the case of pearled naked-barley, the average content of ash was 0.41%, protein was 1.96%, fat was is 0.33%, crude fiber was 0.84%, calcium was 4.54mg%, iron was 1.19mg% and thiamine was 0.10mg% lower than the naked-barley flour at the same level of milling yield. 4) In the case of pearled wheat, the average content of ash was 0.28%, protein was 2.25%, fat was 0.05%, crude fiber was 0.25%, calcium was 4.31mg%, iron was 0.12mg% and thiamine was 0.15mg% higher than the wheat flour at the same level of milling yield.

Comparative Antimutagenic and Antioxidative Activities of Rice with Different Milling Fractions (도정분획별 쌀의 항돌연변이 및 항산화 활성)

  • Antimutagenic and antioxidative activities in the different milling fraction of rice(Oryza sativa L., illpumbyeo) were investigated. Twelve milling fractions including embryo, bran(I, II, III, IV and all) and milled rice(I, II, III, IV and V) and were obtained by abrasive milling. Antimutagenic effects of milling fraction against Trp-P-2-induced mutagenicity were shown as ${\approx}0%$ for embryo fraction, $27{\sim}86%$ for bran fractions and $64{\sim}95%$ for milled rice fractions in salmonela typhimurium reversion assay. Milled rice V, inner fraction with 80.9% milling yields, showed the highest antimutagenic activity among milling fractions Antioxidative activity, measured by peroxide value(POV) of different milling fractions was higher in embryo(28%) and bran fractions ($25{\sim}34%)$ than milled rice fractions($6{\sim}22%)$. In terms of thiobarbituric acid(TBA). embryo. bran and milled rice fractions exhibited 14, $5{\sim}21\;and \;6{\sim}20%$ antioxidative activity, respectively. Antioxidative activity, measured by electron donating ability(EDA), was 45% for embryo fraction. $35{\sim}40%$ for bran fractions and $41{\sim}65%$ for milled rice fractions. Antimutagenic activity if milling fractions was correlated with POV (r=-0.471, p<0.01) and EDA (r = 0.609, p<0.001) but not correlated with TBA. Contents of total phenolic acid and SH were higher in bran and embryo fractions than in milled rice fractions, and were reversely correlated with antimutagenic activity (r=-0.523 and -0.451. respectively, p<0.05).

Changes of Physicochemical Characteristics of Rice Milled by Newly Designed Abrasive Milling Machine (연삭식 도정기에 의한 도정 정도별 쌀의 이화학적 특성 변화)

  • Physicochemical characteristics of rice milled by newly designed abrasive milling machine were studied. Crude protein and crude lipid contents were 7.81∼8.50% and 1.07∼0.95%, respectively, and they showed a tendency to decrease with milling times. However, they showed higher values than that of polished rice. Major fatty acids of crude lipid were palmitic acid, oleic acid, and linoleic acid. Whiteness of tested samples was higher than brown rice but lower than polished rice. The remain rate of rice germ of four pass-through and polished one time sample (FPS) was 39.33%, and it was higher than that of polished rice (4.00%). One thousand grain weight of samples over than three pass-through was significantly different from brown rice (p<0.05). FPS had smooth surface similar to polished rice and it showed some residual rice germ by scanning electron microscopy. Sensory evaluation showed that the taste of three pass-through rice, four pass-through rice, and FPS was not significantly different from polished rice, whereas their color, odor, texture, and overall acceptability had lower score than polished rice but higher than brown rice. Therefore, we estimate that rice ground over three pass-through by newly designed abrasive milling machine might be a good source having nutritive value.

Studies on Processing Techniques in Barley I. Effect of Polishing Conditions of Hulled Barley on Grain Shape and Polishing Properties (보리의 가공기술 개선연구 I. 겉보리의 도정조건에 따른 곡립특성 및 도정수율)

  • These studies were conducted to find out the polishing methods that improve yield and quality of the polished barley. Four varieties of hulled barley, Dongbori 1. Bunong, Kangbori and Suwon 182 which were produced in Suwon, Korea in 1979, were subjected to this experiment. The polishing machine, manufactured by Satake Co, was used as test mill. Increasing the roller speed of polishing machine causes more polished barley in a unit period. The speed influenced more in length than thickness or width of grain. Therefore the shape of grain became bold type as the speed increased. The optimum roller speed was 1,300rpm in ideal shape of polished barley. The lowest hardness was observed in the husk layer and the hardness was found in the decreasing order of the aleurone, testa, peri carp and the endosperm layer. The thickness of bran layer, weight of 1,000 kernel and hardness of polished barley were greatly different according to barley varieties. Also the length, thickness, width and the ratio of length to width of barley grain were significantly different in barley varieties. The ratio of length to width of the polished barley was 1.59 in Suwon 182, 1.53 in Bunong, 1.51 in Kangbori and 1.26 in Dongbori 1.

Varietal Difference of Eating Quality on Different Milling Degree in Japonica Rice (쌀 도정도에 따른 식미의 품종간 차이)

  • Varietal difference of eating quality by milling degree was investigated for total nine rice varieties comprised of three varieties each as excellent, good, and normal according to sensory evaluation results of cooked rice. Nine varieties were analyzed for their physicochemical properties and for the sensory evaluation according to five different degree of milling(5.5~13.5% based on brown rice). Overall score obtained through sensory evaluation was found the best in the milling degree at 9.5% and 11.5%. The overall score by rice variety was categorized into type A that showed high score at milling degree 9.5%, type B at milling degree 11.5%, and similar type C at both milling degrees 9.5% and 11.5%. The best eating quality was observed in Ilmibyeo and Koshihikari having overall eating quality excellent at milling degree 9.5% and in Chucheongbyeo and Dongjinbyeo having overall eating quality good at milling degree 11.5%. While, Palgongbyeo and Nonghobyeo having eating quality normal showed the best eating quality at milling degree 9.5% and 11.5%. Correlation analysis between overall score and physicochemical properties and five sensory evaluation items by three types of rice showed that Mg content and stickiness of type A, protein content and taste of type B, and K content and appearance of type C were highly significant correlation on overall score by panel test. Therefore, Mg contents might have affected on the stickiness of cooked rice in type A, protein contents on the taste in type B, and K contents on the appearance in type C, respectively.

The Qualities of Makgeolli (Korean Rice Wine) Made with Different Rice Cultivars, Milling Degrees of Rice, and Nuruks (쌀의 품종, 쌀의 도정도, 누룩에 따른 막걸리의 품질 특성)

  • This study aimed to characterize and compare makgeolli (a Korean rice wine) made using different raw materials. Five cultivars of rice and wheat flour were used as starch materials for makgeolli and assessed for their moisture, crude lipid, crude protein, and crude dietary fiber content. Overall, wheat flour was higher in crude lipid and crude protein and lower in moisture than rice. Makgeolli characteristics were assessed for pH, total acids, organic acids, free sugars, color and appearance. We found no significant differences in pH and total acids between makgeolli made from rice and wheat flour. In addition, the major free sugar in the makgeolli made from rice and wheat flour was glucose, although the content of total free sugars was lower in the wheat flour makgeolli (67.75 mg/mL) than the rice makgeolli (76.41~84.53 mg/mL). In terms of organic acids content, the total organic acid content was highest in the wheat flour makgeolli, while the major organic acids of the makgeolli made from rice and wheat flour were lactic acid and succinic acid, respectively. There were no significant differences in color values among rice makgeolli, but the rice makgeolli was higher in sensory scores (indicating preference) than the wheat flour makgeolli. As the degree of milling increased, moisture, crude lipid, and crude protein in the rice decreased. Acetic acid in the makgeolli also decreased, while there were no significant differences in pH, total acids, free sugars, color values, and sensory scores (except fruitiness). Traditional nuruk (TN) and cultured nuruk (CN) were compared as fermentation starters. Nuruk is a Korean traditional starter for fermentation of makgeolli and a raw material for makgeolli making. The pH in the makgoelli made with TN and CN were 4.29~4.65 and 4.02~4.23, respectively. Total organic acid content was higher in the TN makgeolli (3.5~6.3 mg/mL) compared to the CN makgeolli (2.3~4.3 mg/mL). The content of free sugars in the makgeolli made with CN was higher (59.44~73.34 mg/mL) than that with TN (56.45~59.75 mg/mL). The Hunter color test showed that makgeolli made with TN was lighter and higher in red and yellow color compared to CN. Overall sensory acceptability was higher in the CN makgeolli compared to the TN makgeolli.

Composition in Milling Recovery Ratio of Rice Cultivars, Ilpumbyeo and Chucheongbyeo (일품벼와 추청벼의 도정률 차이의 작물학적 요인분석)

  • This study was carried out to analysis the factor effected by milling rice rate, and to provide the developing rice varieties and cultivation technology. Panicle numbers per spike of Ilpumbyeo and Chucheongbyeo were 105 and 70, respectively. The primary branch panicle rate was Ilpumbyeo 56.2% and Chucheongbyeo 61.4%. The secondary panicle rate of Ilpumbyeo and Chucheongbyeo was 43.3% and 37.9%, respectively. Grain filling rate using specific gravity showed that Ilpumbyeo was the lower filling rate than Chucheongbyeo. Hull weight per one grain was Ilpumbyeo 41.9 mg and Chucheongbyeo 3.92 mg, and hull weight per rough rice 1 kg was Ilpumbyeo 157.36 g and Chucheongbyeo 151.31 g. In milling rate, brown rice ratio by ripening degree of llpumbyeo and Chucheongbyeo with combine harvest was 81.22% and 82.52%. Milled/brown rice ration of llpumbyeo and Chucheongbyeo showed 92.14% and 92.51%. The milling recovery ratio of llpumbyeo was decreased 1.67% then Chucheongbyeo, and the difference was mainly due to the hull weight (0.61%), milled/brown rice ratio (0.37%) and ripening degree (0.69%). Although the varietal differences were found in hull weight and millied/brown rice ratio between llpumbyeo and Chucheongbyeo, the ripening degree was considered as the factor that could be reduced by cultivation technology and post-harvest management.

Changes in Fatty Acid Composition of Grain after Milling (곡류 도정에 따른 지방산 조성 변화 연구)

  • BACKGROUND: Cereals, especially rice is the staple food of oriental nations and because it is very important for Korean food, to determine the extent of nutrient losses due to milling, we analyzed the fatty acid using by GC-FID(Gas Chromatography-Flame Ionization Detector). Experimented rice cereals were rice, glutinous rice, Heuinchalssalbori, Seodunchalbori, Saessalbori, Keunalbori No.1, barnyard millet produced in Korea. METHODS AND RESULTS: After milling, the contents of fatty acids in the rice, glutinous rice, Heuinchalssalbori, and Seodunchalbori, Keunalbori No.1 rather decreased, but in the Saessalbori, and barnyard mille increased. Particularly, fatty acid content of the rice decreased from 24.8 mg/g to 6.4 mg/g, glutinous rice decreased from 29.4 mg/g to 11.7 mg/g after milling. There were also significant changes in the compositions of fatty acid among samples. Stearic acid ($C_{18:0}$) increased from 5% to 15%, but oleic acid ($C_{18:1}$) and linoleic acid ($C_{18:2}$) decreased in the rice after milling. CONCLUSION(s):In the brown rice, 11 different types of fatty acids were detected, and its highest content was found in grains. However, milled grain was observed only seven fatty acids in the case of rice. This result insisted that a portion of the lipid layer was significantly lost during the milling operation in rice.
