참깨의 향기성분(香氣成分) 및 포색화(袍色化) 관련물질(關聯物疾)의 생리활성(生理活性)

  • 참기름은 높은 온도로 볶아 짜는 공정을 통해 제조되는데 이때 참깨의 성분 중 당과 단백질에 의한 Maillard 반응에 의해 향기성분인 pyrazine 화합물과 갈샐물질이 생성된다. 참깨의 볶는 방법, 온도 및 시간은 참기름의 맛과 향기에 중요한 인자가 될 수 있고 또한 참기름에 함유되어 있는 갈색물질과 향기성분인 pyrazine류가 생리활성을 나타낼 수 있는 가능성이 제기되어 본 연구에서는 참기름으로 부터 갈색화 관련 물질을 용매별로 분류하여 tyrosinase 저해 효과와 항상화 효과를 측정였고 pyrazine 유도체들의 혈소판 응집에 미치는 효과를 측정하였다. 갈색도가 높은 butanol, methanol 에서 농도 의존적으로 높은 tyrosinase 저해효과를 보였다. 또한 각종 radical 소거능을 측정한 결과 butanol 에서 높은 소거능을 보였다. 향기 성분에 다량 함유되어 있는 Pyrazine 유도체가 collagen 에 의해 유도된 혈소판 응집억제능을 측정한 결과 -methyl의 결합수가 많을수록 (2,3,5-trimethylpyrazine>2,5-dimethylpyrazine>pyrazine) 농도 의존적으로 높은 응집 억제효과를 나타내었다. 이상의 결과, 참기름 가공 공정에서 생성되는 갈색화관련 물질과 향기 성분인 pyrazine 유도체는 생리활성을 나타내는 물질임이 확인되어 기능성 식품에 다양하게 활용되기를 기대한다.

  • Prior studies of physiologically active substances in grapes have focused only on the fruit, pericarp, and branches, as well as the pulp and seeds. The present study assessed the changes in quercetin-3-O-glucuronide (Q3OG) and flavonol glycoside content using grape leaves from Vitis labruscana B. and V. coignetiae at different growth stages and provided basic data for quality control. Content analysis showed that both varieties differed in Q3OG and flavonol glycoside content by growth stage, and the components were found to be high in the order of fruit, maturation, and coloration. Also, Vitis labruscana B. has a better vascular relaxation effect than Vitis coignetiae. These results suggest that in the use of grape leaves as a functional raw material, Q3OG and flavonol glycosides can be used as indicator components. In addition, if raw materials for each growth stage are mixed in a particular ratio, it will be a way to manage the specific efficacy and content of indicator components.

  • Recently, much attention has been paid to the development of a value-added food category containing probiotics so as to improve human health and prevent diseases. Among various foods, the health benefits of milk and dairy products are known to humanity, and could be attributed to the bioactive components present in milk. In fermented milk products, the health benefits could be due to suitable modulation activities produced by the action of probiotic bacteria. Besides the modification of various milk components, probiotics might also act directly as preventive and therapeutic agents against some severe diseases. Probiotics promote health via their positive effects on the immune response, stimulation of natural immunity, and modulation of the production of antimicrobial peptides, cytokines, and so on. Whey proteins, a byproduct of cheese production could also have anticarcinogenic, immunostimulatory, antimicrobial, and health-promoting activities such as improving insulin sensitivity and reducing fat deposition. Therefore, milk and dairy products containing probiotics could provide various opportunities in the field of functional foods. Additionally, these functional foods may be important in the human diet and may help improve human health and prevent diseases.

Enhancement of Immune Activities of Fermented Morinda citrifolia L. (Noni) and Six Marker Compounds (노니 지표성분 6종과 발효노니의 면역활성 증진 효과)

  • This study will evaluate the effect of fermented Morinda citrifolia L. extracts and its marker compounds to provide baseline data for utilizing Morinda citrifolia L. as functional health products. Morinda citrifolia L. and six marker compounds were processed on RAW 246.7 macrophage to test for XTT Cytotoxicity, measure Nitric Oxide and Cyokine formation, and analyze the expression of immune marker genes. Furthermore, LPS and fermented red ginseng extract, a common functional ingredient, are used as positive controls. Our results showed that fermented Morinda citrifolia L and six bioactive compounds did not have any cytotoxic effect in all treatment concentrations and groups. Among six bioactive compounds, SCP and ASE confirmed the formation of NO. In addition, the ASE treatment group showed increased formation of IL-6 and IL-1β and the expression of iNOS and TNF-α. Also, fermented Morinda citrifolia L extract activated the macrophage by enhancing the production of nitric oxide (NO), interleukin (IL)-6, and IL-1β, and the expression of COX2 compared to Morinda citrifolia L. extracts. The result of the study showed that Fermented Morinda citrifolia L. (Noni) and marker compound enhance the innate immunity activity and suggested that the bioactive compound could be applied as a marker compound. Thus, Fermented Morinda citrifolia L. (Noni) could be used as functional food material to develop immunity-enhancing products, and highly functional marker compounds can be utilized as the effective components.

Effect of Physiochemical Properties of Seokganju on Functionality and Light Fastness (석간주의 이화학적 특성이 기능성 및 내광성에 미치는 영향 연구)

  • The purpose of this study is to evaluate the functionality and lightfastness of the natural pigments according to the type of Seokganju used as Dancheong. The commercially available red iron-oxide-based natural pigments that are called Seokganju and Daija manufactured by traditional methods in Korea and Japan were selected. The analysis of the constituent minerals and constituents of 8 kinds of collected Seokganju showed that most of them contained hematite. There are two types of Seokganju according to the $Fe_2O_3$ contents. The type of Seokganju can be characterized not only using the main component but also from the burn-out processing. The chromaticity results for Seokganju with a high $Fe_2O_3$ concentration indicate dark red or grayish brown, while those for Seokganju with a low $Fe_2O_3$ concentration indicate yellowish red or yellowish brown. Samples were prepared by mixing with a glue solution and functional properties were evaluated based on the opacity and spreadability. Coated samples were used in the lightfastness test. The spreadability and opacity of the pigments were measured differently depending on the main component. Most Seokganju samples a showed slight color change until $9,000kJ/m^2$ but rapid color changes were detected after $18,000kJ/m^2$. In particular, burnt Seokganju showed superior lightfastness.

Comparison of bioactive composition, antioxidant activity, and nitric oxide inhibition effect of enzyme-treated and commercial noni juice (효소처리 노니주스와 시판 노니주스의 기능성 성분, 산화방지 활성 및 NO 생성 억제 효과)

  • This study was conducted to compare the functional component content, antioxidant activity, and nitric oxide (NO) inhibition effect of non-enzyme treated, enzyme-treated, and commercial noni juice samples. Enzyme-treated noni juice samples were prepared by cellulase (0.1%) and pectinase (0.1%) treatment of unripe fruits (EUN) and ripe fruits (ERN). Total polyphenol content of the noni juice samples ranged between 0.36 and 1.61 mg/mL. The EUN had the highest total polyphenol content (1.61 mg/mL), while the ERN had the highest scopoletin content (123.88 ㎍/mL) and the highest antioxidant activity. Nitric oxide levels in ERN and NJ5 were lower (55.95 and 60.14%, respectively) than those in other samples. Based on these observations, it was confirmed that enzyme treatment could improve the functional component content and physiological activity of noni juice. In particular, EUN prepared using the ripened noni fruit is expected to have greater utilization value due to its enhanced functionality.

  • This study was conducted to investigate the efficacy of rose hip utilization on various diseases. Rose hips are produced on a shrub native to Europe, and have been used for medicinal purposes and nutritional supplementation for centuries. It is rich in minerals, vitamins, and various functional compounds, including calcium, magnesium, phosphorus, potassium, selenium, vitamin B, vitamin C, and vitamin E, quercetin, catechin, β-carotene, β-sitosterol, polyphenol, flavonoid, taxifolin, ellagic acid, and salicylic acid. Extracts and powders of rose hips have been reported to contain antioxidant, free radical scavenging, and anti-inflammatory activity, and exert beneficial effects including amelioration of osteoarthritis, body fat reduction, anti-obesity activity, anti-bacterial activity, antidiabetic properties, and anti-cancer activity. Therefore, rose hips as a functional natural food may be considered effective for use in treating diseases including obesity, diabetes, osteoporosis, cardiovascular disease, and cancer.

Fortification of Rice with Soy Hydrosylate Containing CHP (Cyclo Histidine-Proline) (CHP(Cyclo His-Pro) 함유 대두가수분해물을 이용한 코팅 쌀의 제조)

  • A method for coating rice with a novel substance, SHC [soybean hydrolysate with Cyclo Histidine-Proline (CHP)], was developed to produce functional rice for food production. The dip coating and spray coating method was tested to reduce the loss of functionality during the manufacturing of enriched rice. The dip coating method showed a very low absorption rate ($0.079min^{-1}$) of the functional substance compared to control ($0.150min^{-1}$), while the spray-coating method with protective coating materials [a methyl cellulose solution (l%, w/v) containing 5% (w/v) of the SHC] showed relatively adequate absorption characteristics. A light yellowish stain was observed in the rice samples processed by the spray-coating method (b value; surface1 0.69, flour 4.91) compared to raw rice (b value; surface 9.67, flour 4.86). The microscopic appearance of whole kernels and longitudinal sections revealed that cracks formed in all rice samples, regardless of the coating method. In conclusion, spray coating is a potential method for producing SHC-fortified rice with excellent physical characteristics.
