넙치(Paralichthys olivaceus) 알로부터 등전점 용해/침전공정에 의해 회수한 분리단백질의 식품특성 (Food Characteristics of Protein Isolates Recovered from Olive Flounder Paralichthys olivaceus Roe by Isoelectric Solubilization and Precipitation Process)

  • Four roe protein isolates (RPIs) from olive flounder Paralichthys olivaceus roes (OFR) were recovered by isoelectric solubilization (pH 11 and 12) and precipitation (pH 4.5 and 5.5) and investigated for their food characteristics. RPIs contained 4.5-9.6% moisture, 64.1-69.5% protein, 16.1-19.8% lipid, and 1.0-3.9% ash. The protein yields of RPIs ranged from 50.1 to 56.8%, which was significantly different depending on the recovery conditions. A difference was observed in the SDS-PAGE protein band (25-100 kDa) between the alkaline solubilization at pH 11 (RPI-1 and 2) and pH 12 (RPI-3 and 4). The major amino acids of RPIs were Leu, Lys, Asp, Glu and Ala and major mineral components were sulfur, sodium, phosphorus, and magnesium, which were significantly different from OFR (P<0.05). Additionally, the lead and cadmium content was below the chemical hazard standard of the Korean food standards code. The Hunter color and whiteness of RPIs also showed significant differences according to the treatment conditions of the ISP process (P<0.05). This suggests that protein isolates recovered from olive flounder roes have high potential as nutritional supplements.

시판 유통 마른 김(Pyropia tenera)의 미생물학적·화학적 위해요소 분석 및 안전성 평가 (Safety Assessment of Microbiological and Chemical Hazards in Commercial Dried Laver Pyropia tenera)

  • Fifteen samples of dried laver Pyropia tenera were collected from markets and processing plants in Korea for an assessment of their microbial and chemical hazards, in accordance with the Korean food code. The contamination levels of total viable bacteria, coliforms, Escherichia coli, and nine other pathogenic bacteria (Staphylococcus aureus, Salmonella spp., Vibrio parahaemolyticus, Clostridium perfringens, Listeria monocytogenes, Enterohemorrhagic Escherichia coli, Yersinia enterocolitica, Bacillus cereus, and Campylobacter jejuni) were evaluated The concentrations of heavy metals (lead, cadmium, total mercury, and total arsenic) and radioactive isotopes (131I, and 134Cs+137Cs) in the laver samples were also determined. The total viable count of bacteria was 2.62±0.80 (1.48-4.45) CFU/g. The contamination levels of lead, cadmium, total mercury, and total arsenic were 0.024±0.005 (0.018-0.035), 0.090±0.038 (0.041-0.146), 0.008±0.005 (0.003-0.018) and 1.315±0.372 (0.814-1.930) mg/kg, respectively. All samples tested negative for significant levels of radioactivity, the nine pathogenic bacteria, coliforms, and E. coli (<1.00 CFU/g). We assume that ensuring the microbiological and chemical safety of dried laver can increase the demand for its exportation. The present study may serve as a basis for microbiological and chemical hazard assessment of dried lavers.

  • We investigated the sensory and quality characteristics of gambas al ajillo retort foods with nondigestible maltodextrin (trial gambas) compared with commercially available frozen gambas al ajillo (control). Trial gambas demonstrated approximate compositions of 75.8% moisture, 11.3% protein, 5.8% lipid, 1.7% ash, and 5.4% carbohydrates, indicating lower lipid and carbohydrate contents but higher moisture, protein, and ash levels than that of the control. Sensory assessments conclusively established the superior overall acceptability of trial gambas over the control. Trial gambas exhibited a total amino acid content of 9.62 g/ 100 g, surpassing the 5.39 g of the control. The major amino acids, such as lysine, leucine, arginine, aspartic acid, and glutamic acid, contributed significantly to its enhanced nutritional profile. Mineral analysis revealed higher calcium, phosphorus, magnesium, and iron levels in trial gambas and lower potassium levels than that in the control. Fatty acid profiling identified 18:1n-9 (67.8%) and 16:0 (11.9%) as the predominant fatty acids, in concordance with the control. This study substantiates trial gambas with the health-oriented preferences of the MZ generation while presenting superior sensory and quality attributes compared with the control.

생선초밥용 냉동횟감의 미생물학적 조사 (Microbiological Investigation of the Frozen-Raw Sliced Fishes for Sushi Manufacturing)

  • This study assessed the contamination levels of total aerobic bacteria, fungi, coliforms, Escherichia coli, and Staphylococcus aureus, and qualitative analysis of Bacillus cereus, Salmonella spp., Listeria spp., and Vibrio spp. in four frozen-raw sliced fishes (cuttlefish, flatfish, salmon, and shrimp) for sushi production. The total aerobic bacteria, fungi, and coliforms were 2.95-3.38, 1.96-2.88, and 0.92-1.29 log CFU/g, respectively. In particular, shrimp was highly contaminated with total aerobic bacteria (3.38 log CFU/g) and fungi (2.88 log CFU/g). Over 3 log CFU/g of total aerobic bacteria was also detected in cuttlefish, flatfish, and salmon. Less than 1-2 log CFU/g of E. coli was detected in all frozen samples. S. aureus was detected at 2.25-3.13 log CFU/g in most samples. B. cereus was qualitatively detected at 25% in most samples, except for salmon (0%). Salmonella spp., L. monocytogenes, and Vibrio spp. were qualitatively detected at 25-50% of all four samples. The microbial contamination levels determined in the current study may be potentially used as basic data to perform microbial risk assessments of frozen-raw sliced fishes.

  • Circular sawing and milling are general machining processes used for routing fiber-reinforced plastics (FRP). In this study, the productivity and cutting quality of a circular saw and flat endmill were compared. As a result, the productivity of the circular saw was approximately ten times higher than that of the endmill for the same tool life, and the burr size of the circular saw was 14 times smaller than that of the flat-end mill. The spectrogram analysis of the cutting sound also showed that the acoustic emission of the circular saw was more uniform than that of the flat end mill. Circular sawing is thus a more suitable process for the straight cutting of pultrusion FRP than a flat endmill.

  • This study considered the internal flow considering the internal shape of the CNG filling nozzle, which is widely distributed in Korea. The CNG filling nozzle is the last part to pass through in the CNG filling process and has a significant influence on the filling efficiency. The mechanism was identified by disassembling the CNG filling nozzle and performing a flow analysis according to the mechanism. Consequently, the energy loss owing to eddy currents in the flow was determined, and modeling was proposed to reduce the energy loss by simplifying the shape and parts.

  • Bending using high-frequency induction heating is used to bend pipes and sections, and is currently widely applied in industrial fields such as power generation facilities, ships, onshore plants, and offshore plants. The purpose of this study is to study the manufacturing process and design technology of high-frequency bending of pipe to make the best pipe design arrangement. Although various studies are being conducted in the field of high-frequency bending, more research is needed on high-frequency bending of pipes for ship building and offshore plants. The purpose of this study is to review the feasibility of production design using 3D model tool of S3D and AM(PDMS), and to review and improve bending thickness reduction, reduction rate, and roundness.

  • This study focuses on the driving control design of an index, which is a key component of a rotary transfer machine that is effective in improving productivity and reducing manufacturing costs by shortening cycle time. Although various index studies have been conducted on the rotation of workpieces such as general-purpose machine tools and tilting indices, the development of an index for rotary transfer machines for transfer is insufficient. The index consists of a body, table, hydraulic cylinder, motor, reducer, and curved coupling. The torque of the table for driving was selected, and the angular velocity and torque pattern were simulated using the motor manufacturer's program. The specifications of the drive motor were determined based on the selected torque.

  • The heating roller of an actual pulse output device (POD) production facility is composed of a steel roller and a rubber roller. The time to reach a specific temperature and the temperature distribution on the roller surface were analyzed and compared according to the change in the number of cartridge heaters inside the heating roller. In this analysis, a steady-state thermal analysis of a steel roller was performed for the cases of a 5-cartridge heater and 9-cartridge heater. Finite element analysis was applied with reference to the surface temperature data of the heating roller during operation and the calorific value of the cartridge heater. Using the 9-cartridge heater, faster target temperature achievement and more uniform temperature distribution were confirmed than for the 5-cartridge heater.

  • The customer demand for diverse colors in home appliances has increased. However, this has led to issues for manufacturers, such as ensuring cost effectiveness and high-level quality control. To resolve these issues, production engineers utilize computer-aided engineering (CAE) tools for injection-molding processes and assess the suitability of process parameters for products manufactured using the in-mold labeling method. CAE can solve various problems in manufacturing processes, thereby increasing production efficiency and decreasing manufacturing cost. In addition, it can be used analyze customer complaints related to surface defects, such as part differences and irregular spacing between parts, and ultimately reduce product returns. In this study, CAE was used to solve quality problems and implement the most economical manufacturing process.
