토마토 과실의 연화현상의 주 원인으로 판단되는 세포벽의 형태적 변화를 조사하기 위하여 성숙 단계별로 취하여 과실의 경도, 세포벽 구성 성분의 변화 및 세포벽의 변화를 조사하였다. 과육의 경도는 적숙기 이후부터 급셕한 감소를 나타내었다. 세포벽 함량은 성숙 중에 감소하였고 가용성 펙틴의 증가와 불용성 펙틴의 감소는 적숙기와 식용 적기 사이에서 가장 현저했으며, 총 펙텐의 함량은 다소 감소하는 경향을 나타내었다. 성숙에 따른 토마토 과육의 세포 및 세포벽의 형태적 변화를 현미경으로 관찰한 결과, 수확기까지의 토마토에서는 middle lamella와 세포내 기관들이 잘 관찰되었으나, 연화가 진행됨에 따라 식용 적기의 토마토에는 middle lamella를 관찰할 수 없었으며 과숙기 에서는 middle lamella의 가용화와 함께 세포벽의 부분적인 분해와 세포분리현상이 관찰되었다.
This experiment was aimed to develop possible methods to control the maturity of grape berries through the application of exogenous plant growth substances and physical treatments such as defoliation or girdling. 1. Chlormequat and paclobutrazol increased anthocyanin but did not affect soluble solids contents and maturity. Girdling enhanced maturation and solids accumulation whereas defoliation delayed maturity. Solids content of berries in defoliation treatment did not reach to the level of other treatments even when fully ripened. 2. Ripening of grapes is greatly delayed for 20 to 30 days by the application of auxins (2,4-D and fenoprop) compared to the untreated control. Uneven ripening of berries in those clusters was observed when the concentration of auxin was over 50 ppm. Thus, about 30% of berries remained green until the normal berries were overripened. 3. Gibberellin did not affect the maturity of grape berries but maturity was greatly delayed when GA was applied with auxins. Also, uneven coloration between berries was observed such as in the application of auxin alone. 4. Ethephon application combinded with calcium at veraison showed no effect on berry ripening but increased anthocaynin contents. It can be concluded that harvest time of 'Campbell Early' grapes can be effectively extended by delaying the maturity through the application of auxin.

We investigated the changes of fruit quality parameters, polysaccharide contents and cell wall components during maturation and ripening of two Korean pear cultivar 'Hanareum' and 'Manpungbae' compared with 'Niitaka' pear (Pyrus pyrifolia Nakai) which showed different physiological maturity based on days after full bloom (DAFB). Flesh firmness decreased continuously with fruit development and maturation, reaching a final level of 29.4, 33.5, and 27.4N at maturity in 'Hanareum' (127 DAFB), 'Manpungbae' (163 DAFB), and 'Niitaka' (170 DAFB), respectively. The level of ethylene production was very low in early season 'Hanareum' pear which showed at most 0.39 ${\mu}L{\cdot}L^{-1}$ at maturity and no ethylene was detected in 'Manpungbae' and 'Niitaka' at maturity. Fructose was the most abundant soluble sugar during fruit maturation in the pears tested and an increase of sucrose was observed during fruit ripening in the Asian pears commonly. Ethanol insoluble solids (EIS) content decreased gradually with different levels among the pear cultivars as fruit ripens consisted of 10.79, 12.72, and 12.75 $mg{\cdot}g^{-1}$ FW. The amount of total soluble polyuronides was higher in early season cultivars 'Hanareum' than those of mid-season cultivar 'Manpungbae' and 'Niitaka'. In 'Niitaka' which harvested most late season, the level of 4% KOH soluble hemicelluloses was lower than 'Hanareum' and 'Manpungbae' and maintained constantly during fruit ripening period. Cellulosic residues were determined high level in 'Niitaka' which showed 612.33 ${\mu}g{\cdot}mg^{-1}$ EIS at maturity when compared with 'Hanareum' (408.0 ${\mu}g{\cdot}mg^{-1}$ EIS) and 'Manpungbae' (538.67 ${\mu}g{\cdot}mg^{-1}$ EIS). The main constituents of cell wall neutral sugars which consisted of arabinose, xylose, galactose, and glucose were decreased gradually with onset of fruit ripening regardless of cultivar. Arabinose which was predominant in 'Hanareum' pear decreased at the last stage of ripening, but the changes of cell wall neutral sugar during ripening were not occurred in 'Niitaka' pear. The change of molecular mass distribution in water soluble pectin observed dominantly at the early stage of fruit development. Depolymerization of 4% KOH-soluble hemicelluloses and degradation of xyloglucan showed in early-season cultivar 'Hanareum' during fruit maturation, and degradation of those fractions were detected only at the early stage fruit development in mid-season cultivar 'Manpungbae' and 'Niitaka'. The molecular mass profile of CDTA soluble pectin, $Na_2CO_3$-SP and 24% KOH soluble hemicelluloses showed no significant change during fruit maturation regardless of cultivar.
This study was conducted to investigate the effects of LEDs on the fruit qualities of two strawberry (Fragaria ${\times}$ ananassa Duch.) cultivars such as hardness, phytochemicals, and antioxidant activity using the strawberry fruits, which were harvested by 50% and 100% ripening levels of fruits grown under LEDs illuminated during 6 hours after sunset from November 2018 to January of the following year. In the hardness of strawberry fruit, when two strawberry cultivars were illuminated red LED light, in 50% ripening as well as 100% ripening fruit of both 'Daewang' and 'Seolhyang' cultivars were significantly higher compared to other treatments. Also, in the sugar content on 50% ripening fruit of two cultivars, the fruit of red LED light was significantly higher than in the other LEDs and control. On the other hand, in the acidity of 50% and 100% ripening levels of strawberry fruit, the fruit under control condition was higher in than that of LEDs. The phenolic compounds of strawberry fruit grown in control was much higher than that of strawberry treated with LEDs. However, the influence of LEDs on flavonoid and anthocyanin content of strawberry fruit did not affected. Changes in the phytochemicals contents of the strawberry tends to be affected depending on the maturity of fruit. Antioxidant activity such as DPPH and ABTS of were not different by maturity of fruit, and supplementation of LEDs during 6 hours at night. Therefore, we concluded that lighting of LEDs is effective for fruit quality in terms of sugar accumulation and fruit hardness.

In this study, changes in the overall antioxidant properties and chemical constituents including total phenolics and vitamin C of R. occidentalis fruit during ripening are studied. The antioxidant activity was measured by the free-radical scavenging activity(DPPH method) and reducing power(potassium ferricyanide method). Although, the weight and diameter of R. occidentalis fruit were increased with the progress of ripening, antioxidant activity and total phenolics were decrease during ripening. The highest free-radical scavenging activity(at $125{\mu}g/m{\ell}$) and reducing power(at $100{\mu}g/m{\ell}$) in fruit were 61.67% and 0.71, respectively. Total phenolic content and vitamin C content in fruit of 5 days after fruit set were $220.73{\mu}g/g$ and $540.45{\mu}g/g$, respectively. A linear correlation(r=0.9761) was shown between free-radical scavenging activity and total phenolic content.
To investigate the effect of leaf removal on enlargement and coloring of persimmon fruits (Diospyros kaki L. cv. 'Fuyu'), four treatments control (0%), 20%, 50%, and 100% depend on leaf removal of fruit bearing branch were applied to persimmon trees. Sunlight intensities around fruits with treatments depend on removal level, compared with natural sunlight intensity (100 percentage level), was 7.9%, 13.6%, 16.4%, and 30%, respectively. Hunter $a^*$ of the fruit with control and 20% removal treatments to harvest season increased continuously. $Chroma^*$ of the fruit since the removal treatments of leaves increased continuously in all treatments, but from seventh week that had a decreasing tendency. The fruit weight and diameter were significantly heavy and short in treatments with 100% removal level. L/D ratio of the fruits had a significant difference between control and the other treatments. Soluble solids of the fruits lowed significantly in treatment with 50% removal level. Hunter $a^*$ of the fruits was better in treatments with control and 20% removal levels, Hunter $b^*$ and $Chroma^*$ lowed significantly in treatment with 20% removal level. $\beta$-Carotene and lycopene concentration of the fruits lowed in treatment with the higher of removal level, total chlorophyll contents had the opposite tendency to the pigments. All results considered, removal level of leaves around fruit on bearing branch in fruit maturation stage had effect on fruit coloring improvement.

This study was Carried out to the changes of nutrientd and components for food valuation estimation during maturation of Elaeagnus multiflora fruits. The content of moisture was decreased during maturation, but brix was increased. The content of carbohydrate was increased during maturations but crude protein was decreased. And the content of reducing sugar was increased. The content of free fructose and glucose were high and its content were increased during maturation. Total content of free sugars were 135.66 mg/100 g-fr.wt in mature green fruit, 544.26, 787.83 mg/100 g-fr,wt in mature and over mature fruits, respectively. The Organic acids of Elaeagnus multiflora fruits were acetic, citric lactic, and malic, succinic acids. The content of citric acid was the highest among organic acids. Total content of organic acids were 407.95 mg/100 g-fr,wt in green mature fruits, and were decreased during maturation. The content of reducing vitamin C was 56.98 mg/100 g-fr.wt in mature green fruits and total contents of vitamin C was decreased during maturation. The content of phenol substance was 411.39 mg/100 g-fr.wt in the mature green fruit and was decreased during maturation.
1. Tomato variety used was Bogsu No. 2 and it was grown in field. Experiments were conducted in 1971 and 1972 to examine the changes of $CO_2$ product on in each growth-period and the contents of acid, sugar and vitamine C during storage. 2. By controlled atmospheric pressure the effects of respirationreduction in tomato fruits were the most effective at 660 Torr. part. 3. $CO_2$ production of tomato fruits harvested at each growth-period was differently changed at each growth-period and $CO_2$ production in tomato fruit at the same maturity from the plant showed Sigmoid type. 4. $CO_2$ production of tomato fruits harvested at the same ripeness score was in influenced by controlled atmospheric pressure during growth period and $CO_2$ production was reduced at SAP part compared with NAP part during the full growth-period. 5. The change of weight in tomato fruits was decreased in NAP part than in SAP part during storage and contents of acid, sugar, and vitamine C showed the same tendency.
The fruit structure of 'Fuji' apples from full bloom to maturing was observed from 1997 to 1998. Cell division period of the fruit was found to be 4 to 5 weeks after full bloom. Vascular bundles in the inner part of the fruit skin which were not described in the books illustrating apple fruit structure was observed, as they were tentatively named as outer vascular bundles (OVB), and another vascular bundles were also observed newly in periphery of locules, as they were tentatively named as inner vascular bundles (IVB). In the observation of the inner epidermis (IE) in the inner part of the locules on 2 days prior to full bloom, the guard cells were observed and these were disappeared in the observation made 2 days later, i.e. on full bloom. The formation of fruit skin was observed at the microscope 65 days after full bloom and the number of cell which organized the fruit skin did not change from this time to maturation period. Tannin which is mainly in the fruit skin changing from continuously during fruit growth, specially the tannin of epidermis disappeared completely 100 days after full bloom stage, and then constituted again. Starch was not almost found out in cell division period of fruit from full bloom stage after this time it constituted much at flesh part and decreased at maturation period. Epidermis was developed by uniform cells of a layer the cell of epidermis constituted irregularity after pigmentation stage, the organization of fruit was not close because the very big intercellular space constituted at hypodermis and flesh structure.

Superoxide dismutase (SOD) plays an important role in cellular defense against oxidative stress in plants. We have developed transgenic tomato plants overexpressing a cassava SOD in fruits. Three transgenic tomato plants (one from cv. Pink forcer and two from cv. Koko) using a new vector system, ASOp :: . mSOD1/pBI101, harboring ascorbate oxidase promoter (ASOp) expressing dominantly in cucumber fruits, CuZnSOD cDNA (mSOD1) isolated from cultured cells of cassava, and nptll gene as a selectable marker were successfully developed. SOD specific activity (units/mg protein) in transgenic fruits of both cultivars was increased with maturation of the fruits. SOD specific activity of well-mature fruits in transgenic Pink forcer and Koko showed approximately 1.6 and 2.2 times higher than control fruits, respectively. The strength of SOD isoenzyme bands well reflected the SOD activity during the fruit maturation. These results suggested that SOD gene was properly introduced into tomato fruits in a fruit-dominant expression manner by ASO promoter.
